The Portuguese kitchen In advance of your visit we ask you to tell us what you want out of the cookery tuition, and at what level you consider your skills. Prior to your cookery tuition : We will cover - A background to Portuguese cuisine, its heritage, and its ingredients. An insight into the different styles of Portuguese food, in particular the culinary heritage of the local area of Castro Marim and the East Algarve. A visit to have dinner in a very traditional Portuguese restaurant.* A visit to a traditional Spanish market and lunch in a Tapas bar * The Theme "cooking intuitively." Lessons consist of researching recipes, planning and writing out a tentative menu based on seasonal, local products. Using one recipe as a springboard for creating your own signature dish. 1

A diary of a typical cookery day

8.30amWe start the day with breakfast in the garden.

Home made yoghurt flavoured with orange curd

crunchy cereal and fresh fruits

Pasteis de natas and orange olive oil cake

Toast and home made conserves

Freshly squeezed orange juice and coffee

Over breakfast we browse cookery books and plan apossible menu based on local and seasonal produce.A tentative shopping list is compiled but kept flexible.

9.30amA visit to Vila Real market, taking in the butcher, fish stalls and some small vegetable and fruit growers. We buy the ingredients for our dinner, adapting the menu to what is available and fresh. A stop off at the garrafeira (wine merchant ) to select a suitable wine to accompany the dinner.

10.30amReturn to Casa Rosada for coffee, afterwards we walk down to the town car park to see the monthly market in action and talk to some more local growers and sup-pliers. Any more shopping that needs to be purchased can be done so. On the way back we call in at an inde-pendent supermarket that has its own farm and supply chain.

The morning ends with lunch in a very traditional tapas bar in Ayamonte Spain** ( Optional not included in tuition fee)
