    CHOCOLATE CHIP COOKIERECIPE

    Pizza has been pleasing taste buds for a very long time. In prehistoric times,people baked large pieces of bread on flat cooking stones. Later, in Italy, theseflat pieces of bread were spiced up with herbs and called focaccia bread. Italiansstill love to eat focaccia as an appetizer or snack. This snack was handy becauseyou did not need utensils and it could be seasoned with extra scraps of food andfresh produce.When Europeans came to the New World, they were introduced totomatoes, which they then took back to their home countries. The people of

    Naples, Italy were the first to put tomatoes on focaccia bread. People didn't wantto use tomatoes at first because they thought this delicious red fruit waspoisonous!

    The world's first pizzeria, Port' Alba, opened in 1830. Pizzas were baked in anoven lined with lava from a local volcano! The first pizza delivery occurred in1889 when an Italian restaurant owner was asked to create a special dish for theguest of honor, Queen Margherita Terea Giovanni. He wanted to include thecolors of the Italian flag in his dish to honor the queen, so he added tomatoes(red), mozzarella cheese (white), and basil (green) to focaccia bread. Therestaurant owner named this meal the Margherita Pizza, using part of the guest ofhonor's name along with part of the name of his restaurant Pietro II Pizzaiolo.

    The pizza was delivered to the palace because theQueen did not want to go all the way to the restaurant!

    INGREDIENTS:250 g all-purpose flour teaspoon baking soda teaspoon salt170 g unsalted butter,

    melted220 g packed brown sugar

    100 g white sugar1 Tablespoon vanillaextract1 egg

    1 egg yolk335 g semisweetchocolate chips

    DIRECTIONS:1. Preheat the oven to 165 degrees C. Grease

    baking sheets or line with parchment paper.

    2. Sift together the flour, baking soda and salt;set aside.

    3. In a medium bowl, cream together themelted butter, brown sugar and white sugar

    until well blended. Beat in the vanilla, egg,and egg yolk until light and creamy. Mix inthe sifted ingredients until just blended. Stirin the chocolate chips by hand using awooden spoon. Drop cookie dough inheaping spoonfuls onto the prepared bakingsheets. Cookies should be about 7centimetres apart.

    4. Bake for 15 to 17 minutes in the preheatedoven, or until the edges are lightly toasted.Cool on baking sheets for a few minutes

    before transferring to wire racks to coolcompletely.
