Rituals Coffee House

ChocolateAlmond TorteServing size 1 slice- 144 calories, 25g Carbs

Ingredients• 3/4 cup fat-free milk• 1/3 cup unsweetened cocoa powder• 2 ounces unsweetened chocolate, chopped• 1 tablespoon balsamic vinegar

• 3 egg whites•  Nonstick cooking spray• 3/4 cup all-purpose flour

• 2/3 cup granulated sugar*• 2/3 cup granulated sugar*• 1/2 teaspoon baking powder• 1/4 teaspoon baking soda• 1/8 teaspoon salt• 1/4 cup granulated sugar*

Directions1. In a small saucepan, combine milk and cocoa powder. Heat over medium heat, whisking constantly, until mixture just comes to a boil. Remove from heat. Whisk inunsweet-ened chocolate  and vinegar until smooth. Cool to room temperature. Meanwhile, in a medium mixing bowl, allow egg whites to stand at room temperature for 30 minutes.

2. Preheat oven to 350 degrees F. Lightly coat an 8x2-inch round tart pan with removable bottom or 8-inch spring form pan with non-stick cooking spray; set aside. In a large bowl, stir together flour, the 2/3 cup granulated sugar, the baking

powder, baking soda, and salt. Stir cooled chocolate mixture into flour mixture until well combined (batter will be thick); set aside.

3. Beat egg whites with an electric mixer on medium speed until soft peaks form (tips curl). Gradually add the 1/4 cup granulated sugar, about 1 tablespoon at a time, beating on high speed until stiff peaks form (tips stand straight). Gently fold one-third of the beaten egg whites into the chocolate mixture. Fold in the remaining beaten egg whites just until combined. Spread batter in prepared baking pan. Sprinkle almonds over batter.

4. Bake 25 to 28 minutes or until a wooden toothpick inserted near the center comes out clean.

5. Cool in pan on wire rack for 15 minutes. Remove side of pan. Cool completely. If desired, sprinkle lightly with powdered sugar before serving. Makes 12 slices.

Ingredients• 1 cup unbleached flour • 1 cup whole wheat flour • 1 cup brown sugar • 1/2 cup Imperial, 30% less fat margarine • 1/2 cup toasted, chopped pecans • 1 tsp ground cinnamon • 1 tsp baking soda • 1/4 tsp salt • 1 egg • 1 tsp pure vanilla extract • 8 oz. crushed pinapple in juice, drained • 1/2 cup nonfat vanilla yogurt • 1/4 cup light sour cream

Directions1. Stir flours, sugar and margarine together until mixture is finely crumbled. Stir in nuts.

2. Press 2 cups of flour mixture onto bottom of 13x9-inch pan which has been sprayed with vegetable coating.

3. Stir cinnamon, baking soda and salt into remaining flour mixture. Beat in egg, vanilla, light sour cream and vanilla yogurt until blended. Stir in pineapple.

4. Pour batter evenly over pressed flour mixture in pan.

Bake at 350F for 40 minutes or until batter pulls away from sides of pan. Cool slightly before cutting

With six locations in St. Lucia we are excited to share this information with you on the benefits of spending time in the coffee shop environment.Recent research has revealed that the whoosh of expresso machines, the daily chatter and activity experienced in a coffee shop creates just the right amount of background noise to stimulate creativity.In a series of experiments that looked at the effects of noise on the creative thinking, researchers found that participants in a brainstorming session for new product ideas, exposed to varying noise levels, found that ambient noise, typical of a bustling coffee shop, about 70 decibels, enhanced performance, compared to quieter environments. Higher levels of noise level , about 90 decibels was too distracting researchers found. It was found that extreme quiet sharpens your focus which can prevent you from thinking in the abstract. “This is why if your are too focused on a problem and you are not able to solve it Dr. Mehta said, “ you should leave it for some time and come back to it to get the solution.

There is fever sweeping the world right now with the upcoming FIFA

World Cup being held in Brazil. However, did you know that Brazil has

another kind of heat sweeping their nation, severe hot and dry

conditions in the first two months of this year?

Why is this significant? This state of affairs should be important to coffee

drinkers since Brazil is the world's largest producer of Arabica beans. In

February, the Arabica coffee shrubs started to mature, producing their

famous white flowers and their prized coffee cherries in the lush moun-

tains of Brazil. However, due to the limited access of water for irrigation,

these delicate crops were parched. The Government has even begun to
