Ready to take a walk on the wild side this summer? On the really wild side? Then caravan south to the San Diego Zoo’s Wild Animal Park and bag some thrills on a Roar and Snore Safari, an overnight camping adventure straight out of the wild plains of Africa. You don’t even have to pack your passport and anti-malaria medication!

Located at 15500 San Pasqual Valley Road in Escondido, the park offers its Serengeti-style night time adventures on a campground that overlooks giraffes, rhinos, antelope, gazelles, and hordes of other African species who originated from the Mother Continent.

“I think that the number one thing that impresses people the most is that they are at a place where they can hear the sounds of exotic animals at night,” said Dana Arbogast, the educational supervisor who has overseen various the Roar and Snore programs for the past three years.

“And there is nothing, absolutely nothing, like the sound of lions roaring at night,” she added. “When people wake up at 5 a.m., they can’t believe that they have spent the night in tents a place where they heard the sounds of lions roaring and elephants trumpeting and gibbons calling.”

With its camping out in tents program, Roar and Snore provides a unique experience in the animal kingdom not offered by other zoos in this country, according to Arbogast. Although the Roar and Snore Safari season begins on Valentine’s Day in February and ends on the last day of November, reservations for the popular camping events must be made in advance. Tickets range from $30 per infant up to $262 per adult depending upon tent accommodations.

The overnight safari experience, from 4:15 p.m. to 9:30 a.m., also comes in different theme versions, ranging from Junior Nights for kids ages 6 and younger (those have early bedtimes, shorter walks, and crafts) to Family Night for kids ages 6 to 10, to Tween Nights. Also offered are Adults-Only Nights in which safari-goers get the chance to learn about breeding programs and partake in some fascinating “behind the scenes” tours of the animals after dark.

“We do have animal exhibits and tours late at night that are very interesting. The tiger exhibit, for one, is pretty amazing at night because the animals will often start stalking their human visitors,” explained Arbogast.

“And, even though you are are safe because the tigers are behind the fence, believe me, you aren’t ever going to forget about how it feels to have one of those big cats stalking you!”

Cuisine in Temecula, Ca. The owner of Jazsea Cuisine, Jake Takao, is extremely passionate about what he does. Jake opened Jazsea in April of 2012 after leaving his prior chef position at a gourmet restaurant owned by one of the largest Asian food chains in the country. Jake has also trained and worked in many places around the country including restaurants in New Jersey, The Grove, Hollywood and Universal City Walk in Los Angeles.

Jake was born in Osaka Japan and it was there where he was introduced, and eventually came to love, the wonders of cooking. “My father used to take me to hole-in-the-wall restaurants so I could experience the different flavors and cooking styles.” “I also contribute my skills to my mother; she is also a great chef.” Jake said, “I got my first job during summer while I was in junior high. I worked in the kitchen of a restaurant and I used to observe the good and bad habits of the chefs there and witnessed many amazing skills of true chefs, where a much higher level of discipline was present.” Jake’s family later moved to America and with them they brought their incredible Asian cooking and opened the first Japanese restaurant in Temecula (Nihon). Jake spent much of his youth working for the family business, his father as his mentor. After the family sold the restaurant, Jake sought to find himself and his own unique cooking style. He traveled across the country finding inspiration in many places and people. Jake stated that his biggest encouragement were from Chef Lisa, Chef Steve, and Chef Graham from New Jersey, Los Angeles, and Mississippi respectively. So after honing his skills and finding his own style, Jake opened his own restaurant in hopes of creating a unique dining experience.

Jake’s menu is inspired by many different cultures and types of cooking, he stated that his menu is mostly comprised of, “Osaka style cooking from Japan, which is a balance between sweet and spicy flavors. I also took flavors from the Southern countries as well as the Pacific Rim.” He uses the freshest ingredients possible and ensures that his food is of the highest quality. Jake also enforces the utmost cleanliness in his kitchen, “The first thing I ask a cook I’m looking to hire is: have you washed dishes? Because keeping things clean as you cook is just as important as preparing the food.” Jake has also infused his passion for music into his restaurant. A few times a month the restaurant hosts live music and on some Saturday evening there is karaoke.

Overall, Jazsea Cuisine located at gateway to Temecula Wine Country offers many items with tasty sauces based on wine. The food is absolutely impeccable and the ambiance is very relaxing. There are some pretty shaggy-haired characters who like to saunter about outside of Sean Redding’s sophisticated,

state-of-the-art sound studio in Temecula.

But Redding, music recording entrepreneur and owner of Recording Farm, isn’t bothered by all these strange visitors. That’s because his studio, a professional top-notch sound-capturing facility in the valley, is located smack dab in the midst of the five-acre Namaste Farms, which Redding owns with his wife Natalie, and where they raise high end fiber producing sheep and goats.

“The animal entourage sets just the right tone in blending a natural retreat with noteworthy recording,” said Redding.

“For musicians, coming here to lay down musical tracks is a different experience than what most other recording studios in this region can offer,” said the recording expert, gesturing at a few of the farm’s woolly residents as he opened the door to the studio’s control room, revealing a sleek and massive mixing console inside an earthy-red-painted room.

“I wanted to create an unparalleled recording studio for this area,” explained Redding, who started Recording Farm three years ago, and whose client roster includes country music award winner and Nashville hitmaker Tony Marty, the Temecula-

based Mark Sage Band, San Diego alt band War Stories, and local singer/songwriter Caleb Fritel.

“Not only do we have a control room, a separate live room and enough mics (microphones) to mic up a drum kit. We also have a natural place where musicians, if they are creatively stymied, can take a break outside, wander around by the animals, and think the problem through. The artists love being able to do that.”

The sheer uniqueness of the farm-recording studio combo caught the attention of MTV television officials two years ago, and the Reddings’ establishment was featured in one of that network’s “MTV Cribs” episodes, said Redding, recalling that the filming was, “A big deal for us!”

Determined to provide the perfect audio setting, Redding opted to steer away from a common music recording set up.

“What I discovered is that many of the recording studios in this area are set up in someone’s house, maybe in an extra bedroom, and if someone wants to lay down a vocal track, they usually end up singing in the portion of the room that was the closet,” he said.

It takes all kinds of confidence for aspiring singers to perform in the spotlight.

There’s the confidence to leave the cocoon of the chorus, the confidence that they can connect with their audience, and, most of all, the confidence that their voices will always rise to the occasion.

For many young singers in the Temecula Valley, David Reuther has proven to be the go-to guy for vocal training and confidence building. With three degrees in entertainment arts and a 24-year track record of singing, performing, acting and casting direction for mega-hit shows like, “American Idol,” and, “That’s So Raven”. Reuther helps give his students and clients the edge they need to step into the lead of the limelight.

Country Review Magazine recently visited The David Reuther Vocal Studio and chatted with the energetic voice coach about how he teaches emerging songsters to be impressive show stoppers.

CR: after all those years in the entertainment field with involvement in

the musical stage, daytime television, jazz and orchestra singing, as well as casting director for american idol, what led you to focus on teaching vocal lessons?

DR: I just love the human voice! How it works, how breathing out air in different ways affects the sound and pitch and volume made as that air passes across the voice box and what people commonly call the vocal chords, but are actually vocal folds. Most people take it for granted, but the human voice is just an amazing instrument when you think about it.

CR: What are some the ways in which you coach singers to perfect their craft?

DR: The key to singing is breathing, but the key to breathing is right posture. So, if that is an issue, we get it corrected right away because singers need to able to fill up their lungs with air and poor posture prevents that from happening.

Then we work with facial resonance which is the vibration that is felt in the face, mostly in the mouth and nose, when notes or tones are sung or spoken. Facial resonance affects how the voice projects sound, so I work with my students to change that percentage to 30% through the nose and 70% through the mouth.

Another thing I like to do is have the singing student speak a song’s lyrics out loud several times before singing the song. It helps them get more emotionally in touch with the feeling of the song and what the songwriter is trying to convey.

CR: Would you say there’s much more than just technical training involved when it comes to getting your students to the top levels of entertainment competition or getting accepted into a music college?

DR: Yes! I strongly recommend that my students learn a musical instrument, whether it’s a piano or a guitar or another instrument. Not only do aspiring entertainers have to do more than sing these days in order to get to the top rounds of the competition, it also helps them learn about musical scales and chords and progressions. And that enhances their singing confidence.

Jeweler By Design is best known for the personal attention each customer receives. We specialize in custom designs that

stem from your own creations. Our main objective is to stand alone by consistently hand crafting each unique piece of art. All repairs and custom work is done on site. After 35 years of being in business we have come to conclusion that not everyone is interested in designing a custom piece of art. After getting feed back from clients, friends and family, we decided to come from a different direction. My Dad has been involved in the jewelry industry for 35 years now. After doing repair work for many major chain stores as well as managing them. My Dad has seen what goes on behind the scenes. After time and time again he has seen clients not receiving the service they deserve. So he decided to move in a different direction. He was offered a job to be one of the head designers for a Christian jewelry manufacture in Orange County. After a few months he was once again seeing things not being operated correctly. I was just 13 years old at the time and he sat me down and told me he was going to quite that job and open up his own store. I was terrified; I mean talk about a leap of faith. Just under 14 years ago my Dad decided to open “Jeweler By Design Custom.” The way he came up with that name is that we are here by Gods design and not by coincidence. He wanted the store to have a reputation not like any other jewelry store. A store you can walk into to and trust the people you are dealing with. You will not only be able to talk face to face with the jeweler but as well as the owner. After two years of the store being open I

decided to get involved at age 15. Everyday after my mom would drop me off and I would work until closing. I having always have a passion for an artistic line of work as well as interacting with people. My passion for designing custom jewelry grew rapidly. I also loved being a part of the big moments in people lives. In 2007 we decided to take another leap of faith. After Valentines Day in 2008 we packed up and opened up our new location here in Murrieta. It was a bit scary because that was the year the economy fall through. But we kept our faith in the Lord, He is our ultimate provider. I just love the new setup up at our new location: right when you walk in you will receive the feeling a relaxation. After enter our lobby area you will flow right into the showroom. From the showroom you will notice you can see we do all work on site. You are able to see the “Jewelers Room”, “Wax & Designers Room” “The Office” and “Casting Room”. Our Business is family owned and operated by my Dad and myself. We take pride in our work and it’s our top priority the service our clients receive. One thing that just amazes me is that we becomes friends with most of our clients, we build a personal relationship with them. I have to say besides my Dad being an amazing father. He is one heck of a friend, and business partner. I truly appreciate the sacrifices he has made to build this business for what it is today. I can honestly say after seeing how close my Dad and I are, I would not mind if my daughter decided to get into the family business to one day and carry on the legacy we have created.

Christopher Miehl started misting industry innovator Big Fogg™ in 2000. In 2003, he moved the company

headquarters to Temecula. Big Fogg also has offices in Jacksonville, Florida and Austin, Texas. Since its inception, Big Fogg has been the leader in sports misting, working with the NFL, NCAA, MLB, World Cup Soccer, PGA, motor sports, professional tennis and even the NHL. Big Fogg has the unique advantage of having an internationally known brand name. It has no need to advertise, as its name is prominently displayed on its equipment for nationally and regionally televised football games and other sporting events. Big Fogg has been able to leverage this exposure in two ways. First, it was able to successfully diversify its product lines to include heating systems, which now account for approximately 15 to 20% of total sales This reduces the company’s seasonality. Second, it has expanded its product lines and customer base from just sporting events into several growing markets such as industrial (manufacturing facilities), commercial (retail and hospitality), direct sales (primarily from the internet), and event rentals. As an example, the company was asked to provide misting systems at Ground Zero which helped cleanup and reconstruction efforts. Big Fogg also was the exclusive cooling/heating vendor for eight of the last ten Super Bowls. Big Fogg has worked with every NFL team and for the last ten years has worked post-season playoff games for the NFL

Boris was sold on the brand but something was missing. While racing for BMW Boris was given a new vehicle every 6 months. He had many visits to BMW dealerships throughout the

years and he realized overall customer service was lacking a key component- ultimate personal service. A light went on for Boris! His long time friend Rick Hendricks owned 80 car franchises and Boris knew Rick would be his man. “I am very lucky to have such a great partner.” Together they took an engineered marvel, added the amazing customer service that Boris thrived for and went to work. The process began in 2004. Boris was told no many times, which he states, “I’m used to.” But he didn’t take no for an answer. Boris continued with persistence and dedication in what he believed in. After two years Boris was granted the Open Point from BMW and won out 75 other applicants. “This is the hardest I’ve worked in my life.” “This process is completely different from racing but I love the challenge.”

Boris is a world traveler while he is racing. He says the one thing that makes his day is an individual who exceeds with personal customer service. They may look like ordinary fourth and fifth-graders today, but when teacher Kelly Maxey looks at her class this year,

she sees future scientists, explorers, builders, math wizards, inventors, and astronauts.

The recent recipient of an Endeavour Fellowship with the National Aeronautics and Space Administration (NASA), Maxey, a teacher at Crowne Hill Elementary School in Temecula, believes the sky’s the limit when it comes to inspiring kids to learn about science, technology, engineering and mathematics.

And not only is the educator looking forward to teaching the first ever STEM (science, technology, engineering, and mathematics) class in the Temecula Valley School District beginning this school year, Maxey will be doing it with the material she learned through NASA’s Endeavour Science Teaching Certificate Project.

“I am really excited about teaching the STEM class because it’s a hands-on, problem-solving curriculum that shows kids how science and engineering are part of everyday life,” said Maxey. “And then adding in the NASA components like space exploration and discoveries just brings a fantastic new level to the program!”

NASA’s Endeavour Certificate Project provides live, online training for educators working to earn a STEM certificate, and is funded through NASA’s Office of Education. Maxey was

only one of fifty-one educators throughout the United States to receive the respected Endeavour certificate this year.

“Being taught by NASA scientists was great, but it was also quite a learning experience for me too, at times,” Maxey said, laughing about how she sometimes had to remind her scientist-instructors that she is an elementary school teacher when they got a little too in depth in matters like math theories or quantum mechanics.

“But the best part of the NASA Endeavour fellowship program is that there were fifty other educators learning at the same time, so we are all part of this huge professional learning community throughout the country, and we can collaborate over the material and help each other out.”

Maxey envisions the same kind of collaborative efforts going on in her combination class of fourth and fifth-graders this year too. In fact, she said the kids were already motivated to join the class before the season’s first school bell rings.

“There was a lot of interest in the STEM program, and the kids had to write essays about why they wanted to get into the class,” explained Maxey, “Thirty-two students were selected, and the class is evenly divided between the two grade levels.”

While this may be her first STEM class, Maxey, who has been teaching for 24 years, has used some pretty innovative ways

in past years for students to learn subjects like construction, engineering and forensic science. And she has found that adults want to join in creative efforts too.

“One of my classes wanted to build something called a ‘Gaga pit’,” recalled Maxey, a ‘Gaga Pit’ being the octagonal area in which a sport known as Israeli dodge ball is played on a surface ringed by portable sections of wood fencing, usually 6 feet in length and two feet in height, all which hinge together.

“We did our calculations, and then we went to a local Home Depot to purchase what we needed. But when some of the officials there heard about what the class wanted to do, they decided to help out, and they came out to the school and helped the kids learn how to build the fence sections. It was great!”

“Even superheroes lend a hand,” she said. “I’ve had experts from a local crime lab talk about how they solved a crime by mathematically figuring out the angle a bullet entered a wall, and where someone would have had to be standing when they fired the bullet. It was like crime-fighting, superhero stuff, and the kids loved it.”

Additionally, Maxey encourages her young students to personally get hands-on during a project.

“Using engineering to build something, I think, is very important for kids,” Maxey explained. “You’d be surprised by how well they can problem-solve things like constructing towers out of just two pieces of newspaper or building bridges out of marshmallows and toothpicks!”

Indeed, building bridges to the next generation’s future world is what Kelly Maxey, along with NASA, believes is a vital mission.

“The kids of today are America’s future. We need to nurture their minds in ways that encourage them to be an innovative and creative workforce in tomorrow’s world of technology and new scientific discoveries.”

it wasn’t the right time for him yet, and to keep learning to be a better singer so that he will be ready for the next audition.

CR: you moved from hollywood to the temecula Valley seven years ago, and decided to focus your direction away from performing to concentrate on vocal training. do you feel like you’ve made the right decission?

DR: It’s been great. Currently, I have 42 students ranging in age from 43 years to 8 years old which is the youngest age for a student I will coach because they have to be able to concentrate for at least a half hour! As for no longer performing, I get so much more out of teaching than I ever did on a stage, and I am very proud that 100% of my clients have been accepted into their chosen school of music.

can I say? No matter how good a singer thinks he or she is, if they decide to take some time off, it will show in their next performance. I had one high school student who had become so good that she decided to take the summer off. Well, she had a singing engagement a couple of months after she stopped practicing, and she didn’t perform very well. The professional singers know that they have to practice every day so that they can consistently give good performances, believe me! I tell my students that if they don’t want to take the time to practice, then I don’t want to take any of my time to coach them.

CR: That brings up an interesting question: what do you do when a student wants to try out for a competition, and you don’t think they are ready for it?

DR: I don’t say anything negative or anything that is going to drop that student’s confidence levels. I just tell them that I don’t think they are quite there yet in terms of performance, but with more work, they will be. One student of mine wanted to try out for “The Voice”, but I recommended that he wait. But, without telling me, he went up to San Francisco to audition for it anyway, and didn’t make it through the audition. I heard about it when a colleague in the music industry called me, but when my student came back to the studio, I just told him that

so I completely converted one into the control room and other, which is about a hundred feet away, into the live room where all the singing and instrument playing is done. I connected both buildings with video monitors and underground wiring.”

“Today, music is recorded on separate tracks; singers and instrumentalists perform individual parts of a song at different times in an acoustically-prepared room that contains various microphones to capture different tonal ranges. Recording Farm’s live room uses Gobos, movable acoustic isolation panels, to divert sound reflection and create vocal booths. And the live room also contains as many as sixteen mics which can capture a number of sounds including the tones from a ballad being sung or three horn players performing together on a track, the vibrant notes of a marimba, and even the dulcet sounds of a harp.” Redding explained.

Generally working with the musician’s instructions, Redding then edits and overlays the individual tracks via a digital audio workstation such as Pro Tools as he assembles the song.

“That’s the beauty of this business now,” he said. “If you are a musician or a band member, and you want to record a song that you wrote, you don’t have to spend a fortune getting everybody in the band together for one day and when you record on individual tracks digitally, that recording is there for life so you can take as much time as you need to get your music recorded.”

But making plans to put together the physical elements of his dream recording studio was only part of what Redding envisioned. He also wanted to learn how music recording worked, so in 2007 he headed to Hollywood and enrolled in the Los Angeles Recording School. “I was twice as old as the rest of the students and still had to head home to Temecula every weekend to be home with my wife and five kids,” he said, laughing.

“It was a tough curriculum to master because it involves so much engineering,” Redding recalled. “Fifty people, mostly in their early twenties, enrolled in the program, but only nine people, including me, graduated. Learning the business was an obsession with me.”

After graduating, the newly-minted recording engineer got the opportunity to do consulting for the Los Angeles Film School where he helped film students align dialogue and sounds with film. He was able to pick up more knowledge during his work with Frank Serafine, an Academy Award-winning sound effects designer and editor who created sounds for hundreds of movies including; Tron, Poltergeist II and Star Trek: The Motion Picture.

As much as Hollywood is the mecca of music recording, Redding remained focused on his dream to open and operate a high-quality sound studio in the musically flourishing Temecula Valley and he knows that he is on the right track.

“There are a lot of bands and local acts that perform on the winery circuit here. This valley and its wine country may still have a rural feeling, but the place is full of amazing musicians,” Redding stated.

“I think they should be able to get the quality of recording, mixing, and mastering of their music that they would get in Hollywood without needing to make the two-hour drive there any more.”

Musicians who have made it in the mad world of rock 'n' roll, then turned to what they thought was the

more serene, relaxed life of making wine…until they made their first bottle and got way more excited.

There is a meaningful bond that links these two dynamics together and the talent and passion that created pop music hits, can be applied to creating great wines. An interview I had a few years ago with the legendary rocker Mick Fleetwood of Fleetwood Mac brought this home, when he embellished on Robert Mondavi’s priceless quote that wine is like “Poetry in a Bottle.” Fleetwood’s take on the subject is that the creativity of the process of making wine and songs are no sure thing and in both, you have to hold your breath and hope the public accepts what you present, while you scream for acceptance.

The latest adventure of a pop musician bringing a new and exciting wine to market is Rockabilly Red, created and owned by Lee Rocker of the rockabilly band, The Stray Cats. The group scorched the charts with famous songs like “Rock This Town” and “Stray Cat Strut,” and despite several break-ups, Rocker still tours to this day.

Rocker collaborates on his Rockabilly Red with Kristian Story, the Napa Valley winemaker who creates hand-crafted, unfiltered big, bold wines from small lots that express individual character. His location near St. Helena is considered the most intense fruit in the valley. Rockabilly Red is barrel aged 24 months in new French Oak and is a well balanced, muscular 15.3% alcohol wine, mating up with BBQ Pork, Pizza and of course, rock 'n' roll.

I caught up with Rocker in Temecula at Ponte Winery’s new Cellar Lounge and he had this to say about his new wine. “It

was a blast working with Kristian. You know, it’s a lot like rock 'n' roll in a way. The people who make wine and the people who make rock 'n' roll have the passion and the love in what they do and hope that it shows in the end result.
