Merry Christmas with
‘Melomakarona’ at Poseidonia
Beach Hotel
Melomakarona
(honey cookies) are
one of the most
popular treats
throughout Cyprus
and Greece during
the Christmas
period and their
intense homely
aroma signifies that it’s Christmas time.
Typical ingredients are flour or semolina,
sugar, orange juice, cognac, cinnamon
and occasionally olive oil. During rolling
they are often filled with ground walnuts.
After baking they are soaked for a few
seconds in syrup made of honey and
sugar. Finally, they are sprinkled with
ground walnuts.
Melomakarona are a Christmas special
recipe for Cyprus Breakfast at Poseidonia
Beach Hotel (Limassol) and once placed
at the buffet they turn out to be the hit of
the day for the hotel’s customers.
Kalimera with a flavour of
roses at the Royal Apollonia
Triantafyllo or rodon is the name for roses
in Greek and as the name implies it is the
plant with the thirty petals. The plant rosa
damascena is widely
grown in the village
of Agros since the
beginning of the
twentieth century and a
great variety of traditional products are
made from this very aromatic bush. The
petals are harvested within a few days
each May and the community organises
the famous Rose Festival, a great
attraction for exploring its cultural and
gastronomic heritage.
Rose cordial (with the addition of water)
has become a favourable morning drink at
the Royal Apollonia Hotel in Limassol
(Louis Group). The Cyprus Breakfast
program has urged hoteliers to offer a
‘welcome to breakfast’ food or drink which
is closely linked to the local gastronomy.
Although rose cordial is not solely a
traditional breakfast item, it does relate to
the indigenous rosa damascena, the
aromatic rose that grows in the mountains
of Agros village.

Pombes (bombs) for breakfast
at Anonymous Beach Hotel
If you have ever had the chance to wander
around a Cyprus ‘paniyiri’ (traditional fair)
you might have come across a number of
traditional sweets, the most common ones
being “soujoukkos” and “lokoumades”.
Another such sweet, not well known to
visitors but a reminder of childhood for
locals, is the one known as ‘pombes’.
These are similar to lokoumades (pastries
made of deep fried dough soaked in
syrup) in terms of flavour but with a
different shape, one that resembles that of
a bomb, after which they have probably
taken their name from.
At Anonymous Beach Hotel (Ayia Napa),
the Food and Beverage team have
introduced this sweet as a breakfast
recipe, freshly baked or deep fried from
the hotel kitchen and served hot at the
buffet. Judging from the quantities of
“pombes” served at the hotel when
available, it is a clear proof that the dish
has become a tasty authentic highly
appreciated by the hotel’s customers.

Taste through the layers of culture
Casale Panayiotis lies at the heart of
Kalopanayiotis village, situated in the
beautiful Marathasa Valley of Troodos.
The village landmark is the monumental
church of St. John Lampadistis (UNESCO
World Heritage Site). In respecting the
traditional architecture of the village, this
agrotourism complex blends harmoniously
into the beautiful surrounding landscape.
The comforts of a luxury spa are
combined with traditional features, so that
guests can relax at the truly unique
environment of the Cyprus mountains.
Breakfast is served at the recently
refurbished ‘Troullino’ restaurant, carefully
designed and decorated to resemble the
character of a traditional village house.
The buffet is purely local with the
ingredients used in the preparation of the
Cyprus Breakfast dishes, freshly sourced
from local producers.
The breakfast includes traditional cured
meats, homemade jams prepared with
fresh fruit from local farmhouses, aromatic
infusions (herbal teas), and freshly baked
pastries. Cyprus coffee is available in a
do-it-yourself equipment so that customers
can learn how to prepare this authentic
local coffee.
