Growing grapes and transforming its juice into this extraordinary liquid substance we
know as wine can be done in many forms and ways. The working method and vision can
differ extremely. From mass production wines with monotonous flavours, to passionate
artisan winemakers who create complex wines with character. The latter are the ones
I’m constantly searching for and these are the wines we will find on this wine list.
Winemakers who seemingly surprise with their wine and philosophy. Most of these
winemakers always work with great care for mother nature, because ultimately she
provides us with the key ingredient. Wine grapes.
Working with sustainable methods is the basic condition, though some winemakers like
to take it a step further. I would like to explain the three main movements which
transcend sustainability. We find these philosophies next to a logo, which we will see
linked back to certain wines in this list. The logo’s with a grey colour implies that
winemakers are working in one of these three ways but are not certified through an
agency or institute.
These are organic wines. The most important aspect here in terms
of sustainability, is that there is no use of chemical and synthetic
pesticides. This implies that the grapes are purer and cleaner and
thus will communicate its terroir more directly.
Biodynamics take it a step further. Here it is all about the balance
between nature itself, the vines and the immediate and distant
environment. This system is based on the beliefs of philosopher
Rudolf Steiner. This type of cultivation influences all life in the
vineyard. Lunar and astrological cycles also play a key role in the
timing of biodynamic practices, where most of the problems in the
vineyard are solved with homeopathic remedies. These wines with
minimal intervention allow layers of flavour to evolve and often show
a distinctive character.
Where we see that organic and biodynamic winemaking is a
strategic or technical choice, natural wine is a philosophical one.
Natural wine is made without adding and removing elements during
the winemaking process. There is no use of additives and
intervention within the fermentation process is kept to a minimum
level. Clarification and filtration is barely applied and sulphur levels
are kept as low as possible. Summarised, as little action as possible
in the cellar itself. This results in wines that are very much alive but
are also a different expression of wines that are made in a more
conventional way. Aromas and flavours can differ compared to the
other styles of wine found on this wine list.
