Dear EXPO Attendees,This year, the Louisiana Restaurant Association celebrates its 70th Anniversary! During that time, the restaurant industry has evolved from a place for a traveling salesman to get a bite while on the road, a place of refuge for the family so mom could have a night off at home and special occasions, to now, more meals for some in restaurants than at home. The restaurant industry has cemented its place in the hearts and minds of Americans in the past seven decades.

With so much dependence on restaurants and foodservice establishments to serve more meals each day than ever before, I don’t have to tell you the challenges that exist for today’s restaurateur. Profit margins can be modest, but the rewards are great.

That why it’s important to take advantage of every opportunity presented to make your business and profits grow. That’s why the Louisiana Restaurant Association and its Foodservice & Hospitality EXPO exists—to serve our members by advancing and protecting the industry. The EXPO in August helps fulfill that mission! You work hard to keep your customers returning for more and focus on those new products and services that give you an edge. The 2016 Louisiana Foodservice & Hospitality EXPO, celebrating its 63rd year, offers you the best tools and opportunities for your business. We value your commitment to the industry. Join us in New Orleans this August!

Sincerely,Peter Sclafani, 2016 EXPO Chair

Successfully Rebranding a Restaurant Location

Don’t Let EMV Chargebacks Cut into Your Profits

Saturday, August 6, 2016

Many restaurateurs often choose to lease former restaurant locations because the cost of outfitting a space for restaurant use is cost prohibitive. If more than one restaurant has failed in a location, changing the public’s perception of that space can require creativity in design and management. In this session, Brent Bueche and Scot Byrd of BBI Architects, shares his how to guide to achieve success in former restaurant locations.

Since the liability shift which took effect October 1, 2015, businesses of all sizes have seen an increase in chargebacks. Join Tammy Smitherman, Division Manager for Heartland, as she clears up the confusion and explain the EMV rules and best practices to keep fraud from impacting your profits.

12:30 - 1:15 p.m. The Key to Finding Good Employees & Increasing Customer Satisfaction

Employee training is one of those things that sounds so simple to execute, but is often undervalued and overlooked, especially in restaurants. Want to know why it’s so important to train your restaurant employees? According to one survey, 82 percent of ALL the customers that don’t come back to your restaurant don’t come back because of the employees you selected, you hired, you trained and you manage on a daily basis. David Scott Peters, founder of TheRestaurantExpert.com, will help you avoid lost customers by implementing a structured training program.

Employee Practices Liability

Cyber Liability

Protect your business from an innocent mistake made in employee relations. Failure to hire, wrongful termination, failure to promote or even the long-known exposure of sexual harassment can all be part of an action brought against you by an employee. The defense cost alone can hurt your business even if you are not found liable. In this session, Jack Stehr of Regions Insurance will teach you about the insurance coverage that could save your profits from going to down the drain.

Thousands of new cyber security breaches occur annually and threaten your customers and employees private information. Jack Stehr of Regions Insurance will share information about an insurance program that provides protection as well as risk management support, which is critical to the recovery of your business.

2:15 - 3 p.m. 3 Things That Make You the Most Profits in Corporate Catering

Corporate catering can be one of the most profitable catering revenue streams, but there is stiff competition to get those corporate dollars. Plus many restaurant owners just don’t know how to distinguish themselves from their competition and make a profit at the same time. Sandy Korem, a 25-year veteran in the catering business, will give you instant ‘take home” value to add profits to your corporate catering. Learn: why NOT having minimums are a profit-buster; why correct pricing MUST include delivery charges; what cutting edge corporate catering food presentations will set you apart from your competition; and totally “out-of-the-box” PROVEN corporate catering ideas.

But how do they take this buried treasure and market it? It’s really quite simple. Attend this session and Sandy Korem, a 25-year veteran in the catering business, will teach you: The ONE item you MUST do or your catering brand will be strangled before you book your first event; How “Dining In” sells “Catering Out”; You and your database, it’s a personal relationship!
