Prepare an authentic charcuterie party platter

(NC) The popularity of artisanal charcuterie meats has exploded in Canada recently with double-digit sales growth, so just watch as your party guests line up to get a taste of your own, chef-guided charcuterie platter. These savoury plates make a perfect appetizer, finger food dish, or even a light meal.

But it is also important to combine the right accompani-ments and wine with that platter. Chef D, television personal-ity and the corporate chef for Piller’s Fine Foods (a Waterloo, Ontario company), recommends the following elements for the perfect charcuterie platter.

“Aged cheddars, three to seven years old, go well with sa-lamis,” he explains, “as do triple cream brie and raw milk goat

cheese. And one of my favourites is the Piller’s Charcuterie Westphalian Ham (one of three new, hand-crafted artis-anal meats offered by the company), wrapped around parmesan cheese.”

In terms of breads to pair with the char-

cuterie meats, Chef D recommends using “whole wheat, sev-en-grain or sun dried tomato flat breads, or savoury crisps.”

He notes that locally made wines go particularly well with the artisanal meats, and that “chardonnays pair amazingly well because they are aged in oak and this brings out the smoky flavours of the meats.”

“For red wine, the light acid and peppery flavour of Pinot Noir pairs well with the savouriness of the meats, and for beer, pale ale is fantastic,” he enthuses.

Chef D also suggests adding some colour and flavour to the platter with red and green grapes, walnuts, tomato-chili or roasted red pepper spreads, and honey as an innovative gar-nish. One final suggestion is to serve the spread on a unique platter, and that charcuterie boards made from old wine barrels are a very nice touch.

“Shortbread gets an upgrade in this recipe – perfect for the holiday season,” says Anna Olson, celebrity chef and host of Food Network Canada’s Bake with Anna Olson. “The dough can be made up to three months ahead and then frozen, to be thawed in the fridge before baking for a perfect mid-winter pick-me-up.”

Skor Bits Shortbread Slice CookiesMakes about 4 dozen cookiesPrep Time: 15 minutesChill Time: 2 hoursBake Time: 16 minutes

Ingredients1 cup (250 mL) unsalted butter, at room temperature½ cup (125 mL) icing sugar, sifted1 tsp (5 mL) vanilla extract2 cups (500 mL) all-purpose flour1/3 cup (75 mL) cornstarch½ tsp (2 mL) salt¾ cup (175 mL) Hershey’s Skor bitsDirections

1. Using electric beaters (or a mixer), beat the butter for a minute, then add the icing sugar and beat until incorporated and fluffy, about 1 minute. Beat in the vanilla, then add the flour, cornstarch and salt and beat on low speed. Once incorporated, beat on medi-um-high speed (or more vigorously by hand) until the dough comes together. Add the Skor bits and stir in.

2. Shape the dough into 2 logs about 10 inch-es (25 cm) long (1 ½-inches/3.5 cm across) and wrap tightly in plastic wrap and chill for at least 2 hours until firm.

3. Preheat the oven to 325(F (160 (C) and grease or line 2 baking trays with parchment paper.

4. Unwrap and slice the dough into cookies ¼-inch (5 mm) thick and arrange them on the baking trays leaving at least ½-inch (1 cm) between them. Bake for about 16 minutes, until the cookie barely start to show a little colour at the edges. Cool the cookies completely on the baking tray before removing. The cookies can be stored in an airtight container for up to a week.

(NC) Holiday entertaining is all about the appetizers and some of the most delicious recipes are often the most simple. Celebrity chef Lynn Crawford shares her secret recipe for guacamole, a must-have menu item which she says will guarantee your ‘nice’ spot on Santa’s list. .

SPICY GUACAMOLE DIPMakes: 2 Cups

Prep Time: 10 Minutes

Ingredients• 2 ripe avocados• 2 tbsp lime, juiced• 1/2 red onion, finely chopped• 1 garlic clove, minced• 1 bunch cilantro, finely chopped (remove stems)• 4 tbsp Hellmann’s Real Mayonnaise• 1/2 tsp. salt• ½ tsp freshly ground black pepper

Directions: Halve and pit the avocados. Scoop out the flesh of the avocados into a bowl and gently mash with a fork, leaving them somewhat chunky. Add the remaining ingredients, and fold every-thing together to gently mix.

Tip: For some heat, add in 1 pickled jalapeño, seeded and finely chopped.

Using an electric mixer, blend on medium speed until fluffy. Mix in spices and salt, then egg and molasses. Add flour mixture, mix until just combined. Divide dough into thirds, wrap each in plastic wrap. Refrigerate until cold.3. Line baking sheets with parchment paper; set aside. Roll out dough on a clean work surface to 1⁄4-inch thick. Using a 4 ½-inch gingerbread man–shaped cookie cutter, cut out cookies, and place on a baking sheet, at least 1-inch apart. Refrigerate until cold.4. Preheat oven to 350° F. Bake cookies until crisp but not dark, 10 to 12 minutes. Let cool on sheets on wire rack.5. If you are using icing and decorations, decorate cookies and then set aside so icing hardens. ZUCCHINI - CHOCOLATE CHIP COOKIES 1 c. Brown sugar1 Egg1 tsp. Vanilla1 1/2 c. Flour1/4 tsp. Salt1/2 tsp. Baking soda3/4 c. Oatmeal1/2 c. Coconut6 oz. Chocolate chips (I used milk choc chips)1/2 c. Nuts ( I used crumbled walnuts)1/2 c. Butter1 c. Zucchini, shredded Beat butter, sugar, egg and vanilla.Add all dry ingredients and oatmeal; mix until smooth.Add coconut, chips, nuts and zucchini; mix well.Drop by spoonfuls (same as chocolate chip cookies) on greased cookie sheet.Bake at 350 degrees for 10 minutes.

MIDNIGHT MINTS ½ cup Butter¼ cup Sugar5 tbsp. Cocoa1 Egg, beaten 1/3 cup Butter3 Tbsp. Milk1 tsp Peppermint flavouring2 cups Icing sugar Green food colouring 2/3 cup Chocolate chips, semisweet2 Tbsp. Butter BOTTOM LAYER:Combine first amount of butter, first amount of sugar and cocoa in saucepan. Bring slowly to a boil. Stir in egg to thicken. Remove from heat. Stir in crumbs, nuts and coconut. Pack very firmly into greased 9 x 9 inch pan. SECOND LAYER:Combine second amount of butter, milk, flavouring and icing sugar in bowl.Beat together well. Tint a pretty green. Spread over first layer. THIRD LAYERMelt chips and third amount of butter in saucepan over low heat. Spread over second layer. Chill and store covered in refrigerator.Keeps well and freezes well. Cut into 36 squares.

“Do You Hear What I Hear?” is a Christmas song written in October 1962, with lyrics by Noël Regney and music by Gloria Shayne Baker.The pair, married at the time, wrote it as a plea for peace during the Cuban Missile Crisis. It has sold

tens of millions of copies and has been covered by hundreds of artists.

Regney wrote the lyrics for the song, while Shayne composed the music in October 1962. This was an unusual arrangement for the two writers. Usually it

was Shayne who wrote the lyrics for their songs while Regney composed the mu-sic, as they did when they wrote a song based on the classic children’s song “Rain Rain Go Away”.

Reg-ney was inspired to write the lyrics “Said the night wind to the little lamb, ‘Do you see what I see?’” and “Pray for peace, people everywhere” after watching babies being pushed in strollers on the sidewalks of New York City. Shayne stated in an inter-view years later that neither could personally perform

the entire song at the time they wrote it because of the emotions surrounding the Cuban Missile Crisis

“Our little song broke us up. You must realize there was a threat of nuclear war at the time.”

The song describes how word of the

birth of the baby Jesus is relayed

to higher upon ever higher authority. The message

originates with the night wind, which whispers it

to a small lamb. The lamb reports the message to his shepherd boy, who in turn conveys the news to the mighty king. The king even-tually spreads the message to the “people everywhere”.

This is my favorite GINGER COOKIE recipe – very soft and rich molasses flavour. SOFT GINGER COOKIES4 cups flour1 cup sugar2 tsp baking soda2 tsp ground ginger1 tsp ground nutmeg1 tsp ground cinnamon1 tsp ground cloves½ tsp salt1 cup dark molasses½ cup unsalted butter, softened1 large egg, beaten to blend½ cup boiling water Additional sugarCombine first 8 ingredients in large bowl. Add molasses, butter and egg. Using electric mixer, beat until well blended. Beat in the boiling water. Chill dough for 1 hour. Preheat oven to 400 F. Roll chilled dough by generous tablespoonfuls into balls. Roll in additional sugar to coat. Place dough balls 2 inches apart on ungreased baking sheets. Bake until cookies are puffed and cracked on top and the tester inserted into the centre comes out with some moist crumbs attached, about 12 minutes (do not overbake). Transfer cookies to racks and cool. Makes about 40 cookies.

The Christmas Candy Cane originated in Germa-ny about 250 years ago. They started as straight white sugar sticks.

A story says that a choirmaster, in 1670, was worried about the children sitting quietly all through the long Christmas nativity service. So he gave them something to eat to keep them quiet! As he wanted to remind them of Christmas, he made them into a ‘J’ shape like a shepherds crook, to remind them of the shepherds that visited the baby Jesus at the first christmas. However, the earliest records of ‘candy canes’ comes from over 200 years later, so the story, although rather nice, probably isn’t true!

Sometime around 1900 the red stripes were added and they were flavored with peppermint or wintergreen.

Sometimes other Christian meanings are giving to the parts of the canes. The ‘J’ can also mean Jesus. The white of the cane can represent the purity of Jesus Christ and the red stripes are for the blood he shed when he died on the cross. The peppermint flavor can represent the hyssop plant that was used for purifying in the Bible.

Around 1920, Bob McCormack, from Georgia, USA, started making canes for his friends and family. They became more and more popular and he started his own business called Bob’s Candies. Bob McCormack’s brother-in-law, Gregory Harding Keller, who was a Catholic priest, invented the Keller Machine that made turning straight candy sticks into curved candy canes automatic! In 2005, Bob’s Candies was bought by Farley and Sathers but they still make candy canes!

INGREDIENTS:

150g white cooking chocolate½ cup caster sugar100g butter3 eggs1½ cups milk2 teaspoons vanilla extract2¼ cups self–raising flour1/3 cup white chocolate bits200g frozen raspberriesFresh raspberries, whipped cream and honey to serve

METHOD:1. Combine chocolate, sugar and butter in a microwave

safe bowl and select 100% power for 30 seconds. Stir and re-peat until chocolate has melted and mixture is smooth. Stand to cool.

2. Whisk eggs, milk and vanilla extract together and mix through chocolate mixture. Place flour into a large mixing bowl and fold through egg mixture until mostly smooth; add white chocolate bits and raspberries and mix well.

3. Select CHOCOLATE setting and dial up 5 on the brown-ing control dial.

4. Preheat until orange light flashes up and the word HEATING disappears.

5. Using waffle dosing cup, pour ½ cup of batter into each waffle square. Close lid and cook until timer has finished and ready beep has sounded 3 times. Repeat with remaining batter.

6. Serve waffle, topped with fresh raspberries, a dollop of cream and a good drizzle of honey.

PIZZA DOUGH (makes three 9x12” or 11” round pizzas)425 to 500 ml (1¾ to 2 cups) all-purpose flour250 ml (1 cup) cake and pastry flour11 ml (2 ¼ tsp.) instant or bread-machine dry yeast (or 1

envelope)5 ml (1 tsp.) salt300 ml (1¼ cups) very warm water

DIRECTIONS PIZZA DOUGH (FOR 3 PIZZAS)To make dough, stir together 1¾ cups (425 mL) all-pur-

pose flour, cake flour, yeast and salt in a mixer fitted with a dough hook; make a well in the centre. Add water. Mix on medium speed until all flour is incorporated into dough; add remaining flour as needed to have soft, slightly sticky dough. Alternatively mix by hand. Turn out on well-floured surface. Let rest, covered, for 10 minutes. Divide into thirds.

Place a pizza stone or upside-down baking sheet in the oven and preheat to 450°F (230°C). Gently flatten dough into a round or rectangle on a lightly floured surface, creating a rim. Transfer to a cornmeal-dusted pizza peel or another up-side-down baking sheet; slide dough onto the hot pizza stone or baking sheet. Bake 8 minutes.

Meanwhile, combine 2 tablespoons olive oil in a bowl with garlic, rosemary, and salt and pepper to taste. Remove pizza from oven, brush with the olive oil mixture and top with the ricotta and mozzarella. Return the pizza to the oven; bake until the cheese is golden and bubbly, about 6 more minutes.

Meanwhile, toss the arugula and shallot in a large bowl with the lemon juice, remaining 2 tablespoons olive oil, and salt and pepper to taste. Top the pizza with the arugula salad, Westphalian ham and shaved Parmesan cheese. Serve imme-diately. Makes 4 servings.
