innovative cooking and presentation techniques.

Over the last 10 years On Air Dining has

changed the face of dining for Executive and

Private Aviation. We now proudly present One

Fine Dine, delivering the same award-winning

dining and concierge experience in your home,

boardroom and exclusive event.

Able to deliver 24/7, whether you fancy a meal

for one or want to entertain at home without

the stress of shopping and cooking for your

guests.

All meals are delivered fresh and chilled

with our easy-to-follow heating and plating

instructions on video or printed cards making

the whole experience fun and interactive for

you and the whole family.

Continuing on the founding principle of

exceptional service, our dedicated culinary

concierge team is on hand to personally

discuss your order and coordinate with our

team of chefs so no detail is overlooked.

The team are happy to hunt out any shopping

items and flower arrangements or laundry.

Our sister company, On Air Interiors, is also

on hand to supply luxurious interior soft

furnishings, crockery and amenity kits, and

anything else that will help you create an

exceptional home dining experience.

KITCHEN TEAM

The kitchens are overseen and managed by our

Executive Chef and closely supported by our

Head Chefs, and Senior Sous Chefs. Our chefs

have many years of culinary experience in fine

dining restaurants, exclusive event catering and

aviation catering. This enables One Fine Dine

to be able to produce fine dining cuisine for

small, medium and large size groups with ease,

expertise and quality.

One of the examples of this success is our fine

dining menu which has been created to offer

a Michelin standard style meal at 40,000 ft.

It is packaged accordingly to save an incredible

amount of time when plating up. Every dish

comes with a unique flash card system or video

to stream showing you exactly how the dish

needs to be put together so that the food can be

presented just like it would by our chefs at your

table, every time.

FULL HALAL CERTIFICATION

Since July 2015, our kitchen has been fully Halal

certified, allowing our team to deliver a full

house Arabic menu.The Halal certification was

awarded by Halal Consultancy Ltd and a copy of

the certificate is availabe upon request.

CUSTOMER EXPERIENCE TEAM

Part of On Air Dining’s and One Fine Dine’s

success and excellent reputation amongst its

customers is due to our customer experience

team. They are responsible for responding

to enquiries and processing orders from

customers, coordinating concierge requests,

and liasing between the kitchen and our

logistics team to ensure an on-time delivery.

The staff within the customer experience team

has years of experience working with VVIP

clients, as well as large corporate operators.

FLOWERS

All aspects are considered – the seasonality of

the flower, the colours and how they match your

interior and any possible scents that would be

given off. Our arrangements can be delivered in

glass vases or bouquets.

Please don’t hesitate to ask our Concierge Team

for our flower brochure and we are happy to

discuss bespoke arrangements.

CONCIERGE

Our Concierge Team is lucky to be based right on

the edge of the wonderful city that is London – if

you feel that you’re not going to have time to pick

up the extras from the shops you require we are

more than happy to get them for you.

We have sourced a wide range of items for our

clients and love the challenge of finding specific

items from our range of contacts. Our strong

relationships with high-end shops such as

Harrods and Selfridges, as well as some smaller,

independent shops, mean we can source items for

you and guests quickly and with ease.

OPERATING HOURS

We deliver 24 hours a day, 7 days a week

throughout the UK.

Our Concierge Team is available to take orders

from 0700 to 2200.

CANCELLATION POLICY

We are always evaluating our procedures to

accommodate for changes right up to the point

of dispatch. If you find you no longer require

your catering order or would like to delay, our

Concierge Team will always work with you to

minimise any costs incurred.

12 – 24 HOURS CANCELLATION

Should cancellation occur between 12-24 hours

we are confident charges will be minimal as we

prepare all meals fresh. We will endeavour to

prevent any charges as much as possible, but please

note that certain charges may apply due to time

of cancellation, specific menu items, speciality

shopping, and certain concierge requests.

12 HOURS OR LESS

One Fine Dine has the right to charge the full

rate for any cancellations made with less than

12 hours notices. However, we will work closely

with you to try and reduce charges where

possible.

LOGISTICS

Our operation and logistics teams play a core

role at On Air Dining and One Fine Dine. They

are the link between kitchen and the customer.

We operate our own fleet of refrigerated

vehicles and our drivers are employed and

vetted by us. Should you require last minute

items added on, our operative will do everything

possible to source the items.

TRENCHMORE IN SUSSEX

Trenchmore Farm in Sussex, which is located 45 miles outside of central London was selected for their 28-day dry aged Wagyu beef and their sustainable farming methods. We are lucky to have an award-winning supplier of Wagyu so close to our kitchens.

Trenchmore’s suckler herd is slow grown and grass fed, spending the summer grazing in the fields and the winter in their award-winning Roundhouse Barn; specifically designed to keep the animals happy and healthy.

The cattle’s finishing ration is based on grass and herbal ley silage and includes by-products of human food production; brewers grains that are high in protein and oils from local craft brewers, linseed cake from oil pressing that helps to boost omega-3, molasses to provide a sustainable source of energy trace minerals needed for healthy animals and straw from their wheat harvest to provide fibre and improve rumen function. And of course, the apple pomace from

their cider production each autumn.

Being a mixed farm, Trenchmore Farm also grows the apples and grains involved in the process – the cattle eats the grass and apple pomace, the straw from their wheat is used to bed the cattle, the cattle muck is spread on the fields to help improve the soil and feed the crops. A virtuous circle that improves the soil and helps grow more delicious, sustainable food.

Mixed farms that use ruminants to turn grass into food and improve soil structure are becoming recognised as being at the forefront of sustainable farming. Using animals to turn grasses into meat and help build nutrient levels in the soil means we can minimise artificial fertiliser use and maximise local quality food production.

Trenchmore sets out to farm for flavour and it really comes through in their exceptional cuts of beef.

NURTURED IN NORFOLK

Nurtured in Norfolk was hand selected to provide micro cress and other edible garnishes that perfectly finish our dishes. Here’s some history on their wonderful nursery located in the East of England, roughly 100 miles away from central London.

Allan and Sue Miller both worked full time as chefs for 20 years before becoming growers of Micro Cress. Their transition from one profession to another was brought about by the need for a more consistent product. They decided to grow cress themselves in a small greenhouse in their back garden and began supplying the restaurant they worked in. Their experience has helped them tremendously in understanding the requirements of chefs.

Having successfully grown Micro Cress for use in the restaurant, with very positive feedback, they were asked by a wholesaler if they were able to grow in a larger volume. Allan and Sue decided to invest their time and money into their business, which is when ‘Nurtured in Norfolk’ really began. The company saw a niche for new garnishes in the kitchen and wanted to add depth and flavour to the palate rather than just a garnish; they chose micro herbs that were strong in flavour and still looked appealing on the plate.

Varieties that are most popular because of their robust flavour like coriander, lemon balm, baby mint, ruby frills mustard, fennel, garlic chives, Red vein sorrel and basil are still by far the most popular varieties to date. The range of micro cress has now been extended to over 70 different types. All together there are over 280 different edibles in the range.

Constantly growing and developing as a company ‘Nurtured in Norfolk’ now supply a range of wholesalers and Michelin star restaurants with a top-quality selection of cut Micro Cress, Pea Shoots, Micro Herbs, Edible Flowers, Baby, Micro and Sea Vegetables, Edible Leaves and Mint Tips in various flavours. As ex chefs, their simple ethos is that the quality and consistency of the product has to be of an exacting standard that they would have expected and been happy to use themselves.

All the products have been grown on a natural soil base, benefiting from nutrients that are present throughout the growing stages and therefore extending the shelf life. Biological controls are used throughout the growing process to keep the crops clean and pest free.

DINGLEY DELL IN SUFFOLK

Located in the Southwest of England near the coast and under 100 miles from central London, Dingley Dell Pork provides unique Red Duroc pork known for great marbling, delicate texture and superior flavour.

Dingley Dell Pork is a third-generation family farm with a deep love and respect for the countryside and agriculture that plays such an important role in the charm and livelihood of Suffolk County. The farm was founded with the philosophy of animal welfare, taste and sustainability.

Dingley Dell is committed to farming in harmony with nature and improving the number and variety of species living in and around the farm. Their pigs are moved onto freshly grassed paddocks regularly to maintain soil structure and the muck from the animals goes back into the land.

Whilst wanting to ensure animal welfare and sustainability are extremely important, so is producing a superior range of pork products. Dingley Dell worked with one of the UK’s top meat scientists to examine every part of production from farm to plate. They strive to minimise all stress on the animals, produce pork with a reasonable cover of back fat as that is where the flavour comes from, run taste trials and scientific protocols to assess flavour and tenderness, and regularly host open days for Chefs to better understand the unique breeding programme at the farm.

LANGLEY CHASE

Less than 100 miles away from central London, just outside the beautiful Cotswolds, Langley Chase was selected for their rare breed lamb.Langley Chase is an organic grassland farm, passionate about producing the highest quality, fully traceable, organic lamb and mutton. They sustainably nurture a rare breed, the Manx Loaghtan, carefully chosen as their meat is proven to be lower in saturated fat and cholesterol with its slow maturing qualities giving a greater depth of flavour and texture, a primitive rare breed going back over a thousand years.

The Langley Chase flock was started some years ago by Jane Kallaway when there was little traceability on what was being fed to livestock, how they were reared and what we all ended up consuming – as a family of six Jane was concerned about the quality of food.

The farm, with its ancient organic hay meadows, provides a wide variety of grassland species and wildflowers for our flock to graze, and protects diverse species of wildlife in their natural habitat, including bats, birds, mammals and insects. Each year they change which fields are grazed and which are taken for hay. This rotation widens the diversity of the species in pastures, keeps them fresh and helps control parasites. Sheep as a species taste of what they eat so the farm’s pasture is a key factor in how they rear their flock as they are totally grass fed, with their own organic hay in the winter.

Hay meadows, hugely valuable historic features of the UK countryside, have almost vanished. According to research 97 per cent of traditional hay meadows have been lost and are still disappearing. Pasture management controls flock health, giving clean pasture grazing and contributes to the award-winning taste of their lamb and mutton.

For Langley Chase it is paramount to rear healthy animals with full traceability through organic standards. The flock has been carefully reared and built up by retaining ewe lambs as replacement ewes, so that it remains a closed flock, ensuring a high health status pedigree flock.

They truly love every single minute of what they do in producing Jane’s flock, and the peace and tranquillity of the fields. They take great pride in their lamb and what they represent.
