At Sansei SeafoodRestaurant AndSushi Bar, cutting
edge sushi, food-friendlywines and signaturedishes like Mango CrabSalad Rolls and Crab Ra-men with Asian TruffleBroth keep customerscoming back for more. But it’s the service asmuch as the sushi that haskept Sansei top among thecity’s best-loved localrestaurants. I caught upwith managing partner IvyNagayama, in a rare, quietmoment, to chat aboutthe Sansei style.
Jo McGarry: Is it really six years sinceyou opened here inWaikiki?
Ivy Nagayama:(Laughs) Yes! And thispast April we celebrated10 years on Oahu. Weopened our first locationon this island at Restau-rant Row in 2000.
JM:I remember when youmoved here, everyonewondered if you’d be ableto entice locals out toWaikiki. Seems like you’vedone that fairly success-fully.
IN:Well, everybody knewSansei from our years atRestaurant Row, so ourgoal was always to keepthose kama‘aina cus-tomers. And they did fol-low us to Waikiki.
JM:I want you to talk a littleabout the “thank you”that you regularly run foryour customers.
IN:On Sundays and Mondayevenings we give 50 percentoff the entire food check atSansei, between 5 and 6p.m. And on Fridays andSaturdays, we do the samedeal – late night – duringour karaoke evenings.
JM:I’ve seen the lines outsidethe restaurant on Satur-day nights and on Sundayevenings, with peoplewaiting to take advantageof the “thank you” deal –it’s crazy!
IN:(Laughs). It does get a littlebusy, but we always man-age to take care of every-one, and the atmosphere isalways great. Customerslove it – and they love ourweekend karaoke, too.
JM:You know, I think that’s ahuge part of your success– the fact that you knowwhat local people like.Whether it’s food, enter-tainment, accessiblewines or just creating acomfortable place to eat.
IN:I think it’s just about givingpeople what they want. Wehad a great role model inSandy Kodama, she was“Mom” to all of us. I spentevery working day withher when she was alive, and she really did try togive everyone what theywanted. She taught us somuch about understand-ing our guests. She was amom to everyone.
JM:Do you think that is herlegacy? That the way shetreated people is being
carried on through differ-ent generations?
IN:Yes, yes. Within our com-pany culture we always ask,“What would Mom do?” Shetried to make everythingwork. She turned thingsaround with everyone, andshe taught us so muchabout how to make peoplehappy when they come intoa restaurant.
JM:Of course, the food has tobe good, too.
IN:Fortunately we have a re-ally talented group ofchefs. They’re workingright now with a lot ofnew, local produce and in-corporating that intosushi rolls. And we’resourcing excellent freshfish from Japan that’s inseason.
JM:What are some of your fa-vorites on the menu rightnow?
IN:The white tuna sashimi iswonderful. The escolaris marinated in olive oiland Cajun spices, andthen served with a deli-cate Korean-style saucethat’s familiar to localpalates – but at the sametime is really refined – andit’s topped with fresh, is-land-grown jalapenos. It isa fabulous dish. And rightnow, on Wednesdayevenings, we’re offeringsteak and lobster com-plete meals at both of ourrestaurants – d.k’s SteakHouse and Sansei. For$39, there’s a lot of food!

JM:You’re known for yourwine list, which alwayshas so many “food-friendly” wine finds.
IN:Yes, a great example rightnow is this beautiful sushiwine – Oroya – that is ablend of three Spanishgrape varieties. It’s madeby a Japanese sake mas-ter, a woman named YokoSata. We try to look forwines that go well withAsian foods. Nothing withtoo much oak, good acid-ity, good fruit. When youtaste this wine, you seeimmediately that it’s madeto go perfectly with sushiand seafood. It’s delicate, but it has enough citrus toclear your palate and letyou enjoy the next bite offood. It’s really beautiful.
JM:And now there are food-friendly cocktails too.
IN:We wanted to have a pro-gram, like our wine pro-gram, where we could offer
cocktails that paired wellwith our food. We workedwith Christian Self – amixologist who’s the spiritversion of a master somme-lier. So now we have drinksthat are amazing and pairwell with the flavors of ourfood. For example, we havea Mui Tai, which looks like amai tai but is Asian-inspiredand incorporates Bacardiaged rum, Bols orange cura-cao and a homemadelemon grass syrup toppedoff with a candied gingerlemon grass foam.
JM:One of the things that I al-ways tell people about therestaurant is that you’reable to do all this, and stillcreate an atmosphere thatis sophisticated, but wel-coming to families.
IN:Absolutely. That’s anotherthing we learned from“Mom.” Through her,we’ve found a way to treatthe whole family well. Wecelebrate when childrencome into our restaurants. They are important in ourrestaurant culture.
Cocktails, like this Mui Tai, have been created to go with the Asian flavors ofSansei’s foods.

Most people knowthat Valentine’sDay is the busiest
dining night of the year, but Father’s Day at a steakhouse runs a very closesecond.
“It even beats outMother’s Day in terms ofhow busy we are,” saysRuth’s Chris general man-ager at Restaurant Row,Don Assam. “We have morethan 100 reservations onthe books right now, so wereally encourage people tomake a reservation for Fa-ther’s Day before it’s toolate.”
But if there’s one thingthat the staff at Ruth’sChris can handle, it’s abusy evening of fine din-ing. The national restau-rant chain celebrates 45years in business thisyear, with Hawaii’s Ruth’sChris celebrating 21 years.
“We’re very blessed tohave been in business allthese years in Hawaii,”says Assam, who admitsthat adaptability has beenkey to the restaurant’ssuccess. “You have tomake changes when it’snecessary, and becauseit’s all about the guest, welisten to what our guestssay, and we act uponthat.”
A special Father’s Daymenu, priced at $64.95, in-cludes soup or salad, achoice of bone- in rib-eye,surf and turf, New York stripor grilled lamb chops, withsides of creamed spinach, roasted garlic mashed pota-toes or sautéed mushrooms, and dessert.
And while Father’s Dayis undoubtedly a great timeto taste what’s new at oneof the city’s oldest steak
houses, there’s a menu pro-motion running until theend of July that should ap-peal on any night to anyonewho appreciates good foodand wine. “We have a spe-cial anniversary menu tocelebrate the 45 years ofRuth’s Chris,” says Assam.
There’s also an excitingopportunity to win some-thing very special.
“Ruth’s Chris SteakHouse, which opened origi-nally in Restaurant Row in1999, partnered withLangtry Estate & Vineyardsto create their special 20thanniversary wine,” saysCEO Randy Schoch. “We’vedecided to give someonethe opportunity to spendtwo nights at the LangtryEstate on the ultimate foodand wine trip.”
The prize, which in-cludes round-trip air fare toSan Francisco, two nights’accommodation at theLangtry Estate and VIP din-ner with a tour of the win-ery, will be awarded at theend of the promotion.
“Anyone is welcome toenter,” says Don Assam.“There are entry forms atthe restaurants.”

If you’re a fan of every-thing the island life has tooffer, you’ll feel right at
home at Honuz Restaurantand Lounge, where afriendly local staff and life-sized sea turtles painted onocean-blue walls greet youas soon as you enter.
According to Vali Vell, general manager of Honuz, the restaurant’s name is de-rived from owner DeePelekai’s love of “honu” —the Hawaiian word for greensea turtles.
Pelekai's obsession withturtles, coupled with hus-band Lou Jr.’s love for cook-ing, are what led this coupleto open their Kailua eaterylast August. Popular entreesinclude the Pesto Pork Chop($15.95), Honuz FreshlyRoasted Homestyle Chicken($15.95), a seasoned 12-ounce chicken breastserved with homemadeveloute mushroom gravy;Homemade Meat Loaf($13.95), which is covered in
homemade gravy; and BeerBattered Mahimahi Fish andChips (market price).
After establishing its top-seller, Chef’s 5-Star PrimeRib Roast (ranging from$18.95 to $26.95), Honuz setits sights on developing abreakfast menu — the lurefor many of its weekend pa-trons. Crab Cake Benedict(full order $15.95; half order$8.95); Honuz Mac Stack($7.25), two fluffy pancakeswith “ono” macadamia nutsyrup; and Prime Rib Hashand Eggs ($9.95) are amongthe restaurant’s hottestbreakfast items.
On top of being reason-ably priced, the Crab CakeBenedict is absolutely di-vine! Hosting a full-scalesports bar complete withwide-screen TVs, the Honuzstaff — including manymembers, like head chefBrian Goinges, who couldnot stay out of the kitchenafter their former employer,Brent’s Restaurant and Deli,
closed its Kailua doors atthe end of last year — alsocasually “plays with” vari-ous recipes. The results aredaily specials, such as theDeli Shred Salad, comprisedof turkey, Italian salami, pro-volone, tomatoes, cucum-bers, olives and red cabbagemixed with a homemadespicy lemon dressing. Thespecials are a fitting selec-tion for those who simplydesire a light meal to satisfytheir hunger.
For those who believethere’s always a secondstomach for dessert, Honuzoffers its Famous Bread Pud-ding ($4.95), drizzled incaramel sauce and gar-nished with fruit; Red VelvetCake ($5.95); and PeanutButter Cream CheeseChocolate Chip Brownie($5.95). If that’s not reasonenough to visit the Wind-ward side, Honuz has liveisland music almost everyday. Wednesday is easy-lis-tening night, with jazz from
6:30 to 9 p.m. Thursday of-fers R&B and blues between6 and 9 p.m. Typically, youcan find the band Full Spec-trum performing a blend ofbluesy, jazzy, old-school andmodern tunes on Fridayevenings. And you cancount on hearing Hawaiianmelodies from local artists, such as Walter Keale, be-tween 5 and 8 p.m. Sunday.
Owner Dee Pelekai and general manager Vali Vell of Honuz Restaurant andLounge in Kailua serve up dishes that are best described as “local-stylecomfort food.”
Honuz offers its patrons a bevy of scrumptious delights, including the CrabCake Benedict, served atop steamed spinach and smothered in hollandaisesauce.

What we’re eating at …Murphy'sBar and Grill
2 Merchant St.Honolulu531.0422www.gomurphys.com
Don’t you sometimes think that the best judge of anyrestaurant is not, in fact, the person who calls him-
or herself a food critic, but rather … you? After all, who knows better than you what you like
to eat, where you like to hang, and why the service andthe prices at your favorite restaurants are appealing?
Welcome to the restaurant review that’s written byyou. Each week, we’ll try to catch Honolulu foodies attheir favorite spots to find out where they’re eating …and what they recommend.
“I like to start with oneof Murph's signature soupsor chili, then eat the cornedbeef and cabbage. Whatelse do you eat at an Irishrestaurant?
Although anything onthe menu at Murphy’s isoutstanding, I’d highly rec-ommend the homemade
desserts by Marion Mur-phy. I always like to finishwith some homemade pie. What I’d recommend thatpeople drink there is theKona Longboard. It’s agreat, local beer.”

Bite-size Look at Father’s Day DiningHanging with Dadat Beachhouse
Taking your dad outfor steak and seafood hasnever been easier. Whereprime steaks and top-quality seafood were oncereserved for specialtysteak houses, there’s beena subtle change in the din-ing climate in Honolulu, and great steaks can befound on menus in manydifferent restaurants.
Few restaurants, how-ever, can boast both historyand view. Beachhouse at theMoana Surfrider, however, has both.
With talented localchef Rodney Uyehara inthe kitchen, and a specialmenu made with dads inmind, Beachhouse is agreat bet for Father’s Dayon June 20.
Uyehara has created afixed-price, three-coursemenu that features a 16-ounce roasted prime rib of
beef with either a Mainelobster tail, grilled jumboprawns or king crab legs.Appeitzer and dessert areincluded in the $68 price, and there’s a special treatfor younger family mem-bers – those aged 12 andunder have their own fixedprice menu, and it’s free.
With original hard-wood floors, pastel hueson the walls and architec-turally impressive originalwindows, the view fromBeachhouse is as impres-
sive looking in as it islooking out.
