Dough Portioning and Input

A uniform dough in-feed is the most important element for product quality during production. Whether it’s pre-portioning hoppers, dough elevating conveyors, tub lifters or dough input conveyors in a variety of designs, bmTEC has the right solution ready for you.

ARTISAN ROLL LINE (ARL)

The make up line ARL is perfectly combined with the Rheon V4 Stress Free® Twin Divider. Depending on your requirements, this line can be combined to pro-duce either buns or rolls or for bread preparation. Production can be switched with just a few touches.

SPECIAL ROLL LINE I (SRL)

The make up line SRL is paired with the Rheon V4 Stress Free® Divider with Cross Roller. The possibili-ties it offers extend across a wide range of products. Everything from round rolls, long rolls and small ba-guettes to regular baguettes and traditional square bakery products can be made. This make up line is characterised by its total modularity and can be assem-bled in any combination you desire.

BREZEN ROLL LINE (BRL)

The BRL production line showcases the combination options for pretzel production and can include a lye application unit, an intermediate proofer, an air condi-tioning cell, a freezer, and the pre-packing stage. Our developments, products, and partner companies ena-ble the design and planning of this type of production line. Pretzel preparation can be manual or performed automatically with a pretzel twister.

INDIVIDUAL ROLL LINE (IRL)

The INDIVIDUAL ROLL LINE is a way of automating cur-rent production steps. In the example shown, pretzel rolls (known as ‘lye chestnuts’ in German because of their resemblance to chestnuts once baked) are strewn with lye, cut, and then finally panned. This is just one example of how automation can be achieved with the smallest of changes, as while considerably improving operational efficiency.

There are several options when it comes to extend-ing the Special Roll Line. Shape, length, and pattern can be combined as desired thanks to its modularity. These modules allow you to develop a variety of prod-ucts. And even if the SRL has already been set up, you can easily extend it at a later date.

Tray Unloading Robot

The tray unloading robot makes working with frozen dough pieces, among other things, considerably ea-sier. The idea is to loosen the quick-frozen dough pieces from the baking tray and automatically transfer them into their packaging.

Dough Input ConveyorThe dough input conveyor ensures careful transport of the dough to the volumetric divider. The hygienic design prevents unneces-sary contamination and ensures quick and easy cleaning. Addi-tionally parts such as the band scrapers can be removed easily and cleaned separately.

Pre-Portioning HoppersThe pre-portioning hopper facilitates the uniform in-feed of larg-er quantities of dough into the divider or onto the dough band former.

The hopper can be supplied with a foil coating or in stainless steel or plastic depending on the customer's requirements and the dough quality to be processed.

Dough Pre-Portioner for TubsThe dough pre-portioner was designed to enable easy pre-por-tioning of your dough into tubs. The hygienic design of the dough portioner prevents unnecessary contamination and ensures quick and easy cleaning. Additionally parts such as the hopper films can be removed easily and cleaned separately.

• Hopper capacity of up to 200 kg

• Pre-portioning of portions of approx. 10 kg

• Top edge of hopper approx. 1,400 mm off the ground

• Gentle portioning thanks to star rollers made of plastic

This dough pre-portioner with a transfer belt is designed for pre-portioning quantities of approx. 10 kg. Other portion weights are possible after testing.
