El-Onom- y Of Fruit Preservilisr. '

In a conn trv as pecuaaio adaptedto the raisinig-

- of fruit as Oregon , itis quite necessary to resort to somemeans of preset-Tin- in enter In savetLe waste 11. at otliorwise would impoverifch the i)rotuccr. The bestmeans of doing this is one of the vitalquestions of the Jay. For more thantwenty years the efforts of the mostinterested have been turned in thatdirection, but until about five yearsago, every effort proved a failure. One of the first efforts was a verticalchamber the green fruit being putin at the top and taken out at thebottom being moved continuallyinto increasing heat and decreasingmoisture. This was found to leavethe fruit in a dry and tasteless con-dition, the same as the ordinary dried, fruit of cemraerce. Added to thebad condition of the dried product, was the danger of burning, whichthe inventor was unable to overcomeand in the face of all these difficul-ties, the machine was abandoned. This was the fate of all the plansuntil Charles Alden constructed avertical chamber that received thegreen fruit at the bottom, where itwas subjected for a few minutes toan intense heat, and then elevatediar enougu tor another trav ot Ireslifruit to be placed beneath it, andthus modify the heat. And thus itwas carried step by step to the heightof about sixteen feet, when it wasfound that the fruit was well cured, moist and sweet the starch of thefruit having changed by chemicalaction, to sugar, increasing therichness and the ilavor of the pro-

duct, making it equal, and as thosewho use it contend, better than thegreen fruit.

ut during these yei'rs of experi-iivn- t,

Mr. Alden was not alone. From the patent office at Washing-ton there lias been issued seventy-seve- n

patents for fruit-preservin- g

aparatus of various kinds, only oneof which has stood the test of experi- -

ment. The farmer cares not how lineor plausible the theorv. "What hewishes to know is, does it work well?has its product from year to yearfound a profitable sale in the marketsof the world? has it established acharacter in those markets uponwhich we can depend for a speedysale of our fruits? Then that ma- -

chine must be valuable, and the cost,s lmt a secondary consideration.Valuable articles are always held atvaluable rates, when the indifferentor the worthless can be bought atalmost any terms.

There is one fact more wa wouldmention, ard that is, in the markets, east and west, we see quotations ofbut two kinds of fruit, the commondried fruit of commerce, and theAlden evaporated product. J;:t wecannot dwell or. this picture, and willhurrie-H- y pass over a few othes facts.

Perfection does not come in a moment. Five years have been spentin improving and systematizing theAlden evaporators, so as to econo-mize labor and thus benefit the pro-- d

ace.No sooner had the Alden proved

its utility than many others, envyinghis success, endeavored to produce arival machine. Among the first ofthese was Charles A. Soy n ton, ofVineland, New Jersey. His patentwas granted April 23d, 1S72, und heclaimed in his specifications, formingpart of his letters patent, as follows:

"It (the dryer) consists in theof a rotary rack that con-

tains the fruit-supportin- g shelves,"etc. "Exposing all the fruitto averaging degrees of heat, accord-ing to the distance from the placewhere it was put in. The inventionalso consists of the combination of afiin, by means of which air is drawnthrough the aparatus with the desir-ed effect."

It will be seen that this is an effortto evade the Alden patent by secur-ing "decreasing heat and increasingmoisture"' by artificial means, insteadof the natural current of heated air,by forcing it around a horizontal cir-cle by the use of a fan. The inventorspent much time and large sums ofmoney, but finally abandoned hismachine as worthless havingspent soihb?1j,000 in his experi-ments. This was the legitimate endof the Boynton dryer, and still theAlden went steadily forward, gainingday by day a more exalted reputationamong those interested in the fruitproduct of the country.

But Amercian genius cannot liedormant. Yankee ingenuitv mustmove a little faster than the world, and so Mr. Flummer, of San Francisco, resurrected the Hoy n ton the-ory, with the addition of hot air orsteam pipes. His letters patent bearsdate Dec. 20, 1S7-- two rears andeight months later than the Boy n tonpatent. The Flummer claims, ac-

cording to the specification formingpart of their letters patent, as follows:

"My invention relates to a fruitdryer in which the racks for holc'.ingthe fruit pans, or plates, revolve andcarry the fruit around a horizontalcourse through a heated chamber.4Y' represents a fan that may beused to carry the air around the dry-ing chamber, for aiding and improv-ing the circulation."

Thus it will be seen that the mainthe Boynton and thelentical both revolveie fan to force a circu- -

tried three years ago, and failed. Theotllt'r liaS not et bccn thoroughly j

tcstea as the recent date of itswill fully show.

Unt in the pamphlet of the Plum-met- dryer, page 0, it is stated thatMr. riummer the first man todepart from the old principle andestablish a new one entirely." Thisis certainly a mistake, us our quota-tion from ioynton fully sustains.

)at enough of this. The Aldenwas tried for over thrCr- - years beforeit was introduced int.) California, where it war, in successful operationtwo years before finding its wav toOregon. Its fruit has been tried inevery market and in every climate. It is favorably known and appreci-ated. It has au established marketvalue. There is no longer the neces-sity of experiment, and no risk inmarketing the product.

iSo much in favor of the Ahleu.

IJut we would have it known that wohave no interest in either or any pro-cess. All we wish to do is to so im-

part the little lights we have, thatthe fruit growers of our county maychoose widely and well. Ye knowthat there are big swindles in patentsand many frauds are palmed off onthe unsuspecting for a genuine arti-cle. Our advice would be, let inven-tors do their own experimenting, andwhen proved valuable, it will be am-

ple time to invest. AVo have no sur-plus wealth in Clackamas county toto waste on worthless patents.

Icfore closing, however, one pointwe should notice. Xature does herwork well. The natural course ofhot air is upward, and it requiresno machinery to draw or forceit. Again. Steam engines arerather expensive as well as dangerousluxuries. Who for a moment wouldcontend that it is cheaper to run alive horse power engine than it is tofire a parlor stove? Doshlea, enginesare constantly getting out of repair, pumps fail to work and delay if notdestruction will bo the result.

Appropos to this is another fact. The Ahlen Company of this city haila meeting two weeks ago. Theystudied well the claims of the variousdryers and especially the Flummer. They concluded that in the end itwould be more expensive than theAlden and accordingly ordered twoadditional dryers of the latter, theirformer order having gone forwardsome time ago. And yet we are as-

sured that if one Plummet will dothe work of three Alliens and do it asclaimed, one cent a pound, or even ahalf cent a pound cheaper, that theywill yet invest in a Plummer, and ifthe Plummer agent will set up a ma-

chine ami test it in Oregon City, if itdoes as they claim, they can havetheir cash.

We hope that there will be a fairtrial and that the people of our coun-ty will secure the best. Put theAlden is a fact well established, andthe others, as yet, are but experi-ments.

We have said this much for thereason that fruit is the leading inter-est of our county, and we have adesire to aid every laudible effort tobring about the best results.

Tin-- tViai iiiiilTear ffdty Life.

The wear and tear of city life areasevere fa upon the strongest constitu-tions. The hurry and bustle and anxi-eties of business keep the nervous sys-tem in a state of unnatural tension dur-ing business hours, and in the end im-pair the elasticity and vigor of .vital or-ganization. The penalty of all undueexcitement is subsequent exhaustion. The best remedy for it, whatever thecause, is I Iostetter's Stomach Jlitters.the tonic and alterative properties ofwhich rapidly diffuse themselves thro'the entire system, revive and reinforceevery dormant faculty, and restore anatural condition of body and mind. Some moral reformers insist upon Cuedisuse of all stimulants. This, to saythe least of it, is irrational. All com-petent physieians admit that a pure, medicated st imulant is one of the motuseful remedies known. As a tonic andinvigorant for the aged and languid,Hostetter's I'.itters has no equal. It isthe sheet-anch- or of the feeble and de-bilitated. In all climates and in e cryspecies of disorder which breaks downthe bodily strength, it is an absolutespecific. It is also an invaluable rcme-d- v

for sea-sicknes- s. The nausea andretching caused by the rolling andpiehing of a vessel at sea paralyzes thebodilv and mental energies, and thosewho "sutler from it would do well toresort to the I'.itters as a means of asure and permanent relief. No steamershould sail without a supply of the arti-cle. Among the botanic ingredientsof which it is composed are some of themost powerful blood depurents whiehthe vegetable kingdom al fords.
