BAINGAN BHARTA

Bengali style..! Our favourite!

Ingredients:

1 Brinjal

4 Tbsp Green onion (chopped)

1 green chilli (chopped)

1 tsp. oil

Salt (to taste)

Method:

-Wash a brinjal and pat it dry

-Using a knife, make a slit on the brinjal

-Rub the surface of the brinjal with oil and roast it on gas flame until the skin is

fully burnt

-Set it aside for a while for it to cool down and peel off the burnt skin .

-Mash it very well using a fork or hand

-Add all other ingredients into the mashed brinjal and mix until well incorporated

Enjoy with hot roti — with Sonya Ali.
