This cocktail is a lovely reminder to keep it simple. Use strawberries and pink peppercorns to bring a sweet, peppery flavour to this refreshing, bubbly drink, complement with House of Elrick gin, and top with a sweet champagne. Simply. Perfect.

A variation on this classic drink ought never stray too far from the original. The smooth, delicate flavours of House of Elrick gin are brought out in this cocktail through the complexity of the champagne, the sweet touch of the rose water in place of the usual sugar syrup, and the balance of lemon juice.

The original creation of the Red Snapper. When Fernand Petiot moved from Harry’s New York Bar in Paris in the 1940s he took with him his 1920 creation- the Bloody Mary. The House of Elrick pays homage to the past and to the artist, while honouring a bit of Scotland as well. Lay the foundations of the drink with the usual ingredients of the traditional Red Snapper, but sweeten the drink with coriander leaves and thyme, adding an earthy feel that lessens the intensity of the tabasco. Adding crème fraise tips the drink to the sweeter side, nicely accenting the fennel and pink rose botanicals of House of Elrick gin.

In a pint glass, ice-muddle the basil leaves lightly to break them apart. Add remaining ingredients, more ice and shake vigorously. Double strain into a chilled stem martini glass and garnish with basil leaf, floating on top. To add another level of flavour float a thin ribbon of Pinot Noir grape before garnishing.
