Pattaya Mall, a short 10-minute walk rom Hard
Rock Hotel, is the new kid on the block and a
avourite hang-out or locals and oreigners
alike. This grand complex is a shopping and
dining haven, with a supermarket, cinema
complex, bowling alley and wide range o shops
under one roo.
Snacking seems to be a way o lie here,
and Quest, upon hearing that we were eel-
ing peckish, brought us to Nong Mon market,
a popular pit stop or locals en-route rom
Bangkok to Pattaya to shop or tidbits. Stretching
or one kilometre on Sukhumvit Road along the
way to Bang Saen, the market is a juxtaposition
o sweet, sour, hot and salty avours. We were
spoilt or choice with a vast variety o locally
produced dried seaood products such as dried
sh, squid, and shrimp, hor-mok (spicy steamed
sh cakes) and hoy-jor(deep ried shrimp rolls).
Famed or its eclectic collection o memorabilia and show kitchen, Starz Diner is Hard Rock
Hotels all-day dining restaurant located on the ground oor. Inspired by rock n roll glamour,
it oers indoor and al resco seating. Feast on an extensive a-la-carte all-day-dining menu with

A tramcar takes us to the mostinteresting and attractive parts othe orchard where we get the chanceto pluck rambutans of trees and
hose with a sweeter tooth may want to try the
cal specialty Khao Lam(glutinous rice stued
n bamboo) or banana chips.
Night markets are equally popular or
isurely strolls and takeaway dinners. We head
o an open-air market adjacent to Mini Siam on
ukhumvit Road, which is the smaller cousin
the more well-known Thepprasit Night
Market. The market, which runs rom Monday
o Thursday, has been around or more than
decade and is a good alternative to the packed
eekend crowd on Thepprasit.
Some ve minutes away on the inter-
ection o Nernplubwan Road and Sukhumvit
oad, is a pushcart stall, which serves what locals
all the best Pad Thai in Pattaya. Pad Thai,
staple in Thai restaurant menus, is rice noodles
ir-ried in a light taramind-based sauce with
ggs and beansprouts. What sets this Pad Thai
part rom the others is the addition o pork
ices and deep-ried pork skin so crispy it
rackles. The rice noodles are also chewier
nd springier. A queue orms instantly just as
hey turn on the lights or business. On good
days, they would sell out by 9 p.m, sometimes
clocking more than 200 plates a night.
Since there is always room or dessert,
we stop by or a round o mango and glutinous
rice. J.Noi is one o two stalls along Central
Pattaya Road selling this sticky sweet goodness
topped with coconut milk. With hundreds o
ripened mangoes neatly displayed in rows and
a whi o enticing aroma, it is hard to miss.
From ruit to arm, we continue our
culinary adventure the next day by starting
on a healthier note. A ruit saari awaits usat Suphattra Land, a 128-hectare ruit arm in
Rayong province about 40 minutes drive rom
the hotel. A tramcar takes us to the most interest-
ing and attractive parts o the orchard, where
we get the chance to pluck rambutans o trees
and east on a buet o tropical ruits, including
durians, mangosteens, papayas and mangoes.
For a dose o culture and art in Pattaya,
Quest brings us to the Sanctuary o Truth.
This all-wood mammoth structure, which pays
homage to the ancient vision o earth, know-
ledge and Asian philosphy, commands one
o the most breathtaking sights in Pattaya,
set against the azure backdrop o the sky
and the sea at Rachvate Cape. In act, this art
installation can very well pass o as a UNESCO
heritage site, until I nd out it was conceived in
1981 by a wealthy Thai businessman and till
today remains a work-in-progress which will
take another 20 years to complete. More than
200 Thai and Burmese artists were roped in
to produce intricate carvings and sculptures
adorning the walls and ceilings o the building.
There is also Art in Paradise, possibly
one o the very ew museums where visitors
are allowed to touch and pose with the paint ings.

or shermen. We decide on Preecha Seaood,
eemed as the go-to place by locals. Fish,
bsters, clams and crabs are housed in tanks
t the entrance, ready or hungry diners to
ick and choose. Located right on the beach,
reecha also has an unobstructed view o the
ea, without the hum-drum o boats and beach
makers to mar the dining experience. We have
ir-ried crab legs with yellow curry, steamed
quid with lime and a local delicacy calledSom Tum Puu Mar, or papaya salad with raw
lue swimmer crab.
We leave the place stued, but still

pictures with local celebrities. The tiny shop
sits on Phattaya Klang 16, a narrow walking
lane which branches o Central Pattaya Road.
Owner Toy Poottamongkol uses only
resh chicken rom a trusted supplier, which
he marinates in a special concoction over-
night. Palm oil is used or the deep-rying and
Poottamongkol changes the pot o oil every
two to three hours to guarantee reshness. The
batter orms a nice seal around the meat, which
is cooked by its trapped moisture, sealing the
juices within. The result is ried chicken with
a nice golden tan that is crispy on the outside
and succulent within.
As I sink my teeth into a chunk o juicy
thigh, it eels somewhat comorting to know
that theres so much more to this city than
meets the eye.

It was once a game o kings and its tech-
niques used by Siamese soldiers on the
battleeld. A ew centuries later, Muay Thai
has evolved to become Thailands national sport
and avourite pastime.
Many young Thai men ght, literally, or
a better lie and a way out o poverty. Championsbecome instant national heroes and reap rewards
o handsome prize monies along with the love
o zealous ans.
Muay Thai, also reerred to as the art
o eight limbs, is a tough sport that can make
Western boxing look mild. Compared with the
use o only sts in Western boxing, Muay Thai
utilises an intelligent mix o punches, kicks,
elbows and knee strikes to pummel the opponent
and ultimately knock him out. Matches can be a
bloody spectacle, considering the violent nature
o this sport.
Naturally, it was with a little trepidation
that I set oot into Pattaya Muay Thai Academy
or my rst lesson in the art o Muay Thai.
For most practitioners, Muay Thai is
about health and tness, as well as appreciating
the skill and strategy behind the sport. It was,
ater all, designed or those with smaller builts
to use their limitations as strengths. I certainly
ancied the thought o being able to execute a ew

The spacious academy, with an open
matted training area, was lined with ten punch
and kick bags o varying sizes. A real-lie boxing
ring that screamed start a ght! takes centre
stage and was strategically placed to attract even
passer-bys on the street, who could catch anyongoing action. The mere sight o it was enough
to pump adrenaline through my veins.
A couple oarangs (a Thai term or
oreigners) were in serious ghter mode, throw-
ing their sts at the punch bags while letting
out intimidating grunts at each exhale. Their
toned physiques, revealing months and years
o discipline and hard work, glistened with
sweat. Ive been warned, I thought.
Against such a masculine setting, I
couldnt help but eel a little nervous as I put on
my boxing gloves, which wore the thick smell
o many sweaty ghts.
Stephane Nikiema, a three-time world
champion ghter who also owns the academy,
greeted me. Going by the moniker Diesel Black,
Nikiema had a career in the ring which spanned
close to 20 years. While the academy is training
ground or serious ghters, he also welcomed
amateurs and rst-timers, much to my relie.
I quickly broke into a sweat rom a ten-02

I discovered that Muay Thai was an art
orm to be mastered with grace, channeling
aggression through elegant and swit moves.
Instead o relying on brute orce, it is
only with technique and skill that one generates
power and strength. In other words, I didnt
have to be the bigger and stronger person to
win a ght. Even pint-sized ghters would be
capable o dishing out some serious damage
with a smartly-placed shin kick below the ribs,
or instance.
Practising on the heavy bags, one
could actually hear a well-executed shin kick,
through a satisying thwack on the bag, as
Nikiema demonstrated. My attempts were ar
less impressive, with more mistimed hits that
had me losing my balance or getting whacked
by the merciless bag.
Its no wonder that Muay Thais inter-
national appeal surged ater lms such as the
Ong-Bak trilogy enthralled Hollywood and
audiences worldwide.
The sport has lured people rom all
walks o lie and rom araway places such as
Germany, the United States and Lithuania to
the academy.
Tony Clandestino, an Australian who
picked up Muay Thai seven years ago, checked
into the academy to immerse in a grueling
training regimen or a month. This involved
running twice a day or 10 kilometres a go, and
aternoon sessions which comprised the usual
mix o skipping shadow boxing, punchbags, pad
work and sparring. His aim was to train well
and build his tness or the ghting ring.
It is the highest orm o provocation
or me, said Clandestino, who has ought
competitively in Chiang Mai. I enjoy the
adrenaline rush and the high intensity that
comes with it.
Another ghter, Jemil Baran, is a
procient violin player who hails rom a amily
o musicians back in France. My amily never
liked me doing ghting, he said. But with
Muay Thai, there is no turning back because
o the physical and mental endurance gained
in the process, he said.
Lesson learnt: Never give up without
a ght. Once I persevered through two hours
o non-stop action and got the hang o the
moves, it turned out to be pretty empower-
ing. Dripping perspiration became somewhat
a badge o honor.

During a practice session, I learnt to
hrow basic strikes. Roundhouse kicks, the jab

enemy was Yak, who wore thick pads coveringis orearms, hands and abdominal area and

Nestled in the vast ruit plantation o Suphattra Land, a 40-minute drive rom Pattaya, is
a bee arm where millions o bees are engaged in a sweet operation. The bees here gather
nectar rom the owers o durian trees, working to produce honey that is light amber in
color with a mildly oral taste. And i you were wondering, the honey has no trace o the durian
ruits pungent smell and avour.
Every three days, honey is harvested rom the hives. The removable rames containing the
honeycomb are pulled out rom the hives and transerred into a large centriuge to extract the
honey. Next, bottling takes place on the spot. One hive houses about 30,000 worker bees and one
queen bee, and is capable o producing more than 20 kilogrammes o honey in a good season,
while the average yield is about 12 kilogrammes.
