Prawn, Pancetta, Pesto Spaghettini Ingredients
• 100g Pancetta finely sliced (julienne) • 12 prawns sliced half • Italians Do It Better- Pesto • L’abruzzese Spaghetti 350g • ½ Brown Onion Finley diced • Lemon cut in half • Olive oil • Chopped Italian Parsley • Maldon Sea salt and Pepper
Recipe 1) Put large pot of water to boil, add a couple of generous pinches of salt
2) Prep diced onion, sliced prawns, chopped parsley, julienne pancetta
3) When water has boiled add Spaghettini and stir to make sure it doesn’t
stick, set timer for 5-7 mins
4) Meanwhile in a frypan, heat some olive oil
5) Add diced onion and finely sliced pancetta
6) Cook till the pancetta starts to get slightly crispy around the edges
7) Add the Sliced prawns
8) Sauté till the prawns just start turning translucent
9) Add 2 tsp Pesto
10) Add juice of half lemon and a splash of olive oil
11) Mix well and take off heat
12) When the pasta timer finishes drain pasta and add to the frypan
13) Mix well and season to taste.
14) Serve into a bowl with a lemon wedge on the side
