Writing- Constructed Response
Passage #1: Early Ice Cream
In earlier times, ice cream was very different from what it is today. Today, ice cream is widely available and comes in a
variety of flavors and types. However, early ice cream looked different and was only available to very wealthy people.
Because there was no way to save or store it, the average person could not access this cold treat. One of the earliest
treats that resembled ice cream was created in Persia in 400 BC. This dessert was called faloodeh, and it was made of
noodles and rose water mixed with flavoring and fruits. Only Persian royalty enjoyed this delicacy, because they had
chefs and resources to chill their food. Most people did not have any way of making their food that cold. Around the
same time, Alexander the Great was known to send his men to get snow and ice, which was then mixed with nectar and
honey. Because it did not include milk or cream, this early iced treat was probably more similar to a present-day snow
cone than to what we call “ice cream.” Just like the Persian faloodeh, however, only the rich and powerful enjoyed this
frozen snack. Not everyone had the power to send someone out in search of clean snow and ice. Today, ice cream is
available to almost everyone, but in the past, only the wealthiest had access to this tasty treat.
Passage #2: Ice Cream at Home
The popularity and availability of ice cream greatly increased in the 1900s thanks to refrigeration technology, and ice
cream became a treat for all people. Suddenly, people and businesses could easily store and save their frozen items in
freezers. The rise of cooling inventions changed the way people saved food- -and the way they ate ice cream. By the
mid-1900s, many people could keep ice cream in their own homes, and companies began producing larger quantities.
Larger quantities meant cheaper ice cream and larger demand. The ice cream industry boomed! No longer was this
frozen dessert a rare treat for the wealthy; it was now available to all those who wanted to cool off on a hot summer
day. As more people started eating ice cream and keeping it at home, companies and shops also began to make larger
varieties of frozen dairy products. Some ice cream came on a stick, others came in a carton, and still others came on a
cone. Certain kinds of ice cream were very cheap so that anyone could buy them. Nowadays, most people have
refrigerators and freezers, so it’s hard to imagine a world without ice cream at your fingertips. Knowing the history,
however, may make this frozen treat even sweeter.
