he Indian subconti-nent is famous for many things, one of them being the fla-vour palette and var-iation in the culinary style. It is suggested

that the cuisine of India changes every 100 kilometres, that is, if you travel from one city to another, you will end up surprising your taste buds!

The state of Rajasthan has been a great tourist attrac-tion for many decades now, the interest in visiting an-cient royal palaces is accom-panied by tasting the quintes-sential dessert food. From ‘dal-bati to bajre ki roti & lehsun ki chutney,’ the food is exceptionally flavourful.

One such snack that makes visiting Rajasthan all the more worthwhile is Kachori. You do not need to be living here to know of this delicious and favourite snack of India, after all, it’s been a part of our breakfast and high-tea regime for decades now.

It is said that the Marwari people (of the Marwar re-gion) are responsible for in-venting Kachori – the food of traders. Generations of Mar-waris have been known for trading for business purpos-es. It’s believed that when they travelled to far off areas, they’d often share their love of food with the locals. This is how Kachori, one of their inventions, is now known to the whole country. With time, different versions of Ka-chori, too, got discovered which are now famous from varied regions.

One such famous innova-tion is Stuffed Kachori. While the basics remain the same, the dough of the flour is kneaded and made into small balls, which are then stretched to make hollow from the inside for the show-stopper – that is the filling. The filling can be anything of your choice. Once it is filled, the dough ball is closed and flattened a bit before being

dropped into scalding hot ghee/oil for deep-frying.

Even though there are many known versions of Ka-chori available in the market now, Kota Kachori aka Hing Kachori still steals the show wherever you are. Originat-ing from Kota, Rajasthan, these Kachoris are small and are known to have a good shelf life. The filling is made of urad dal and heeng with red chilli, pepper and salt to blast flavours. It is served with mint chutney and is one of the best tea-time snacks.

The next in line of being the most famous is Pyaaj Ki Kachori. The filling is made of onions and gram flour with spices like red chilli powder, salt, tamarind pow-der and coriander powder. Sweet shops in Jaipur like Rawat Mishthan Bhandar are extremely famous and in high demand for this Kachori.

One might be very sur-prised when visiting Jodhpur because Kachori there is sweet! Yes, the Rajasthanis also made a sweet version that’s called Mawa Ka-chori. The dough is filled with mawa and dry fruits. After deep f r y i n g , the hot Kacho-r i s

are soaked in sugar syrup to sweeten them further. Jodh-pur Mishthan Bhandar is one of the most famous Mawa Ka-chori makers in the state.

Delhi, which is known for its chaat (snacks), has a much different version called the Raj Kachori. Its shell is empty inside and comparatively harder. It is broken from the top to be filled with items like sprouts, boiled potatoes, curd, chutneys, pomegranate, cori-ander and sev (a kind of nam-keen). Raj Kachori is famous for being too filling for one person to finish on their own! No doubt, this variant of Ka-chori has become a staple evening-stroll-time snack for people all over the country.

Spicy Masala Kachori from Gujarat is another sur-prise to your taste buds, it is both sweet and spicy. Ingre-dients like gram flour, pea-nut powder, coconut, fennel, chilli powder, salt, lemon juice and much more are added to make the sweet and savoury filling. The usual style of eating it involves smashing and enjoying its crushed version with curd and boiled potatoes.

Boiled peas are mixed with ginger, heeng, jeera, gram flour, chilli and more to make the filling. Having a strong ginger flavour is why this Kachori is recommended in the cold season. Also, it’s a great tea-time snack that can be served during meals as well with some aloo dom or chana dal.

Paneer Kachori served with aloo ki sabzi or dhaniye ki chutney is popular in Uttar Pradesh. The paneer is mashed with heeng, jeera, ga-ram masala, chilli powder, chat masala and salt. This mixture is filled in dough balls which are later deep-fried. We think the crispy ex-terior and the soft paneer fill-ing is an experience that shall not be missed!

This list can go on and on as there are more variants of Ka-chori in India than ever men-tioned on Google itself ! In case you happen to search on-line, lookup for the non-fried version of Kachori that’s quickly becoming popular as a healthier substitute among the new generation. Call us old school, but we think that the authentic, deep-fried, Gar-ma-garam, Kachori is more appetizing! Who’s with us?

The second sea-son of Digital Baal Mela or-ganised by Fu-

ture Society and LIC has started on Tuesday, June 15. Assembly Speaker CP Joshi launched the second season of Baal Mela and on the digital plat-form in the evening, Minister of State for Labor Tikaram Julie interacted with the children. About 200 children joined from

different districts of the state and the ses-sion started with a question from Jhanvi

Sharma, the team lead-er of Digital Bal Mela about why child labour is illegal. The children

not only understood the real reason for the illegality of child la-bour, but they also

sought suggestions from Tikaram Julie to end it.

On the second day, i.e. Wednesday, June 16, the chil-dren looked very excited in the ses-sion being organised for ‘Baccho ki Sarkar Kaisi Ho’. There was a conversation with BJP MLA Ramlal Sharma where he talked about the rights of children to vote. During the ses-sion, the curious chil-dren asked various questions like, ‘Why
