Attractions around Roald DahlPlass include the superb continental market, offering a largearray of produce from all over theworld, sea shanty singers, livemusic on the bandstand. Returning for a third year completewith sand pit, beach huts and hilarious shows. This year the festval hosts the Extreme Sailing SteriesTM. The organisers have announced a bigger than ever, family friendlyevent, as they welcome the Extreme Sailing Series to Cardiff.The UK leg of the most exciting inshore racing series will provide ahigh octane centerpiece to thisyear’s festival.

The NFF British Fish Craft Championships® 2012 will be held at Roald DahlPlass, Cardiff Bay, Cardiff Cardiff on Sunday 2nd September 2012 and isopen to anyone involved in the fish, poultry or game trade.

Registration is open at 8.30am. All entry forms must be received by 15th August2012, no entries will be accepted on competition day. Competitions startat 9.00 a.m. Registration is open at 8.30 a.m. The competitions will test the skills that are necessary in the preparation of fishy andpoultry in readiness for use by the final consumer. Those skills normally provided free ofcharge by fishmongers when selling fish to the general public. The judges are allexperienced fishmongers, drawn from all parts of the country. While naturally taking intoaccount regional variations, they will award points for performance, presentation, hygieneand general appearance. Tasks must be completed in strict order. Competitors must wear a cleancoat, shirt, tie and hat and abide by the current Food Hygiene Regulations.No jewellery to be worn unless taped. All knives must be covered and keptin the changing rooms when not in use – preferably in a locked case.All competitions are stand alone – you may enter as many as you wish up to amaximum of six – excluding the Craft Challenge sponsored by Morrisons – which is aseparate competition. All entrants for this years championships will receive a DiamondJubilee pin badge on the day, commemorating the 60th Year of the Championships.

TIme allowance 10 minutes.

1 You will be provided with a box of mixed fish, garnish and ice. 2 Each box contains similar species and garnish and you can

mount your display on the box or lid. The object is to produce an eye catching display to entice a customer to buy.

3 You may prepare the fish if you wish - cut, steak or fillet and use all or part of the fish provided.

4 No other garnish or other artefacts may be used. The judges decision is final and all fish provided must be used in some way.

Seachill Portion CutChampionship 2012Open to anyone in the fish trade who prepares fish for retail, cateringor processing trade. This competition which runs throughout the day,will appeal to those who are confident of cutting accurate portionsfrom a boneless and skinless loin of fish. All fish is kindly provided bySnowden & Co, Cardiff.

1 You will be given a piece of farmed salmon, farmed halibut or tuna loin.2 You will then be asked to cut it into 3, 4 or 6 equal sized portions the weight to be cut will be announced by the judge at the start of each round.3 You will only cut the number of portions required by the judge at the start of round, portions then weighed.4 The top four competitors who cut closest to the required weights will go on to the final at the end of the day.

NFF Gold MedalThe National Federation of Fishmongers is awarding medals forexcellence of skill and craftsmanship. All competitors, including theFish Craft Challenge sponsored by Morrisons are marked out of 120points and there are three judges per competition (except the Collageand Portion Cut Competitions).Each competition therefore has a maximum of 360 achievable points.The N.F.F. Medals will be awarded to any competitor in any of theCompetitions including the Fish Craft Challenge sponsored byMorrisons but excluding the Collage, Portion Cut and SalmonChallenge Competitions and are awarded as follows:

• Bronze Medal scores between 300-320 points• Silver Medal scores between 321-340 points• Gold Medal scores 341 or more

This competition is open to anyone, any age and youmay enter up to two of the other competitions if you wish. Points will be awarded forskill in preparation as well as clean and tidy workmanship.
