Mini Christmas Cakes 1

These delightful mini fruit and nut topped cakes are perfect for

giving as a festive foodie present. Simply wrap in clear cellophane and tie with gold ribbon or place

in small gift boxes.

Preheat the oven to 150C/300F/gas 2. Grease and line the base and sides of a 20cm square cake tin with a double

thickness of greased, greaseproof paper.

Place the butter and sugar in a large bowl

and cream together until pale and fluffy. Gradually beat in the eggs. Sift together the flour and spices then fold into the creamed mixture. Fold in the lemon zest, dried fruit, glace cherries and nuts and mix thoroughly.

Spoon the mixture into the prepared cake tin and smooth the surface. Use the back of a metal spoon to make a slight dip in the centre (this will help to give an even

rise). Bake in the preheated oven for 3¼ - 3 ½ hours or until firm to the touch and a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tin.

When the cake is completely cold, use a sharp knife to cut it into 9 smaller square cakes. Brush the sides of each cake with a little apricot jam. Divide the marzipan

into 9 pieces. Dust a surface lightly with icing sugar and roll each piece out to a strip long enough to go around each cake. Wrap the strips around the cakes pinching the ends together to seal. Top each cake with a selection of cherries, nuts and apricots. Tie a ribbon around

each cake if liked.

Ready in 4 hours (plus cooling)

FOR THE CAKE

• 250g butter, softened

• 250g dark muscovado sugar

• 4 medium eggs, beaten

• 350g plain flour

• 2 tsp ground mixed spice

• ½ tsp ground cinnamon

• ½ tsp ground cloves

• Finely grated zest of 1 lemon

• 800g mixed dried fruit

• 100g glace cherries, rinsed, dried and

chopped

• 100g chopped mixed nuts

FOR THE DECORATION

• 750g marzipan

• Icing sugar, for dusting

• 4 tbsp apricot jam, warmed and sieved

• Mixed coloured glace cherries, walnut halves, Brazil nuts and chopped dried

apricots

Acupuncture Acupuncture uses the insertion of fine needles into particular points in the skin. Where the needles are placed will depend on your condition.

Acupuncturists believe that stimulating these points can correct imbalances in the flow of Qi or energy (see also

Traditional Chinese Medicine below). Good for: pain relief (it is

sometimes used post-surgery), menstrual and menopausal problems, tendonitis, urinary problems, sports injuries.

Chiropractic Chiropractors work to correct dysfunction in the joints and muscles and work particularly on the spinal column, where

problems such as neck and back pain can originate. Through manual treatments, such as spinal manipulation and

adjustment, it can treat and help to prevent mechanical disorders of the musculoskeletal system.

Good for: headaches, lower back pain, neck pain, carpal tunnel syndrome, Scoliosis, stress.

Homeopathy Homeopathy uses highly diluted substances - usually given in tablet form - which

help to trigger the body's own natural system of healing. Based

on the principle of treating 'like with like', the tablets contain

minute amounts of substances, which in large doses would trigger a reaction, but in minute doses actually help to alleviate

the condition. Good for: allergies, upper respiratory tract infections, bronchitis, hay fever, pre-

menstrual syndrome, sinusitis.

Naturopathy Naturopathy uses a

combination of natural therapies to help the body to heal itself. Therapies include diet, hydrotherapy, osteopathy, herbalism, homeopathy and

exercise, which can all help the body to cleanse itself of toxins and alleviate stress.

Good for: chronic and acute conditions, such as digestive problems, chronic fatigue, hormonal problems, anxiety.

Osteopathy Osteopathy is almost considered mainstream these days and you can often be

treated on the NHS. Working on the bones, joints and muscles, osteopathy uses manipulation, massage and light movements to holistically re-balance

physical, mental and emotional problems. Good for: back pain,

pregnancy-related problems, sports injuries.

Traditional Chinese

Medicine (TCM) TCM works on the belief that

illness is caused by disharmony (or dis-ease) in the body due to an imbalance of the flow of Qi or energy. Qi is made up of two forces, yin and yang and when

one of these forces dominates, then illness occurs. A combination of Chinese herbs and acupuncture is usually

used. Good for: asthma and chest conditions, skin conditions such

as eczema and rosacea.

What to expect from a

consultation During the first consultation with your therapist you will be asked a lot of questions about your overall health, not just about your particular condition.

This is because complementary therapists look at the body as a whole, not just one part of it. Expect to answer questions

about your habits, diet, medical background and family health, as your therapist will need a full picture before they can decide on how to treat you.

Remember to always consult your GP about your condition and don't stop taking any prescribed medicine without discussing it with your GP first.

So, can you really see it from

space? Unlikely, since even

the first Chinese astronaut

could not confirm it. Yet,

steeped in 2000 years of his-

tory and a UNESCO heritage

site, the Great Wall fires up the

imagination with images of

invading hordes and brave

soldiers fighting for emperor

and country.

It all started with disjointed

earth defences built by war-

lords. When the first emperor

unified China around 200 BC,

all he had to do to protect his

borders was connect the exist-

ing sections. Extended over

time, eroded, destroyed and

strengthened, much of what

we see today dates back to

the Ming dynasty who came

to power in the 14th century,

conscripting a huge labour

force to build and rebuild with

stone and brick. Their succes-

sors, the Manchus, did not

need to breach the wall. By

1644, the peasants were starv-

ing and the gates opened by

rebels.

As discontinuous today as it

was in the past, the wall in-

cludes natural defences such

as deep gorges and cliffs

alongside man-made fortifica-

tions, over 800 of them,

though not all visible or acces-

sible, in the Beijing province

alone.

Most visitors head for the

Badaling section but north

east of the capital, Mutianyu is

quieter and just as spectacu-

lar, at the end of a scenic

70km drive through lush

countryside sprinkled with

farmhouses, meadows and

orchards. Wild flowers line the

road, all purple and go ld, and

weeping willows dip their

roots in natural springs. When

the mountains begin to rise,

higher, closer, excitement

grows with every bend of the

road. In the grand scheme of

things, Mutianyu is merely a

dot but beautifully restored;

snaking up and down on a

vertiginous ridge, it takes your

breath away.

Here the wall is rather special,

reaching nearly eight metres

in places, up to five metres

across the top, with unusual

perpendicular extensions, 22

towers, spaced every 100 me-

tres or so, a triple-towered

gate and crenulat ions on the

inner and outer parapets so

arrows could be shot in both

directions. Arrow’s nock, bull’s

horn ring, eagle flying belly

up, the names of defences

send shivers down your spine.

Only the brave attempt the

long climb to access the wall -

most visitors take the cable

car and save their energy for

the top. A wise move, for up

there it’s a rollercoaster of a

trek, all steep steps and slip-

pery slopes. Yet gazing up to

the pass and the highest

tower, etched into a pure blue

sky, you feel on top of the

world. The sun beats down,

the shade is scarce but the

views are fabulous; rugged

mountains bristling like a

dragon’s back, shadows

creeping across the slopes,

precipitous cliffs and spring

blossom on the trees. Now

and then, a gust of wind

sweeps over the ancient

stones and you can almost

hear the clicking of armour

and voices from a distant past.

Far below, the tourist stalls

beckon with cool drinks, pot-

tery and Great Wall souvenirs,

but on the ridge, there are no

distractions, just an unforget-

table panorama and 2000

years of Chinese history.

China more than doubled its length? After a five

year survey by state archaeologists, it is now estimated to be

over 20,000 km, and rising. Only 8% is reasonably well preserved but it is

still considered the largest man-made structure on earth.

So what can you do if your

trees and those of

neighbouring properties

are curren tly covering your

garden? Rather than letting

them drive you to distrac-

tion, turn them in to gar-

deners’ gold: leafmould. If

you are after a comp letely

environmenta lly friendly

and very effective soil con-

ditioner or mulching mate-

rial, leafmould is the an-

swer. In environmental

terms it’s great as home-

made leafmould doesn’t

need transporting around

the country as many mate-

rials do. Leafmould means

wheelbarrow yards, not a ir

miles !

If you have the space, make

yourself a leafmould cage.

Simply drive four trea ted

softwood stakes into the

ground, each stake mark-

ing out one corner of the

‘cage’. The stakes will need

to be about 1.5m (5ft) long

so that they can be driven

in really well, to a depth of

1-2ft, leaving 3-4ft above

ground. Then attach some

galvanized chicken wire to

the stakes to create the

sides of the cage and cram

the cage full of leaves - if

they are moist, so much

the better, however if not,

add a watering can of wa-

ter to the heap of leaves,

pouring some in after each

six inches or so of leaves. If

you want to speed up the

process you could add a

leafmould activator

(available from garden cen-

tres and some ma il order

catalogues and websites).

Most deciduous leaves rot

down well, with those f rom

oak and beech trees being

the best. But those which

fall from f ruit trees, garden

shrubs and climbers and

indeed most deciduous

trees work well too.

When you collect up the

leaves, try to avoid includ-

ing too many twigs or ever-

green leaves as these take

much longer to rot down

than deciduous leaves.

Tough, leathery leaves

such as those from syca-

more, horse chestnut and

plane are also best

avoided. Most of us collect

leaves using a spring-tined

rake and although this may

not be the quickest

method, it does allow you

to avoid some materials

more easily. A leaf sucker

or a leaf blower will speed

things up massively but

will of ten mean you end up

with more debris su ch as

twigs and stones.

lawn are a wide-ranging

Whether they come from trees in your own

garden or from a neighbour’s, the deluge

of leaves that falls at this time of year is often

enough to make even the most level headed, tree-loving

gardener eye up a chainsaw. I still recall (with a good degree of fondness)

my previous house; surrounded by trees, in the winter it was quite light, in

summer it was dark because of the leaves on the trees, and in the autumn,

it was under an almost impenetrable carpet of fallen leaves.

the best ways to dea l with

this is to use the lawn

mower rather than a rake

or special mach ine – just

mow the lawn with the

leaves on it. The collection

bag on the mower will then

be full of a b rilliant mix of

chopped leaves and even

the slower-to-rot-down

types will rot speedily as

theyhave been chopped

up quite finely. Mixed with

the lush, high-nitrogen

grass clippings, the whole

process is sped up.

If space, time or money are

short then you can also

make leafmould in a bin

liner or bin bag. Choose a

good quality bin liner and

cram it full of leaves, again

adding water and/or acti-

vator if you wish. Then stab

a few holes in the bag with

a garden fork, loosely fold

over the top of the bag and

weigh it down with a brick.

Bin liners full of leaves are

certa inly not an attractive

feature, but can be hidden

anywhere that you have

the space, such as the shed,

garage or greenhouse.

Whichever method you

use, you should have a use-

able product in 12-18

months, but leave it a bit

longer and it will be even

better. Leafmould will help

to improve the moisture-

retaining capacity of a

light, sandy soil and help to

increase the aeration and

drainage of a heavy clay

soil. It also makes wonder-

ful mulch that can be used

on flower beds and bor-

ders, the vegetable p lot,

around trees and shrubs

and around all your fruit as

well. It’s not of ten you get

something for nothing, is

it? So take advantage of a ll

those leaves while you can.

This doesn’t necessarily mean brightly coloured cases or novelty items that plug into laptops’ USB ports, although of course there are plenty of those to choose from; novelty USB items are this decade’s equivalent of hilarious musical socks, and best avoided.

In many cases accessories can make gadgets even more useful. Take the Eye-Fi Connect memory

card, for example: it’s a camera memory card with built-in Wi-Fi, so it turns any camera into a connected one for instant uploading. It’s not as expensive as you might expect - at the time of writing a 4GB Eye-Fi Connect X2 is £32.25 on Amazon - and it will

genuinely delight any camera fan. Just make sure it’ll fit: Eye-Fi cards are designed to fit in SDHC slots, which you’ll find in most but not all modern cameras.

Another camera favourite is the Gorillapod, an innovative camera tripod that can hang on to almost anything. It’s available for everything from smartphones to enormous digital SLRs, and prices start at around £10. Unlike traditional tripods it doesn’t need to sit on the ground: you can wrap it around lampposts and tree

branches, hang it from tables or put it on your head.

There are no shortage of useful accessories for iPads, and one of the best is Logitech’s Ultrathin Keyboard (around £75), which essentially turns an iPad into a small laptop. If you’d rather spend a

little less, there are tablet styluses for writing notes and

drawing for as little as £6.30 (Griffin’s Apple iPad Stylus), rising to around £22 for the Pogo

Sketch Pro. Such styluses work not just on iPads, but any touchscreen device including rival tablets and smartphones.

As you’ve probably noticed in the shop, Apple owners are particularly well served by accessories: you can’t wander round the supermarket without tripping over a pile of iPhone alarm clocks and speaker docks. Such items make great presents, but be careful which ones you buy: with the arrival of the iPhone 5

in September, Apple dumped its existing dock connector in favour of a smaller connector called Lightning.

Accessories designed for the

iPhone 4 and earlier will still work, but they’ll need an expensive adapter for the

iPhone 5, updated iPods and updated iPads - and in some cases the cost of the adapter may be more than the cost of the accessory. It’s definitely worth checking which version

the person has before spending any money - advice that also applies to very useful multi-device chargers such as the Bluelounge Refresh (£69.99), which can charge multiple gadgets simultaneously.

If you’re still stuck for ideas, there’s always the famous answer to the present for

someone who has everything: a box for them to put it all in. Rather than a box we’d recommend a bag, and we particularly

like the Unit Portables bags

(£59.99 from Muazo.co.uk): while they’re designed to accommodate gadgets, chargers and their accessories, they’re smart, stylish and available in a range of eye-catching colours.

Buying Christmas presents for gadget fans can be difficult, because they don’t tend to wait for

special occasions to splash out - but before you reach for the stand-by option of perfume or

socks, it’s worth thinking laterally. The answer to the question “what do you buy for the

person who has everything?” is often “accessories”.

and it’s

definitely to be treasured. With 600 of the best to flick through,

you’d better avoid doing

it in one sitting, or you might end up Punch

drunk.

Looking back over the last twelve months, you would expect cartoons on the Olympics, the Diamond Jubilee, the

recession and everything else in-between. This

multi award-winning cartoonist captures the spirit of the nation in his own inimitable way. It’s a

subtle mixture of wit and satire that will have you chuckling

into your pudding. His almost haphazard drawing style is

quirky and suggestive, making you feel like he’s capturing British life on the fly. A

brilliant way to look back over the year.

Suicides. Andy Riley Poor bunny. Here we are, taking pleasure in his impending pain. It sounds terribly fiendish and it’s

definitely not for Peter Rabbit fans but Riley’s cartoons somehow manage to maintain a

touch of innocence in the macabre. The premise is simple and yet Bunny’s plans to end his days

become more and more elaborate and ingenious as the book goes on. It brings new meaning to

the phrase ‘not a happy bunny’. I guarantee that you’ll laugh out loud.

It was in 1628 that the lead-

ing physician of his day, Wil-liam Harvey, first demon-

strated that blood circulates round the body. Using equip-ment developed by Harvey,

Sir Christopher Wren, better known as an architect, was

the first man to inject fluids into the blood of animals 29

years later. By 1666, while London

burned, Richard Lower car-ried out the first successful

blood transfusion between two animals. But taboos and lack of knowledge meant

that it was another 150 years before blood transfusion

between humans began. A Dr James Blundell used trans-

fusions when mothers haem-orrhaged after childbirth.

Even then, all these early experiments and uses of

blood transfusion were met with disastrous results and no one could figure out why.

It wasn’t until the beginning of the 20th century that Dr

Karl Landsteiner discovered that not all blood was the

same, identifying four main groups; A, B, AB and O. This break through was made just

in time for the Great War when blood was used to save

the lives of soldiers. It was also discovered that the

blood would last longer if put

in a fridge.

The first record of blood do-nation was by the British Red Cross who volunteered in

1921 and in effect created the first voluntary blood ser-

vice. It wasn’t long before blood donation became a

well-known process and by 1937 both America and Brit-ain had set up their first

blood bank. The timing was fortunate, for another world

war was just around the cor-ner.

During the war, blood dona-tion played a major role in

saving the lives of soldiers and civilians. Blood centres

were set up across Britain and people were encouraged to do their bit for their coun-

try and give blood.

The Edinburgh Royal Infirmary played a major role

in the develop-ment of blood

transfusion and donation in the

run up to and dur-ing the Second World War. The

first Blood Transfu-sion Service was

established there in 1930, followed by

a blood bank in 1938 and the

first plasma processing cen-tre in 1943, all based in the

Edinburgh hospital. The first nationally organised

transfusion service in Scot-land can be traced to the first

meeting of the Scottish Na-tional Blood Transfusion As-

sociation (SNTA) in 1941. The SNBTA was responsible for the management of SNBTS

until the NHS reorganisation of 1974.

SNBTS continues to this day to represent the interests of

blood donors in Scotland and works within NHS Scotland

to provide the best care for patients and donors in Scot-

land.

My life was so busy that I

barely had time to breathe

much less think about what

was next for me. This busy

life is another form of clut-

ter that keeps us from pur-

suing anything. How can we

stop this vicious cycle and

find out who we are and

what we want.

What I have realized is that

we all have desires but we

don’t know how to take the

babysteps to achieve what

we want. When I think

about how I can help you

discover your dreams; I go

back to what has happened

in my life. My desire is to

help you find the peace that

I have and how I discovered

who I am. You can do this

too.

If you had told me several

years ago that I would be-

come a writer, mentor,

county commissioner or a

business woman; I would

have told you that you were

crazy because I didn’t have

time to do any of these

things. Who me? Who am I

to even think about any of

this? I didn’t or couldn’t

even go to these places in

my mind. Even in my wild-

est dreams these things

never occurred to me. My

mind was so full with just

trying keep my head above

water; how could I step out

of my comfort zone to do

anything more than I was.

It was only when I got rid of

the stress from a cluttered

chaotic life that I could hear

what was being put in my

head. My sweet darling calls

them God Breezes. He told

me about these breezes on

our very first date. I will

never forget how he de-

scribed them to me. Imag-

ine that God is that picture

you have seen of that ole

north wind and that you are

sitting in a tiny boat on a

still water. Now think about

that old gentleman puffing

out his cheeks to blow a

breeze in the direction of

your little boat. You get to

choose if you are going to

harness that breeze or not.

It is up to you to put up

your sails and allow the wise

wind to take you where you

are supposed to go or your

other choice is no choice.

You don’t have to do any-

thing; you don’t have time

to put your sails up; so you

do nothing and sit dead in

the water.

Isn’t that how we feel inside

anyway; a dead unfulfilled

useless going through the

motions daily existence.

This is such a sad way to live

because we know there is

something else out there

but we don’t have a clue

how to put up our sails to

try to capture the God

Breeze.

These words are going to

help you find the strength

to pull up your sails and find

your direction. If I could do

this then you can too. All it

takes is a willingness to FLY!

Finally Love yourself.

Choose a theme Choosing a theme brings unity to the overall look. It should suit your house and the way your family celebrates the festive season, whether laid-back and relaxed, sophisticated or formal. For some, that might mean a traditional, living fir tree and a colour theme of red, green and gold. For others, a kitsch fake tree with fluorescent ornaments; or perhaps a minimal, modern style with pure silver and glass.

Dress the tree Start by winding it with lights, making sure they’re evenly distributed. Next, drape your garlands, again aiming for evenness and an impression of generosity without overloading the tree. On small or slim trees, use slender garlands; on larger trees use heavier, fancier garlands. Last, hang your ornaments, with the largest first, filling in around them with smaller ones. Place some nearer the trunk for a sense of depth and interest.

Hang a wreath For some, the making of a family wreath using foraged leaves, flowers, seeds, nuts and fruit is a significant part of the holiday season. Alternatively, ready-made examples are available in any style imaginable, from classic to contemporary, heart-shaped or circular, small or large, utterly simple or lavish and complex.

Make some decorations Home-made Christmas decorations can be as elaborate or simple as you wish. Multi-coloured paper chains are the ultimate in family favourites, as are cutwork paper stars and clove-studded oranges. How about pom pom snowmen, peg-doll angels or glitter-covered pine cones? Or mini stocking shapes cut out of felt and ginger biscuits to hang from the tree? It’s all great fun and will create happy memories for years to come.

Wrap your presents Transform present-wrapping from a chore to a pleasure by taking a little extra time and trouble. When they’re piled under the tree they will look so much better if they’re colour-coordinated and criss-crossed with ribbons and bows. Even brown paper or newsprint looks lovely if adorned with a home-made label, while sequins, feathers, glitter, stamped designs and wired beads can all provide additional allure.

Sort out your cards It pays to establish a system as soon as the cards start arriving. Clear a shelf or two, and arrange them close together, large at the back and small at the front, in neat rows. Smaller cards can be tucked around a mirror or picture frame. An alternative is to staple them to ribbons (weighted by a bauble or pine cone) to hang in rows from a

mantelpiece or along the side of the staircase.

Create displays Nothing says Christmas like poinsettias in pots, scented candles on the mantelpiece and ivy, holly and mistletoe draped over every available surface. Now’s the time to dig out that special table runner and your best crockery, glassware and cutlery for an eye-catching table display, finished off with a dish, tray or platter filled with greenery, candles and other festive decorations.

Look after your tree Buy a tree that’s as fresh as possible. As soon as possible, cut

half an inch off the bottom of the trunk, to help it absorb water.

Trim away low-down or interior branches that you don’t need.

Put the tree in a stand that can hold plenty of water, and never let it run out. Avoid standing the

tree in a sunny window or near a radiator.

Eye Care For All The Family

East Neuk Playgroup and Pre-school Nursery was established

in 1976 by a group of parents and we celebrated our 35 year anniversary last year. We offer a child care and pre-school educa-tional facility for children be-

tween the ages of 2 years 6 months and 5 years with govern-ment funding for children aged 3 and over.

We run morning playgroup ses-sions from 9.15am – 11.45am and we offer a further service from 11.45 – 2.30pm on Tues-

days, Wednesdays and Fridays. We can also take children from

8.45am prior to the morning session.

As a charity we are primarily run by a parents committee and we rely heavily on fundraising events and parent involvement.

We offer a stimulating fun range of activities such as baking, craft afternoons and most recently a pyjama and movie afternoon for

the last day of term. We regu-larly take the children out to shops. Library and local parks we also have an enclosed garden for

children to play safely outside. We are inspected by HMIE and

Care Inspectorate and we follow

curriculum for excellence just as council run nurseries do.
