How to Use a Knife and Protect Fingers

Hold the knife in dominant hand and pinch the blade between the thumb and index finger.

Wrap the other fingers around the handle of the knife as illustrated.

How to Sauté Vegetables and Meats

Set the stove burner on med/high heat, using a small amount of oil in pan for vegetables, none for meats.

Cook the onion until translucent, peppers until soft and mushroom until ½ size.

Brown meat until all pink is gone and thoroughly cooked.

How to Whisk an Egg

Use a wire whisk or fork to break up eggs in a bowl and move whisk or fork in a circular motion to blend yolks and whites.

Eggs will be blended fully when they are completely yellow in color

• 1 lb. Neiman Ranch breakfast sausage• 12 free range eggs• 4 cups 2% milk*• 8 oz. oyster mushrooms• ½ c. cherry tomatoes*• 1 cup fresh spinach*• ½ green pepper*• ½ c. yellow onion*• 1 small loaf French bread • Cooking spray*

Organic products recommended

Kitchen Items:

10 inch sauté pan• Large Whisk• 9x13 baking pan• Sharpened chef’s knife• Cutting board• Mixing bowl• Measuring cup• Spatula• Timer

Step by Step Recipe Directions

1. Cook pork sausage until browned

2. Chop onion, mushrooms, peppers and spinach. Then sauté the onion, peppers and mushrooms in a pan.

3. Whisk eggs and milk together in a bowl.

4. Tear up French bread into 3-4 inch pieces.

5. Spray a 9x13 baking pan with cooking spray, lay cooked sausage, onions, peppers, and mushrooms on top of bread layer.

6. Add egg to mixture evenly, then top with spinach, sliced tomatoes and cheese.

7. Place covered pan in refrigerator for 4 hours or overnight. Cook in preheated oven at 350 degrees for one hour.
