Preface IrecentlyfinishedalengthyanddetailedbiographyofJuliaChild,whichhas stimulatedme intowanting to getherfirst cookbookandgivesomeofherrecipesatry.EveryrecipeinJulia’sbookwastriedoutmultipletimesbyvariouspeopleinordertoensurethatordinaryfolkswhoreadherbookcouldduplicateit.Shebeganworkingonherbookintheearly60’swhilelivinginFrancewithherhusband.Becauseshewasawomanshewasdeniedforatime,thefinalcredentialfromCordonBleu;womenwerenotcreditedwithhavingtherightsensibilitiestobeabletobeaFrenchchef.Interestingly,Juliadidnotcreditherselfwithbeingachef,justsomeonewhovaluedtheprocessofcookingandsharingamealwithfamilyandfriends.KateisalotlikeJulia.Thisrecipebook,Ihopewill serve topullour family together.Howbetter todo this thanwithfood?Whatbetterwaytocelebrateawonderfulfamilyandallthegiftsthatweshare? Directions Heatovento350degrees.Putbutterin9x13bakingpan,meltinoven.Inbowl,beateggs.Addflour,milk,salt,&

bakingpowder,mixwell.Addcheese,spinach,andonion,mixwell.Spoonintodish.Sprinklewithsaltandpepper.

Bake35minutes.Letcoolfor45minutesandcutinto1”squares.

Squeeze lemon on lamb chunksMix together oregano, red cooking wine, sliced garlic, salt, pepper and small bottle of olive oil.

Mix in 1/2 to 3/4 cup cut kalamata olivesMix in cup of crumbled feta cheese

Mix in cup of sliced arugulaMix in capful lemon oil (you can use lemon juice, but not as

good, and will need to use 1/8 to 1/4 cup)Salt, pepper, olive oil for taste and texture.

DirectionsCombine all ingredients ina bowl andmix thoroughly.Apply tofish,chicken,meator vegetables. Experimentand have funwith differentdried chiles.Brown sugar isnicebutnotnecessary.

Somewhere where the MiddleAtlas meets theSahara in Morocco, I discovered kefta, a lambmeatball.Therestaurantwasaporchacrossfromthebusstation.Thesheepheadsfortherecentcullwerehangingfromwall.Eachhadseveraltrailsofclottedbloodstreamingfromthem.Thekeftawasservedinalargebowl.Theremusthavebeen50.Ihadhiredadriverandwesplitthemeal.ItwasauthenticMorocco.Ilovedit.IfinallyfoundarecipethattakesmebacktothatdustyroadsideatthestartofBerbercountry.Thisisexcellentwithgroundlamb,beeforpork.Mytakeismoreofaburgerthanameatball.Havesomefunwiththis.

Meanwhile, for the cucumbers: Mixthesugarandvinegarinabowl,stirringwell.Addthecu-

1poundfreshberries2cupswhippingcream1poundwhitechocolate,brokenintopieces(use smallerberries: raspberries,blueberries, redcurrants,wild strawberriesorstrawberriescutintosmallerpieces,blackberries–spreadevenlyonbakingsheetandfrozen.Canalsouse1poundfrozenmixedberriesorraspberries)

Directions

Placechocolatepiecesandcreaminadoubleboilerorboiloversimmeringwaterfor20minutes,stirringoccasionallyuntilthechocolate ismelted and combinedwith the cream. About 5

minutesbeforethechocolateisfinished,removeberriesfromfreezer.
