Easy Candy Cane Cookies
Recipe By: Jill @ Enchanted Homeschooling Mom
Ingredients: • Your favorite sugar cookie recipe (even a boxed cookie dough would work)
• Red food coloring
Instructions: Heat your oven to 375 degrees. In a large bowl mix together your favorite sugar cookie mix until your
dough forms. Divide the dough into half. Stir the red food coloring into one half of the cookie mix (mix
very well). Then place in the refrigerator for 30 – 60 minutes.
After the dough has had some time to harden and cool down take roughly 1 teaspoon of dough from
both the plain dough and the red dough. Twist each teaspoon of dough into a 3-5 inch rope. Then place
then side by side on an ungreased cookie sheet. Gently press the ropes together and twist. Make sure to
curve the top of your dough to make the candy cane handle. Bake for roughly 7-9 minutes. Cool for 5
minutes and then transfer to a wire cooling rack.

Buckeyes
Recipe By: Jill@ Enchanted Homeschooling Mom
Ingredients: • 3 cups of powdered sugar
• 1 cup of peanut butter
• 1/2 stick of unsalted butter
• 1 tablespoon of vanilla
• roughly 3-5 cups of semisweet chocolate chips
• a box of toothpicks
• (room in your freezer)
Instructions: Line your cookie sheets with wax paper. In a bowl beat together the sugar, peanut butter, butter and
vanilla using an electric mixer (or if done by hand mix until you get a crumbly texture). Then take the
mixture and roll into 1-2 balls. Place the balls of the mixture onto the wax paper lined cookie sheets and
place a toothpick into the top center of each ball. Place the cookie sheets into your freezer for 60
minutes. Once the 60 minutes has passed it’s time to begin melting the chocolate mixture. Using the top
of a double boiler, pour 1 - 2 cups of water into the bottom of the double boiler and begin to simmer.
Then place the semisweet chocolate chips into the top of the double boiler (stirring often). Once the
chocolate is fully melted hold the ball mixture by the toothpick and dip into the melted chocolate (you
can use a fork to help you keep the ball mixture stable if you find this is a problem). You can leave a
small “hole” of the peanut butter mixture to show the top of the Buckeye or you can cover it up
completely. Personally I have always made them completely covered. Return the Buckeye back to the
wax paper lined cookie sheets. Once you have made all of your Buckeyes loosely wrap with saran wrap
and put back into the freezer for 1 hour. Then move the Buckeye’s to a storage container and keep in
the refrigerator. Enjoy!

E.H.M. Breaded Chicken Tenders
• 1 to 1 ½ pounds of defrosted Boneless, Skinless, Chicken Breasts, cut into stripes (tenders)
• 1 to 1 ½ cups of Italian bread crumbs
• 3 tablespoons of grated parmesan chees
• 1 to 2 eggs
Preheat the oven to 375 degrees. Put tin foil on a cookie sheet (I spray the tin foil with non-stick cooking
spray, but that is not necessary). Place the Italian Breads crumbs in one cereal sized bowl. Place the
grated parmesan cheese on top of the bread crumbs then lightly mix it into the bread crumbs with an
adult sized fork. Crack and stir the egg(s) in a second cereal sized bowl. Then, like and assembly line,
place a piece of chicken in the egg bowl and flip-flop it to coat the entire piece with egg. Then
immediately place it in the bread crumbs bowl and flip-flop it around to coat the entire piece with bread
crumbs. Then, gently place the piece on the tin foil. Repeat until you have no chicken left. Once all the
pieces are on the tin foil I use some of the remaining bread crumbs to coat cuts, folds, dents, etc. in the
chicken pieces by lightly dropping the crumbs on those areas. Lastly, bake for 20-25 minutes. I check
them at 22 minutes and check to make sure they are done. Once done, let cool 3-5 minutes and serve.

E.H.M. Daddy Mac • 2-3 boxes of Kraft Mac N Cheese
• 1 to 1 ½ pounds of ground turkey or beef
• 1 can of either Cream of Mushroom Soup or Golden Mushroom Soup
• 1 small or ½ of a large onion
• Salt and pepper
This is a one pot and one pan meal that I make at the same time. I start by following the directions on
the mac n cheese and start to get my pot of water boiling. I add a small amount of salt to the water and
a few mist sprays of oil to the water too. Once the burner for the water is started I placing my ground
meat in a covered skillet. If the meat is frozen, I start by cooking it on med-high. If it is thawed then I
use low-medium. Either way, I lightly season with salt and pepper. Once seasoned I cover and start to
cook the meat. Next I dice up the onion. By this time the meat is usually ready to be separated if
thawed, or I use my spatula to flip the meat and ‘shave’ the cooked parts off to get another part of the
meat cooking. Either way I place the onion all around the outsides of the meat to start cooking. I then
lightly salt and pepper the meat again as it is cooking. I watch and cook the meat, flipping and “shaving”
until the meat is done. I also use the spatula to cut up the meat into small of bits as possible. During this
time I set-up the milk, and butter for the mac n cheese for when it is ready. After time you will be able
to get it timed out to be done at just about the same time as the mac n’ cheese. At some point the
water will boil and then you will cook the mac for the recommended time of 7 ½ to 8 minutes. Once the
mac is done I drain it in a strainer. I do not rinse the mac. While I let it sit briefly I place the butter and
milk for the mac n cheese in the pot I used to cook it so the heated pot will start to melt the butter. I flip
the mac back into the pot and mix the mac, butter, and milk. I then drop the cheese sauce in and mix it
up really good. Once that is done I spoon out a portion of plain mac n cheese for Elizabeth. Then I open
and pour on can of soup (do not mix it with water, just use the contents of the can) and mix it into the
mac n cheese really well. Lastly I mix in the meat into the mac n cheese pot and mix it all up. If it needs
it, I will drain the meat of excess grease first. No need to wait, simply enjoy. A favorite of mine is to also
cook up some frozen peas and mix them in as well, but not everyone likes peas.
This recipe can also be modified by using boneless, skinless chicken cut into small cubes. The only
modifications are to make sure the chicken cooks thoroughly and that the times may vary. You must use
only thawed chicken though.
We love this recipe because when we use 3 boxes of Macaroni and Cheese we have enough for at least
one lunch the next day for all of us.

E.H.M. Family Tacos This recipe is meant to be quick, simple, and delicious. It is just simple tacos as we call them in our house.
Others might call them burritos, its tacos our family way…
Ingredients:
• +/- 1 pound of ground turkey (or beef)
• 2-3 large burrito size flour tortillas
• About 4 cups of shredded cheese (we use cheddar, feel free to use what you wish)
• Taco Seasoning (we sometime use just salt and pepper)
• Sour Cream
• Lettuce, chopped up
• Optional – ½ onion
• Optional - Salsa
• Optional – Whatever else you want in your tacos
Cooking the Meat:
I start off by browning the meat in a skillet over medium heat. Since I am usually trying to economize time I
will start with frozen meat. As soon as the meat is placed on the heat I chop up the onion and get it cooking
with the meat in the same plan. I use the technique of cooking the meat the same way as in my EHM Daddy
Mac recipe. If I am not using a pre-packaged taco seasoning I will salt and pepper the meat to taste while
cooking. Once the meat is cooked I will then finish cooking it per the directions on the taco seasoning package
or I can then make the burritos.
Making the Burritos:
Making the burritos is easy. I will lay out two to three flour tortillas at a time. I place a nice sized hand full of
cheese on the burritos. Then I spoon some meat on top of it. Then I place shredded lettuce and all the other
items I want in them on top of the cheese and meat, saving the sour cream to place in last, lightly. I them fold
over the burrito once, find the flat end and fold the flat end up to make a bottom. I then place a little more
sour cream on the outside and finish rolling, folding it over and using that last outside bit of sour cream to
hold it together. You can develop our own technique through trial and error and they do not always roll nicely,
but I hope you can enjoy them as much as we do in our home.
For younger eaters:
This recipe is also great for young or pickier eaters too because sometimes they might not want an ingredient
or two so they can have the parts they want and you do not to make them a separate or different meal with
different ingredients.

and forget it all day long.
Ingredients:
Chicken (frozen works too)
Taco Seasoning
Fixings:
Flour Tortillas or Corn Shells
Shredded cheese (we use cheddar, feel free to use what you wish)
Sour Cream (if you want it)
Lettuce, chopped up
Optional – ½ onion
Optional - Salsa
Optional – Whatever else you want in your tacos
Cooking the Meat:
Place the chicken in the bottom of your slow cooker. I usually spray the dish with a cooking spray first. Then
place your taco seasoning on top of the chicken per the seasonings directions (I usually use Taco Seasoning
from CostCo since it is less than $5 and is enough for almost 15 taco seasonings). Typically this will be 1/4 cup
of seasoning and 3/4 cup of water per pound of chicken. Then, cook it on slow for roughly 6 hours. Your slow
cooker might have faster settings, so I am sure you can adjust accordingly if need be. When the chicken is
done you can break it up with a fork and serve with whatever taco or burrito fixing you desire.
For younger eaters:

Jill’s Beef Stew
• 2 pounds of London Broil (or whatever stew meat you want)
• Salt and pepper to season the meat
• 1 onion
• 1 teaspoon paprika
• 1 teaspoon sugar
• 1 clove of garlic (smashed)
• 2 bay leaves
• Carrots
• Celery
• Corn Starch
• 2 Cups of water (to start)
• Cooked rice, egg noodles, or pasta (time the completion of the cooking to the end of the stew
cook time)
Cut and cube the London broil (or whatever stew meat you want to use) into bite size pieces. Add a
couple of tablespoons of oil in a large pot and add the London broil. Season the meat with salt and
pepper to your liking. Sear the London broil. Once the meat is seared, add the onion, paprika, sugar,
garlic, and stir. Once well mixed add 2 cups of water and the 2 bay leaves. Cover the pot with a lid and
cook on low for 60 minutes. Stir occasionally and add water as needed. After 60 minutes mix in the
carrots and celery and cook for another 30 minutes (covered) continuing to occasionally stir. In the last

Jill’s Homemade Spaghetti Sauce • 1 pound of ground turkey
• ½ medium onion chopped
• 1 x 15 ounce can of condensed cream of mushroom soup (no water)
• 1 x15 ounce can of tomato sauce
• 1 teaspoon of Italian seasoning, crushed
• ¼ teaspoon black pepper
In a large saucepan cook the turkey and onion until the meat is brown and the onion is tender. Then
drain. Stir in the mushroom soup, tomato sauce, Italian seasoning and pepper. Bring to a Boil and reduce
heat to simmer. Simmer covered for 20 minutes, stirring occasionally. Serve over your favorite pasta.

Jill’s Meatloaf
• 2 pounds of ground turkey
• 3 tbsp. of ketchup
• 1 pinch of salt
• 1 pinch of pepper
• 2 eggs
• 1 – 2 pieces of white bread
Glaze:
• ¼ cup of ketchup
• ¼ cup of spicy mustard
• 3 tsp. of brown sugar
Preheat the oven to 350 degrees. Spray a 9 x 5 loaf pan with non-stick spray. Mix all of the ingredients
together in a mixing bowl using your hands (the kids love to do this part for me). Press the mixture into
the loaf pan. Cook for 30 minutes. Make the glaze by combing all the ingredients in a small bowl. Pull
out of the oven and add the glaze onto the meatloaf. Cook another 30 - 45 minutes (until cooked all the
way through). Cool for 5 minutes and serve.

Jill’s Tomato Basil Pasta
• 1 pound of your favorite pasta
• 5-7 Basil leaves, fresh
• 1-2 Tomatoes
• ¼ Cup (or less) olive oil
Cook the pasta as you would any other time. Cut the basil up very fine. Cut up the tomato. Mix all the
ingredients together and serve.
Alternative with Chicken
Extra Ingredients:
• 1 pound of boneless, skinless chicken
• Salt (to taste)
• Pepper (to taste)
Cook the pasta as you would any other time. Cut the chicken into bite size pieces and sauté in the olive
oil. Season with salt and pepper to taste (or use others of your favorite seasonings). Cut the basil up
very fine. Cut up the tomato. When the chicken is done, mix all the ingredients together and serve.

Nacho Snack Plates
• Tortilla Chips
• Shredded Cheese
• Microwave safe plate
These snack plates are really easy to make. First, select the microwave safe plate size you want and add
the amount of tortilla chips you want. Then, place as much shredded cheese on the chips as you want.
Then, microwave to make your nacho snack!
Caution: All microwaves cook at different temperatures so you will have to find the one that works for
you. I tend to cook mine from 30 seconds to 1 minutes 30 seconds, depending on the size of the plate.
