22.. OOPPEERRAATTIINNGG PPRRIINNCCIIPPLLEESS Note: For details regarding the functioning of various components (eg. Door lock), or detailed explanations on specific wiring etc, please refer to the service manual on Electronic Ovens 2003. In this chapter begins with various concepts communicated to the consumer via the user manual, afterwhich this we cover the new Touch display and it’s positioning on the product.

22..11.. CCOOOOKKIINNGG PPRROOGGRRAAMMSS All cooking modes have a default cooking temperature which may be adjusted manually between 40°C and 250°C as desired. In the BARBECUE mode, the default power level value is indicated as a percentage (%) and may also be adjusted manually.

2.1.1. NOTE: ROTISSERIE

The Rotisserie (only available on certain models) To operate the rotisserie (see diagram) proceed as follows: 1. Place the dripping pan in position 1. 2. Place the rotisserie support in position 3 and insert the spit in the hole provided on the back panel of the oven.

When Gratin is activated, the rotisserie will stop if the door is opened.

2.1.2. PRACTICAL COOKING ADVICE Do not place racks in position 1 and 5 during fan-assisted cooking. Excessive direct heat can burn temperature sensitive foods. ! In the BARBECUE and GRATIN cooking modes, particularly when using the rotisserie, place the dripping pan in position 1 to collect cooking residues (fat and/or grease). Multi-Cooking

Use position 2 and 4, placing the food that requires more heat on 2. Place the dripping pan on the bottom and the rack on top.

BARBECUE

Insert the rack in position 3 or 4. Place the food in the centre of the rack. We recommend that you set the maximum power level. The top heating element is regulated by a

thermostat and may not always be on. FORNO PIZZA

Use a light aluminium pizza pan. Place it on the rack provided. For a crispy crust, do not use the dripping pan (prevents crust from forming by extending cooking time). If the pizza has a lot of toppings, we recommend adding the mozzarella cheese on top of the pizza

halfway through the cooking process.

2.1.3. COOKING PROGRAMS TABLE

Traditional Oven Both the top and bottom heating elements will come on. With this traditional cooking mode, it is best to use one cooking rack only; if more than one rack is used, the heat will be distributed unevenly.

Multi-Cooking All the heating elements (top, bottom and circular), as well as the fan, will come on. Since the heat remains constant throughout the oven, the air cooks and browns food uniformly. A maximum of two racks may be used at the same time.

BARBECUE The top heating element and the rotisserie (where present) come on. By pressing ir+ls and in-ls on the right side of the control panel, the power levels that may be set will appear on the TMPERATURE display; these range between 50% and 100%. The high and direct temperature of the grill is recommended for food that requires high surface temperature. Always cook in this mode with the oven door closed.

GRATIN The top heating element as well as the fan and the rotisserie (where present) come on. This combination of features increases the effectiveness of the unidirectional thermal radiation of the heating elements through forced circulation of the air throughout the oven. This helps prevent food from burning on the surface, allowing the heat to penetrate right into the food. Always cook in this mode with the oven door closed.

PIZZA The heating elements (bottom and circular) and the fan come on. This combination heats the oven rapidly by producing a considerable amount of heat, particularly from the bottom element. If you use more than one rack simultaneously, switch the position of the dishes halfway through the cooking process.

BAKING The rear heating element and the fan come on, guaranteeing the distribution of heat delicately and uniformly throughout the oven. This mode is ideal for baking and cooking temperature sensitive foods such as cakes that need to rise and to prepare certain tartlets on 3 shelves simultaneously.

FAST COOKING The heating elements and the fan come on, guaranteeing the distribution of heat consistently and uniformly throughout the oven. Preheating is not necessary for this cooking mode. This mode is especially recommended for cooking pre-packed food quickly (frozen or pre-cooked). The best results are obtained if you use one cooking rack only.

LEAVENING The oven reaches and maintains a temperature of 40°C and cannot be changed. This mode is ideal for leavening dough made with yeast.

FAST CLEAN This mode cleans the oven automatically and thoroughly by pyrolysis (see Maintenance and care).

4.1.1. AUTOTEST PROCEDURE Urn the oven on, and at any time, using a metal plate of dimensions relative to the display, try to activate ALL buttons present. This proecdure is used to verify the correct functioning of all the 20 buttons at the same time, and if one does not make contact, or is not working correctly, the autotest will not begin start. All display boards, pyro and non-pyro, have 20 buttons. Even in ovens without the pyro function, the pyro button still exists on the control card, but will not activate pyro because of the main board’s software. Note also that the control panel on the machine without pyro does not include the pyro icons. Dimensions for the metal plate to use for autotest activation:

385mm x 73mm x 3mm depth Note: A plate of aluminium may be preferable because it will avoid damaging the control panel.

The autotest activation will beging with a beep, and all LEDs will light up and change colour (red & blue). The AUTOTEST table shows specifically the sequence of the various loads (highlighted with an “X” in the cell). Note: if the autotest does not start immediately, try to detach and re-position the metal panel in order to find the correct positioning to activate all touch buttons. Note: In the cases of non-pyro ovens, the door lock will obviously not activate.

4.1.3. DEMO MODE

The oven can operate in DEMO mode: all heating elements are deactivated, and controls remain operative. To activate the DEMO mode, press all icons highlighted in the photo at the same time A buzzer sounds and the two displays show “demo” “on”. Press again to deactivate the DEMO mode: a buzzer sounds and the two displays show “demo” “oFF”.

4.1.4. CONTROL PANEL LOCK

To lock the oven controls, press the icons highlighted at the same time for 5 seconds. A buzzer sounds and the TEMPERATURE display shows “r-0”. Press again to unlock the controls. The “STOP” symbol remains always active.

NOTE:

In cases of error codes ER73 to ER92, referring to the touch display buttons, the cause may be related to condensatioin present on the display because the touch display board is quite sensative to humidity.

In such cases, it’s reccommended to open the door, wait for condensation to dry, and it should continue to work again.

If this is not the case and the fault persists, and all inductive rubber pieces are present, then it could be a problem with the board and should be replaced.

At this point, you should have dismantled: spacers, screws from both electornic cards, and the 2 bolts from the control panel.

WARNING: there are little inductive rubber pieces that may fall out of the holdings upon removal of display board. Please ensure that they are put in place.

The insertion of the small inductive rubber pieces in their housing. Note: These inductive rubber pieces are conductive and are what transmits a signal from the glass on the control panel to the Touch display board.

44..33.. NNOOTTEE:: SSPPAARREE PPAARRTTSS

4.3.1. INDUCTIVE RUBBERS PIECES The inductive rubber piece, found between the display and the control panel housing, are available as spare parts, hence it is handy to bring them along for every service call made on FZ100 touch models.

4.3.2. CONTROL PANEL ASSEMBLY The plastic housing for the small rubber inductive pieces (the housing also for the display board) are glued together as an assembly and cannot be ordered separately. Hence, as a spare part, and as in production, they come together as one unit, the plastic housing glued onto the control panel. Remember that currently there are two colours (IX and ALU) and two types of ovens (pyro & non pyro), because the icon on the control panel for pyrolisis is not present on the non-pyro model.

4.3.3. ELECTRONIC BOARDS Although there are not that many electronic cards for cooking appliances, remember that the EEPROM must always be ordered seperately for each model. In the case of TOUCH, the main board is exactly the same for both models, but the eeprom and display boards are different.

6.1.1. POSITIONING Keep packaging material out of the reach of children. It can become a choking or suffocation hazard.

(see Precautions and tips). The appliance must be installed by a qualified person in compliance with the instructions provided. Incorrect installation may cause harm to persons, animals or may damage property.

6.1.2. BUILT-IN FITTING Use the appropriate cabinet to ensure that the appliance functions properly.

The panels adjacent to the oven must be made of heat-resistant material. Cabinets with a veneer exterior must be

assembled with glues which can withstand temperatures of up to 100°C. To install the oven under the counter (see

diagram) and in a kitchen unit, the cabinet must have the following dimensions:

6.1.3. VENTILATION

To ensure good ventilation, the back panel of the cabinet must be removed. It is advisable to install the oven so that it rests on two strips of wood, or on a completely flat surface with an opening of at least 45 x 560 mm (see diagrams).

6.1.4. CENTERING AND FASTENING Position the 4 tabs on the side of the oven according to the 4 holes of the outer frame. Adjust the tabs according to the thickness of the cabinet side panel, as shown below:

thickness of 20 mm: take off the removable part of the tab (see diagram)

thickness of 18 mm: use the first groove, which has already been set in the factory (see diagram)

thickness of 16 mm: use the second groove (see diagram)

Secure the appliance to the cabinet by opening the oven door and putting 4 screws into the 4 holes of the outer frame. All parts which ensure the safe operation of the appliance must not be removable without the aid of a tool.

6.1.5. ELECTRICAL CONNECTIONS Ovens equipped with a three-pole power supply cable are designed to operate with alternating current at the voltage and frequency indicated on the data plate located on the appliance (see below).

6.1.6. FITTING POWER SUPPLY

1. Open the terminal board by inserting a screwdriver into the side tabs of the cover. Use the screwdriver as a lever by pushing it down to open the cover (see diagram).

2. Install the power supply cable by loosening the cable clamp screw and the three wire contact screws L-N- . Connect the wires to the corresponding terminals: the Blue wire to the terminal marked (N), the Brown wire to the terminal marked (L) and the Yellow Green wire to the terminal marked (see diagram).

3. Secure the cable by fastening the lamp screw. 4. Close the cover of the terminal board.
