Introduct ion

English for Bar Staff is written for students of the Tourism College who are training to become barmen. The textbook serves two purposes: a. upgrades general knowledge of English of future receptionists; b. develops professional language skills by means of close-to-life, authentic texts and dialogues.

The textbook consists of three parts. Number of lessons per part vary from 9 to 10. Each text/dialogue is followed by a number of practical tasks and exercises. Overall number of lessons is 29.

Level of language used in the textbook is from intermediate to post-intermediate.

English for Bar Staff was piloted in Tbilisi Tourism College in January - June 2008. We welcome any kind of recommendations or suggestions which might arise during the teaching process.

PaRT 3 BaRS aND BaRTENDERS Lesson 1 BaRs

Read the following and try to understand the underlined words from the context.

a bar

A bar is a business that sells alcoholic beverages for immediate consumption. It is believed that there is no

important difference between bars, pubs, and taverns.

Bars that are part of hotels may be known in some areas as long bars or hotel lounges.

The term “bar” is derived from the specialized counter from which drinks are served. The “back bar” or

“shelves” is a set of shelves of glasses and bottles behind that counter. Frequently when food is served

elsewhere in the bar, it may also be ordered and eaten at the bar.

Behind the Bar

Tending a bar requires special skills, for example learning special recipes, measuring, mixing and serving

drinks, and chatting with guests. No matter which country you are working in, you are sure to come across

English clients who want a cold drink.

There are several kinds of bars. For example, a biker bar is a bar frequented by motor bikers. A sports bar is

where sports fans go to watch games. A singles bar is a place popular with unmarried people of both genders,

generally young people.

Thus in most cases, bars typically cater for a particular part of the population whether they be locals, tourists,

students, and office workers in a particular area. A bar can have a small area for dancing but it is not until this

area is enlarged and becomes the primary focus that a bar is considered to be a nightclub or discothèque.

Bar owners and managers typically choose establishment names, decor, drink menus, lighting and other

elements they can control so as to attract a certain client.

united states

In the United States, there is some difference between restaurants, bars, and even types of bars. Beer bars

(sometimes called taverns or pubs) may sell only beer or possibly wine, cider and other beverages. Liquor

bars sell everything from beer to hard liquor.

In most places, bars are prohibited from selling alcoholic beverages to take away and this makes them

clearly different from liquor stores. A few pubs can serve alcohol to take away.

Historically, the United States featured saloons. Many saloons survive in the United States, though their

services and features have changed with the times.

united kingdom and ireland

In the UK and Ireland, bars are either areas that serve alcoholic drinks within establishments such as

hotels, restaurants and universities, or are a particular type of establishment which serves restricted types of

alcoholic drinks such as wine bars. Some bars are similar to nightclubs in that they play loud music, dim the

lighting, or operate a dress code for example, jeans may be banned and boys may be required to wear ties.

They often have bouncers, who are a security people, usually male, who have two functions. The first is to

control who enters the bar and the second is to stop any trouble or violence which may occur. However, the

main type of establishment selling alcohol for consumption remains the public house or pub.

Lesson 6 GioRGi anD DaviDs PLans

Read the following and try to understand the underlined words from the context.

Giorgi and David are opening a bar called the Blue House - and it’s not going to be another martini lounge, nor will

it be a wine bar, sports bar or anything else. When the Blue House opens - October 31 is the goal, though it might be

early November - it will be a video bar, which, being the first of its kind in the region, requires a bit of explanation.

“These bars are not spread everywhere,” says Giorgi who got his idea from one of the few other

known video bars. “There’ll be a cinema-sized screen above the bar and that will have lots of

popular movie bits mixed in with the music. One night of the week will be popular show melodies,

another nights we’ll play old sit-coms that you haven’t seen in 30 years. It’s constant entertainment.”

The kitchen at the Blue House will be cheap which means inexpensive yet tasty dishes like croissants, pies,

soups and salads.

Giorgi and David consider their bar and grill to be very friendly and expect a mixed crowd of people that

feels comfortable and wants to have a good time.

“We’re not trying to do anything extraordinary. It’s just for fun,” says David, “It’ll be a light atmosphere”.

Marie Archvadze’s friends call her a funny bartender. Whether she’s dancing behind the bar or playing the

role of friendly hostess to customers, the 31-year-old drinks mixer splits her time between the Rainbow Bar

and the Arts Bar.

Why is Marie a bartender?

“The money, of course,” she says, “And the power. People respect a woman who’s in control of the bar.”

We recently got a hold of this busy bartender for a quick interview.

Interviewer: How long have you been a bartender?

Peterson: Off and on for about seven years at the Rainbow Bar, and I have recently started

working a few nights a week at the Arts Bar.

Interviewer: What is your specialty drink?

Marie: Bloody Mary.

Interviewer: What is the best/worst part of the job?

Marie: Just had a debate about this with a friend. The worst part is the lack of “bar

etiquette’. The best part of the job for sure is the friends that I’ve made throughout

the years ... my co-workers are like family. Plus we work in a very relaxed

environment, our boss is pretty fantastic.

Interviewer: Do you go to other bars when you’re not working?

Marie: No, I don’t have time.

Lesson 10 HoW To Make a TasTY CoCkTaiL

Read the following and try to understand the underlined words from the context.

After a certain period it is time to make blender drinks. There’s nothing more refreshing on a hot summer night than ice, fresh fruit and concentrated alcohol. A blender, therefore, is an absolute necessity, and it’s important that you use a powerful one that can crush ice cubes.

If you don’t have a blender, you can crush the ice cubes in a tea towel or plastic bag with a hammer, but use this method very carefully. Finally, use recently-made ice cubes. Old ones may taste of other food in the freezer, and nobody likes a hint of frozen cauliflower in their peach Daiquiri!

You’ll also need a cocktail shaker, a measuring cup and a selection of glasses. You should also have swivel sticks, bendy straws and paper umbrellas.

Garnishes are also important. Use a slice orange or strawberries to serve on the lip of the glass or drop right on top of the drink. And serve Margaritas with sugar or salt on the rim. To do so, take a small plate, pour salt or sugar on it, then take a piece of lemon run it around the edge of the glass, turn the glass upside down and dip the rim onto the plate. Finally, shake the glass gently to remove any loose bits.
