Example offer SILVER Wedding, starting in the afternoon Following the ceremony: Reception with Prosecco and hors d’oeuvres >> Somewhere green, perhaps even in the meadow ✪ Home-made belly of pork, ‘Vinschgerle’ bread rolls and black tapenade ✪ Salted and smoked beef with fresh goat’s cheese, apple and juniper berry ✪ Rosemary cream cheese and farmer’s ham on home-made apple bread ✪ Gorgonzola mousse on a nut baguette with truffle honey✪ Small cabbage strudel, served lukewarm✪ New potatoes with chives and orange with marinated rainbow trout ✪ Miniature courgettes filled with chilli mousse ✪ Small tomato gazpacho with basil

Around evening: The guests are led by the newlyweds to the “banqueting hall” – tables covered in white with wild flowers, candles burning. THE WEDDING BANQUET is served ✪ Buckwheat pasta pockets with Jonagold apples and apple balsamic vinegar butter ✪ Barley risotto with sorrel, mushrooms and a touch of goat’s cheese ✪ Shoulder of veal on celery purée with rosemary and herbed vegetables

... and of course, we serve our own home-baked bread. …and then the dessert surprise is served … ✪ Our little dessert presentation comprises 5 special little dessert creations for each guest served on a wooden board

We smell coffee. Maybe the bride is being stolen... Perhaps perfectly staged with an old Ape three-wheeler and the blaring of horns... the bar is open, – the music begins to play And then, when things begin to slowly die down – a long candlelit walk suddenly begins, to destination unknown– Where it leads only we know, although perhaps you have your suspicions? ✪ Wedding cake in the light of many candles The music can be heard in the distance, your guests depart in the direction of the music, but you might like to stay behind on your own – for just a few moments. Until the party really begins once again for you as well J

Reception with Prosecco and hors d’oeuvres in the meadow, beneath the trees between the main building and the barn. ✪ Speck from the Passiria valley finely cut with our Berkel slicer, served in a paper bag, with Schüttelbrot (flatbread) ✪ Honeydew melon in Parma ham with mint ✪ Home-made belly of pork, ‘Vinschgerle’ bread rolls and black tapenade ✪ Salted and smoked beef with fresh goat’s cheese, apple and juniper berry ✪ Sugar beet in smoked meat with a Vinschgerl roll ✪ New potatoes with chives and orange with marinated rainbow trout ✪ Skewers of shrimp and courgette with madras curry✪ Octopus salad in olive oil-lemon marinade and parsley ✪ Miniature courgettes filled with chilli mousse Approx. 2 hours later: The newlyweds lead the guests to the barn and symbolically open the gates with a key. A long table stands covered in white in the centre of the barn. THE WEDDING BANQUET is served ✪ Champagne soup according to a recipe by Andreas Hellrigl ✪ Risotto with porcino mushrooms and plenty of parsley ✪ Potato pasta pockets with potatoes in a delicate truffle sauce and truffles from Umbria ✪ Whole-roasted Angus beef filet with a rosemary crust, served in a sauce made from the best red wine, parsley purée

... and of course, we serve our own home-baked bread. Your guests can linger in the garden. Perhaps the bride is being stolen?! With an Ape three-wheeler, an old tractor or perhaps we can simply smell some baked goods with tea or coffee. And then, when things begin to slowly die down, we light the fire. At a pre-determined outdoor location. The fire burns beneath the large copper pot… ✪ Potatoes from the large copper pot… and a selection of the best cheeses are served on long wooden boards In the late evening the celebration reaches its peak with music and a party atmosphere. But where is the wedding cake? Finally, the happy couple discover a half-open door to the old farmhouse parlour! The glimmer of candlelight shines from inside... ✪ Magnificent dessert presentation by Hannah & Elia, with the wedding cake lit by a multitude of candles

The music continues to play... The party in the cellar heads towards a climax.

Following the ceremony: Reception with the best Prosecco and hors d’oeuvres, handed out one after the other. ...perhaps somewhere green, beneath the trees or vines? ✪ Honeydew melon in Parma ham with mint ✪ Home-made belly of pork, ‘Vinschgerle’ bread rolls and black tapenade ✪ Salted and smoked beef with fresh goat’s cheese, apple and juniper berry ✪ Rosemary cream cheese and farmer’s ham on home-made apple bread ✪ Buckwheat dumplings with chard and ‘Graukas’ (grey cheese) served on a wooden fork✪ New potatoes with chives and orange with marinated rainbow trout ✪ Octopus salad in olive oil-lemon marinade and parsley ✪ Skewers of shrimp and courgette with Madras curry✪ Yellow pepper flan with slightly spicy chilli pepper sauce✪ Sea bass kebabs with tarragon in a cold tomato soup We cook live in front of our guests using a large copper pot:

Just three hours later: Up to this point, no guest has seen the festively decorated hall. The guests are led to the “Banqueting Hall” by the newlyweds. The doors open: ...wow... White laid tables, flowers, a host of candles burning. THE WEDDING BANQUET is served ✪ Pumpkin soup à la Roland or à la Yvonne served in our beautiful soup bowls ✪ Chard flan with chanterelle mushrooms in a delicate saffron sauce ✪ Rye tortelloni with potatoes and black truffle from Umbria ✪ Sea bass in an artichoke crust, filled artichoke heart and tarragon ✪ Filet of venison in a red wine and juniper sauce with celery purée

... and of course, we serve our own home-baked bread.

Evening has now already arrived. It is pleasantly warm outside the banqueting hall. Perhaps the bride is being stolen, a coincidence or perfectly staged? For the time being, the music begins to play outside, guests dance barefoot... And perhaps the wedding cake is already being served. The smell of coffee is in the air. ✪ Wedding cake, – perhaps all in white, tea is served in the garden on picnic blankets J Once things start to die down: The guests have been asking where the desserts are. That is, until the happy couple once again ask all of their guests to follow...! A long candle-lit walk leading to who-knows-where... Out into the meadow to a large, long table, laden with desserts that glimmer in the candlelight. ✪ Magnificent dessert presentation lit by a multitude of candles

The music starts up again, – now the party is really beginning.
