Every appliance is made of high-quality stainless steel. They are supported by four adjustable legs (The 000.PE-025N pan is borne on a base and requires anchoring in the ground, scheme B presents the holes arrangement in the base). Electric tilting pans are equipped with temperature controllers which allow regulation of temperature in the range from 50 to 275°C. The appliances have temperature limiters which protect the bowl from overheating. The main part of the pan is the bowl with a cover. Depending on the model lifting and lowering the bowl is performed manually or electrically. In the 700.PE-015 pan the bowl has two handles, which help to take the bowl out of the appliance.

Gas tilting pan is equipped with a gas tap, which allows smooth power regulation. Every gas pan has a flame safety device (thermocouple) and temperature limiter, which protects the bowl from overheating. To ignite the burner a piezoelectric igniter is used, which the pans are equipped with.

The appliances are designed for professional use in mass nutrition providers, bars, restaurants by specially trained personnel. They are used for frying and baking dishes. CAUTION: The pan must not be used as a device for deep-frying (e.g. as a fryer).

Before using the appliance it is necessary to perform the first activation in order to verify if the

appliance is connected properly, check all the elements of the appliance and discover possible defects, damages, or flaws. During the first activation all the occupational health and safety regulations should be observed. The first activation should be performed by the person who installed the appliance.

Unpack the appliance and remove the protection foil from all surfaces before the first activation. Wash all the surfaces with a damp cloth and a mild detergent, then wipe them dry. Check if there are no package remnants or inflammable materials on the heating surfaces, or if the surface is not dirty.

It is necessary to check if the requirements stated in the chapter "Installation" and the legal requirements in force in the country where the appliance is installed are met

Check the electrical and gas connections. It is necessary to check if the differential current switch works properly, the installation safety devices efficiency, the general condition of the electrical installation, connections of the equipotential terminals. Before running the gas appliance check if the gas installation is hermetic and if the ventilation functions properly.

CAUTION: Do not start the tilting pan with the bowl empty and do not pour cold water onto the hot pan, as it may result in immediate damage of the bowl bottom.

It is not advised to leave the tilting pan after cooling down with oil and the remainder of a processed product, as it may cause burning at the bowl bottom during another use.

Before powering-up the appliance, the pan bowl should be in horizontal position because the appliance is equipped with a protection preventing activation of the heating function with the bowl lifted.

Before emptying the pan bowl, place a container of the size of the bowl contents under the bowl. The speed of the bowl lifting should be adjusted so the bowl contents pour out only due the bowl tilt.

Lifting the pan bowl in order to empty it should be performed only with the bowl cover open. In

certain models the cover is integrated with a protection which blocks the bowl movement with the cover lowered.

x Actions during the tilting pan operation

Before starting the pan operation fill the bowl with a suitable amount of oil. Set the temperature controller to a desired value. Thanks to the temperature controller the heating temperature can be increased or decreased in the range from 50 to 2750C. During the heating process the green signalling lamp burns. After it goes out, i.e. when the desired temperature is reached, the pan is ready to use.

x Actions after the tilting pan operation When frying is finished, set the temperature controller knob to position "0". Turn off the power. After

the pan cools down and the green lamp goes out, carefully wash the pan bowl and cover with water and washing-up liquid, then rinse and dry. When everything is dry grease the bowl bottom with edible oil.

x Actions during the tilting pan operation Before starting the pan operation fill the bowl with a suitable amount of oil. Set the processing

parameters on the keyboard according to the expertise and knowledge of the servicing person. Thanks to the controller the temperature can be set freely in the range 20-2750C.

x Controller characteristics ( type KR-S6) The controller type KR-S6 is designed to regulate temperature for the electric tilting pan line 900.PE-

05Ex. The KR-S6 controller cooperates with KR-S6M1 keyboard. The controller allows regulation of temperature and time of the dishes processing.

x Operating the keyboard

On the tri-colour LED display you can find information about time, temperature, or alerts.

Indicates the appliance operating status, time and temperature settings. In the upper left corner there is a red diode which flashes during the heating up process. Reaching the set temperature is signalled by a sound, the diode burns continuously.

Connecting the appliance to the power supply causes the diode signalling operating status burn red (blank display) – stand-by mode. Activating the controller is performed after pressing the main switch button for 3 seconds. The controller is deactivated immediately after pressing the button.

Information about time is displayed in green colour. The timer function serves to measure time in the range from 0 to 180 minutes. The setting change is possible also during regulation. Setting the 00:00 value cancels the timer function in the steering process.

Two kinds of temperature can be indicated on the display. The set temperature, which is displayed in red colour (setting change is also possible during regulation). The actual temperature (measured), which is displayed in yellow colour, after pressing the button for about 3 seconds.

In STOP mode – the steering process is stopped. It is possible to configure the controller operation with function buttons. Activating START mode – a chosen steering process is started (regulation mode).

x Controller alerts Signalled controller alerts protect against improper use of the appliance. In the case of incorrect

operation (sensor damage or exceeding the maximum allowed temperature), the controller automatically switches to STOP mode and a code of emergency is displayed in red colour. The controller alert is signalled by a sound for 30 seconds (only when the controller is in the regulation mode). Turning off the sound is possible after pressing any button.

In the case of power outage during the process, the controller activates after restart in the stand-by mode with a short sound signalling.

Before use check if the pan gas taps are closed. Then open the main gas valve, which is placed in the

gas installation outside the pan. Before starting the pan operation fill the bowl with a suitable amount of oil. In order to ignite the burner it is necessary to:

press the knob until it stops and turn left about 300 (figure below), at the same time press the piezoelectric igniter button until it stops (one pressing of the button releases one spark). Then press the knob again and ignite the burner, after several seconds the knob can be let go – the flame of the burner should not go out.

Knob position, about 30° during burner ignition CAUTION: When igniting the tilting pan burner, please keep in mind that there is some air in the pan fixture and it has to be dislodged by the gas coming from the supply installation. The pilot burner will be lit when the gas fills the whole fixture.

x Actions related to the tilting pan operation The gas tap knob can be set in position "economy flame", "maximum flame", or in medium position

(figure below).

x Actions after the tilting pan operation In order to extinguish the burner turn the knob right to horizontal position (figure below). Another

ignition of the burner is only possible after the sensor of the flame safety device cools down. After extinguishing the burners shut off the main gas valve in the gas installation outside the pan.

Before emptying the electric tilting pan bowl the heating cycle should be turned off. It is done by turning the temperature controller knob left to the maximum and setting it to position "0". If the heating cycle is not turned off it does so automatically thanks to a microswitch, during the pan bowl lifting. In the gas tilting pan the burner must be switched off by turning the knob right to horizontal position.

On the front cover of the pan there is a handwheel, which is used to lift and lower the pan bowl. To lift

the bowl carefully rotate the handwheel in a clockwise direction until the bowl is so tilted that the contents can be poured out. To lower the pan bowl rotate the handwheel in a counterclockwise direction until the bowl is completely lowered. In the 700.PE-015 electric tilting pan the bowl can be separated from the pan structure. The bowl is removable, it can be removed thanks to two handles placed on its sides. Before emptying the pan wait until the bowl structure cools down.

When emptying the bowl please proceed with particular care. Before you begin and during the bowl tilting please stand next to the pan so that no hot contents can be spilled over you and you would not hit your head against the bowl cover. Do not stand right in front of the container before and during its tilting. On no condition should you lean against the pan bowl, or put hands or other body parts between the lifted bowl and the frame bearer.

Before emptying the electric tilting pan bowl the heating cycle should be turned off. It is done by

turning the temperature controller knob left to the maximum and setting it to position "0". If the heating cycle is not turned off it does so automatically thanks to a microswitch, during the pan bowl lifting. In the gas tilting pan the burner must be switched off by turning the knob right to horizontal position. In the 000.PE-040x electric tilting pan there is a rotary switch, which is used to lift and lower the pan bowl. To lift the bowl rotate the switch by 30° in a clockwise direction. Then hold the switch in this position until the bowl is so tilted that the contents can be poured out. To lower the pan bowl rotate the switch in a counterclockwise direction, then hold it in this position until the bowl is completely lowered (symbols meaning as in the chapter "Symbols used in the Kromet appliances"). In the tilting pans line 900.PE-05Ex and 900.PTG-05Ex there are switches on the front cover for lifting and lowering the pan bowl.

Lifting and lowering the pan bowl works only if the steering switches "lift and lower the pan bowl" are pressed. To empty the bowl the cover must be opened and in vertical position, the middle switch set to position "lift/lower the pan bowl unlocked". After the bowl is lowered, the middle switch should be set to position "lift/lower the pan bowl locked" and the cover closed (symbols meaning as in the chapter "Symbols used in the Kromet appliances").

In order not to damage the tilting pan and to avoid accident while using, one must not:

x open the cut-off valve in the gas installation without prior checking if the appliances gas valves are shut,

x open the gas tap without simultaneous pressing the igniter button, x put out the flame by a blast of air, x allow burners spilling and making them dirty, x make any modifications of the tilting pans to gas type other than specified herein or make any changes

in the device gas fixtures on one’s own, x hit the knob, burners, or valves, x make any repairs on one’s own, x leave the tilting pan unattended with the burner activated/lit, x use the appliance in rooms without good ventilation, x use the tilting pan in conditions obstructing the service of the appliance, x store inflammable materials close to the appliance, x allow little children or persons not familiar with this manual to use the appliance, x use open fire, electric and mechanical devices that may cause ignition in the room where the smell of

escaping gas can be found. In such a case, it is necessary to immediately shut the cut-off valves in the supply installation, thoroughly ventilate the room, and call for gas emergency service if needed,

x connect earth conductors to the gas piping, x wash the appliance with a water jet. CAUTION: In the case of ignition of gas escaping from leaky fixture it is necessary to immediately close the pass-through tap in the gas installation outside the tilting pan and: x stop the appliance operation, x report the defect to the superior, x order the repair. WARNING: Improper handling of the appliance may result in leakage of large amount of gas or its improper combustion, which may cause explosion, fire or gas poisoning. Symptoms of poisoning with gas containing carbon monoxide or fumes are noise in ears, ponderosity, fast heart rate, dizziness, nausea and fatigue. In such a case, please give first aid to the exposed person and immediately call the emergency medical service. How to give first aid:

x carry the exposed person outside to the fresh air, x enable breathing by unzipping or unbuttoning the clothes, x give smelling salts to sniff, x cover the exposed person with a blanket and do not let them sleep, x continuously oversee the exposed person, x if the exposed person lost consciousness and does not breathe perform mouth-to-mouth resuscitation,

until the doctor appears on the scene.

The appliances should be kept clean. Their elements should be washed with water and cleaning

detergents, then wiped dry. During washing pay attention not to damage the sensors of the flame safety device.

It is strictly forbidden to wash the appliances with the use of a water jet, especially spilling water over the burners and electrical parts. Do not wash and clean the appliances before they cool down.

Apart from running maintenance operations the appliances should undergo periodical control and maintenance of the elements and assemblies.

After the warranty period is over, at least once a year, or if the appliance shows signs of malfunction, a technical survey should be performed to remove the defects found.

What should be checked during the survey: x quality of electrical connections, conductors, insulation, functioning of individual elements and degree of their wear; if defects are found, make the repairs.

The maintenance should be performed by technicians qualified in repair and maintenance of gas and electrical appliances.

The gas appliance after the survey should comply with requirements of PN-EN 203-1 (IDT) standard “Gas heated catering equipment. Safety requirements”.

The electric appliance after the survey should comply with requirements of PN-EN 60335-1 standard "Household and similar electrical appliances - Safety - Part 1: General requirements". CAUTION: Before any maintenance or repair works make sure to unplug the appliance and disconnect it from the gas supply. CAUTION: Running maintenance is performed by the user, periodical control and major repair should be performed by a specially trained maintenance technician or authorised service. x In the tilting pans line 000.PE-025N/s/p, 000.PE-040p/x, if the bowl cover descends on its own, one should (scheme I):

x unscrew the hinges cover (pos.27) x adjust the cover brake rubber roller tension by tightening the nut (pos.29) so that the bowl cover

would stop in every position. x after adjusting tighten the lock nut (pos.28) x repeat the actions on the other side of the hinge x install the hinges cover (pos.27)

x PN-EN 203 Gas heated catering equipment. Safety requirements. x PN-EN 60335 Household and similar electrical appliances - Safety - Part 1: General requirements.

x Premises

The room where the gas appliances are installed must comply with guidelines contained in the Minister of Infrastructure Regulation regarding technical conditions for buildings and their location. (Dz. U. No. 75 of 7 April 2002, chapter 7 Gas installation for fuel gases). According to the a.m. regulations such a room must possess:

x The room where the gas appliance is to be installed and used should be provided with continuous air ventilation (inflow of a sufficient amount of air needed for gas combustion and fumes extraction); gas appliances should be installed directly under a ventilating hood.

x In the case of using LP gas powered appliances such a room cannot be located below the "zero" level, i.e. in a basement. Temperature in the room where the LPG bottle is must not exceed 35°C.

x Rooms where the gas appliances are installed should be at least 2.2m high. x The gas appliance should be installed at least 0.5m from the windows to the appliance side, in

horizontal projection. x The appliance should be installed in a place allowing easy access at least to its front. Behind the

appliance there should be a non-inflammable room wall, i.e. a wall with a non-inflammable surface finish. Distance from the side of the appliance to an unprotected wall, i.e. a wall made of wood or other inflammable materials must be at least 60cm. Distance from a protected wall, i.e. a wall made of an inflammable material, plastered or protected in another, equivalent way must be at least 30cm.

x Basic principles for using gas powered appliances

x According to the Dz. U. No. 75 of 12 April 2002, chapter 7, it is forbidden to use in one building LP gas and gas from gas grid.

x In the room where a gas appliance fitted for LPG supply is installed one cannot store and use more than two gas bottles of 11kg capacity each. In the case of using LPG the manufacturer recommends using a bottle bank outside the building or constructing a gas tank installation.

x Gas appliances should be connected permanently to steel or copper gas installation conduits, or with the use of flexible metal conduits.

x Gas appliances should be connected to the gas pressure reducer on the bottle with the use of a flexible conduit 3m long and with pressure resistance at least 300 kPa, resistant to LPG constituents, mechanical damage, and temperature up to 60°.

x A gas appliance of thermal power exceeding 10kW should be connected to the a.m. flexible conduit with a steel pipe at least 0.5m long.

x Appliance setting up

Setting the appliance up and connecting it to the power and gas supply should always be performed by service employees with proper technical qualifications working according to the standards valid in the country. The appliance has adjustable legs which allow levelling and adjusting the appliance height to individual needs.

Before connecting the appliance to the gas installation: x check in the warranty card and on the data plate which gas type the appliance is adapted to, and

whether it complies with the type of particular gas installation. x put the appliance on a solid and incombustible base with keeping the distance from walls (specified

above), level it with the use of adjustable legs x make the connection and check its leakproofness in the following way – connect a pressure gauge with

an air pump to the pipe union (on the appliance side), then fill the gas fixture with air of 15 kPa (1500 mmH2O) overpressure, the pressure drop in 300 seconds should not be higher than 50 Pa (5 mmH2O).

x connect the appliance to the gas installation by stranding the pipe union with the installation pipeline. x check the leakproofness of the appliance connection, i.e. after stranding the pipe union with the

installation, open the gas tap on the supplying installation pipe (at the standard gas pressure in the network) and treat connection points with suds or HERMETEST 2000 – there will be bubbles in the place of a leakage.

CAUTION: Before beginning any maintenance or repair operations the appliance should be unplugged and disconnected from the gas supply.

CAUTION: Every appliance is adapted to natural gas combustion type "E" (20mbar). Adapting the appliance to a different gas combustion requires: x change of the main burner gas jet, x flame regulation - top burners,

o maximum flame regulation (air access), o economy flame regulation,

x igniter flame regulation, CAUTION: The manufacturer recommends that the a.m. operations are performed by a serviceman authorised by KROMET. CAUTION: (scheme F) Before replacing the jets, regulating the maximum flame, regulating the igniter flame, it is necessary to lift the pan cover (pos.12) and bowl (pos.12) and secure it against an accidental drop.

x Gas jets replacement in main burners – gas tilting pan (scheme F, G): a) dismount the jet with a 14mm spanner (pos.17) b) mount a new jet according to the table above,

x Maximum flame regulation (scheme G): a) ignite the burner (pos.14), hold it for a moment at the "Maximum flame", b) loosen the lock nut and unscrew the bolt (pos.15) until it is possible to move the injector (pos.16), c) watch the burner flame while closing and opening the air access and set it so the visible flame has

distinct blue-green cones inside, d) after the regulation is finished block the injector with the bolt and lock the bolt with the nut (pos.15), e) lower the pan bowl, check the maximum flame one more time.

x Economy flame regulation (scheme K): a) ignite the burner, hold it for a moment at the "Maximum flame", then set the "Economy flame"

position, b) remove the knob on the gas tap by a slight pull, c) regulation screw (pos.25) is in the top part of the gas tap on the left side, d) using a 0,6x3,5 flat screwdriver (optimum) rotate the screw (pos.15) right to reduce the flame or left

to increase it. The economy flame should have 25% of the maximum flame height,

e) make sure that the flame does not go out after a quick change from "Maximum flame" to "Economy flame.

x Igniter flame regulation (scheme H):

I. During change of the jet from natural gas (2E 20mbar; 2Lw 20mbar; 2Ls 13mbar) to LP gas 3B/P 37mbar

a) at the bottom of the igniter subassembly undo the nut (pos.24) (use an 11mm spanner or short flat screwdriver),

b) after the nut is removed (pos.24) place a flat screwdriver at the bottom and carefully screw in the regulation jet until stop, tighten the nut (pos.24),

c) ignite the igniter's sparking plug (pos.22), adjust the igniter flame by the air access rotating the pilot air screen (pos.23) (proper flame has a distinct blue-green cone inside).

II. During change of the jet from LP gas 3B/P 37mbar to natural gas (2E 20mbar, 2Lw 20mbar, 2Ls

13mbar) a) at the bottom of the igniter subassembly undo the nut (pos.24) (use an 11mm spanner or short flat

screwdriver), b) after the nut is removed (pos.24) use a flat screwdriver to carefully unscrew the regulation jest by

about ½ of a turn, tighten the nut (pos. 24), c) ignite the igniter's sparking plug (pos.22), adjust the igniter flame by the air access rotating the pilot air

screen (pos.23) (proper flame has a distinct blue-green cone inside).

x Tilting pans heating elements replacement (schemes A, D):

To gain access to the tilting pan heating elements, it is necessary to: a) dismount the pan bowl board (pos.1), b) dismount the heating element (pos.2) from the heaters' pocket bracket, c) replace the heating element, d) mount the board.

x Access to electrical parts in tilting pans line 000.PE-025N/s (schemes A, C):

To gain access to the tilting pan electrical parts, it is necessary to: a) dismount the board (pos.1), this way the access to the temperature controller and limiter is gained, b) to get access to the contactor and the terminal strip in the 000.PE-025N tilting pan remove the base

cover (pos.3), in the 000.PE-025s tilting pan remove the control box cover (pos.6), c) in both pans the access to the micro-switch (pos.5) is gained after dismounting the left side of the pan

bowl (pos.5).

x Access to electrical parts in tilting pans lines 000.PE-040p/x, 700.PE-03, 900.PE-05Ex (schemes D, E): To gain access to the tilting pan electrical parts, it is necessary to:

a) unscrew the bolt, pull the knob out (pos.8), remove the front cover (pos.7), behind it there are electrical parts (temperature controller, temperature limiter, terminal strip),

b) access to the micro-switch (pos.5) is gained after dismounting the pan bowl board (pos.1)

x Gas spring replacement in tilting pan line 000.PE-040p: CAUTION: It is strictly forbidden to replace the lead screw set and the gas spring at the same time

a) lift the pan bowl to the maximum and secure it against an accidental drop, b) remove the back cover to gain access to the gas spring, c) remove the cotters from the clevis pins on both sides of the gas spring and pull the spring out, d) replace the spring, secure it with the cotters, e) after the gas spring is installed and secured you can lower the pan bowl.

After the regulation is finished stick labels with information on the gas type which the tilting pan is adapted to at the data plate and in the warranty card. Those labels are supplied with replaceable jets.

x Lead screw set and nut replacement in tilting pan (scheme D): CAUTION: During the lead screw set replacement the pan bowl must be lowered.

f) lower the pan bowl, g) remove the handwheel (pos.8) and the front cover (pos.7), h) with the pan bowl lowered remove the lead screw set (pos.9) (depending on the model, before

removing the lead screw set it might be necessary to remove the metal plate that protects the screw from falling out),

i) if needed replace the bearing during the lead screw set replacement (type depends on the model), j) to replace the lead screw nut it is necessary to remove the nut bracket and pull the nut out of the

clevis pins, after replacing perform all the operations the other way round, k) mount the new lead screw set (secure it with a metal plate), l) mount the front cover and handwheel.

x Actuator replacement (schemes D, E):

CAUTION: During the actuator replacement the pan bowl must be lowered

m) lower the pan bowl, n) remove the back cover (pos.10) to gain access to the actuator (pos.11), o) with the pan bowl lowered remove the cotters from the clevis pins on both sides of the actuator and

pull the actuator out, p) replace the actuator, secure it with the cotters,

Before packing the appliances into a carton they are wrapped in a stretch film. The whole package is

fastened with a plastic tape. The appliances must not be turned over, it may result in their damage. They should be transported in covered means of transportation, without shaking. During the transport the appliances should be protected against moving, turning over, and mechanical damage.
