As per the Pagella Policies of the Dio-cese of Baton Rouge, as in the rest of the church in the United States, Catholics aged 18 through 59 are bound by a grave obligation to observe a solemn fast on Ash Wednesday and Good Friday. Cath-olics aged 14 and up are to abstain from meat on Ash Wednesday, all Fridays of Lent and Good Friday as well. These norms have been established by the U.S. Conference of Catholic Bishops in accord with the norms of canons 1249-1253 in the revised Code of Canon Law of 1983. To fast means to consume only one full meal a day at most, although taking of other smaller quantities of food at the other customary mealtimes is permitted. Food and drink “between meals” (except-ing only water and medicine) is not per-mitted on fast days. To abstain from meat means refraining from eating beef, veal, pork or poultry at least, although not necessarily eggs, milk products or meat broths, or condiments made from animal fat. The consumption of fish, shellfish and reptiles is permitted if desired. Beyond the mandatory days listed above, abstinence from meat on every Friday throughout the year which is not a

solemnity and fasting on all Lenten week-days (especially Wednesdays and Fri-days), and on Holy Saturday, is strongly recommended to all the faithful. There always remains, of course, the grave obligation to participate at Holy Mass on all Sundays and days of obliga-tion. Each in his or her own way, every Christian is bound to do penance by vir-tue of divine law. Only ill health or some similar situation of urgency excuses. During the Lenten season, Christ Jesus’ own challenges to prayer, fasting and almsgiving are paramount. Clergy (priests and deacons) who have legitimate residence and active ministry within the Diocese of Baton Rouge have been delegated the power to dispense the faithful of the diocese, in individu-al cases and for a just reason, from the obligation to observe a particular day of penance, or to commute some or all of its obligations to other pious works. In-cluded in this is the faculty to dispense from the Lenten obligations to fast and abstain from meat. Yet the obligation to do some kind of penance remains a seri-ous one, and will not be taken lightly by a good Catholic.

Spiritual Retreats

Bishop Robert E. Tracy CenterBaton RougeThe Bishop Robert E. Tracy Center is available for spiritual renewal and growth, professional training, and adult and youth formation. As part of the Catholic Life Cen-ter, the Tracy Center can provide space for day and overnight retreats, and confer-ences. The three-story overnight facility has 30 sleeping rooms. Each of 24 rooms can ac-commodate up to four people. Five of the six suites consist of a bedroom with two single beds (one king if beds are joined) and a sit-ting room with two sofa sleepers. The small-er suite has one bedroom with two single beds and a love seat and chair in the sitting area. All rooms have a private bath.The Westerfield Conference Center, ad-jacent to the overnight facility, is a state-of-the-art meeting facility with audio/visual technology. The conference center provides space for 120 people or can be divided into three separate meeting areas for smaller groups.

The Tracy Center Education Building has eight rooms available for day retreats, work-shops or breakout sessions. Also available are two chapels, a theatre with fixed-style seating for 196, a ballroom that can seat up to 500 people, and three dining rooms. A full-time kitchen staff provides all meals and snacks.The Tracy Center welcomes privategroups, prayer groups, small Christian com-munities and Bible-study groups. Magnificat Center of the Holy SpiritPonchatoulaMagnificat Center of the Holy Spirit pro-vides a relaxed setting for all types of re-treats.Opened in 1982, the center provides housing for retreatants in dormitory-style facilities. Located in the pine forest of the Florida Parishes, the center has 30 acres of wooded grounds for inspirational walks and porches for quiet reflection. The center offers a conference room with seating for up to 100 people, a dining hall and a small chapel in the main building.Along with booked retreats tailored es-pecially for any and all Christian groups, Magnificat offers Days of Renewal on the last Thursday of each month from 10 a.m.

Tucked away in scenic Tangipahoa Par-ish, the center, which has no religious order affiliation, offers a wooded pathway pro-viding those on retreat a serene setting for reflection and prayer. There are also several statues with meditation seating.The center can sleep 35, with two private rooms and the remainder of the rooms dou-ble occupancy. Additionally, there is a pri-vate apartment for a priest or retreat master.Amenities include a library, chapel, meeting room, media room, outdoor patio, and a gathering area with a barbecue pit. The staff includes a full-time caretaker and staff members are available 24 hours a day during retreats. Speckled Trout Fish Tacos with Spicy Cabbage Slaw

Michael CasioHeads and Tails SeafoodSpicy Cabbage Slaw10 oz. pre-shredded cabbage½ c. mayonnaise ¼ c. pickled jalapeños, diced2 Tbsp. onion, minced (or more to taste)1 Tbsp. apple cider vinegar, lemon or lime juice, plus more to taste if desired1 Tbsp. Sriacha, optional or any hot sauce2 tsp. honey or a few drops of liquid stevia In a bowl, mix all ingredients except the cabbage. Taste and adjust the sweet/sour/salty to your tastes. Toss in the cabbage, cover, and place in the fridge for serving.For the Fish1 lb. speckled trout, cut into ½ inch thick pieces¾ cup starch like arrowroot, potato, corn or tapioca¾ cup coconut flour or sweet rice flour 2 tsp. chili powder2 tsp. garlic powder 1 tsp. sea salt Avocado oil for frying or other high heat oil Preheat a large pan over medium heat

and set your oven to a warm setting. Place a cooling rack over a plate or cookie sheet, set aside. Mix all the coating ingredients except all the fish together. Coat the fish liberally on all sides. Once your pan is hot, add the avocado oil to pan. Swirl and heat briefly, then add some pieces of coated fish, ensuring there is no crowding in the pan which will not allow for proper crisping. Do this in 2 - 3 batches. Once the first side is golden brown and crispy, use a sturdy spatula to flip to the other side, and brown, about 4 - 5 minutes per piece. When done, place the fish on the cooling rack in the oven to keep warm while you finish the remaining fish. Serve the crispy fish atop a bed of the spicy slaw and add some avocado slices if you wish. Serves 4.

Shrimp and Vegetable TeniyakiMaria P. Horcasitas1 lb. shrimp, peeled6 cloves garlic1 stick butter1 fresh broccoli head or 1 pkg. frozen broccoli½ pkg. baby carrots2 Tbsp. olive oil

1 bottle Kikkoman Teriyaki Baste1 pkg. angel hair pasta, cooked and drained Melt butter in sauce and add garlic. Sau-te for 2 minutes. Add shrimp and cook un-til done. In a large skillet, stir fry broccoli and carrots together about 8 to 10 minutes. Add cooked shrimp and garlic sauce to vegetables. Cook and stir together with baste an additional 7 minutes. Serve over pasta.

Creamy Potato CasseroleTeenie BajonSt. Louis King of France Church30 oz. pkg. frozen shredded hash brown potatoes, thawed2 c. sour cream2 c. sharp cheddar cheese, shredded1 can condensed cream of chicken soup, undiluted½ c. chopped onion¼ c. butter, melted2 Tbsp. fresh parsley, chopped½ tsp. pepper¼ tsp. salt In large bowl, combine all ingredients. Transfer to ungreased 2 quart baking dish. Bake, uncovered at 350 degrees for 1 hour or until heated through.

Italian Olive BreadTeenie BajonSt. Louis King of France Church8 oz. mozzarella cheese, shredded1 stick margarine, melted½ c. mayonnaise½ bunch chopped green onions4 oz. can black olives, chopped3 cloves garlic, pressed1 bag (12 in bag) of pistolettes Mix ingredients in bowl. Can be done the day before and refrigerated. When ready spread on pistolettes and put in 350 degrees oven and bake until cheese has melted.

Squash or Eggplant CasseroleTeenie BajonSt. Louis King of France Church1¼ lbs. fresh yellow squash (approx. 8) 1 Tbsp. sugar¼ c. onions, chopped1 c. med. cheddar cheese, grated1 c. bread or cracker crumbs, toasted2 eggs1 can mushroom soup Cook squash or eggplant in salted water until tender. Mix with soup, eggs, onions, cheese, sugar and crumbs. Bake in oblong casserole dish for 30-40 minutes at 350degrees.
