    Exclusive interviewDE LA MORA BROTHERSHailing from sunny Mexico, the De La Mora brothers set up two Three Six Six bars in 2013. Based in Earlsfield and Battersea, the bars quickly became renowned for their outrageous, yet high quality cocktails. Here, the two talented owners reveal the secrets behind their amazing, head-turning drinks.

    How long does it take you to create each new cocktail menu?

    Each individual drink can take months to develop. Once we’ve got the concept we’ll decide on flavour, glassware, aroma and the ingredients, including of course the spirit. We’ll then spend the next few months in

    the Three Six Six lab, tweaking and perfecting the drinks. We categorise the cocktails by the five core tastes, sweet, sour, salty, bitter and umami. These core tastes are represented by our butterfly logo (below).

    Why is the cocktail development process such a long one?

    We make absolutely everything in-house, from our infusions, syrups and shrubs, to our bitters, tinctures, jellies. Once they’re perfected, only then can we start combing these together with different spirits and juices to complete the final cocktail.

    Where do you get your inspiration from?The element of surprise. There’ll be flavours that you wouldn’t expect. Plus, we use ingredients and garnishes that no one else uses like; Viagra tonic, iberico ham, butt plugs, gag balls.

    What is the most outrageous cocktail you’ve ever created?Everything on the Fantasy & Fetish Menu - well, the word says it all! We’re the only bar in London with a fetish-themed cocktail menu. It’s in line with the personality of Three Six Six: Cheeky, with a little bit of naughtiness.
