As co-chairs of the Believe in Blue Gala, Michelle and I are overwhelmed by the energy of the volunteers and by the generosity of the UCC community. Both are evident in abundance at the Mad for Blue Fine Wine Auction.
The acquisitions committee sourced some fantastic vintages, while the Fine Wine Auction committee has put together a wonderful program for the evening.We’ll celebrate a love for fine wine, with all proceeds supporting important initiatives at UCC.

On behalf of the UCC fine wine and advisory com-mittee, we’re delighted to welcome you to the Mad for Blue Fine Wine Auction. This spectacular evening will include an array of activities and experiences
that will delight the five senses and offer special treats for the taste buds and pal-ate. This precursor event to the Believe in Blue Gala is destined to benefit future generations of UCC boys, as well as to provide opportunities to boys who deserve to get the best education from our elite institute.
An event such as this is about much more than money. This is about coming to-gether as a community to celebrate the success of UCC and to attain our common vision.
We offer heartfelt thanks to the extraordinary generosity shown by those who made donations to this auction. We also sincerely thank Albert Schultz and Arron Barberian for donating their time, expertise and enthusiasm as our auctioneers for the evening. This is the third time this dynamic duo has taken on these key roles for the UCC Fine Wine Auction.
Michelle and Pat Meneley deserve special recognition and a huge thank you, along with the gala committee members, for their inspiring leadership. Looking back, we had so much fun working with a team of talented and dedicated individuals and volunteers who’ve applied their skills and energy to create this Mad Men-themed event. Looking forward, we have a memorable and enchanting evening before us in which we’ll be able to stock up our cellars and enjoy this time with good friends of the College who are united towards a good cause.

NORMAN HARDIE
Norman’s insatiable thirst for old world Pinot Noir and
Chardonnay was cultivated during his wine studies at
the University of Dijon before he worked as a som-
melier for seven years with Four Seasons Hotels and
Resorts. He then apprenticed with the finest Pinot
Noir and Chardonnay producers in the United States,
France, South Africa and New Zealand for six years. He put down roots in the promising
limestone soils of Ontario’s Prince Edward County in 2001, and his wines have since re-
ceived stunning reviews and can be found in top restaurants and shops around the world.

EVENING ENTERTAINMENT
UCC’s SENIOR JAZZ ENSEMBLE
The Senior Jazz Ensemble, one of UCC’s premium ensembles, recently won a double gold award at the GTA Musicfest Jazz Festival at York University. The win earned the band, under the direction of Peter Smith, an invitation to the MusicFest Canada national final atOttawa’s National Arts Centre in May. This much-in-demand ensemble has entertained at UCC assemblies, Fall Music Night and Spring Arts Festival.
The ensemble’s Oliver Clark ’12 (keyboards), Alex Rand ’12 (bass guitar) and Dean Ricci ’12 (drums), accompanied by friend Kyle Rosnick of Northern Secondary School (guitar), have played at UCC’s Association Day and The Bishop Strachan School Father-Daughter Dance. They’ll perform during the reception at the Mad for Blue Fine Wine Auction.
ELEANOR McCAIN
Singer and recording artist Eleanor McCain brings a melting pot of musical styles to her music – classical, Celtic, folk, ballad and pop. Her singing can be categorized in one word: intimate.
The Florenceville, N.B. native has recorded four CDs: Inti-mate, her classical crossover debut; Bundle of Joy, a lullaby album which was nominated for a 2009 East Coast Music Award for best children’s recording; Green Hills of Home, a collection of Celtic ballads which was nominated for a 2011
East Coast Music Award for best roots/traditional solo recording; and Holiday, a two-disc set of Christmas music that was released last November
Eleanor has worked with such notable artists as David Foster, John McDermott, Chantal Kreviazuk and the Elmer Iseler Singers. In addition to her recording career, Eleanor contin-ues to focus on raising her daughter Laura.

AUCTIONEERS
ALBERT SCHULTZ
Albert trained at York University and the London Academy of Music and Dramatic Art before joining the Stratford Festival Young Company under Robin Phillips.
Albert is the founding artistic director of Soulpepper Theatre Company and general director of the Young Centre for the Performing Arts. He regularly directs and appears on stage with Soulpepper and leads the Soulpepper Academy.
Albert spent time on CBC’s hit television series’ Street Legal and Side Effects, and was the lead in CTV’s 2006 film Shades of Black (a biography of Conrad Black).
Albert’s many honours include The City of Toronto Barbara Hamilton Memorial Award, the Joan Chalmers National Award for Artistic Direction and honorary degrees from Queen’s and Bishop’s universities in recognition of his contributions to Canadian theatre.
ARRON BARBERIAN
Arron is the managing partner of his family’s internation-ally renowned restaurant. Barberian’s Steak House has built a reputation for the finest quality food, exceptional service and a spectacular wine list over the past 53 years.
Arron is an alumnus of Culver Military Academy’s Black Horse Troop ’82, as well as the University of South Florida. He’s the former chair of the Downtown Yonge Business Improvement Area and is well known in the downtown core as one of the
people who conceived of Yonge Dundas Square and the neighbourhood’s revitalization.
Arron is an avid collector of Canadian art, vintage photography, fine wine and books. He’s married to Linda Rodeck, the managing director of Sotheby’s Canada, and has two chil-dren: Madeleine and Harrison.

APPRAISAL AND LOTTING – ROBERT JULL
Rob is a wine appraiser, consultant and owner of Vinifera Wine Services, which imports and distributes fine wines throughout Ontario. Vinifera represents a unique portfolio of limited production, family-run Domaines and Chateaux from France that are carefully selected from among the top producers of each region. Vinifera also purveys the broadest and most tasteful array of wine accessories assembled anywhere.
Rob has been active as an appraiser for charity auctions since 1990. This is his third UCC Fine Wine Auction.
WINE STORAGE – WARREN PORTER
Wines for this year’s auction have been professionally stored at Iron Gate - Private Wine Management. This is the second UCC Fine Wine Auction that Warren has supported.
With two locations and 10,000 square feet of high security, environmentally controlled storage, Iron Gate is the largest provider of fine wine storage in Canada. Iron Gate also provides home cellar inventory and management services to discerning collectors everywhere.

FINANCIAL BENEFITS OF PURCHASING WINE AT A CHARITY EVENT
There are significant cost savings to be realized when purchasing wine at charity versus commercial wine auctions.
When purchasing wine at the UCC Fine Wine Auction (a charity wine auction),the purchaser pays only the hammer price.
There is no buyer’s premium or additional taxes (HST) charged.
When purchasing wine at a commercial auction:
The purchaser pays the hammer plus approximately 30% in additional fees, which includes a buyer’s premium of approximately 17% as well as 13% tax (HST) payable on both the hammer price & buyer’s premium.

Level/Ullage Description and Interpretations
Bordeaux Levels
For wines in bottles with defined shoulders including Bordeaux,
Port and other wines, the level is measured and catalogued as follows:
bn. - BASE NECK: Perfectly good for any age of wine.
Outstandingly good for a wine of 10 years in bottle,
or longer.
vts. - VERY TOP SHOULDER
ts. - TOP SHOULDER: Normal for any Bordeaux 15 years old or
older.
hs. - HIGH SHOULDER: Slight natural reduction through the
easing of the cork and evaporation through cork and capsule.
Usually no problem. Acceptable for any wine over 20 years old.
Exceptional for pre-1950 wines.
ms. - MID SHOULDER: Probably some weakening of the cork
and some risk. Not abnormal for wines 30-40 years of age.
Estimates usually take this into account.
ls. - LOW SHOULDER: Risky and usually only accepted for sale if
wine or label exceptionally rare or interesting. Always offered
with low estimate.
bs. - BOTTOM SHOULDER: Not acceptable for sale unless
a rare sort of bottle. Wine will usually be undrinkable.
u. - ULLAGE: Level.
Example: (u. 2ts) means 2 bottles ullaged to top shoulder.

Burgundy Levels
For wines in bottles with sloping necks, including Burgundy, German
and other wines, the level between the cork and wine is measured and
catalogued in centimetres.
The condition and drinkability of Burgundy is less affected by ullage
than its equivalent from Bordeaux. A 5-7-cm. ullage in a 50-year-old
Burgundy can be considered normal, indeed good for age; 3.5-4 cm.
excellent for age; 7cm. rarely a risk.

BIDDING PROCEDURE
*The auctioneer may vary the increments during the course of the auction at his own discretion.
Information for Prospective Bidders
If this is your first time attending a wine auction, the procedure is straightforward. After registering, you will be given a numbered paddle. To bid, raise your paddle until the bidding reaches your spending limit. Bids will not be subject to HST. If you have any questions about bidding, please ask a UCC Fine Wine Auction volunteer.
Live Auction Rules: Bidding Procedure
1. The Live Fine Wine Auction will commence at George Weston Hall, Upper Canada College Preparatory School at 7:30 p.m. on Wednesday, April 18, 2012.
2. Bidding is per lot and the highest bidder acknowledged by the auctioneer determines the final buyer. 3. Bidding will be in increments determined by the auctioneer (see below for bidding increments) and will be announced during the auction.
4. Absentee bids will be placed in advance of the auction and will be kept strictly confidential until the evening of the auction. The auctioneer may commence bidding at the second highest bid registered in his possession.
5. When bidding, hold the paddle high so spotters can see your number.
6. If you are the successful bidder on a lot, the auctioneer will acknowledge your paddle number.
Bidding Increments*
Bidding generally advances in increments of up to 10%, subject to the auctioneer’s discre-tion. Absentee bids that do not conform to the increments set out below may be lowered to the next bidding interval:

Bordering on perfection is the 2004 Shiraz Savitar. Made from 30- to 50-year-old vines, and aged 18 months in 100% new French hogsheads as well as smaller barriques, it boasts an opaque purple color, and an extraordinary nose of acacia flowers, blueberries, raspberries, and blacker fruits, melted licorice, and graphite. It possesses amazing intensity, great equilibrium, a fabulous, multi-layered mid-palate, and a blockbuster finish. This extraordinary Shiraz should prove to be one of the legends of southern Australia’s great 2004 vintage.

Torbreck’s flagship wine, the Run Rig, is made from 40- to 120-year-old Shiraz vines with some co-fermented Viognier (usually around 3%), tips the scales between 14-15% alco-hol, and is aged 30 months in French oak. The youngest Run Rig, the 2001, should equal the 1998 as it is almost a clone aromatically, texturally, and flavor-wise, just much younger. This opaque purple-colored beauty should flirt with perfection over the next 10-15 years.

Aged 18 months in primarily French oak, the 2004 Shiraz G.A.M. is an exceptional example of a precise yet full-flavored, concentrated Shiraz. Its gorgeous perfume of blueberries, blackberries, camphor, licorice, and pain grille is followed by an inky/blue/purple-colored wine offering superb purity, full-bodied richness, and gorgeous depth as well as texture. This fabulous effort is another example of Ben Glaetzer’s brilliant talents. It should drink well for 15 years.

Bottled in June, 1997, this profound Mouton is more accessible than the more muscular 1996. A blend of 72% Cabernet Sauvignon, 9% Cabernet Franc, and 19% Merlot, it reveals an opaque purple color, and reluctant aromas of cassis, truffles, coffee, licorice, and spice. In the mouth, the wine is “great stuff,” with superb density, a full-bodied personality, rich mid-palate, and a layered, profound finish that lasts for 40+ seconds. There is outstanding purity and high tannin, but my instincts suggest this wine is lower in acidity and slightly fleshier than the brawnier, bigger 1996. Both are great efforts from Mouton-Rothschild.

In terms of the brilliant complexity and nobility of the aromatics, scorched earth, black currants, plums, charcoal, cedar, and spices, the 1990 offers an aromatic explosion that is unparalleled. It is always fascinating to taste this wine next to the 1989, which is a monumental effort, but much more backward and denser, without the aromatic complexity of the 1990. The 1990 put on weight after bottling, and is currently rich, full-bodied, opulent, even flamboyant by Haut Brion’s standards. It is an incredible expression of a noble terroir in a top vintage. While it has been fully mature for a number of years, it does not reveal any bricking at the edge, and I suspect it will stay at this level for another 10-15 years ... but why wait? It is irresistible now.

Much like its nearby rival, Haut Brion, the 1990 La Mission has always been rela-tively evolved, complex, and supple-textured. Even at age 3-4 it performed beauti-fully. The tannins are sweet, the acidity low, and the high levels of glycerin and concentrated fruit have always been present, and they show no signs of abating. A dark plum/blue/garnet color is followed by a sweet perfume of chocolate, rich, jammy, berry fruit, and hints of smoked herbs as well as meat juices. It remains a full-bodied, opulent, even ostentatious wine that should drink beautifully for two more decades. It really has not changed much over the last 6-7 years.

Consistently scoring between 98-100, the superb 1982 Margaux may be slightly bigger, bolder, and more masculine than vintages produced over the last 15-20 years. Its dark plum/purple color is followed by notes of melted tar intermixed with sweet cassis and floral underpinnings. Very full-bodied and dense for a Chateau Margaux, with a slight rusticity to the tannins, it boasts blockbuster power, richness, and impressive aromatics. It appears set for another 30-40 years of life.

A magnificent example of Chateau Margaux and one of the most tannic, back-ward Margauxs of the last 50 years, the 1986 continues to evolve at a glacial pace. The color is still a dense ruby/purple with just a hint of lightening at the rim. With several hours of aeration, the aromatics become striking, with notes of smoke, toast, creme de cassis, mineral, and white flowers. Very full-bodied, with high but sweet tannin, great purity, and a very masculine, full-bodied style, this wine should prove nearly immortal in terms of its aging potential. It is beginning to budge from its infantile stage and approach adolescence.

My all-time favorite vintage of Tertre-Roteboeuf, the 2000 should age much more consistently than the rather irregular 1990 or the top-notch 1989. The 2005 should give it a run for its money down the road, but at present, this wine is performing fabulously well. It boasts a dense ruby/purple color along with notes of kirsch liqueur and licorice. This St.-Emilion could pass for a great Chateauneuf du Pape or top-notch Musigny, although it has more power and depth than a burgundy, and none of the peppery/garrigue characteristics of a Rhone. Nevertheless, there is a sweet character from the high glycerin level as I suspect the alcohol content exceeds 14%. Velvety textured and full-bodied, but surprisingly youthful, this stunningly rich wine can be drunk now, but promises to last another two decades.

When tasting young vintage ports, Taylor is always the most backward. Yet poten-tially, it has the capability to be the most majestic. This classically made, opaque purple-colored wine is crammed with black fruits (blueberries and cassis). It reveals high tannin and a reserved style, but it is enormously constituted with massive body, a formidable mid-palate, and exceptional length. It is a young, rich, powerful Taylor that will require 10-15 years of aging. Compared to the more flashy, forward style of the 1992, the 1994 has more in common with such vintages as 1977 and 1970

The sensational, prodigious2001 Insignia Proprietary Red Wine (89% Cabernet Sauvignon, 8% Petit Verdot and 3% Malbec) has never performed better. Still extremely youthful with a dense purple color as well as a beautiful bouquet of cedar, charcoal, incense, creme de cassis and black cherry jam, fabulous intensity, a multidimensional mouthfeel and a skyscraper-like texture, it is a Napa classic that is stillvery youthful and belies its age of ten years. It should age impeccably for 35 or more years.

There are 7,000 cases of the prodigious 2006 Proprietary Red Wine (a blend of 80% Cabernet Sauvignon, 10% Merlot, and the rest Cabernet Franc, Petit Verdot, and Malbec). Most of the fruit comes from the Stage-coach Vineyard and the Waters Ranch. Sweet, smoky, meaty aromas interwoven with melted asphalt, camphor, blackberry, cassis, and char-coal scents emerge from the complex aromatics. In the mouth, the wine is full-bodied, displaying sweet tannin, a concentrated mouthfeel, and a long, heady finish with substantial fruit, glycerin, and extract. It should drink beautifully for 20+ years.

The last time I had this wine, it seemed much more developed, youthful and approachable. This particular bottle, which was pulled from my cellar, was super-powerful, dense and concentrated, as well as structured and backward. Aeration helped somewhat, but this looks like a very long-lived wine, and my initial suggestion of an anticipated maturity date (2010-2025) should be changed to 2015-2035. Only 450 cases were made of this blend of 88% Cabernet Sauvignon, 10% Merlot and 2% Cabernet Franc from former proprietor Jean Phillips’ vineyards just south of the Oakville crossroads. The spectacular dense blue/purple color remains opaque. The wine displays the hallmark creme de cassis, floral and licorice notes that are so pure, vivid and intense, and which have always been part of this vineyard’s classic trademark. With great purity, a full-bodied mouthfeel and even more thickness, power and density than I remember, this wine has put on weight, developed more struc-ture, and looks like a candidate for 30 more years of aging potential. This is a brilliant wine, much in keeping with the legendary status of this producer.

At the time of registration you will sign a waiver to acknowledge that you are aware that the wine for sale through the UCC. auction may not have been tested by the Liquor Control Board of Ontario (LCBO).
CONDITION OF WINE
All wines sold will be at the buyer’s risk. The Upper Canada College Fine Wine Auction sells all wines ‘as is’, and gives no warranty of any kind, and shall not be liable for any error in description, faults or defects. No person shall have recourse against Upper Canada College and/or persons in the auction process for any irregularity or illegality in the sale or in the conduct of the sale of the wine. The wine offered for sale at the auction may not have been tested by the Liquor Control Board of Ontario (LCBO). The purchaser of the wine, by way of the auction, is required by law to acknowledge, in writing, his or her understanding of these terms at the time of registration.
PAYMENT
Payment is made in Canadian Dollars (CAD) on Wednesday, April 18, 2012. Payment can be made at the treasury desk with Cash, Amex, Visa or Mastercard, outside the venue. The desk will be staffed throughout the evening for your convenience. Maria Karakoulas is the UCC contact. The winners of absentee bids will be contacted the week following the Fine Wine Auction April 23 -27, 2012.
COLLECTING YOUR PURCHASED WINE
Pick-up of wine will be made once full payment has been received at the Fine Wine Auction by the College.
Successful bidders can call Anik Pelletier, Iron Gate Private Wine Management, at 416-234-9500 for pick up or delivery information. Delivery costs are $20 per lot to a maximum of $60 anywhere in the GTA. Pick up is available at no cost at Iron Gate’s offices at 532 Front Street West, Toronto, M5V1B8. Please allow at least one week from payment for organization.
