Matthieu Godard was born on March26, 1979 in Normandy’s historic city ofRouen. But he didn’t remain long in hisnative Northern France, and in fact al-

most straight out of culinary school, harnessed hislife as a chef to travel the world. From the start, hisculinary career has been filled with the unexpected.Unlike many accomplished French chefs, Matthieubegan cooking professionally relatively late in life, atthe age of 18, following a brief detour to study ac-counting, which he soon happily learned was not forhim. He also didn’t begin by scaling the heights ofhaute Michelin starred gastronomy. Instead, he spenthis first several years as a chef for Club Med, learninginvaluable lessons in psychology, working with peo-ple from incredibly diverse backgrounds and the sim-ple principle of making people happy with great food.His five year Club Med odyssey took him from LeLavandou on the Côte d’Azur, to French Alpine re-sorts such as Tignes and Val Thorens and thenabroad to Cadaques in Northern Spain, the CanaryIslands, the city of Marathon in Greece, and finallythe Bahamas.

With plenty of swashbuckling under his belt, by2003 Chef Godard decided it was time to focus onadding further culinary refinement to his repertoire.He returned to Spain and the five-star HotelGuadalpin in Marbella, where he worked under therenowned Chef Ramon Freixa. The following year,the ever adventurous chef headed for New York withnothing more than a plane ticket and a few restaurantcontacts in hand. While still a young cook back inFrance, Matthieu had already been impressed withDaniel Boulud’s international reputation as a Frenchchef who had made hismark in the US. By 2006,Matthieu felt ready to knock on Boulud’s door. InJune of that year Boulud offered Matthieu a positionas Chef de Partie (line cook) at New York’s db BistroModerne. It would be the start of a whole new levelof career building. During his almost four years at dbBistro, Matthieu rose to Sous Chef and then Execu-tive Sous Chef. He next went on to work for a year asa Sous Chef for Boulud’s Feast & Fêtes Catering com-pany and was then called on to join the team at thenew pan-Mediterranean Boulud Sud. By the springof 2012, with plenty of opportunity to observe Chef

Godard’s creative talent, consistent technique, energyand leadership in the kitchen, Boulud tappedMatthieu as the new Executive Chef for db BistroModerne in Downtown Miami.

“What I like best about my work, aside from theactual cooking, is the sense of family we have in thekitchen. I spend more time with my cooks than any-one else, and this means a lot to someone who’s lefthis own family behind to pursue a career,” explainsGodard. “A real kitchen is about as far as you canimagine from what you see on reality TV. It’s not lavie en rose, but there is a great sense of camaraderieand team work”. What’s the young chef ’s favorite partof the menu? “Definitely fish!” says Godard, “maybeit’s all that time I spent cooking at seaside resorts.”This summer look for Matthieu’s zesty Mediter-ranean flavored roasted red mullet with a lemonysauce vierge of olive oil, tomatoes Niçoise olives andcapers.

Once a European tradition, wine bars arespringing up all over South Florida. Many ofthem are strictly that – bars that serve wineand appetizer-style fare. As its name implies,however, the Vienna Café and Wine Bar inDavie is first a restaurant, and then a winebar., But also offers a full Liquor bar.

The wine bar itself is a cozy nook whereguests can sample from an extensive list of in-ternational and domestic pours ranging fromquite moderate costs to the medium range.It has a friendly, casual ambiance that invitesexperimenting with varied wines. A half wallwith decorative pillars separates it from thedining room, where burgundy-colored linenliners and crisp white toppers cover well-spaced tables, each holding a fresh rose. Themenu reflects Jacobsen’s Danish heritage,with Scandinavian and Austrian accents.

A private room is available for parties of upto 32 persons as well as an outside lounge

area for cigar smoking, if that is your pleasure.On a recent weekend evening; every table inthe dining room was filled with a mix of ages.On Fridays and Saturday the Bar is Openuntil 2 Am with Live Entertainment, andMichael the Bartender mixing your favoritedrink.

Once a month, Jacobsen hosts unusualwine dinners. Every month varies, some-times you bring your own bottle and othertimes it is a Winemaker who provides thewines and sometimes it is some body’s winecellar that’s been raided.

A meal at Vienna Café begins with a bas-ket of warm and delicious Multigrain andFrench bread as well as Lavosh served withplenty of sweet butter. The starter menu is in-teresting and varied – this is a good place togo with friends and order several appetizersto share. A variety of Small plates and smallerentrees are available for the lighter appetizer. Appetizers include duck and peppercornpate with Lingonberry sauce and pickled cu-cumber salad; bay scallops escargotbourginonne, duck foi gras with apple andonion compote smoked Norwegian salmonwith caviar and Danish meatballs

The menu includes daily Specials Createdwith local fresh ingredients and include local

fresh fish such as Grouperand Snapper rack of lamb,potato-crusted filet ofsalmon with pinot noirsauce.

The desserts all madein house by Gina thePastry Chef and aresinfully good . Whiteand dark Chocolatemousse cake was airyand the delicious Classic crème Brule has a properly seared top, andwas creamy and flavorful inside... But theapple strudel was the clear winner of thedesserts.

Food doesn’t have to be so intimidating. Eatingshould feel natural. And that’s one of the key words,natural-- food that is close to nature. And organic foodis as close to nature as you can get. There is one single room in your home that is guaranteed to make a first and lastingimpression. That room is the entrance to your home, your foyer.

The entrance to your home should not only make your guest feel welcomed but itshould also set the tone for the mood and the style in the rest of the home. This is theperfect area to inject with your personality.

Typically, the foyer is also one of the smallest areasin the home. Use the space limitation as your in-spiration and let your creativity and ingenuityguide your choices for the décor of this smallspace. And since one seldom lingers in the foyer,why not try some unusual design ideas incorpo-rating unusual objects. Even a striking colorscheme could be the perfect solution for your en-tryway.

Because foyers come in countless shapes andsizes, you will need to pay attention to maximizingyour specific entry. If it’s rather small, then I sug-gest you make this space as interesting as possible– perhaps with a dramatic display of artwork or alarge unique mirror. If it’s large, you’ll need to addelements that will increase the coziness of thespace - perhaps by incorporating a warm colorscheme or by using upholstered pieces of furni-ture, such as a bench or a chaise.

Because these spaces are generally high trafficareas, floors should be durable and easy to main-tain. An area rug immediately serves to addwarmth to the area and welcome your guests.Good lighting is also an important considerationin this space. A center chandelier is usually suffi-cient in a small foyer. It is important to select achandelier that is proportional to the squarefootage of the area. If the chandelier is too largeor too small it will definitely look out of place anddisrupt the balance of the rest of the design. As a board-certified cosmetic surgeon practicing for over 30 years,I’ve helped thousands of patients achieve a more aesthetically pleasingappearance and enhanced body image. I have mastered many surgicaland non-surgical techniques. I believe that surgery involves a lifetimeof learning, and I have given back to the community by teaching newtechniques.

How best to achieve a toned, well-contoured, and aesthetically pro-portioned body for the back-to-school season depends upon manyfactors. These include lifestyle, body type, age, health, and very impor-tantly, the nature and magnitude of the patient’s concerns.

Surgical Solutions: Lipoplasty One of the most frequently performed surgical procedures in my prac-tice involves body contouring and sculpting, and it is known aslipoplasty, or liposuction. This can be done alone or in conjunctionwith other body sculpting procedures, such as abdominoplasty(tummy tuck); breast enhancement by lifting, implanting or reducing;and arm and leg shaping.

As Danik MedSpa’s medical director, I perform liposuction andother body sculpting procedures on an outpatient or inpatient basisat Coral Springs Medical Center. The procedure may take one to fourhours depending upon the amount of fat to be removed or the resultsto be achieved. Likewise, recovery time will vary based on the extentof the procedure. Usually the patient wears a compression garmentfor several days to several weeks, and returns to full function in a veryshort time. The procedures may include facial cosmetic surgery aswell, and facial bandages have to be worn for at least one night.NOTE: Consultations for cosmetic surgery at Danik MedSpa areconducted free of charge by appointment only.

Non-Surgical Solutions I recognize that revolutionary new technologies have led to the intro-duction of some very effective, non-surgical sculpting techniques.These protocols require no labwork or medications and offer the ad-ditional advantages of being non-invasive and pain-free with no down-time. However, they do not represent a “quick fix.” Usually, a series oftreatments are required, and it may take several months to achievemaximum results.

One procedure, however, does deliver immediate results. It’s calledLipolaser Fat Reduction, and in December 2011, Danik became thefirst Florida medical spa to offer this therapy. Typically, a patient canlose 1/2 to 3/4 of an inch during their first treatment, and after a seriesof 12 treatments, patients can expect to lose up to 7 inches. Likelipoplasty, Lipolaser is used to target resistant subcutaneous adiposedeposits in the upper arms, thighs, buttocks, back, waist, abdomen,neck and chin. FDA-approved, the procedure harnesses the power oflaser radiation, which causes the adipocytes to collapse and releasetheir fatty acids into the lymphatic system where they are excreted.While reducing inches, this process also stimulates the natural pro-duction of collagen and elastin to effect a marked tightening of theskin. For best results, treatments should be administered 3 times aweek for 3 or more weeks. The results are cumulative, so patients willsee a progressive loss of inches accompanied by an increased toningand smoothing of the skin’s surface.

Do Your Home WorkWhether you opt for a surgical, non-surgical, or combination ap-proach to redefining your body image, I recommend being thoroughwhen it comes to due diligence. Review the qualifications of your sur-geon. Make sure he or she is certified by the American Board of PlasticSurgery (ABPS). Also look for membership in such professional or-ganizations as the American Society of Plastic Surgeons (ASPS), theAmerican Society for Aesthetic Plastic Surgeons (ASAPS), and theLipoplasty Society of North America. Meanwhile, if you’re consid-ering non-surgical body sculpting, research the reputation and licens-ing of the medical spa under consideration. Danik is fully licensed andaccredited, providing treatments under the supervision of a medicaldirector and board-certified cosmetic surgeon. Don’t accept less oryou could wind up paying for it in the end.

We have all enjoyed watching Michael Phelps and GabrielleDouglas compete in this summer’s Olympics. Many of us hopethat with the proper encouragement and coaching our children canone day compete at this level. We encourage our children to warm-up, play fair, and enjoy athletic competition. Parents and coachesshould be aware that sports injuries are common in young athletes.

Children are not “little adults.” Many of the pediatric injuries seenon the field are unique to children. Their bones have growth platesat both ends that are active up until the age of 18. These growthplates can see injuries from high impact repetitive activities. Chil-dren who are involved with jumping sports (volleyball, basketball)can have traction injuries to the growth plates in the front of theirknees, leading to Osgood-Schlatter disease. This condition usuallyimproves with anti-inflammatory medications and rest.

Traction injuries to the growth plates of the elbow and shouldercan occur with repetitive pitching. Coaches should follow the rulesregarding total number of pitches per game to avoid injury in youngathletes. Elbow dislocations in young children can also be associ-ated with a fracture through one of the growth plates of the elbow.Depending on the degree of displacement, the fracture may requiresurgical stabilization.

Ligament injuries are common in children. Adolescent girls areat increased risk for tears of the anterior cruciate ligament (ACL).Such an injury can lead to instability of the knee and early arthritis.Many orthopaedic surgeons are now using cadaver tendon to re-

place the torn ligament. The athlete is allowed to return to fullsports 6 months after the surgery. Young children with ACL tearswho have not hit their adolescent growth spurt may require bracingto delay surgery while their growth plates are still active. It is thoughtthat proper conditioning and stretching may protect the youngknee from ACL tears.

Shoulder dislocations in adolescent males under the age of 16can lead to recurrent shoulder instability. With many shoulder dis-locations, the anterior labrum (soft tissue socket) is frequently tornoff of the bony socket of the shoulder. Surgery involves repairingthe labrum back to the bony socket. This can be done arthroscop-ically (minimally invasive technique), but requires 6 months of re-habilitation.

Fractures can occur on the playing field. I have treated a fracturedfemur (thigh bone) in a young football player who was tackled onthe field. I have also operated on a fractured tibia (shin bone) in ayoung baseball player sliding into home plate. Two high perform-ance adolescent gymnasts presented to me with upper extremityfractures, one with a broken elbow and another with a broken fore-arm. Trampolines were involved in both of these gymnastics in-juries.

Before the orthopaedic issues are addressed, it is important toevaluate the “ABC’s” of injury: airway, breathing and circulation. Itis also critical to assess the condition of consciousness and thespinal cord. The young athlete with a concussion should be takenoff the field immediately for further evaluation. Coaches shouldnot hesitate to call “911” if there are any concerns about the condi-tion of the injured athlete.

Athletic competition is an important part of a child’s develop-ment. Sports participation teaches the child coordination, com-radery, and fitness. It also builds self-esteem. Parents and coachesshould look out for the child’s best interest when an injury occurs.It is more important to listen to the child than focus on the scoreof the game. The sports injury may require the child to leave theplaying field. Orthopaedic surgeons can assess the injury so thatthe child can return back to play. With early recognition, many ofthese conditions can be treated successfully without long-term disabil-ity.

1. Pulse confectioners' sugar and almond flour in a food processor. Sift. Pre-heat oven to 375 degrees. Whisk whites with a mixer until foamy. Add creamof tartar, and whisk. Add superfine sugar. Increase speed to high, and whiskuntil stiff peaks form, about 8 minutes. Sift flour mixture over whites, and folduntil mixture is smooth and shiny.

2. Transfer batter to a pastry bag fitted with a 1/2-inch plain round tip, andpipe 3/4-inch rounds 1 inch apart on parchment-lined baking sheets, Reduceoven temperature to 325 degrees. Bake 1 sheet at a time, rotating halfwaythrough, about 10 minutes. Let macarons cool on sheets for 2 to 3 minutes,then transfer to a wire rack. 3.Sandwich 2 same-size macarons with 1 teaspoonfilling. Serve immediately.

• 1 large container of Cool Whip or 2 cups freshly whipped heavy cream • 1/2 prepared angelfood cake

Optional toppings: crushed lemon-fla-vored hard candies, chopped lemon cook-ies or the fresh zest of one ripe lemon.

DIRECTIONS

1. Cut your pound cake into 1 inch cubes. Place a few of the cake cubesinto the bottom of the glass, Add a layer of whipped cream or Cool Whip.

HOW DID YOU MEET? Luck would have it, we met by chance at Roxy’s bar on Clematis street in West Palm Beach. I was standingat the bar when Joe came up to me and asked if he could buy me a drink when clearly. I had a full, just ordered, martini sittingnext to me. We hit it off chatting and when I had to leave Joe handed me his business card, saying that he would love to take meout to dinner. He was a perfect gentlemen. Who says you can't meet a great, normal guy at a bar. Single ladies there is still hope.

ENGAGEMENT STORY. When I first met Joe, I had told him that I always wanted to go to Paris. He told me that someday hewould take me there. A year after we met we planned our romatic trip there and to the French Riveria. I had a feeling that thiscould be the trip when he might propose because where else was he going to find a better place to propose than in the city of Love.To my surprise he waited till the very end of the trip when we were in Nice France. That day was the picture perfect day for us. Theweather was beautiful so we toured Saint Paul de Vence- One of the oldest medieval towns on the French Riviera, right out of afariy tale. That night we had an amazing authentic provincial cuisine and afterwards decided to take a romatic stroll on the Prom-enade des Anglais. There is a point at the very beginning that is secluded and over looks a cliff with crashing waves. We sat on thestone bench nearby. The weather was a bit chilly and since I was wearing a dress, I asked if I could sit on Joe's lap instead. He eagerlysaid "yes". He leaned in an whispered in my ear "do you like Nice?" I said "yes I love it here." Then he asked "do you want to comeback?" I said "definitly" and then he said "well maybe for our honeymoon." I then said "what!" and he said "will you marry me?" Iexcitidly said "yes I love you" and he said "then you have to get off my lap so I can give you the ring in my pocket."

WHAT MADE YOUR WEDDING UNIQUE. Our wedding day did not start out as a perfect picture day. The morning of waspouring rain and stormy. By some miracle the clouds parted and stopped raining an hour before our ceremony. Resulting in themost beautiful storm clouds on the beach, as backdrop for our photos. Our whole wedding was DIY (do it yourself). I come froma very creative, artistic family. From my mother doing the flowers, to my sister doing my hair, to family and bridal party settingup the tables and all decor at my parents house for the reception, to creating my own invitations and planning everything myselfwith the help of my mom. Also our wedding was very sentimental for me, to wearing my mother's wedding dress altered, tohaving my mother's ring as my engagement ring, to wearing my grandmother's pearl bracelet.

WHERE WAS THE HONEYMOON? Lake Como and Venice from April 30th to May 9th 2012.
