What a great year it has been! Seems like just yesterday, we were starting the collaboration of our Flavors of Belize Cookbook and what a whirlwind of a time it has been. We've been enjoying the ride and every place it has taken us; a fantastic journey and we are thrilled at the astounding reception we received.

The truth of the matter is though, this reality of our cookbook would not have been possible if it weren't for the Flavors of Belize Magazine. The magazine that started it all. It's now our third edition, and we are just bursting at the seams with joy at the success this little guide has brought with it.

There is no shortage of delicious and inspiring foods in Belize and every meal is a unique and new discovery. With the release of the Cookbook, we wanted to ensure that the Guide was everything that has come to be expected of it, and more. Featuring a host of new and previous listings, the best

restaurants that Belize has to offer featuring menus from cultures that live all across our

country. The foods, the people, the destinations, the atmosphere will all leave you hungry for more.

When you first flip through your guide you'll find that we have expanded our listings and widened our range even more, including more information on Belize and it's service providers. Whether it be at one of our

spectacular restaurants on the festive island of San Pedro or a fun, open and friendly bar down in Placencia, you'll find a spot that's perfect for you. Enjoy a little of our history and culture and find out all the fun things to do while you're here.

It is with great pleasure I present to you our third edition of Flavors of Belize and as always, I thank our fantastic participants for all their support!

Sincerely,

Tanya McNabDirector/Designer

Belize enjoys a festive palette of diverse people.

Belizean society today is ethnically diverse and culturally rich. The cultures that are spread across the country's regions have combined their history and traditions with the natural offerings of Belize to produce food that is no longer defined in limited terms. The influence of our Central American neighbors and their own multi-cultural population compounded by the arrival of visitors with discerning palates has resulted in a higher standard of cooking throughout.

The Mexican, Guatemalan, African, Caribbean, Mayan, Garífuna, English, Chinese, Indian, Lebanese and American influences make it almost mandatory that Belizean cuisine is not relegated to only one or two dishes that have managed to gain the most popularity. It is impossible now to simply answer, when asked, that rice and beans is the staple Belizean dish. Instead, a few more questions need to be asked. What part of Belize? Which cultural group? What time of year?

The official language of Belize is English, but while visiting Belize you'll be sure to hear other languages spoken throughout, such as Creole, a unique variation of English, only found in our country. Spanish is the main language in towns that border Guatemala and Mexico to the north, and it's possible to run into several other languages such as Mayan, Garifuna, Chinese and Lebanese. One thing that's for sure is no matter what language your speak or what ethnicity you come from, we all have something in common ... Belizean people are known for their warmth and friendliness and we welcome visitors all year round!

Chef Jennie StainesElvi's KitchenWhere Something Good is Always Cooking’

THE ISLANDS(SAN PEDRO & CAYE CAULKER)

As a little girl I grew up watching my mama Elvia cooking recipes that were handed down to her. Recipes you wouldn't find in cookbooks or magazines and certainly not on the Internet. She continued our family traditions with recipes that were passed down to her and she in turn passed them down to me. Our traditional Maya dishes like a robust relleno or a sweet and tangy escabeche, laden with pungent onions and native Mayan spices, to name a few. As a chef, I treasure those recipes and I honor the old ways of Belizean cooking.

I see myself as a steward, a guardian of those authentic cooking traditions which I like to call Eclectic Maya. It is just one of the many Flavors of Belize. Instead of using too many European or Eastern spices and herbs, I make every attempt to use traditional local spices and techniques passed down from our Mayan ancestors. Ingredients such as native oregano and epasote help give my dishes a uniquely Belizean flavor. And in place of conventional meats, I like to include fresh seafood such as shrimp, conch and lobster to give even the most mundane dishes a distinctly Belizean twist. Coupled with fresh-cut plantains or sweet coconuts, dishes such as Mole, Pibil and Sere come to life in my kitchen, not because of any culinary skill I possess, but because I realize that we have something very special here in Belize. We are tied to the land and to the sea. And our rich culture and traditions remain largely undiminished. All we have to do is embrace our naturual resources and USE THEM!

I hope that by honoring the past I can combine old and new to create very special dishes. I hope that I can remind people of this great culinary tradition that was born in one of the oldest and greatest civilizations the world has ever known. And I hope that I can, in some small way, use what I have learned to contribute to the Flavors of Belize.

Belize City's food is incredibly diverse. In addition to its Mexican and Central American influence, the city's location on the coast of the Caribbean Sea ensures that a healthy dose of island fare is available in most restaurants. Belize City a port of entry and while many travelers come just to visit, whether for business or pleasure, a lot have stayed and brought with them their own country’s cuisine. The result is a fusion of flavors presented by a collection of culinary establishments offering Belizean, Mexican, Chinese, Lebanese, Italian, Indian and International specialities.

Belize’s northernmost districts play their proximity to the culinary powerhouse of Mexico to their advantage. The restaurants in Corozal and Orange Walk combine the best of both worlds to offer menus that are replete with Belizean dishes that they do best, while adding a smattering of Mexican-inspired creations.

e #1 “MUST VISIT” Restaurant in San Pedrofor 37 Years!

If you're an angler looking for a great saltwater experience, then you' ’ll find great options north to south in Belize, no matter where you choose to fish. From the northern flats off Ambergris Caye, to the central waters of Turneffe Atoll and Belize City, to the south near Dangriga and Placencia, Belize offers what is arguably the greatest amount of diversity in the entire world of Caribbean flats fishing. Bonefish, permit, tarpon, snook, jacks, snapper, ’cuda and numerous other species inhabit the pristine Belizean waters large numbers of fish that draw both hardcore, experienced anglers and those new to the world of saltwater fishing.

If you’'re looking for tarpon then you' ’ll want to focus your attention to the north: specifically the enormous flats between Ambergris Caye and the mainland. Anglers who want to target snook or blind cast for tarpon can look to the mainland rivers close to Belize City. Those looking to concentrate on permit might look at the Dangriga-Placencia region. As for bonefish, they're found throughout the waters of Belize, with Turneffe and Ambergris heading the list for both numbers and size. Overall, Belize is a saltwater flats paradise, poised to become even better now that catch-and-release for bones, permit and tarpon has become the law through the entire country. (Belize is the first and only country in the world to enact this type of protection for these three species.) Belize offers unbelievable saltwater opportunities for both the fly and light tackle angler. As a bonus, Belize's pristine and highly protected fishing grounds are quickly reached from the U.S.A. If you need an angling getaway, Belize is the place to be!

Reservations highly recommended.

Our idea was to blend nature with elegance and we began to construct Aji out of recycled driftwood and local limestone. Our restaurant is one of a kind on Ambergris Caye. Aji is completely exposed. We have made the restaurant feel sheltered with our double palapa roof, but most of our tables sit under gumbo limbo trellises, almond trees, coconut trees or sea grape trees. Aji is an unbeatable dining experience. At night listen to the waves lap along the seawall while dining on fine wine and seafood under the stars. Watch the moon rise over the reef from your table. At Aji exceptional food and service are our standards and we are sure you will be pleased with our menu that caters to the tapa lover, the seafood fanatic and the vegetarian alike!

The desire to marry under tropical skies wandered into our imaginations many generations ago. You can say "I Do" to the one you love in a local chapel, a tropical garden or on a sun kissed shoreline. Belize makes it easier than ever to turn your romance dreams into a reality.

Think of the possibilities ... a barefoot beach ceremony and champagne Bar-B-Q on your own remote uninhabited island. Perhaps you are a traditionalist, white lilies will adorn your garden bower while a soft breeze whispers in stately palm trees. Book your wedding on a boat or even underwater! We can find you a jungle site, reserve a Mayan ruin, or find you the perfect elegant hotel for your ceremony and reception. The limits in Belize are few and far between.

The good news is, getting married in Belize is legal everywhere else in the world too! All ceremonies (unless otherwise specified) are delivered in English and won't have to register your marriage upon your return home.

Of course, Belize is not limited to just weddings, you can also renew your vows, celebrate an milestone or anniversary or make a promise. Whatever your romantic occasion, Belize can host your special day.

Belize Recipes

Although I knew very little about Belize recipes, I love learning about other cultures and foods in other countries. I treat cookbooks as not only a source for great, new recipes but as a way to learn about places that I’ll probably never visit. When I learned about Flavors of Belize The Cookbook: An Ancient History, Diverse Culture, Exotic Cuisine, I was instantly intrigued. Belize is located in Central America so it only makes sense that some of their recipes would have a Caribbean flavor. What I didn’t expect was that this Belize cookbook includes recipes from cultures like the Maya, British, Mestizo, Creole, Chinese, Lebanese, Garifuna and more. There are over 120 different recipes included.

Flavors of Belize

Recipe chapters include Starters, Soups, Seafood; Pork, Chicken, and Meat; Salads and Vegetables; Breads, Grains, and Legumes, Finishing Touches and Desserts. Each chapter begins with a look back into the history of Belize and an explanation of the different cultures that create a foundation of Belizean heritage. Each alternating page in the cookbook is a full page photograph which makes this cookbook a real joy to read. Photographs are from renowned food photographer Matt Armen-dariz. The recipes themselves are quite varied in experience level. I found a number of recipes that could easily be prepared by someone without a lot of experience in the kitchen (like the Habanero Salsa). Also included are recipes that are more challenging including the Lobster Robert and the Tamales.

This cookbook has a wonderful selection of recipes you can enjoy at every meal of the day. You may need to head to a larger grocery store or ethnic market for some of the ingredients needed in Flavors of Belize. I know that my grocery store doesn’t carry things like chaya leaves, red racado, or cow foot. Many of the recipes can be prepared without ethnic ingredients and I’m looking forward to trying the Pork Chops with Pineapple Salsa and the Maya Chocolate Cake. If you’re interested in Belize recipes, you definitely need to purchase Flavors of Belize The Cook-book.

Page 42: Flavors of Belize 2013

Belize has always been a country rich in history.

The Mayans, one of the most extraordinary cultures in human history, play a large part in our country's past. Remarkably advanced mathematicians, ingenious architects and highly skilled artisans, yet one of the most amazing aspects of the Maya is that they still thrive in Belize all these centuries later. Estimates place the Maya in Belize around 2000 B.C. Through the years, the Maya developed vast commercial centers and trade routes across the country. In fact, at its peak in the 7th century, the Maya population in Belize was estimated at over 1 million people.

Our land is sprinkled with an impressive system of Mayan ruins, most surrounded by lush, tropical rainforest. Recently found glyphs in the south have suggested that Belize had a strong military and once had a strong rule over neighboring regions. Some of our most popular Maya Ruins in Belize are Lamanai, Cuello, Cahal Pech, Altun Ha, Xunantunich, Nim Li Punit, Caracol, Santa Rita, Cerros, Nohmul, Pacbitun, Pilar, Maintzunun, Lubaantun, and Uxbenka.

Many of these Mayan Ruins can be climbed and tours are offered to these ruins no matter what part of the country you visit. Walk in the footsteps of the Maya, explore trails and observe exotic birds and tropical wildlife. Today, we know much about the Mayans and their astounding monuments, but there is still much more left uncovered, and many secrets left to be discovered.

Located within the Heartland of the Maya, Chaa Creek contains over 70 Maya sites, and is close to the richest and most intriguing ancient Maya temples and ancient cities. Our rainforest to reef packages open up the incredible variety of Belize from the Maya Mountains to the stunning Belize Barrier Reef.

For those seeking a true Belizean experience with a range of options for both adventure and relaxation, and with award winning Green practices, Chaa Creek is the recognised destination of choice.

The district of Cayo is known for many things, epicenter of inland touring, a mayan ______, and also a veritable Mecca for foodies.

San Ignacio presents rolling farmlands and the unmistakable feeling that things now, are still a lot like things were back many years ago. And as far as food is concerned, that element helps to ensure an authentic experience when dining.

A visit to the San Ignacio Farmer's Market is a must. This is perhaps the most vibrant of the country's fruit and vegetable displays and the source for most meals served in the restaurants here.

The fishing village of Hopkins is an idyllic stop that takes

you just off the Hummingbird Highway and on your journey

toward the southernmost parts of the country. Rich with

culture, charm and the appeal of a uniquely undiscovered

destination. Set right on the sea side, the predominantly

Garifuna (descendants of Carib, Arawak, and West Indian

people) villagers that call Hopkins home, have set the

foundation for quality eating here. With ’freshly caught’

seafood and generations of traditional meals, the food

available in Hopkins is as authentic as it is delicious.
