Spring is traditionally known as the season of new growth. Here at Palm Lake Group, spring has definitely sprung for us in a big way, with development further heating up in time for summer.

Our Toowoomba Pinnacle Country Club will be open by the time this magazine goes to press. We’re sure it will be the perfect magnet for attracting and entertaining the twin communities of our existing Toowoomba resort and the new adjacent Pinnacle development. This Country Club is the Group’s most luxurious and decadent to date, and unlike anything the Toowoomba area has seen. We are proud to be bringing a community facility of this calibre to the region.

True to the essence of spring, Beachmere Bay homes are emerging out of the ground and civil works at our brand new Caloundra Cay location are also moving ahead at full steam. We plan to be building homes at Caloundra before the end of 2017.

Over at Palm Lake Care, Bethania’s new Memory Support Community (Memory Lanes) is an exciting step forward for our Group. The rejuvenation of this facility is something very unique for the area and we are looking forward to unveiling the finished project in December 2017. You can read more about this on Pages 32 and 33.

Our Palm Lake Care Mt Warren Park facility is progressing nicely and we look forward to commencing our new Toowoomba aged care facility next year after some recent major changes to the plan. These enhancements will allow us to better showcase the hinterland view while adding a café and bar for the enjoyment of all residents and visitors of our care facility and both surrounding community lifestyle resorts.

Personally, I’ve been immersed in the recent legislative changes to the Manufactured Homes (Residential Parks) Act and actively participating in shaping them. I’ve also been reading extensively about the Federal Government’s changes to the residential Aged Care Act.

And on top of an exciting work life, my wife and I welcomed our third child in September. Like I say, spring has most definitely sprung – in more ways than one! We look forward to celebrating summer with you.

SCOTT ELLIOTT remembers mowing the lawns at Palm Lake Resort Willow Lodge as a teenager back in the 1970s. The then-housing park was also the perfect location for young Scott to clock laps on his beloved motorbike – to the (understandable) dismay of neighbours. Nowadays, that teenager with the insatiable energy streak has refocused his energy into exciting new Palm Lake Resort projects as managing director of the Palm Lake Group, which celebrates its 40th anniversary this summer.

While many modern businesses start and fold in quick succession, Palm Lake Group has, without doubt, stood the test of time in an industry that faces many internal and external pressures.

While Scott’s vision for the future is exciting, it’s with thanks to Scott’s business partner and company founder, Walter (who also happens to be his father), that the family business was built on the strong foundations that enable it to keep growing from strength to strength today and into the future.

It was an auspicious trip to the United States for Wal back in 1973 where this family business story actually begins. Wal had prior development experience and travelled to the States to explore the residential park model.

“Speaking with some of the over-50s residents there, I noticed that people could live quite well in a managed village,” Wal recalls. “I decided to develop something along the same lines here in Australia. A site came up in 1976 in Bangholme, Victoria, and I purchased Willow Lodge in 1977.”

Scott remembers his family of four (including mum, dad and his younger sister) living on site for the first few years as Wal bedded down his approach to managing the property and transforming it from a caravan park into the vision he had in his mind. Wal admits, “it was extremely difficult in the early years” but, 40 years on, Willow Lodge remains firmly within the Palm Lake Group portfolio and close to Wal’s heart.

From an Australian-first housing park in Victoria to opulent and decadent multi-million-dollar clubhouses and award-winning architectural homes, Palm Lake Resort has matured no end.

“Of all the Palm Lake Resort locations, it’s my favourite because of the maturity and enhancement that we have achieved at that site,” he says. The weather saw Wal leave Victoria for the sunny new horizons that Queensland had to offer. He purchased his second property, an existing resort in Bethania on Brisbane’s southside, and it was here that the name “Palm Lake Resort” was officially coined.

“There were residents on site at the time, the Dobsons – Jean and Lindsay – who came up with the name ‘Palm Lake Resort’,” Scott recalls. “They loved the grand palm trees in the landscaping at the resort and the massive adjoining lake. We liked the name, so it stuck.”

It was here at Bethania that Scott really found his feet in the family company. After starting his career managing pubs and hotels, he took a hands-on role as live-in resort manager. He got to learn the family business from the coalface and it’s with those early learnings at the grassroots level that Scott is able to intimately understand the business that he oversees today. It’s also here at Bethania that Scott realised his passion for people.

“I learnt about treating people right – from the residents and the committee members to the staff. It’s something I’m still passionate about today,” Scott

says. “We have nearly 7000 residents in total across all the Palm Lake Resorts and they are all welcome to my phone number if they need me – many do call me direct.”

From Bethania, Palm Lake Group purchased its first greenfield site at Banora Point. Then the Group’s next site at Deception Bay was built and sold in a record 18 months. These successes were major turning points for the company and proof that the Elliotts were getting the formula right - great locations with coveted facilities all at a reasonable price point.

Scott recalls the Global Financial Crisis being another major turning point for the company. Where other businesses were forced to abandon their developments, Palm Lake Group was looked upon quite favourably by the banks and the company was able to pick up some real estate bargains through distress sales.

“We were one of the few businesses lucky to prosper from the GFC,” Scott admits. “Our company doubled in size.”

Fast forward 40 years from that original purchase at Willow Lodge and Palm Lake Group now owns and operates 20 manufactured home estates (including the brand new development, “Caloundra Cay”) and three retirement villages across Australia’s east coast alongside four Palm Lake Care facilities. Earthworks are currently underway on a fifth Palm Lake Care facility at Mt Warren Park. The Palm Lake Group currently employs some 450 staff across Australia and runs the business out of headquarters on the Gold Coast.

Proving just how Palm Lake Group has evolved for the changing market, the Master Builders Association recently presented Palm Lake Resort Ballina with three major industry awards including Best Commercial Building ($5

million to $10 million), Best Medium Density Project and Best Exhibition Home. Resort facilities have never been more opulent and bang on their target market than now. Competition-style eight rink undercover lawn bowls greens sit alongside professional ten-pin bowling alleys, luxury cinemas and even state of the art gymnasiums – the first of their kind in the Southern Hemisphere and exclusive to the Palm Lake Group. But what makes Palm Lake Resort stand out from the pack is definitely the lifestyle on offer. The resorts have provided opportunities to bring together thriving communities of likeminded local people. Warm and welcoming, the ‘family’ nature of the business is not lost on the properties themselves where neighbours become part of broader ‘family’.

Scott says the Group is currently working behind the scenes on a handful of further locations right along the Australian east coast with at least three years of development plans already on the drawing board.

“Every new resort, village or aged care facility we complete, there are people who copy our ideas, our style, our design and even our business model to advance their own goals,” Scott

reflects. “Copycats are unavoidable but when they come out, you know you’re doing something right – they are paying us a compliment to a degree. What they don’t realise is that this make us raise the bar and set new challenges for ourselves and that is what keeps us on top, continually improving our residents’ lives and enhancing our business.”

So what does Wal, now aged 78 and still attending the company’s Gold Coast headquarters for board meetings, see as his company’s key to longevity?

“Our projects are timeless and the business just keeps maturing,” he says.

Wal encouraged other young self-employed business minds with advice based on his decades of business experience.

“Believe in what you are doing and be prepared to persevere when there are set backs,” he says.

When asked how Wal imagined Palm Lake Group in 40 years’ time, he summed up the future company in just three words: “Bigger and better!”And we don’t doubt that for a minute.

“I learnt about treating people right... It’s something I’m still

passionate about today.”

NEWS BITES

Palm Lake Resort Toowoomba Pinnacle has just unveiled its latest masterpiece, the Pinnacle Country Club, alongside five new architectural display homes exclusive to the Toowoomba Pinnacle resort. The Pinnacle Country Club is the largest and most decadent Palm Lake Group has built anywhere in the country and is raising the bar for luxury living. Palm Lake Resort Cooroy-Noosa residents are also enjoying their brand new eight-rink championship undercover lawn bowls green since its opening at the start of December. It’s a very welcome addition for this resort’s community of active neighbours.

BASH CASHBONANZA!

Palm Lake Resort Bargara staff member Amy Burns proudly watched her partner Corey Haack and his seven teammates named in the Top 10 fundraisers of this year’s iconic Variety Bash. The Bash is Australia’s longest running and most famous charity motoring event. Since the first event in 1985, more than 87,500km have been travelled and more than $200 million has been raised, changing the lives of thousands of children across Australia. Corey was part of a team of eight who drove two 40-year-old cars all the way from Caloundra to Airlie Beach in August, delivering $36,000 in donations to children’s hospitals. Palm Lake Resort was proud to contribute $2500 to the cause.

BUSY, BUSY, BUSY IS HOW WE LIKE THINGS HERE AT PALM LAKE GROUP, WHERE EVERY DAY BRINGS EXCITING DEVELOPMENTS, NEW CHALLENGES AND INTERESTING NEWS. HERE’S JUST A SNAPSHOT...

NEW FACILITIES UNVEILED

Palm Lake Care continues to go from strength to strength with a very unique Memory Support Community to be unveiled at Bethania in December. Construction is also progressing well at the Mt Warren Park site and work will commence on Palm Lake Care Toowoomba in 2018. Palm Lake Care general manager Kevin Landles says it’s a very exciting time for the Group right now.

STRENGTH TO STRENGTH, FOR CARE

10 YEARS FOR TEA GARDENS

On the evening of November 17, residents came together to celebrate the 10th anniversary

of the opening of the resort we now know as Palm Lake Resort Tea Gardens. The cocktail

party saw more than 200 guests in attendance. The resort’s first resident, Alan Watkinson, gave

a speech about his time at Palm Lake Resort and the night ended with a (literal) bang as the

evening sky lit up with fireworks!THE FUTURE OF EXERCISE IS HERE

The recent Master Builders Association Awards were a big success for Palm Lake Resort Ballina, winning gold in three categories. Along with taking out the Best Medium Density Project, Best Exhibition Home and Best Commercial Building ($5 million to $10 million) awards, judges praised the sleek and smart designs of the Ballina homes.

Palm Lake Resort residents are among the first in the Southern Hemisphere to experience the health benefits of one of the most technologically advanced electronic fitness training systems in the world. Positioning Palm Lake Resort as the stand-out market leader in luxury health and wellness lifestyle communities, Palm Lake Group signed a multi-year deal with ‘milon’ to become the German brand’s exclusive client in the retirement sector here in Australia.

The milon system consists of 12 separate electronically controlled strength and cardio machines. Residents simply insert their personalised smart card into each piece of equipment as they progress around the milon circuit and the card instantly and automatically adjusts the equipment to each user’s individual anatomy and training program requirement. The milon strength and endurance circuit is the centrepiece of Palm Lake Resort Cooroy-Noosa’s popular Pavilion Recreational and Wellness Centre. A milon gym was recently unveiled as part of Toowoomba Pinnacle’s multi-million dollar Country Club and there will also be a milon gym installed at Palm Lake Resort Bargara.

The unique smart-card operated milon equipment is manufactured in Germany under the strictest requirements for quality and precision. The German brand itself dates back to the late 1960s and is credited with the invention of the first automatic tennis ball-serving machine.

The latest delights off Palm Lake Resort’s drawing board, Meridian Collection homes blend classic elegance with modern simplicity – perfect for those who seek the little luxuries in life. But don’t let us sing biased praises – the Master Builders Association (Australia’s preeminent building authority) just awarded the Meridian Collection a coveted industry award for Best Exhibition Home in its category.

Meridian Collection homes are architecturally designed with space in mind, thoughtfully using natural light to literally illuminate the modern yet timeless interiors and focusing on a seamless blending of indoor and outdoor living through smart floorplans. The designs are opulently decadent, enhanced by the premium European-quality appliances and finishes that add a polished touch to these homes.

Like all homes at Palm Lake Resort, the Meridian Collection homes are clad in Hebel for its acoustic and temperature-insulating qualities, as well as being solar-orientated to ensure home owners are comfortable all year long.

As well as Best Exhibition Home, Palm Lake Resort Ballina won gold in two other categories at the Master Builders Association awards night including Best Commercial Building ($5 million - $10 million) for the resort clubhouse and Best Medium Density Project. SUMMERDAZE

It can be tempting to jet off and enjoy the beaches of Fiji or Hawaii in the warmer months, but why not make the most of some of the spectacular seaside spots we are blessed with here at home?

FROM AIRLIE BEACH right up to the Cape York Peninsula, there is so much to see and do in this particular stretch of Queensland coastline. It’s a true tourist haven and provides so many launching pads for even more adventures on the 74 island wonders that make up the Whitsundays as well as all the tropical delights even further north. Your problem is one of excess - and where to begin!

What better way to explore this coastline than from the comfort of your own home on wheels? It’s no secret that RVs and the adventure caravanning lifestyle are wildly popular across many Palm Lake Resorts. Palm Lake Resort Eagleby residents John and Sherril Matheson are North Queensland experts and ‘professionals’ when it comes to travelling the wide open roads of Australia with their caravan. John is the president of the resort’s RV Road Runners group. With thanks to John’s coordination, members aim to travel to a ‘local’ holiday destination 1-3 hours from their home base every month and then, every six months, group members aim to get w

18 19

away for an extended trip of anywhere up to 10 weeks. Among their busy diary pages, the Palm Lake Resort Eagleby RV Road Runners like to meet up on the road with their counterparts, the Palm Lake Resort Bargara RV Roamers. The Mathesons admit they are big fans of Queensland’s tropical north.

“Cairns and Port Douglas are some of our favourite spots, and we frequently go up to our home town of Mission Beach,” Sherri says.

“The whole area is a very popular destination for us and our neighbours,” says John. “We all love going up there and go quite regularly.”

Looking for a hot tip? The pair says Lake Elphinstone is a must-do for caravanners - and a well-kept secret. Located less than two hours inland of Mackay, the camping area surrounds an expansive lake that beautifully reflects the sunlit sky. Why not take a trek along Queensland’s east coast and visit a few of these places on your travels this summer? Here are our hot tips…

Island hoppingAs you drive up the A1 motorway Bowen-bound, be sure not to miss the sharp right turn onto Route 59, just after Proserpine, that takes you straight to the coast. It’s here that you’ll have access to some of the best that Queensland has to offer – the famous Whitsunday Islands. You can set up camp at Airlie Beach or use Shute Harbour as your jumping point to explore the stunning Whitsundays. Discover the quiet coves of nearby islands or stretch your legs along those brilliant white sand beaches that the area is so famously known for.

Cassowary CoastThis stretch between Cairns and Townsville is one of Tropical North Queensland’s best-kept secrets. Nestled amongst an expanse of palm trees is Mission Beach, which looks out over the Great Barrier Reef and is its closest access point. But the real draw of the Cassowary Coast is – you guessed it – the cassowaries. These rare flightless birds can be seen wandering, and even swimming, around the Mission Beach area.

Trees meet the seaVenture slightly north of the stunning Cow Bay and behold one of the most complex ecosystems on earth. The Daintree Rainforest makes for the perfect day trip, with hiking trails, natural pools and even places to spot crocodiles along the river. Head further up the coast to where two UNESCO World Heritage Sites meet, as the Daintree slopes down into the crystal-clear waters of Cape Tribulation. It’s simply unmissable.

THE LAID-BACK MECCA THAT IS BYRON BAY IS THE JEWEL OF THE NORTHERN NEW SOUTH WALES COAST WITH COSY CAFES, GREAT SURF BEACHES AND UNIQUE SHOPPING OPTIONS JUST SOME OF THE REASONS PEOPLE CAN’T GET ENOUGH OF THIS PLACE. IT’S JUST A SHORT DRIVE FROM PALM LAKE RESORT BALLINA, OH, AND IT’S HOME TO A HOLLYWOOD CELEBRITY OR TWO!

BitesOne of Byron’s most loved eateries is The Pass Cafe. Situated in Arakwal National Park and overlooking the Pass Beach and surf break, the staff here serve up food that’s even better than the view. The diverse menu boasts everything from banana and toasted coconut pancakes to lemon pepper barramundi fillet, and just about everything in between. Enjoy a long breakfast or lunch here while taking in the scenery, or simply grab a cup of quality coffee to go. The Farm Byron Bay is another must-do. Think rolling acres of green working farmland, a menagerie of farm animals to watch and enjoy, and food worth driving interstate for! Eat at Three Blue Ducks or order a picnic hamper to enjoy on your chosen patch of cool grass under one of the inviting shady trees. And don’t forget to grab an artisan loaf from The Bread Social and some sustainably produced local pantry goods on your way home.

Shop The unique boutiques dotted along Byron Bay’s main streets will keep your retail therapy under control for hours – days, even! For the fashionista, Spell Byron Bay is definitely not one to miss. The dreamy collection of Bohemian-inspired clothing truly embodies the Byron lifestyle, and floating around in one of their dresses will have you feeling like you’re on summer holidays long after you’ve returned home. They also stock children’s clothes, meaning your Christmas and birthday presents for the grandies are sorted.

BYRON BAYSUBURB SPOTLIGHT

SightsCape Byron Lighthouse is perched on the Australian mainland’s eastern-most point. The outcrop is a great place for a hike, while the lighthouse itself is steeped in history – it’s also Australia’s most powerful lighthouse! If you time your visit well, the walking track is a great location to watch migrating whales from June to October. Remember, a long morning walk is best enjoyed with a big breakfast waiting at the end…

HEALTH, WELLNESS and the stunning Queensland climate are what attract Palm Lake Resort Cooroy-Noosa residents to this contemporary and private Sunshine Coast hinterland haven – and it’s that irresistible sense of community and laidback lifestyle that keeps them there.

Residents also know the benefits of staying active. They are among the first in the Southern Hemisphere to experience the health benefits of one of the most technologically advanced electronic fitness training systems in the world. Positioning this resort as the stand-out leader in luxury health and wellness lifestyle communities, the ‘milon’ strength and endurance circuit is the centerpiece of the resort’s opulent Pavilion Recreational and Wellness Centre.

Soon, the resort will also offer electric bikes for residents’ use. Fun, fitness and fresh air all packaged up on two tyres – what a great lifestyle!

There are so many positive benefits for spending time outdoors that relate both to mental wellbeing and physical health. Here’s a snapshot...

An apple a day might keep the

doctor away but now research is

showing that fresh air and sunshine, more so, are what the doctor should

be ordering.

WELLNESS on TREND

VITAMIN D FRESH AIR

There are many proven benefits of breathing fresh air. Among them:

• Fresh air helps improve blood pressure and heart rate.

• Fresh air increases the flow of oxygen helping you digest food more effectively.

• The more fresh air you get, the more oxygen you will breathe which will increase the amount of serotonin (the happy hormone) in your system. Put simply, fresh air makes you happier.

• Increasing the amount of fresh air we get will increase the amount of oxygen which helps our white blood cells function properly by fighting and killing bacteria and germs.

• Fresh air cleans your lungs. You lungs dilate more from having an increase of oxygen so fresh air improves lung function.

• Fresh air gives you more energy and a sharper mind. You will come back indoors feeling brighter because more oxygen results in greater brain function, improving your concentration skills and providing you with more energy.

REDUCED STRESS

Phytoncides are airborne chemicals that plants and trees emit for protection from insects and rot. These chemicals also happen to be at the centre of research in regards to stress reduction. A 2008 study published in the “Journal of Biological Regulators & Homeostatic Agents” recruited participants to spend time walking forest and city areas for this very reason. According to the research, participants showed more physical signs of relaxation – including lower blood pressure and lower amounts of the stress hormone cortisol – when they spent time in the forest compared to the city. Sounds like the perfect excuse to get out and explore your local gardens, doesn’t it?

ENERGISED

The “Journal of Environmental Psychology” published a group of studies in 2010 that showed “being outdoors was associated with greater vitality”. Research participants reported just generally feeling happier, healthier and more alive when they spent time outdoors and in nature.

Vitamin D is primarily known for its role in bone health. It helps with the absorption of calcium and phosphate, reduces calcium loss from bones and is needed for bone growth. There are suggestions that it also plays an important role in other aspects of human health especially immunity and infection control. Recent research on tuberculosis bacteria has shed light on the critical role vitamin D plays in the function of T-cells, which are white blood cells that fight infection in the body. Vitamin D is also linked with fighting flu and other respiratory infections due to its role in the production of infection-fighting amino acids (antimicrobial peptides).

According to Choice and ABS data, some four million Australians suffer from a vitamin D deficiency. This has been put down to overzealous use of sunscreen and sun protection, as well as our increasing preference towards indoor recreation. Choice states that the ‘right’ amount of outdoor sun exposure to maintain adequate vitamin D levels is 6-7 minutes of sun with arms and hands exposed outside the hours of 10am-2pm for those moderately fair skinned. As Carlene explains, the Hamptons is all about keeping things “soft, soft, soft” so remember this when selecting your fabrics. Bone or warm grey hues are ideal for couches and armchairs, especially in homes that are frequented by pets and/or grandchildren. Plenty of cushions and throws help to achieve that homely Hamptons feel, while natural fabrics like linens and cottons keep your heavier furniture items – couches or bedheads – light and breathable. And for those finishing touches, like table ornaments and décor, Carlene suggests steering clear of the clichés.

“Coral and starfish can look out of place if you’re not near the ocean,” she says. “Think about what works best in your own home and go from there. Many of my favourite homes include the best elements of several different styles, and have plenty of personality injected into them.”

www.beachmerebay.com.au

Carlene encourages all home decorators to be bold and experiment. “Try new colours, move things around and play with the space and the furniture items you’ve already got. You never know how it will look until you play.”

Carlene says a gallery wall, featuring loads of frames and/or other wall art, “fills up the walls to achieve that layered look and makes your home feel warm and inviting”.

GALLERY WALL

Your forgotten knick-knacks can be repurposed as one-of-a-kind décor. “Celebrate those one-off items that no one else has,” she says. “Hit the second-hand or antique stores to find truly unique treasures.”

KNICK-KNACKS

BE BOLD

THINK SUMPTUOUS blues, detailed wall mouldings and huge, white sofas that you just want to sink into. If you’re thinking of a luxurious beach house inspired by New York’s Hamptons area, you’re right on the money. But achieving the traditional Hamptons trend can be tricky, often calling for changes to your existing floorboards or adding detail to walls, like panelling or skirting boards. Surely there’s an easier way to achieve the high-end look with lower costs and effort?

Enter, Carlene Duffy. She and husband Michael featured on Channel 9’s hit show The Block in 2014, winning the most room reveals that season. The pair has since turned their flair for home renovation into Gold Coast-based building and interior design consultancy, Cedar & Suede. While Carlene describes her style as colourful and “more is more”, she says she does borrow a lot from the revered Hamptons look.

“I absolutely love the layered factor and the emphasis on detail and texture,” she says. “The style goes a long way to make a house feel like a home – much more than modern, contemporary design, which is very paired back and minimalist.”

Carlene says that although the style has become a classic, there is still plenty of room for interpretation. While some Hamptons elements are best untampered with – like large, soft, welcoming couches and plenty of seating – you can and should add your own personal style into the mix. When it comes to colour, don’t be afraid to stray beyond the traditional blue and white hues.

“Take your cue from the landscape around you and include earthy tones like mustard and terracotta, or greens like emerald, sage or olive,” Carlene says. “Don’t feel like you have to keep everything crisp and white – try some colour on the walls or with large items of furniture.”

Palm Lake Resort Beachmere Bay has us dreaming of summers spent in the Hamptons. The Block reality TV superstar-turned-stylist, Carlene Duffy, reveals how to enjoy the Hamptons holiday vibe everyday - no passport required.

Blueberry, Rocket and Almond SaladThis Blueberry, Rocket and Almond Salad is a delicious, nourishing flavour combination and a beautiful accompaniment to any meal.

INGREDIENTS

1 cup rocket leaves, washed1 cup snow peas or snow pea sprouts½ cup blueberries1 cup quinoa, cooked¼ cup flaked almonds, toasted¼ cup cow feta or goat feta, crumbled

DressingJuice and zest of one small lemonApprox. double the quantity of your lemon juice in extra virgin olive oil1 teaspoon red wine vinegar 1 teaspoon honey or rice malt syrup

METHODFor the salad, combine the ingredients together in your salad bowl. For the dressing, shake the ingredients together in a jar. Dress the salad just prior to serving. Easy!

Mango and Coconut Parfait with Salted Pineapple This Mango and Coconut Parfait is a quick and easy, refreshing summertime dessert. It is refined-sugar free, gluten-, dairy- and grain-free.

INGREDIENTS

Mango layer 1 large mango, peeled and flesh removed1 tablespoon organic gelatin1 cup boiling water

Coconut layer1 x 270ml can full-fat coconut milk 1 tablespoon organic gelatin 1 teaspoon vanilla essence2 tablespoons sweetener (rice malt syrup or maple syrup), optional

METHOD For the mango layer, in a powerful blender or food processor purée the mango until smooth. Sprinkle over the gelatin and mix through. Add the boiling water and mix well until the gela-tine has dissolved. Pour into 4-6 glasses and refrigerate to set.

For the coconut layer, place half the coconut milk in a small pot with the vanilla and sweetener and heat, stirring until the sweetener dissolves (only a minute or so). Remove from heat immediately. Sprinkle the gelatin over the unheated half of the coconut milk, mix together until dissolved and then add to the hot coconut milk, mixing until the gelatin is dissolved. Allow to cool a little and pour a layer on top of the mango jelly. Return to the fridge to set. Chill until you are ready to serve.

I’ve served this parfait with salted pineapple (dice about half a cup of pineapple into small cubes and cook over a high heat with a tablespoon of salted butter for a few minutes). If you’d like a more caramelised pineapple, add a tablespoon of sweetener as well as the butter. You can also serve with toasted coconut flakes and passionfruit or berries would be lovely too.

HIDE ’N SEEK SMOOTHIESLooking for ways to get more out of your smoothies? Georgia Harding says you can throw things like avocado, baby spinach, sweet potato, beetroot, zucchini and even cauliflower into the blender with your fave fruits - who knew?! “Raw cauliflower is pretty much undetectable in a smoothie. You will just need a good, high-powered blender to process it smooth - the same goes for raw sweet potato and raw beetroot,” Georgia says. For more recipes and ideas, visit www.wellnourished.com.au

DHONDT-GRELLET BRUT CHAMPAGNE ‘Dans un Premier Temps’: This bubbly pairs well with seafood, making it perfect for an outdoor Christmas lunch. $55

FREREJEAN FRERES PREMIER CRU CHAMPAGNE It’s not easily found in Australia, but if you do manage to get your hands on it, this dry champagne is perfect for a cocktail event, pairing beautifully with strawberries or salmon. $40

VEUVE FOURNY & FILS CUVEE ‘R’ This aged champagne is elegant and inviting. The blend of Chardonnay, Pinot Noir and Pinot Meunier makes it great for a intimate dinner with friends. $100

CHARLE HEIDSIECK ROSE VINTAGE 2006 CHAMPAGNE This might be Antoine’s priciest recommendation but take one sip of this fruity, mildly-spiced champagne – best enjoyed with a fish dish – and you’ll understand why. $167

BENOIT LAHAYE BLANC DE NOIR CHAMPAGNE This is another champagne that is perfect for a Christmas seafood lunch. The rich, earthy notes of ripe red fruits just beg to be enjoyed outside, under the Australian sun. $67

ONE-HIT WONDERS We’re all guilty of it – we see a gimmicky product and tell ourselves we need it. But, years later, it’s still sitting in the box unopened. Ditch that popcorn/ice cream/cupcake/omelette maker you swore you’d always use.

AUTOMATIC SALT/PEPPER GRINDERS This purchase seemed great - for about five minutes, didn’t it? Then they broke, got clogged, the battery ran out at an inconvenient time or the novelty simply wore off. Bin ‘em.

COFFEE PLUNGER/PRESS Face the facts. Your coffee plunger hasn’t been popular since the 90s – and you probably haven’t used it since then, either.

BLUNT KNIVES OK, they’re not technically an ‘appliance’, but don’t hold onto blunt knives out of convenience or guilt.

MIX MASTER It’s that big beast of an appliance that usually takes up valuable bench space and is used only once in a blue moon. How regularly do you use yours?

OUT OF ITS BOX? MAYBE IT’S TIME FOR A CUPBOARD CULL WITH OUR LIST OF THE FIVE APPLIANCES YOU NEED AND THE FIVE YOU CAN (HONESTLY) LIVE WITHOUT.

COFFEE MACHINE Is there anything better than rolling out of bed and awakening your senses with a steaming cup of joe? You don’t have to drive to your nearest café or settle for instant to get a decent cup of coffee. There are dozens of quality coffee machines on the market, perfect for your home.

ROBOT VACUUM They sound like things of the future, but robot vacuums are now so mainstream. While it’s not specifically a

kitchen appliance it made the list because, well, just like your slow cooker, you simply set it and forget it. And we love that. Your cleaning

gets done while you enjoy the greater things in life – like baking!

THERMOMIX This gadget has taken society by storm in recent years amid claims it offers the functions of 12 appliances in one. After preparing one meal with it, you’ll probably agree. It can chop, cook, whip, steam, blend, stir and so much more, all at the press of a few buttons. Roll all your old appliances into one.

SLOW COOKER The perfect way to have dinner sorted without fuss. Set and forget. Simply

follow one of the thousands of recipes out there or go rogue, experiment and let the slow cooker do its thing.

You’ll come home to a house filled with delish aromas, a perfectly cooked meal and minimal cleaning up.

Knitting and crochet are classic skills for creative grandparents to pass on to younger generations and, beyond the

clichés, they’re actually great ways for you to bond with family that you might not see all that often. Your grandies will take home a skill that makes them think of you every

GRAND IDEAS

Here are award-winning Palm Lake Resort resident gardener Betty Sullivan’s top four flowers for your vertical garden:

Petunias They’re from the same family as potatoes and tomatoes, but you would never know it from looking at these beautiful pink summer annuals.

Lobelias They’re technically a herb, but these purple beauties are fairly easy to grow and look spectacular!

Pansies These flowers are well-known for their interesting patterns – known as ‘faces’ – and they come in a wide range of colours.

Portulacas Sometimes known as the ‘sun rose’ or the ‘moss rose’, portulacas can grow in a range of soils, making them a great flower for beginners.

THINKING ABOUT CREATING A VERTICAL GARDEN?

Betty Sullivan has a secret. She’s got a green thumb and she ain’t afraid to use it. Betty scooped the pool at the recent Toowoomba Carnival of Flowers – a nationally recognised event drawing tens of thousands of tourists to this, one of Australia’s largest regional inland cities. Toowoomba is also home to twin Palm Lake Resorts including the brand new Pinnacle development – Palm Lake Group’s most luxurious resort to date.

Palm Lake Resort Toowoomba is proud to claim Betty as a resident (and as a side note, Betty’s daughter Debbie is also the resort gardener proving there’s a definite gardening gene in this family!). Among Betty’s recent Carnival of Flowers awards, she claimed first prize in the Lifestyle Unit Dwelling category, second prize for Best Floral Garden and third prize for Best Front Garden. A strong proponent of the vertical garden, which was key to her competition entry’s success, Betty let us in on a little secret – vertical gardens are really not that hard.

“I bought a privacy screen and some long tray pots with hooks and set up my first vertical garden on the patio at the front of the house,” Betty says. “It is an absolutely gorgeous thing. It’s filled up with flowers nearly two metres high, hanging right down to the ground.”

So how can you get the look of a prize-winning garden in your own yard? Betty

advises planting annuals – flowers that grow for one long season then die off in the colder months. But, she says, the real key to vertical gardening is soil, soil, soil. Because the plants in these gardens should last for four to five months, the soil has to be rich enough to sustain them.

“Use a good potting mix, then combine manures and blood and bone into the soil so that the nutrients will last, and then, of course, water every day,” Betty advises.

As vertical gardens usually require smaller amounts of potting mix, they can dry out easily. Keeping the water up to your vertical garden is an absolute must. Whether you’ve got your eyes on the prize or simply want to maximise the wow factor of your outdoor area, there is a vertical garden solution for you. Betty is a flower person herself, but she says you can design and fill your vertical garden however you like – useful herbs and general greenery are two of her suggestions.

“You could make one in your backyard that features parsley, sage and thyme, and it will look really great because those herbs all have such pretty leaves,” Betty says.

“It takes is a bit of creativity and care but you can really do a lot with vertical gardens.”

VERTICALS GARDENS ARE ALL THE RAGE ON REALITY TV HOME SHOWS, IN MAGAZINES AND ONLINE. AND THEY MAKE SENSE. IF YOU’VE GOT A GREEN THUMB BUT YOU DON’T HAVE THE SPACE TO FLEX IT, WELL, SIMPLY, GO UP!

let’s hang out

PALM LAKE CARE prides itself on being at the forefront of aged care here in Australia and the latest development at Bethania is a significant and exciting step away from current care models in this state. ‘Bethania Memory Support Community’ is centred on a fully secure 1.5-acre site where community members will be able to move freely between buildings and amenities in a way that is almost unheard of in Queensland.

Palm Lake Care general manager Kevin Landles says the new development features three buildings that will accommodate a total of 34 beds in very different environments. A six-bed ‘house’ will provide five-star accommodation for those community members who are transitioning into a secure memory support environment. Two neighbouring buildings will each accommodate 14 beds in the same level of comfort and freedom. Fully catered by onsite chefs, a small kitchen in the core building also allows for fresh food to be prepared and available to residents of this community 24 hours a day.

“Palm Lake Care is committed to making a significant difference in the way our services provide support for people with memory issues,” Kevin says. “Bethania Memory Support Community is a significant step away from usual dementia care and we’re really excited to be unveiling this concept in December.”

Extra large and light-filled bedrooms (each with an ensuite, air conditioning and a large flat screen television) provide comfort, security and an opportunity for residents to express their unique individuality. A men’s shed, raised vegetable gardens, fruit orchard and covered gazebos are all interconnected

via coloured pathways. Other wandering paths allow people to engage with all aspects of the amenities this site offers while only metres away from specially trained care staff.

Kevin says Bethania Memory Support Community’s dedicated lifestyle staff will help residents engage in as many or as few of the available activities as they feel comfortable with. Residents can also be involved in domestic chores under the facilitation of staff members – activities that will take on a whole new meaning in this community.
