y Lauroyl-ACP thioesterase, was found to be the key toformation of lauric acid in plants. The enzyme was purifiedfrom the seeds of the wild California bay tree, which containssignificant amounts of the fatty acids, caprate (C10) andlaurate (C12). Scientists then cloned the gene that regulates

fatty acid chain length and subsequently, determinesfunctional properties of vegetable oils. After cloning theresponsible genes, they were introduced into commercialrapeseed varieties.

y Scientists also cloned a gene encoding the enzyme, stearoyl-ACP desaturase. The desaturase enzyme plays a central role

in determining the ratio of saturated to unsaturated fattyacids in vegetable oils. Since nutritionists now areencouraging consumption of less saturated fats, thedesaturase gene can contribute to lowering the saturated fatcontent of a vegetable oil.
