德國芝士餅 Germany cheese cake Sugar pastry ingredients : Icing sugar 100 g Butter 200 g Egg 1 pc Flour 350 g Filling ingredients : Cream cheese 225 g Sugar 55 g Egg 1.5 pcs Melt butter 25 g Corn starch 15 g Cream 80 ml Lemon zest 1 pc Dry grapes 30 g Rum wine 30 ml 餅底材料: 糖霜 100克 牛油 200克 蛋 1隻 麵粉 350克 餡料: 忌廉芝士 225克 糖 55克 蛋 1.5隻 溶牛油 25克 粟粉 15克 忌廉 80毫升 檸檬皮 1隻 提子乾 30克 RUM酒 30毫升 步驟: 1. 把牛油和糖霜放在煲內,攪拌至牛油成淡黃色。 2. 慢慢加入雞蛋攪拌至混合。 3. 把已過篩麵粉放入牛油混合物內,攪拌至滑身。 4. 用保鮮紙包好麵團,放入雪櫃約30分鐘,備用。 5. 將焗爐調校至 熱風模式,預熱至180°C。 6. 用木棍把麵團推薄至2-3公分厚,放在模內。 7. 放入已預熱的焗爐內,調較至 上下發熱模式,以180°C焗至半熟。 芝士餡做法: 1. 把提子乾放入RUM酒內浸軟,備用。 2. 把忌廉芝士,砂糖放入打煲內,不斷攪拌至滑身。 3. 慢慢加入蛋,不斷攪拌至蛋混合在芝士內,加入檸檬皮茸,RUM酒提子拌勻。 4.把芝士漿放入撻模內,放入已預熱180°C焗爐以 上下發熱模式焗約 20-25分鐘至熟。 5. 取出放涼後放入雪櫃雪凍至成型。 Steps : 1. Prepare the pastry by whipping the butter and icing in the pot, stir until butter turns lightly yellow. 2. Add the egg slowly and stir until blended. 3. Put the sieved flour in the butter & egg mixture, stir until smooth. 4. Cover with plastic film and put in refrigerator for 30 mins. 5. Set oven to hot air convection mode, preheat to 180°C. 6. Take out the dough from refrigerator and use wooden stick to roll the pastry to 2-3mm thick, put it in small round shape mould. 7. Put it in the preheated oven at 180°C and use top and bottom heating mode to bake until half cooked. Filling cooking method : 1. Soak the raisins in the rum wine until soft. 2. Put the cream cheese and sugar in the mixing bowl, stir constantly until smooth. 3. Add egg slowly and stir until smooth. Mix the lemon zest, and the grapes altogether. 4. Put the cheese mixture into tart mould and then placed into the preheated oven around 180°C to bake for 20-25 mins by using top and bottom heating mode until cooked. 5.
