The BBC food website 1 This session plan has been created using an Apple device, but can be interchanged with Android too. Today we will be looking at the BBC food website. Knowledge Check When using a tablet, you are able to Zoom in to see the text/images clearer. You can use the device either landscape or portrait whichever is easiest. On this website you are able to catch up with programs that you have missed. 2 First you need access the internet (Safari) on the device. People love cooking and recipe books are very expensive, with this website you have access to thousands of free recipes. Have a go at searching for the BBC food website? Can you see how many recipes are available online?

Knowledge Check On this website there are two sets of headings and two search boxes. The top set is the whole of the BBC website and the lower set are used for the food part of the website. Search boxes are usually identified with a magnifying glass. 3 On the website you

will see various headings. Home, Recipes, Chefs etc. click on each heading to see what is displayed.

4 I’m sure we all know how to dice an onion but let’s see how the experts say we should do it. Locate the Techniques heading, and find Learning to chop: dicing an onion. Play the video.

5 Missed that episode of bake off? Locate the programs heading. Look for recent food programs. Play an episode of the Bakeoff.

6 Locate the quick recipe finder search box and type courgette soup don’t worry if you can’t spell, as you type predictive words are displayed which you can select from.

7 How many recipes are there when you type courgette soup? The results will change as recipes are added and removed from the website.

Knowledge Check You may wonder why there are recipes displayed other than just courgette soup recipes. The search function displays all the recipes that have the key words COURGETTE & SOUP. 8 We are going to use

the Italian-style courgette and parmesan soup recipe by Neil Perry.

Let’s Get Cooking Ingredients

• 60ml/2fl oz extra virgin olive oil • 1 tbsp chopped garlic • handful basil leaves (preferably Italian), chopped • sea salt and ground white pepper, to taste • 1kg/2¼lb green courgettes, cut lengthways into quarters then into

1cm/½in slices • 750ml/1¼ pint chicken stock • 60ml/2fl oz single cream • handful flatleaf parsley, chopped • 50g/2oz freshly grated parmesan, plus extra to serve

To serve

• crusty bread • green salad • salt and freshly ground black pepper

Method

1. Heat the oil in a heavy-based pan over a medium heat. 2. Cook the garlic, basil, salt and courgette slowly for 10 minutes, or until

the courgettes are lightly browned and softened. 3. Add white pepper, to taste, then pour in the stock and simmer for 8

minutes, uncovered. Remove from the heat. 4. Put three-quarters of the soup mixture into a food processor and blend

until smooth. 5. Return the mixture to the pan and stir in the cream, parsley and

parmesan. 6. To serve, ladle the soup into a bowl and season, to taste, with salt and

freshly ground black pepper. Sprinkle over more parmesan, to taste. Serve with crusty bread and a green salad.
