“Some people don’t get immediate symptoms, but when they do, they are typically gastrointestinal-related, such as abdominal pain, bloating, and diarrhea,” says Luccioli. “In infants, there may be a lot of vomiting, and they don’t grow and thrive.” And some people do not have any symptoms at all, adds Luccioli, but still may have intestinal damage and risk for long-term complications. It is important for individuals with celiac disease, who may vary in their sensitivity to gluten, to discuss their dietary needs with their health care professional.

Grocery shopping is challenging for people with this disease, says Andrea Levario, J.D., executive director of the American Celiac Disease Alliance. “When they find a product labeled ‘gluten-free,’ they don’t necessarily know what that means because today there is no federal standard for the use of this term.”

Having a federal definition of “glu-ten-free” is critically important, says Levario. “If we have one national standard, the individual will know that all products labeled ‘gluten-free’ will have no more than a minimal amount of gluten.”

Is Gluten-Free for Me?“Eating gluten-free is not meant to be a diet craze,” says Rhonda Kane, a reg-istered dietitian and consumer safety officer at FDA. “It’s a medical neces-sity for those who have celiac disease.”

“There are no nutritional advan-tages for a person not sensitive to gluten to be on a gluten-free diet,” she adds. “Those who are not sensitive to gluten have more flexibility and can choose from a greater variety of foods to achieve a balanced diet.”Gluten-free is not synonymous with

low fat, low sugar, or low sodium. For people who must be on a gluten-free diet, Kane says it’s important to check the ingredients list and Nutri-tion Facts information on food labels to find the most nutritious options.

How Is FDA Proposing to Define ‘Gluten-Free’?In 2007, FDA proposed to allow man-ufacturers to label a food “gluten-free” if the food does not contain any of the following:1. an ingredient that is any type of

wheat, rye, barley, or crossbreeds of these grains

2. an ingredient derived from these grains and that has not been pro-cessed to remove gluten

3. an ingredient derived from these grains and that has been processed to remove gluten, if it results in the food containing 20 or more parts per million (ppm) gluten

4. 20 ppm or more gluten

In the notice reopening the comment period, FDA states that it continues to believe the proposed definition of “gluten-free” is the correct one.

FDA’s notice also describes current analytical methods that can reliably and consistently detect gluten at levels of 20 ppm or more in a variety of foods.

The agency is interested in hearing from the public and industry. The public comment period on the pro-posed rule is reopened for 60 days. To submit comments electronically, go to www.regulations.gov and

1. choose “Submit a Comment” from the top task bar

2. enter the docket number FDA-2005-N-0404 in the “Key-word” space

3. select “Search”

After FDA reviews and considers the comments, the agency will issue a final rule that defines “gluten-free” for labeling food products, including dietary supplements.

INGREDIENTS

1 Rich’s® gluten-free, par-baked pizza crust2 teaspoons mustard2 ounces sliced ham2 ounces sliced Swiss cheese

Pan sprayHeavy-duty foil

Cut Rich’s® gluten-free pizza crust in half. Spread each half with mustard andtop one half with meat and cheese. Top with other half of gluten-free pizza crust.To avoid cross contamination, place sandwich between two pieces of heavy-dutyfoil that have been sprayed with pan release. Place on hot Panini grill and cookuntil cheese is melted and crust has golden grill marks. Serve hot.

Cheese Pizza / Yield: One 10” pizza

INGREDIENTS

1 Rich’s® gluten-free, par-baked pizza crust3/4 cup gluten-free tomato sauce

3 teaspoons extra-virgin olive oil1 1/2 cups shredded mozzarella

1/2 ounce fresh parmigiano-reggiano, finely grated (about 2 tablespoons)

6 large fresh basil leaves, roughly torn

Brush 1 teaspoon of olive oil over the crust. Cover with sauce, leaving 1/2-inchbare around the edges. Sprinkle with mozzarella and parmigiano-reggiano cheese.Drizzle the remaining 2 teaspoons of olive oil over the pizza.

Bake according to time and temperature for your oven type, until the cheese ismelted and the crust is golden brown in color. Remove from the oven, let coolfor 2 minutes. Sprinkle with basil leaves, cut and enjoy!

INGREDIENTS

1 Rich’s® gluten-free, par-baked pizza crust3/4 cup gluten-free tomato sauce

1 teaspoon dried oregano4 1/2 ounces fresh sliced mozzarella cheese

2 Roma tomatoes, sliced1 tablespoon extra virgin olive oil3 fresh basil leaves torn into small pieces

Freshly ground black pepper

Spread the tomato sauce over the dough, leaving 1/4 to 1/2 an inch bare at theedges. Arrange slices of cheese on top, and sprinkle with oregano. Top with slicesof tomato, drizzle with oil and season with pepper.

Bake according to time and temperature for your oven type, until the cheese ismelted and the crust is golden brown in color. Remove from the oven and letcool for 2 minutes. Sprinkle with basil leaves, cut and enjoy!

roasted Vegetable PiZZa / Yield: One 10” pizza

I N G R E D I E N T S

1 Rich’s® gluten-free, par-baked pizza crust2 tablespoons extra virgin olive oil

1/2 large red bell pepper, sliced 1/2 inch thick1/2 large yellow bell pepper, sliced 1/2 inch thick

1 small eggplant, sliced 1/3 inch thick1 large Portobello mushroom cut in 1/2 inch

thick slices1 small zucchini, sliced 1/3 to 1/2 inch thick6 garlic cloves, minced

2/3 cup shredded mozzarella cheese1/4 cup freshly grated parmesan cheese

Wash vegetables and pour 1 tablespoon of oil into roasting pan. Add garlic andvegetables, and toss to coat. Roast for about 20 minutes, stirring occasionally,until vegetables are tender (oven times may vary). Set aside to cool.

Brush pizza crust with the remaining 1 tablespoon of oil. Sprinkle pizza crustwith half of the mozzarella, and top with the roasted vegetables. Add theremaining mozzarella and parmesan cheese. Bake according to time andtemperature for your oven type, until the cheese is melted and the crust isgolden brown in color. Enjoy!

Fruit Pizza / Yield: One 10" pizza


1 Rich’s® gluten-free, par-baked pizza crust

F I L L I N G

1 1/2 cups of gluten-free ricotta cheese 1/2 cup of confectioners’ sugar1/2 cup almonds, sliced and toasted

1 teaspoon almond extract

TO P P I N G

1 1/2 cups of fresh mixed berries (strawberries, blueberries, raspberries, etc.)1/2 cup of gluten-free seedless raspberry jam, warmed

Bake crust according to time and temperature for your oven type, until thecrust is golden brown. Set aside to cool.

Blend the ricotta cheese, powdered sugar, almonds and almond extract. Spreadthe mixture over the gluten-free dough, leaving 1/3 inch uncovered around theedges. Top the ricotta mixture with berries and drizzle the warm raspberry jamover the pie. Chill until ready to serve.

Bananas Foster Pizza / Yield: One 10" pizza


1 Rich’s® gluten-free, par-baked pizza crust2/3 cup brown sugar1/4 cup butter, melted1/3 cup chopped pecans2 cups Jell-O banana cream pudding (make

ahead of time from box directions)2 bananas, sliced 1/3 inch thick1 cup gluten-free whipped topping

Bake crust according to time and temperature foryour oven type, until the crust is golden brown.Set aside to cool.

Combine the brown sugar, butter, and pecanswith the pre-made banana cream pudding. Foldin bananas, and spread evenly over crust. Topwith whipped topping and garnish as desired.Chill until ready to serve.
