Lasagna Pan in Blue Swirl

goat cheese scalloped potatoes6 baking potatoes, peeled and sliced horizontally with a mandolin

1 yellow onion sliced into circles and separated

3 T flour

1/4 cup butter

2 1/2 cups cream

3 cloves garlic sliced into thin pieces

2 ounces crumbled goat cheese

Salt and pepper

heat oven 350 degrees -in a golden rabbit dutch oven arrange potatoes and onions in 4 layers; sprinkling each of the first three layers with flour, goat cheese, salt, garlic, pepper and butter. dot top layer with butter. heat cream to scalding (do not boil) and pour over the potatoes. cover and bake 30 minutes; uncover and bake 60 minutes more. let stand 5-10 minutes before serving. peel potatoes and make and bake casserole immediately or the potatoes will turn brown.

strawberry spinach salad1 lb of baby spinach

1 pint of strawberries sliced

1 red onion sliced into circles and separated

dressing - whisk well

6 T extra virgin olive oil

2 T champagne vinegar

1 t dry mustard

1 T sugar

1 T poppy seeds

Salt to taste

toss salad in a golden rabbit serving basin, add dressing immediately before serving. serve in coordinating golden rabbit salad bowls.
