What is Tofu and Why Should I Eat it? Tofu comes from seeds that grow

in pods of soybean plants. Tofu is essentially tasteless but

absorbs seasonings and marinades like a sponge.

Tofu comes in a variety of consistencies and textures, designed for what it is being used for.

Tofu has double the protein that is in beef and fish.

Meat has been linked to Heart Disease, Stroke, Type 2 Diabetes, certain cancers, early death, and some mental disorders.

Most importantly, doesn’t contribute to the destruction and abuse of animals.

What is Needed

1lb of Extra Firm Tofu Bag of Coleslaw mix Sandwich Buns 2/3 Cup Veganaise 2 TBS Sugar 1-2 TBS White Vinegar 1tsp Dry Mustard Salt and Pepper to taste Your Favorite BBQ Sauce

Tofu Preparation Place the tofu in the freezer at least 24

hours before making this meal. This adds firmness to the tofu, giving a more meat-like substance.

Thaw the tofu by placing it on a plate on top of a couple paper towels or cheese cloth and then placing in the microwave on defrost for 15 minutes or so, flipping occasionally and replacing paper towel or draining cheese cloth. (Tofu should be completely thawed before continuing.)

Next, place new paper towel or refreshed cheese cloth on the bottom and top of the tofu, then place a plate on top of the tofu with something to weigh it down a bit. A jar of pickles or heavy bowl work great.

Then place in refrigerator for 20 minutes. This compresses the tofu and drains more water.

Once this has been completed, cut the tofu into 4-6 one inch squares depending on how big you want the “patties” to be.

After that, place tofu in a large bowl and pour as much barbeque sauce on top as you would like and then place tofu back in the refrigerator to marinate for at least another hour, mixing every half hour.

Coleslaw Preparation

Whisk together 2/3 cup of Veganaise, 2 tablespoons of sugar, 1 teaspoon of dry mustard, 1 to 2 tablespoons of vinegar then add salt and pepper to your liking.

Once you’ve completed this, add the package of coleslaw and mix it thoroughly. Let this sit for at least an hour before serving.

Grilling the Tofu Preheat the grill to medium to

medium-high heat. If a crispier texture is desired, use high heat.

Grill tofu for about 15 minutes, flipping once halfway through.

While on the grill, lightly brush more of the barbeque marinade on the tofu.

While that is going on, simultaneously place the sandwich buns on the grill for a few minutes. Take the buns off after a couple minutes, until they are a golden brown.

Take the tofu off the grill and add a little bit more of the barbeque marinade. Also, sprinkle some salt and pepper onto the tofu for a seasoned texture.

Finishing Touches

Once tofu and buns are completed, assembly of the sandwich may begin. Place tofu on toasted bun and add a healthy scoop of coleslaw on top; finish with top bun and ENJOY!
