Ingredients

1.5 medium-large corn on the cob

2.3 red bell peppers3.3 scallions, sliced thin4.1 bunch fresh basil,

chopped5.2 garlic cloves,

minced6.3T fresh lemon juice7.1/3c grape seed oil8.salt and pepper to

Directions

1. Heat grill pan.2. Grill corn for about

15-20 minutes, until you see nice char marks.

3. Roast the peppers on top of a gas burner on the stove.  Roast all sides until very black. 

4. Place peppers in a covered bowl or sealed plastic bag for 15-20 minutes to let them “sweat”.  Set aside.

5. Combine the scallions, basil, garlic, lemon and oil in a small bowl and whisk until blended.6. Season with salt and pepper.7. Pour over veggies and toss well. Top with fresh basil leaves for garnish.8. Stand corn upright and shave off the kernels.9. Place in a serving bowl.

10. Remove the red bell peppers from container and peel of the charred skin and slice peppers (remove all seeds).11. Mix in with corn.
