Faster. Our approach to surgery helped Sue get back to her active life fast. After years of dealing with symptoms that caused severe discomfort and

interfered with her work and everyday life, Sue Alford knew she needed a

hysterectomy. But she was worried about all the downtime. “My doctor

explained that robotic-assisted surgery can mean a shorter recovery time,

so that’s what I decided on,” Sue explained. “I received great care at South

Baldwin Regional Medical Center. I was up and walking within hours of

my surgery, thanks to the robotic procedure. It’s great to feel like myself

again.” To learn more about surgical services at South Baldwin Regional

Letter from the editor

It’s the peak of summer in south Alabama, which means more free time for fun events, time at the beach and trying new things.

Baldwin County and the surrounding areas have so much to offer. In the next two weeks, the Blue Angels will perform an air show in Pensacola, the Rewind Fest and and Peter Frampton and The Doobie Brothers are coming to The Wharf and, of course, there are plenty of fish to catch.

If you want to diverge from your normal routine, but can’t leave home for a weekend trip, consider exploring a part of Baldwin County that’s unfamiliar to you. We’ve put together a few ideas for Baldwin County day trips on page 24.

To plan your next two weeks, look over our in-depth calendar, which is full of activities for all ages. If live music is your thing, check out the live music listings, which also include trivia, karaoke and open mic nights.

Don’t miss out on the rest of summer — get out and enjoy this beautiful place!

to perform Pensacola Beach Air Show

By John [email protected]

Consider it a boat parade.By the thousands, watercraft will

head east from Alabama on July 11 and July 12 to stop in Pensacola Bay and surrounding waterways and islands to watch the US Navy Performance Squadron do its thing in the sky.

Commonly known as the Blue Angels for the color of their F/A-18 aircraft, their base is at Pensacola, and while they travel the country

year round — when Congressio-nal posturing over money doesn’t ground them — they have two home shows a year. The homecoming show is in November, and the show that draws the boat parade is in July.

With a fully funded 2014 season, the Blue Angels are scheduled to fly 68 performances at 35 locations in North America during the 2014 season, making this the 28th year of flying the F/A-18 Hornet.

If you are ground bound, the show is at Pensacola Beach and it’s free.

Thousands will fill the beach on July 11 for a dress rehearsal and July 12 for the actual show. The Blues will also fly on July 10 in a practice session at approximately 2 p.m. There will be scads of other airplanes and demonstrations prior

to the Blues taking flight. The show starts at noon July 11

The Steamer and Baked Oyster Bar By Jill Clair GentryLifestyles [email protected]

W hen we think of eating at the beach, our minds often immediately turn to a delicious, full plate of fried seafood. But there are a few high-

volume seafood restaurants, like The Steamer and Baked

Oyster Bar in Gulf Shores, that focus on steamed and grilled seafood — an experience that shouldn't be missed.

The fun is found in the seafood trays and platters — heaping portions of royal reds, crab, shrimp, oysters and scallops served alongside corn, sausage and new potatoes. Seven varieties of baked oysters are on the menu, and for the diner who isn't into seafood, there's a tasty chicken breast strip sandwich, steaks, a hamburger and salads.

Darian Perez and Chris santmyer spend a lot of time shucking oysters at The steamer. The restaurant offers seven types of baked oysters as well as raw and steamed.

The restaurant's atmosphere is casual, complete with a bucket on the table to discard shells and a roll of paper towels to clean up messes. Sharing is encouraged, and prices are reasonable.

The Steamer, which opened in 2010, is owned by Eddie Spence, who also owns Mikee's Seafood in Gulf Shores and the popular Shrimp Basket chain, which has 21 loca-tions in three states.

Mikee's was Spence's first restaurant and opened in 1987. It has a diverse menu, featuring seafood, chicken and beef entrees. Shrimp Basket focuses on affordable seafood and a quick turnaround.

The Steamer is a completely different concept — one that was created out of necessity.

“When we took over this building, the kitchen wasn't big enough for fryers,” Spence says. “About all we had room for was steamers. So we got some steamers and cre-ated a more condensed menu and decided to have a broad baked oyster menu. That ended up being a niche in the market that wasn't filled.”

There are several combinations available for seafood trays, which are served with cole slaw, sausage, corn and new potatoes. Pictured are Royal Reds and steamed oysters.

The ribeye, topped with shrimp, is tender and has a smoky flavor. The steamer also serves steak and lobster.

The steamer’s oysters Rockefeller are one of the seven baked oyster options. Loaded with cheese and seasoned to perfection, these oysters are a treat.

By Caroline harrisDirector, Wind and Water Learning Center in Orange Beach

For more than a decade, the City of Orange Beach has held a sum-mer sailing camp for youth. Now

under the Coastal Resources division, the camp has grown to accommodate about 250 kids during the course of one summer. I have had the privilege of teaching sailing for the past several years here, and I must say that it is such a rewarding experience for both the instructors and students. Our students learn tacking, jibing, upwind and downwind sailing, capsize recovery methods, proper boat handling and more.

People are so electronically reliant in today’s world; therefore it is an asset for our community to be able to provide education for skills that are acquired by literally working with the wind, waves, current and weather. I believe it generates an appreciation for

things we normally would not recognize as being tools to maneuvering around.

Activities such as sailing tap into a whole new knowl-edge base that circulates around the environment one is in, instead of being dependent on motorized power. At the city’s summer Sail Camp, we strive to share this awareness of our natural resources by always making sure our sails are full with wind! For more information, visit WindAndWaterLearning.com.

Did you know?A sail works just like an airplane wing, except it is mounted vertically instead of horizontally. Pressures create lift and work to propel the boat forward and the airplane up in the air.

I t’s that wonderful time of year when our area offers outdoor enthusiasts warm weather,

clear skies and opportunity to enjoy the waterways of South Alabama. As water temperatures heat up, inshore anglers head out in search of speckled trout, also known as spotted sea trout or “specks.” Speckled trout are a favorite catch for light tackle fishing enthusiasts because of the wide variety of fishing techniques one can use as well as the beauty and agility of the species. Not to mention, speckled trout have aggressive feeding habits, which makes tracking down and catching the fish a thrilling experience.

Speckled trout migrate throughout coastal Ala-bama’s southern waterways, frequenting the inshore areas. As they migrate, speckled trout can be found in the shallower waters of local estuaries or deeper wa-ters around the base of structures, like oil platforms. Speckled trout dine on a variety of food sources, ranging from smaller bait fish like mullet, croaker or menhaden to live shrimp and even artificial rigs.

For those anglers without access to a boat, the area offers a variety of inshore fishing charters provided by expert local guides. Inshore fishing charters pro-vide a great opportunity to experience the adventure of catching your first speckled trout without the

hassle of purchasing fishing gear or trying to figure out where the fish could be located. Plus, many local restaurants offer a “Cook Your Catch” option, allow-ing anglers to bring their whole catch in, choose a preparation style, then sit back and let the kitchen staff create a masterpiece.

Find handmade, homegrown items at Market DaysBy Cliff [email protected]

One of Bay Minette’s most popular public events, Market Days, is back.

“The chamber has inherited Mar-ket Days from the Old Town Bay Minette Arts Council, and we hope to continue to grow the Market in our community,” said Ashley Jones, director of the North Baldwin Cham-ber of Commerce.

Jones said she was pleased at the number of vendors and citizens who came out to enjoy the festivities at the first Market Days event of the summer, June 21.

“We had a great crowd here and folks were excited to see the Mar-ket Day back, so we’re hoping that each coming event will gain more vendors and more customers,” Jones said.

Jones said the Market Days are still looking for vendors to help round out the experience.

“We are open to a variety of ven-dors,” Jones said. “While handmade, homemade and homegrown items will remain a priority, we will also accept all types of vendors, from an-tiques and jewelry vendors to even yard sale type vendors.”

There will also be children’s activities available at each event, Jones said.

“We’re hoping that each coming event will gain more vendors and more customers.”

Perhaps the promotional line for UZoo says it best: “When you can’t hire the biggest band on earth, book UZoo - The Unforgettable U2 Tribute Band. Only U2

does U2 better!”But, wait, there’s more. For a rocking good Saturday

night of your Fourth of July weekend, a whole passel of tribute bands will be kicking it around at The Wharf. It’s a variety packed lineup of tribute artists.

Perfect Nation will parody Prince, Ramble On will lean on Led Zeppelin for material, Madman’s Diary will hope-fully bite off a chicken’s head in honor of Ozzy Osborne, Motley Inc. is the moniker for the Motley Crue portion of the show, Atomic Punks will do Van Halen from the David Lee Roth Days and 5150 will be Van Halen from the Sammy Hagar Days. Others are Out Of The Cellar with a Ratt tribute, and Nighrain will welcome you to the jungle with a Guns N Roses set.

southwest macaroni and cheese start to finish: 1 hour, 45 minutes (1 hour active) serves 8–10

Ingredients4 poblano peppers1 pound elbow macaroni, cooked 4 tablespoons unsalted butter4 cups cornbread, preferably a little dry/stale1/4 cup all purpose-flour4 cups whole milk1/2 onion, finely diced2 cloves garlic, minced2 teaspoons oregano (preferably Mexican)1 teaspoon chili powder12 ounces extra-sharp cheddar, grated10 ounces Monterey jack, grated7-ounce can chopped green chili peppers1 red bell pepper, finely dicedSalt, to taste

Preparation Broil the poblano peppers until they are thoroughly

blistered, turning occasionally. Place in a covered bowl

for 10 minutes to cool and let the skin loosen. Peel, and remove core, stem, and seeds. Finely dice.

Crumble the cornbread into small crumbs. You can use a food processor or your fingers. If you aren't using stale cornbread, place your crumbs on a baking sheet and dry them out in a 350 F oven for about 10 minutes.

Grate the cheeses using a food processor. Preheat oven to 350 F and grease a large baking dish.In a medium saucepan, melt 4 tablespoons of butter

over medium-low heat. Sprinkle in the flour and whisk pretty constantly for 3 minutes. Whisk in the milk. Add the onion, garlic, oregano and chili powder. Simmer, whisking occasionally until it begins to thicken.

Gradually whisk in the grated cheeses, stirring each batch to incorporate.

Taste the sauce, and adjust the seasoning to your preference. Remember that the sauce should be pretty intense because it is going to be diluted by a full pound of pasta.

Stir the macaroni into the sauce. Pour the macaroni into the prepared pan. Mix in all three peppers. Taste again and make any final adjustments. Top with the cornbread crumbs.

Cover with tinfoil and bake for about 30 minutes, until it is bubbling around the sides. Remove the tinfoil and bake 10 more minutes until the cornbread crumbs are turning golden brown.

Let stand for 5-10 minutes and serve.

Road trip throughBaldwin County

wHERE TO GO

By Allison Woodham [email protected]

Family travel is a summer tradition, but can get expensive. One way to save money, but still have a family vacation is to explore the county around us. Baldwin County is the largest county in Alabama, and there is so much to do.

NoRTh BALDWINTravel the Mobile-Tensaw Delta via kayak or

canoe on the Bartram Canoe Trail. Day and night trips are available. Bring along lunch or snacks and stop along the trails to picnic. Fort Mims is full of history, activities and reenactments for children of all ages. After you’ve worked up an appetite, sit down at Stagecoach Café in Stockton for a late lunch or dinner.

EAsTERN shoREThe Eastern Shore is known for its quaint towns

— Fairhope, Daphne and Spanish Fort. Take a walk along the Fairhope Pier or at the many parks in Daphne. Sit down for a meal at the historic Manci’s Antique Club in downtown Daphne or Panini Pete’s in Fairhope. Take a walk down Alligator Alley and search for alligators and other creatures. End your summer day with a cool treat from Mr. Gene’s Beans in Fairhope.

CENTRAL BALDWINGo back in time and hunt to find knights, dinosaurs

and “Bamahenge,” a Stonehenge replica at Barber Marina in Elberta. Driving to and from, you may spot something unusual. Is that a tyrannosaurus rex? A giant spider? Four dinosaurs are hidden in the brush along County Road 95. Just before the prehistoric creatures lies the Stonehenge replica. All sites are viewable from the road, but jump out of the car — get a closer look. Alligator Alley in Summerdale has alligator feedings three times a day. Try and schedule your trip around these — it’s something you don’t want to miss. Also visit the Baldwin County Heritage Museum in Elberta.

souTh BALDWINFolks come from around the world to see our white

beaches. Besides going to the beach, you’ll find shop-ping and concerts at The Wharf in Orange Beach. For the more adventurous, try parasailing on the beach or zip-lining at the Gulf State Park. Paddle-board yoga is even offered Saturday mornings at the park. The zoo is perfect for all ages — check out their animal encounters and putt-putt course. On your way home, check out the L & N Railroad in Foley at the Visitor’s Center. Also check out Holmes Medical Museum in Foley, the first hospital in Baldwin County.

Jon RobitailleBeer/Wine Specialist at Cain’s Piggly [email protected]

With the arrival of summer, wine con-sumption tends to drop. Regardless of the reason, wine should not be overlooked as your beverage of choice during the summer months.

People avoid wine during the hot months because it is associated as a drink to “warm your bones.” The warming sensa-tion you get from drinking wine is actually your blood vessels di-lating near the skin. This physiological activity allows the body to release heat, thereby actually lowering your body temperature.

Finding the right opportunity to enjoy a bottle is as easy as going on a picnic. Grab you favorite picnic basket or light up the grill. Here’s a list of classic summer foods with a twist of wine.

Chicken and Champagne (or any sparkling wine): Fried chicken is the ultimate picnic food. It’s quick and easy and relatively inex-pensive to pick up a bucket and feed your crowd.

Why it works: The primary grapes used in the production of Champagne are Pinot Noir, Pinot Meunier and Chardonnay. The weighty texture of a big, fruity Chardonnay balances the fat per-centage in fried chicken, and a bit of oak further strengthens the satisfying sensation.

Burgers and Bordeauxs: Chances are you’ll light up the grill as least once this summer and throw on a burger or two. Why not add a glass of wine?

Why it works: The classic grapes of Bordeaux are Cabernet Sau-vignon, Merlot, Malbec, Cabernet Franc and Petit Verdot. All of which are classic pairings with red meats. For a variation, try a dry Bordeaux rosé.

Pigs and Pinots: Pork tenderloin is another good choice for the grill. Combine it with Pinot Noir, a light bodied red wine. Togeth-er, they share a sweet succulence and smoky undertone. Pinot Noir balances both pork’s lean and fatty cuts because of its bright acidity and velvety texture.

Ribs and Zin: Grilled ribs smothered with a sweet tangy barbe-cue sauce needs a bold wine as a counterbalance. The juicy dark berries and black pepper in Zinfandel make it perfect for ribs.

By scott Gentry [email protected]

In honor of Independence Day, I want to show special rev-erence to the most popular beer consumed on the fourth of July. These are the gas station beers, the college beers

and the lawn-mower beers. I’m talking about the ubiquitous Bud, Miller and Coors, or BMC for short. I’m sure you’re familiar with the brands. But what are they, really?

Some are called American adjunct lagers. Beers like this are actually international in their popularity, but in ‘Merica, we can find Budweiser, Miller High Life and Coors Origi-nal. Up in Canada, they have Molson Golden, and down in Australia, they have Foster’s Lager. In Japan they drink Kirin Lager.

Expect these beers to be very light in flavor. In fact, strong flavors are considered a fault in this style. You’d be hard pressed to find a beer that is more highly carbonated than this style, which gives a slight bite-on-the-tongue charac-teristic. The key to this style of beer is a hefty percentage of adjuncts; that is, in addition to the staple malted barley, these beers include either rice or corn to impart their char-acteristic light flavor.

But the preferred example (at least in my mind) of these beers are the Lite American Lagers. These beers are ultimate-

ly intended to be refreshing, thirst-quenching and appealing to the broadest range of the general pub-lic as possible. You know these guys as Miller Lite, Bud Light, and Coors Light.

The basic difference between this style of beer and the American adjunct lager is simply less “stuff”: less alcohol, less International Bitterness Units (IBUs) and overall just a little less flavor.

These beers are best served in a frosty glass or in a bottle or can straight from an iced down cooler. Keep in mind this is the ONLY beer style you want to serve in a frozen mug.

You can pair these beers with pretty much any food and it kinda works, just like how a glass of water works with most any dish. But you likely already knew that. You can also pair it with a barbecue, cookout, NASCAR race, crawfish boil, hunting camp or yard work with good results. But ... you could also pair a more flavorful beer with those events and have even better results.

“Alice I have Been by Melanie Benjamin tells the story of the real Alice in Wonderland. I adore historical fiction — the book is beautifully writ-ten, and the reader will become completely im-mersed in its narrative.”Recommended by Joanna Bailey Librarian, Bay Minette Public Library

“The Goldfinch by Donna Tartt. A couple of the ladies in my book club said it was good, so I read it and found myself enjoying it. It was tough to start due to its subject matter, but it was an excellent read.”Recommended by karla kantFirst Lady of Fairhope

“The Bully Pulpit by Doris Kearns Goodwin. It’s an excellent historical piece about Teddy Roo-sevelt, William Howard Taft and their relation-ships with the “muckrak-ing” press of that time. Spellbinding book that I couldn’t put down.”Recommended by Cliff McCollumManaging editor, Gulf Coast Newspapers
