6. HACCP

  • HACCP is afood safety systemto identify specific hazards and risks associated with food production and to put in place ways to eliminate or reduce these hazards / risks.
  • HACCP identifiescontrol pointsandcritical control pointsin the making of a food product and works outways to eliminate or reduce the problems
  • HACCP helps lay down the foundations forsafefood products since it sets up aquality assurance programme .(This means quality is guaranteed)

  • Job/craft production is the creation and production of one product. The product is aone off productand normally takes a lot ofskill and requirestime and effort to be spent on it. It is normally anexpensive item , like a wedding cake.

10. Batch production

  • This production system is used whensmall numbersof identical or similar products are made. For example a small bakery may make small batches of baked goods each day like cakes, breads and biscuits. Batch production is quiteflexible ,different flavouringscan be added without having to alter too much machinery. Small orders can also be made which givesvariety . Only a small number of workers are required.

11. Mass Production

  • Mass production is used whenlarge numbersof one product are manufactured. The products are made on anassembly line , with the workers carrying out thesame small job over and over again . For example sandwiches are made in mass production, one person would butter the bread, the other would put in the ham, another would put in the lettuce, another would sandwich the two pieces of bread together.
  • Products are madeprecisely and quickly . Machinery can also be used to help speed up the process. The initial set up cost of an assembly line is expensive. Workers carry out boring and repetitive tasks. If the machinery breaks down it can be costly.

12. Task 1 Teams of 4

  • Using the paper and pens, spend 10 minutes creating a wedding cake out of paper
  • Then spend 10 minutes making a batch of bread rolls and, cakes and scones (6 of each)
  • Then spend 10 minutes making a batch of identical pizzas (each pizza must have 2 slices of pepper, 5 pieces of sweet corn and must be the same shape, the sauce must be 1cm away from the edge of the base)

13. Quality Control

  • Reject pizzas which:
  • Do not have five pieces of sweet corn
  • Do not have two slices of pepper
  • Are not the same shape
  • Sauce which is closer to the edge than 1cm
