RECIPE
HALWA INGREDIENTS
1 Cup Semolina
1½ - 2 Cup Sugar
3-4 Cups Water
1 tablespoon Lemon Juice
1 pinch of Saffron
8-10 Cardamom
50grm Unsalted Butter or Ghee
2-3 tablespoon of oil
1 handful Pistachios & Almonds
1 handful sliced Coconut
HALWA METHOD
1. Crush half of the cardamoms pods and discard the shells
2. Add the cardamom seeds, water, sugar, lemon juice & saffron in a pan & mix
well
3. Heat till it boils and then simmer on low heat
4. Heat a non stick wok
5. Add butter and oil and remainder cardamom
6. Next add the semolina and fry till it turns a nice light brown colour – keep
stirring and make sure the semolina does not burn
7. Add the syrup to the mixture, keep stirring, add the coconut & nuts
8. Cook till the halwa has absorbed all the moisture and is coming together
9. Once the halwa is to your desired consistency remove to serving dish and
sprinkle with a few nuts
PURI INGREDIENTS
2 Cup Pillsbury Atta
Water to knead
Oil to deep fry
PURI METHOD
1. Add enough water to atta to make a soft dough
2. Leave to stand for 10-15 minutes
3. Heat oil in a wok
4. Take a ping pong size dough ball
5. Roll out using oil - do not use any flour
6. Add to hot oil
7. After 5-10 seconds press down with a slotted spoon n the puri will puff up
8. Fry till cooked thru
9. Remove and serve immediately
POTATOES INGREDIENTS
2 Large Potatoes
2 tablespoon Cumin Seeds
1 teaspoon Turmeric
1 teaspoon Mustard Seeds
6-8 Whole Dried Red chillies
Salt to taste

POTATOES METHOD
1. Peel and slice potatoes into thin slices
2. Heat oil in a non stick wide based pan
3. Add the potatoes to the oil and fry on a high heat for 4-5 minutes
4. Next add salt, turmeric, red dried chillies, cumin & mustard seeds, mix well and
cook for another 3-4minutes
5. Next add enough water to soften the potatoes and simmer on a low/medium
heat
CHANA INGREDIENTS
2 Tin of pre boiled Chickpeas
½ Can Tomato Tin
1 teaspoon Tomato Paste
1 tablespoon Ginger Garlic Paste
1 White Onion - Chopped
1 Red Onion – thickly sliced
1 tablespoon Cumin Seeds
1 teaspoon Mustard Seeds
1 tablespoon Chilli Flakes
2-3 Star anise
2-3 Cinnamon Stick
8-10 Cloves
6-8 Whole Black Pepper Corns
2-3 Whole Black Cardamom
3-4 Bay leaves
3 tablespoons of Dry Fried Onions
1 teaspoon Chilli Powder
2 tablespoon Mango powder
½ teaspoon Turmeric Powder
1 Handful of Coriander leaves
4-5 Fresh Green Chillies
Salt to taste
METHOD FOR CHANA
1. Heat oil in a non stick wok
2. Add ginger/garlic paste and cook for 1-2 minutes
3. Add the chopped white onions, cumin, mustard seeds, chilli flakes, star anise,
cinnamon stick, cloves, black peppers, bay leaves, dry fried onions, red chilli
powder, mango powder and fry for a few minutes
4. Next add pre-boiled chickpeas and cook for a few minutes and then add tinned
tomatoes and the tomato paste
5. Next add turmeric powder and salt and cook for a bit
6. Add thickly chopped red onion followed by whole green chilli
7. Lastly add freshly chopped coriander leaves and remove off the heat — with
Yusra Ahmer, Diya Purmanund Reesaul, Amber Syed, Zareen Shafiq, Debasree
Dutta and Asmaa Chhipa Khan.
