Around and About in Harbor Club...With Judy Stultz

Spring brought us an early Easter this year; once again Angela outdid herself planning the annual Harbor Club Children’s Easter Egg Hunt. HC children and grandchildren gathered at the Playground on Saturday afternoon (April 3rd.) to hunt colored eggs and baskets of toys. Our Harbor Club LGA made front page news (in living color) ~ right next to golf great Jack Nicklaus in the April 28th issue of The Breeze! Congratulations to Carol Gordon and Fran Schroeder for winning the LGA Member-Member on June 3rd. Not to be outdone, the HCMGA has been busy on the links with Annual Blue & Grey Tournament (the North was victorious this time round), the Memorial Day Tournament and the Fourth Annual Scholarship Tournament in June. Couples Golf is up and running ~ the nine-hole group plays on Fridays and the18-hole group plays on Sundays. It is a fun time for those who enjoy golfing with their mates. Travelers Alert! The Kendall’s and Hamilton’s cruised to Scandinavia and Russia, stopping off in London and then through the Chunnel to Paris along the way. The Ledyard’s are off again, this time to fascinating Turkey and Greece, can’t wait to see their pictures. Earlier this year the Lofgren’s traveled to the Orient with Singapore, Tokyo, Hong Kong and Vietnam among the places they visited. Festival Hall’s grand opening in Greensboro on May 1st brought many of our Harbor Club residents to town for the big event ~ either as patrons or volunteers. John Lithgow (of movie and TV fame), put on an entertaining and touching one man show recounting stories of his theater oriented childhood. Troutdale at the Clubhouse is the place to be on Tapas Night ~ as special drink prices and savory appetizers lure many of our HC residents. The once a month Ladies Night Out has become a ritual for many of our gals ~ a time to celebrate the birthdays of the month too! HC men also have a ~ Guy’s Night Out ~ featuring such events as a Scotch Tasting and a “Texas Hold’em” Poker Tournament. Memorial Day weekend weather seemed just about perfect, only a few short showers between the sun and a bit of overcast skies ~ making a day on the water, the links or at the pool most pleasurable ~ until ~ late afternoon when the skies opened and deluged us with rain! The clouds parted and rain ceased as the Ladies of the Lake Book Club stepped from their cars to visit Flannery O’Connor’s Andalusia, in Milledgeville. They were guided through the famed author’s home place by a well informed and interesting docent who was able to give a personal insight to the writer’s private life. Later, the group lunched at Sylvia’s Restaurant while discussing their May selection, Flannery, by Brad Gooch. Continued on Next Page...

Introducing Troutdale to Harbor Club...Our HistoryIt all started at the well known Troutdale Dining Room in Bristol, Tennessee. The restaurant is located in a beautifully restored Victorian home. The house itself is rich in history. It was originally built by the Vance family of Bristol, and lost during the Civil War. The house was later returned to the Vances.

Ben Zandi, CEO of Troutdale Kitchens, purchased the Dining Room and did everything in his power to maintain the local connection to the restaurant while continuing a mission to improve and expand. His extensive experience in the corporate world of Mariott allowed Zandi to apply effective management techniques to make the five star restaurant an even bigger success year after year.

Realizing that there was more to be done in the industry, Troutdale Kitchens was born in order to fully realize the potential of the company. Expanding into advanced catering services and casual dining was the first order of business, but soon the TK approach was applied to nearby country clubs.

The company met with a great reception at a premier hotel in Norton, Virginia as Troutdale Kitchens completely turned around the operation to make it a very successful piece of the local economy and the TK repertoir.

Now, with the purchase and restoration of local downtown favorite Burger Bar and the management of the Harbor Club dining room, the sky is the limit as the enterprise moves ahead, applying long-term solutions to a wide variety of facilities across the Southeast and beyond.

Menu and IngredientsHaving a great menu with the best possible ingredients is key. Working with local farmers to provide fresh unique ingredients to craft creative menus is our hallmark. It's also important to work with your diners and understand the requests and expectations fully of local repeat customers, so you can be sure to keep favorites on the menu and maintain consistency.

FacilityWe work with the best interior designers and well trained staff to create ideal locations for dining experiences. The look and feel of our locations must be top notch and always clean.

Staff and ManagementCustomer service of the highest level is our standard and that begins with hiring great people and training them well. In addition to a solid team, our management style is critical in ensuring profitability and quality — often, important details can be overlooked and it's our job to be sure that all aspects of running a successful food and beverage business are evaluated and constantly being improved.

MarketingWord of mouth is the number one goal, which we achieve by providing consistently excellent experiences for customers. Through good PR, branding, websites, and social media, we do everything we can to keep the conversation going about our businesses.

Chef Darrin ShelleyShelley began his culinary journey at the age of sixteen when he accepted an apprenticeship under the tutelage of Certified Executive Chef, Jamie Kuzio. Jamie, who was twice voted Mountain Empire Chef of the Year, educated Darrin in basic culinary fundamentals and classical techniques. During his apprenticeship, Darrin realized that success in the field of culinary arts requires inspiration and passion, with which knowledge and experience would certainly follow through dedication to the craft.

Darrin's devotion and thirst for knowledge propelled him into the kitchens of other renowned East Tennessee Chefs, such as Armond Celentano and Todd Dawn, after

completion of his apprenticeship. During this time, he honed his culinary skills and developed his own individual style, gleaning something from each and every chef he worked with. His humble approach to cooking has encouraged him to learn something each and every day.

In 2001, Darrin was offered the position of Sous Chef at the renowned Troutdale Dining Room in Bristol, Tennessee. The Troutdale, already earning a 5-Star rating for both food and service from the Greater Piedmont Epicurean Society, was a great opportunity for Darrin. During his tenure as Sous-Chef, the restaurant earned the prestigious DIRONA Award and Darrin's daily specials were quickly gaining notoriety.

In 2004, Darrin accepted the position of Executive Chef of Troutdale Kitchens and took the helm of the restaurant's kitchen. Focusing on local and seasonal ingredients and classical techniques, Darrin's inspiration and insistence on using only the best ingredients quickly propelled the restaurant to the forefront of fine dining in Appalachia. His simple food philosophy and respect for the origins of food are showcased in the symphony of flavors in the restaurant's seasonally changing dinner menu and Chef Shelley's Tasting Menus, which highlight the best the area has to offer.

Chef Darrin oversees Troutdale at Harbor Club, Troutdale at Ridgefields and Troutdale at Johnson City Country Club.

From the Lesson Tee…With the Bermuda rough becoming thick and deep, let me give you some reminders on how to handle these lies.GET CREATIVE—when the ball settles down in greenside rough, it takes just the right touch to pull off a successful shot. In this case, your standard chipping stroke (played with anything from a 7 iron to lob wedge) might not be the best play.

Rather, consider this cool and slightly unorthodox option: chipping the ball with the toe of the putter. By turning your club sideways, and using a normal putting stroke,

the putter blade can easily glide through the turf. When the toe makes contact with the ball, it will pop safely onto the green. WARNING: Since precise contact is key, make sure you practice this one a couple of times on the chipping green before you take it to the course.

ROUGH ANGLE—You hit a good drive that settles up against the first cut of rough. The key here is to create an angle of attack that avoids all the long grass behind the ball. A low and around takeaway will get you in trouble here, so you should adopt a backswing path that’s more “out and away” to help give you a clean strike. This type of swing shape is best for a cut, so play for one. If this shot requires a hook there might be trouble.

Keep swinging!Grant Gaalema, PGA

From the Desk of the Golf Course Superintendent...The weather is always a concern of ours, and so far this year it has been a typical Georgia summer. We have had periods of hot and cool days; it has also been both wet and dry. A typical unpredictable Georgia summer. As the summer progresses, our greens become our main concern. Water management is the key to a success-ful bentgrass program during these hot humid months. The greens are being watered with overhead irrigation once a week to promote deep healthy roots. During the week, hand watering is being done in the morning and syringing in the afternoon, being careful to only add water to those areas of the greens that need it. Excess water during summer months can be detrimental to bentgrass. It causes shortening of the roots, thinning of the stand and create conditions for diseases to mobilize. I am often asked, “Why do we not just turn on the heads.” I wish we could since the process of syringing greens in the afternoon is a very scientific and technical process that takes up a good bit of time. Grass plants spend their lives pulling water from the ground and then evaporating it out of pores in the leaves. Once it is out of water, the plant begins to wilt. Since we can’t go out in the middle of the afternoon and water the plant when it needs it, we have to help the plant survive until in the morning when we can add water with less risk. Transpiring of water throughout the day helps to cool the plant. As water is evaporated from the plant into the air, it extracts heat from the turf surface, thereby cooling it. The process of syringing, or adding a light film of water to the surface of the plant, is our way of helping the plant, once it can’t help itself. So, how much is too much? That’s where the science and know how comes in to play. As the air is more humid and holding more water, the rate of evaporation becomes less. Excess water sitting on the surface of the plant is where most problems occur with bentgrass in the summer. This is just one of the many challenges we deal with in these long Georgia summers, and is probably one of the reasons why a greens keeper enjoys Football season so much, no matter how his team is playing.
