of optimum conditions for a dough, they turn out absolutely light and fluffy! Wanna know our warm up routine? It covers reaching a perfect temperature and ideal humidity for a better taste. That’s how we start our day. Primary fermentation is the most important stage of pretzel baking. That’s when the dough is fermenting in a large, single mass before being formed and divided into single pretzels. At this stage, yeasts are giving a hundred and ten percent ‘performance’, and emotions are running high.
