ono, you know

Like yin and yang, and ice

cream and cake, there are

just some things that are

meant to be together. The same

holds true when it comes to a

good old juicy burger and

steamy hot French fries. And we

finally think it’s time the French

fry deserves to shine in a golden

glory all its own.

The culinary origin of the

French fry began in European

countries, including Belgium,

France and Spain as early as the

1700s. Commonly referred to as

fried potatoes at the time, it was

the United States that popular-

ized the thin style of fries we

now see in many restaurants to-

day.

We scouted the Windward side

of the island for the most

fiendishly fantastic, “ono, you

know” fries, and came across

several so mouth-watering tasty,

we didn’t mind putting in an ex-

tra hour on the treadmill. So, the

next time someone asks you,

“Would you like fries with that?”

at the following establishments,

the answer should be a definitive

and resounding, “YES!”

Founded in 1998, with four lo-

cations islandwide, this burger

joint with a 50s theme and a sim-

ple menu of burgers, fries and

shakes has undoubtedly made a

name for itself when it comes to

quality food and customer serv-

ice. All items are prepared to or-

der, and Ted Tsakiris, co-owner

of the diner-like eatery, says its

fries are some of the best by far.

“People think of French fries

kind of like a side thought or af-

terthought because it’s usually a

side dish, but for us it’s a big

thing. Many people will say our

fries rock and they won’t even

mention our burgers — and

we’re known for our burgers!”

On the menu is a vast selec-

tion of “Fries-n-Sides,” including

Teddy’s Extra Crispy Fries ($1.99

small; $2.79 large),

Spicy, Garlic or

Cheese Fries

believe it, these fries are sizzling

— dare I say, caliente! — in a

smoking hot way! The seasoning

consists of TBB’s special mix of

Cajun red-eye seasoning, black-

ened seasoning and cayenne

pepper. Yet, what makes these

fries extra special is the sweet

and tangy sauce that perfectly

accompanies it. “You have the

heat from the Cajun, and then

you have this sweet sauce that

kind of smooths it out,” Tsakiris

explains.

It’s nothing but the real deal at

Teddy’s. Come in with a hearty

they’re so great!”

At Don Ho’s Island Grill,you might expect tohear the strains of

But themusical legend also is hon-ored in a living, breathingand highly energetic wayeach week as a talent searchfor Hawaii’s most-gifted en-tertainers takes place at therestaurant that bears hisname.

Al Waterson, the multi-tal-ented singer, actor, humoristand professional emceehosts Sunday night talentsearches and Thursdaynight reviews, along with hiswife and longtime entertain-ment manager, NancyBernal.

I met them at Don Ho’s tocheck out the menu (try thecalamari and chef Robert

Dennis’ Hawaiian plate whenyou go), and to chat about“Al Waterson and You.”

JM: I know that you’ve beenhere at Don Ho’s for morethan nine years, but whendid “Al Waterson and You”begin?

AW: Oh, way back. We’vebeen doing this in one formor another for 28 years. Westarted with lyric sheets andan 8-Track. And Don Ho and Igo way back, too, so longthat I can’t even remember(laughs). Don used to stopby the shows here, and thewinners would join him onstage at his show in Waikiki.

JM: So you showcase talentas well as search for talent?

NB: Yes. Primarily, it’s asinging competition wherewe are looking for talent, but

at the same time we’re pro-viding a showcase for newtalent. We have a lot of peo-ple from the industry —agents, promoters, and alltypes of people who comeeach week. This is one of therare places where all agesare encouraged to partici-pate and perform.

JM: And you have somepretty big stars that havewalked across the stage.

AW: Nancy has been work-ing with young talent forsuch a long time; she doesan amazing job. And DonHo’s is a great environmentfor people to come. Theycan relax, enjoy the food, theentertainment. There’s nocharge for the competition,we just ask that people sup-port the restaurant. We pro-

mote a sense of camaraderie and

family fun here and it’s a very

pleasurable experience. And for

the performers it’s an opportunity

to be judged by professionals. Our

panel of judges is always made up

of industry professionals.

JM: You have to be at least 6

years old to enter competition

and there’s no upper age limit. Do

you think that children are more

precocious now than ever before?

NB: I think that the children are

getting better each year and they

just want to be seen and heard.

The talent is getting so much

stronger — when they come in

they are already prepared and

mostly they go on and have a re-

ally good time. Sometimes people

who don’t win will still get no-

ticed and be given opportunities.

So it’s a good, nurturing environ-

ment for children — and every-

one. And it’s not just about

singing. Casting directors often

come to our shows and request

performers audition for movies,

commercials, etc.

JM: It seems fitting that a talent

search for entertainers is being

held at Don Ho’s.

AW: Yes. It’s like we’re continuing

Don’s legacy … it’s a good feeling

here. What’s so great about the

evenings is that they are for any-

body and everybody — all types

of music, all kinds of people. You

never know who you’re going to

meet or hear.

JM: You’ve probably tried every-

thing on the menu here. What’s

your favorite dish?

AW: The Surfboard Pizza and the

sweet chili sauce chicken wings.

Can’t get enough of those. I’m a

chicken wing man.

NB: Oh, there’s so many, but if I

had to choose one, it would be

the Surfboard Pizza. Not only

does it taste great, the presenta-

tion is delightful. They place two

big cans of pineapple on your

table and it’s used to elevate a

mini surfboard. The pizza rests on

that and everyone loves it be-

cause no one does pizza like that.

Don Ho’s is perfect for par-

ties, fundraisers, and they

even have weddings here.

It’s a friendly atmosphere

and it won’t break the bank.

With just two weeks left in July,

there’s still time to head over to

Ruth’s Chris Steak House for a spe-

cial menu, and the chance to win a wine-

friendly trip to San Francisco.

The popular steak house is celebrating its

45th anniversary nationwide (it’s the 20th

anniversary of the original restaurant open-

ing in Hawaii) with a $45 complete menu and

a trip to San Francisco as part of the summer

celebration.

The $45 menu continues a Ruth’s Chris

Hawaii tradition that began a year ago when

each of the steak houses offered reduced-

price, fixed-price meals. The “prime time”

meals soon became so popular that the spe-

cials now run throughout the evening.

On the menu until July 31, you’ll find

Louisiana Gumbo or Steak House Salad,

Steak and Cajun Shrimp, Rib-eye, Veal Chop

or Stuffed Chicken Breast served with a se-

lection of the steak house famous side

dishes, including potatoes and creamed

spinach. Dessert is the utterly addictive and

artfully presented Bread Pudding. For those

with simpler and less calorific tastes, ice

cream or sorbet is also offered.

The restaurant has partnered with

Guenoc Winery to bring Hawaii residents

an exciting contest and the opportunity to

try some of Guenoc’s best wines. Featured

selections include Langtry Guenoc Valley

2006 Chardonnay for just $10 a glass ($40

bottle), and Langtry Napa Valley 2005

Cabernet Sauvignon for $11.25 a glass ($45

a bottle).

“We’ve had a long relationship with

Guenoc since the days when Orville Ma-

goon owned the winery,” says Ruth’s Chris

owner and CEO of Desert Island Restau-

rants, Randy Schoch. “The Hawaii connec-

tion at the winery remains a strong one.”

The San Francisco Trip includes round-

trip airfare for two, with two nights VIP ac-

commodation at the beautiful Langtry

Estate, where actress and estate owner Lil-

lie Langtry lived. The prize also includes a

VIP dinner and tour of the winery.

“Guenoc make wonderful wines, and

we’ve always enjoyed the Hawaii connec-

tion between the winery and the islands.

The wines are a perfect fit for our 20 years

in Hawaii, but we’ll be serving them long af-

ter the anniversary celebrations are over,”

he says.

Local produce is also a perfect fit for

Hawaii’s favorite steak house — and

there’s a variety of locally grown food on

the menu at Ruth’s Chris these days.

“We can’t improve on our steaks,” says

Schoch, “but we have been able to support

local agriculture by including as much lo-

cal produce as possible on our menus.”

That means ripe tomatoes from Ka-

muela, sweet onions from Kula and a farm-

to-table commitment to support local

agriculture.

And while the well-established steak

house is something of a tradition in Hawaii,

Schoch is not about to rest on his laurels.

Staying on top, he says, is all about chang-

ing with the times while keeping core val-

ues steady.

“You know, we believe in the things that

we have always done,” he says.

“We believe in providing a great

product, with good servers, in a

great atmosphere. It’s not rocket

science, but it is about honoring

our guests and giving them the

best experience possible.”

Every Sunday and Mon-

day, Hiroshi Fukui, the

executive chef of Hi-

roshi’s at Restaurant Row,

prepares a menu using the

best locally grown produce.

Seasonal, sensational, and

generally a showcase for

completely new dishes, the

four-course meal offers

guests the opportunity to try

new foods and find out what

island farmers are growing.

On the menu this month, you’ll find a

tender sous vide of lobster tail. “We cook

the lobster tail at about 140 degrees in a

cryovac (vacuum) bag and then sear it

and serve it with squid ink pasta and Brus-

sels sprouts,” explains Fukui.

The colorful plate is artfully presented

— with the shiny black pasta strands and

bright green sprout leaves garnishing the

plate. “People either love or hate sprouts,”

says Fukui. “But they are a great vegetable,

and they add color and texture to the

dish.”

While the aim of the locally grown menu

series is to support local farmers and to in-

troduce their products to the

public, the meals also are a

great test market for new

dishes that might eventually

make it to the Hiroshi’s

menu. Look for July’s Maui

Cattle Beef Teriyaki Sushi to

become a keeper.

And naturally, you can rely

on some outstanding wine-

pairing suggestions from the

restaurant’s master somme-

lier, Chuck Furuya.

Kenny’s Restaurant has

been known for serving

fresh local favorites since

opening in 1966. Following

an award-winning remodel

of its dining room, Kenny’s

has made a few changes to

its menu.

This month the restau-

rant is spotlighting its new

gluten-free products. The

first is a plate of Garlic

Cream Fettuccine on a bed

of gluten-free noodles for

$14.99. Make this meal a

feast by adding mush-

rooms ($3.29), chicken

($3.45) or shrimp ($4.75).

Or sample the a gluten-

free Eggplant and Sun-

dried Tomato Pasta, also

$14.99. Either salmon

($4.65) or ahi ($4.15) can

be added to the dish. And

for the keiki is a gluten-free,

ooey-gooey Mac and

Cheese for $5.69. (Regular

noodles may be substi-

tuted in all dishes.)

The allergy-friendly

choices were included af-

ter Kenny’s owner John Fu-

jieki met a passenger on a

recent plane trip who was

allergic to gluten. Inspired

to create more options for

those with food allergies

and sensitivities, Fujieki

and the restaurant’s new

management team got to

work revamping a few

recipes.

Other health-conscious

offerings to check out in-

clude sugar-free Apple and

Pumpkin Custard pies, a

low-sugar Red Velvet Cake

If you’re getting a burger, you’ll definitely

need fries with that. Or better yet, why

not make it quick and easy? Simply, stick

with the fries. Really, it’s a meal in itself —

your choice. However, if you’re yearning

Ahi KatsuIngredients: • 2 blocks fresh ahi (about 1 1/2-2 lbs.). Cut

into inch tube about 6 to 8 inches long• 4 sheets nori (Japanese seaweed)• 1 cup Tempura Batter• 1 cup panko breadcrumbs• Vegetable oil, enough to fill a frying pan or

minimum of 1-inch deep

Preparation:• Wrap each piece of ahi with two sheets of fresh nori, then dip them into tempura batterand coat with panko breadcrumbs.• In a wok or a deep fryer, preheat the oil to375°F. Fry fish until golden brown (about 30 to45 seconds) and cut into 8 to 10 1/4-inch-thickpieces.

Tempura BatterIngredients: • 3 cups all-purpose flour• 1/4 cup cornstarch• 1 egg, beaten• 1/2 cup water• Salt and pepper, to taste

Preparation:• In a small bowl, combine all ingredients untilthe batter has no lumps. Set aside.

Thai Yellow Curry SauceIngredients: • 1/2 tbsp. Thai yellow curry paste• 2 cups coconut milk• 1 tbsp. fish sauce or Aloha Shoyu• 1/2 tbsp. curry powder• 1/2 tbsp. sugar

Preparation:• In a saucepan with medium heat, combine allthe ingredients and bring to a boil. Then sim-mer with low heat for 10 minutes or until thesauce thickens to the consistency of mustard.

Mango-Tomato SalsaIngredients: • 2 tbsps. ripe mango, diced• 2 tbsps. tomato, diced• 1/2 tbsp. Chinese parsley, chopped• 1/2 tbsp. onion, chopped• 1/2 tbsp. bell pepper, chopped• 1/4 tbsp. lemon juice• 1/4 tbsp. balsamic vinegar• 1/4 tbsp. sugar• Pinch of salt, to taste• Dash of Tabasco, to taste

Preparation:• In a small bowl, combine all ingredients.

Presentation:Place the katsu slices on one side of the plateand the Mango-Tomato Salsa on the other.Serve with Thai Yellow Curry Sauce.
