J ill Taylor’s early involvement in owning one of the greatest horses Australia has produced can best be described as half-hearted. Her enthusiasm has sky-rocketed since, but four years ago the only

black caviar she’d heard of came in little bottles.“I try to bury that story but it keeps popping up and

they say it’s part of history now,” she says, smiling. “David said we were going into the horse. We’ve got twin girls, now 10. I was busy. David said ‘We’ve bought into it, just transfer the money across’ and I said ‘I am not transferring money for a stupid bloody horse’. So the ‘stupid bloody horse’ has stuck.”

It was $35,000 she had to transfer to become one of five couples to own a yearling mare called Black Caviar, which had been bought at auction for $210,000. “When the bank statement came I wrote on it ‘Bloody horse’,” Jill says. “I don’t think I even knew what her name was when she raced the first time.”

The girls had their sports on that Saturday and David went to the races and invited Jill to watch Black Caviar race. “I said ‘Look, I’m far too busy’. A couple of the dads who were dropping off at this party said ‘I heard your horse is racing today, we’ll drop off the kids, we’re going to go to the TAB and put some money on it’. I said ‘I wouldn’t even know what her name is’.

“When they came back they said ‘She was amazing. She didn’t just win, it was the distance that she won by’. David rang from the track and they were all happy and laughing and I said ‘OK, whatever’. I went to the second race, then the third and it has been amazing,” she says, laughing. “It’s turned around to bite me.”

I’ve met Jill and David at their Camberwell home to talk about a horse that has been mentioned – although cautiously and with qualifications – in the same breath as Phar Lap. Rated last March as the best horse in the world (after a three-length win in the $1 million Newmarket Handicap at Flemington), Black Caviar is close to making history by passing Phar Lap’s achievement of 14 wins in a row.

On the Taylor dining table is a replica of the horse. The Taylors show me the trophy room, with photographs on the wall of the great sprinter, and other memorabilia. There’s a lot to show off about. Black Caviar’s 13 wins in a row have earned prizemoney of $3,590,000. The Taylors seem excited, even amazed, by the horse’s success, and are making sure they enjoy every moment.

David Taylor says he’s been lucky with the three horses with which he’s been associated: Man Irish and Ivan’s Pride before his current champion. “The first time I saw him (Man Irish) at Flemington he won by 15 lengths, so that was my introduction to horse racing as an owner.” Ivan’s Pride won five races in a row. This horse-owning caper was working out well. “For me it was eight races for two losses,” he says.

Then, four years ago, Taylor was invited in for a share of Black Caviar. “The fact that it was involved with the Moody stable and the people involved made it a no-brainer,” Taylor says.

T he Taylors realise that so much of success in horse racing is about luck. David: “As much as you can get the best-bred horse, it doesn’t give you any guarantees whatsoever, as we’ve seen so often,

where a cheap horse with no name can be an absolute star.” Jill: “She’s a once-in-a-lifetime.”

The couple never expected riches. “Our aim was to have fun, a good excuse to have a lunch,” says David. Jill: “I thought we would go and have lunch together with this group of people, and we’d really enjoy their company, but it would just be something we’d be shelling out for each month, like most people do in racing.”

David: “You don’t expect, when you get involved in a horse, to get any return on your money, I don’t think you can afford to look at it that way. But if you are fortunate enough – and I’ve been so fortunate to have 22 races for 20 wins, well you couldn’t believe your luck.

“We’re all there to have a good time. We all have trophies. There’s only one handed out at the race meeting but we all get a replica made. They cost a good penny. And we entertain up to 100 people every time at the races and after. We share the luck. Because it is luck. Many people buy horses and pay up to a million dollars and sometimes don’t get a start, let alone a win. How lucky are we?”

Being up close and personal with such a great horse has been an amazing ride for the couple. “It’s very exciting but it’s also extremely nerve-wracking,” says David. “The nerves set in around Thursday. I’m drained after the race. It’s usually about Wednesday that I pick up, and we all say the same.”

Jill: “The more she wins, the more pressure there is for her to win the next race, whereas at the start it was different. I’ve never considered her losing; it’s just never entered my mind. That’s what you do. You go to the racetrack, she races, you win, you have Champagne in the winner’s bar and then you go and celebrate all night. That’s just how it is.”

David: “She’s going to need counselling when it loses.”At the launch of the Caulfield racing carnival, instead of a

red carpet, they used Black Caviar-coloured carpet (salmon and black and white spots). “It’s just a phenomenon,” David says. “At the Victorian Breeders and Owners Association, there were 14 awards and 11 of the recipients made reference to Black Caviar.”

At the recent Australian Racehorse of the Year awards, Black Caviar took out Australian horse of the year, Australian sprinter of the year and Australia’s most popular horse. “We often ask ourselves ‘why is this horse what it is?’,” says David. “And there’s no doubt [it’s] not only Peter Moody’s knowledge and thoroughness and the work he puts into the horses he trains but his amiable manner – he’s always got time for everybody. And he’s very good at articulating facets of racing. The jockey Luke Nolen is great. And the owners’ willingness to accept the public in and be available is also part of the popularity of the horse.”

Says Jill: “We all really enjoy each other’s company. It’s easy to love the time together when we’re on such a high each time we meet. We all get on well and we are all respectful of one

another. It’s not always the case; there are some syndicates – we were told – where they can’t stand each other. Success can change the dynamics of the group.” David: “Mind you we’ve never lost a race to find out. Everyone loves a winner.”

It has been a rich, life-changing experience part-owning such a successful horse, especially one that has captured the nation’s heart as this one has. The prizemoney is just a bonus, they say. David: “Without this horse, you and I wouldn’t be talking right now. The doors it’s opened, from TV and radio stations, to people we’ve met.” Jill: “People have come out of the woodwork that we haven’t seen for years. It’s amazing how many people we’re connected to.”

David and Jill treat the Phar Lap comparison delicately. David: “I don’t think it’s fair to compare it with Phar Lap. Yes, we’ve won six group 1 races on end, but when you consider what Phar Lap did over such a long period of time – Phar Lap

is immortal. We’ve got the 13 in a row but we’re not in that class just yet.” Jill: “They were both spectacular, freak horses.”

David says the horse, whose nickname is Nellie, has a “human awareness” on race day. “In Australian Story she was in the paddock with a goat and a pony. She’s such a relaxed horse. Rarely do you get a mare as relaxed as her.

“On race day the crowds mill around her and she’s totally relaxed, head down, just wandering around, and then she gets into the mounting yard, she’s got the saddle on, she’s strapped, the jockey jumps on board, the ears go up, the head goes up and she’s there for business. It’s like she can read it. She then becomes Black Caviar the racehorse.”

Like Makybe Diva, Black Caviar has become a crowd favourite and a folk hero.

“We’re lucky to be involved in a horse that the public have taken to so greatly,” says David. “So much so, we’ve had to set up a manager to manage all the requests for charities, the merchandising of all the paraphernalia, fielding requests, dealing with the corporates. We have people wanting to write books. We’ve got people who want to paint her. People who want to do a movie on her. We think it’s all too soon. There’s been talk of a statue. But we as owners think it’s too early.”

The prospect of Black Caviar losing is a strange one. “You don’t want it to be beaten but you expect one day it could happen,” David says. “As good as the horse is, it’s only really going to be bad luck or injury that beats her.”

This year the mare was sensationally scratched from a group 1 race at Doomben. “When she was injured we were all devastated,” says Jill. “But all along it’s been about the horse. Whatever was right for the horse.

“The vet said ‘She can race but she’s tired’. It was our call to make, and we all (thought) the best thing for her was to have a rest. It was another group 1 and the prizemoney was there. He’d (David) all ready spent it! We received letters from the public thanking us for making that decision.”

David is a director and owner of Barry Plant Real Estate in Glen Waverley and has a new business called Kristal Bond in which “liquid glass” is applied to the inside of existing windows to cut out 99 per cent of UV rays, reducing temperature by up to 10 degrees in summer. Jill is an accountant and auditor. Together they have twin girls, Nikita and Cassy. David has a daughter and a son from a previous marriage. He has three grandchildren.

Jill says Nikita and Cassy are not over-excited by Black Caviar’s achievements. “I don’t think they quite understand what it’s all about,” says Jill.

The horse’s next start could be the Schillaci Stakes at Caulfield. And the plan for next year is to race Black Caviar at Royal Ascot in England in June.

It’s unclear how long Black Caviar can go for. “She’s lightly raced, due to injuries received early,” says David. “That’s where we’ve been very fortunate, having a trainer who knew what he was doing, to rest the horse, give it plenty of time for it to develop and get over its injuries and train it back to doing that she’s done for the past 18 months. We might have another 18 months before we breed from her.

“Pity she’s not a stallion. That’s where the big money is. A stallion can cover eight horses a day, five days a week. With Black Caviar we’ll be able to get a foal.”

The Taylors know that nothing as wonderful as Black Caviar lasts forever. “You have to be realistic that it could end at any moment,” says David. “It could be ending as we talk because she could be kicking the crap out of the stables. You can never count on anything in horse racing.” \

T he spring racing carnival is upon us – a festive time to become acquainted with new frocks, hats, fascinators and shoes. When it comes to choosing what to wear to the races, finding your inner style is a must. Whatever trends you

wish to follow this season, choose carefully and remember to balance your key colour from head to toe (unless you’re colour blocking, but more about that later).

Spring/summer 2011-12 fashion is all about variety – there is a dress style that will suit every shape, from the A-line to a mini, a shift to vintage empire lines.

We’ve all heard that colour blocking or colour popping is a must for the warmer months, but if you’re going to make a colourful statement at the races remember to factor in some neutral hues to keep a bright outfit from becoming a disaster.

Matching burnt oranges against nude shades, deep mauves with caramels and even sunny yellows with cream can work wonders. Fashionistas might be telling us to juxtapose colour; we say listen to your heart and if you’re going to “block it”, make all the noise you can with a structured pencil skirt or classic shift dress and lower the volume with an earthy-coloured top or accessories.

One designer taking colour in her stride is Melbourne’s Megan Park. Instead of colour blocking, she’s chosen to make spring/summer 2011-12 all about playful colour intentions. After a 13-year stint in London, Park returned to Australia in the mid-2000s and focused on ready-to-wear outfits. In fact, some of her latest collection is now available in David Jones. This Fitzroy designer also has a flagship shop on High Street, Armadale, and it’s where simple structure, embroidery, feminine dresses, ruffles and bright prints play a key role.

Some are perfect for daytime race wear – Park’s dashingly bright designs are certainly eye catching. Consider the mosaic, silk-crepe skirt that screams Morocco fever, while the frangipani silk khaki day dress smells of summer days.

Polka dots always find a spot in the spring/summer trends, and Kachel’s feminine polka dot dress is ideal for the races. What’s more, teamed with a delicate string of pearls, this black-and-white number says classic all over.

If colour isn’t your thing, then Feathers has come up with some solid choices in navy, black-and-white and black combined. The cosmic dress is perfect for daytime.

Anna Campbell, who recently opened her boutique in Sydney Road, Brunswick, relies on simple lines and delicate lacework in her creations. The Indiana lace dress, which comes in a selection of white, black, mocha, silver, nude and navy, is feminine in an almost turn-of-the-century kind of way. This is nostalgic vintage and we can’t go past the chantilly-style lace, capped sleeves, covered silk buttons and lace trim.

For modern minimalism, Raoul has a sensational spring/summer collection. The brand is big on baby blues, crispy creams and apricot hues – it also has tempting shades such as silver peony, sage and tangerine for a more pronounced glamour.

Raoul has literally taken key 1970s film references (Michelangelo Antonioni’s The Passenger, starring Jack Nicholson and Maria Schneider) and come up with relaxed silhouettes that work well for day and night wear. We love Raoul’s coral ruffle wrap dress – it’s perfect for channelling the pastel shades this spring while the patterned long-sleeved dress takes ’70s power patterns to a whole new level.

Alannah Hill, the queen of romanticism, has come up with another dreamy collection for spring/summer, and it fits neatly with the racing carnival.

F or the blokes, the spring racing carnival will provide plenty of opportunities to take advantage of the latest spring/summer seasonal trends to add to your trackside look.

Suits don’t alter that much from one season to the next, and while the changes in detailing are subtle, there’s an abundance of new fabrics, tapered styles and variations of the classics to consider for your racing wardrobe.

There’s plenty of French blue, charcoal and occasional pinstripes to keep your look crisp and on fashion’s cutting edge. Slimline suiting is still big this season, the broad shoulders and tapered waists saluting the masculine frame, while two-button suits are still on the scene, too.

Cambridge has released a fabulous selection of suits for the spring/summer months. What’s more, the range is affordable when it comes to fine Australian and European yarns and it prides itself on being manufactured in New Zealand.

The light-grey suit is ideal for daytime events; it’s a lightweight Australian merino wool yarn that is easy to match with ties from the metallic-toned family for subtle accents, or bright oranges and baby blues for a bolder look.

Cambridge has also included a stunning navy pinstripe for the season. Teamed with a wide-striped tie, this combination fuses elegance with timeless beauty. Cambridge makes suits to fit most sizes (you can mix and match jackets and pants) and keeps its cuts close to European trends.

We also love the mid-grey Prince of Wales check that comes in a two-button and rests its heart on a modern cut, or the popular French-blue suit that looks fabulous with a two-tone collar and cuffed shirt; this style of suit is cut on what is referred to as the “London block”, which essentially means the silhouette is sharp and lean.

Harrolds also offers a fabulous selection in men’s suiting and you can get the look from head to toe in its Collins Street shop. Be prepared to splash out here, as the luxurious suiting is all about channeling a style that borrows from the latest European catwalk trends.

The Caruso three-piece suit is a stunning showstopper – we love the Tom Ford high-stand collar shirt with the knitted tie for a point of difference.

Those keen on grey but searching a darker shade should consider the Harrolds French suit – a two-button number that looks elegant and can work well beyond the track. You can keep the look formal with a burgundy tie and light-grey shirt or add oomph by focusing on baby blues, which look great with charcoal, or even pale pinks for a softer finish.

For suiting in lighter shades and a variety of pinstripes, D’Urban suits do the trick and work equally well in the professional sector as they do for the track; we love the pinstripe for a classically refined look and other gentlemanly tones of grey for a daytime setting.

a h, I cannot believe it is that time of the year again. The dresses are being tried on and fussed over, the feathers and

baubles are being trimmed and the shoes are being sized up.

In my memory no event brings about this much brouhaha. I am, of course, referring to the spring racing carnival. Each year, just as birds and bees begin their dance to the call of spring, we Melburnians prepare for our very own ritual centred on racing.

The horses may be the real stars but are often ignored to a large extent, except by keen racing enthusiasts. While the horses are busy racing, what better excuse to get dressed to the nines and party?

The word party tends to confuse some. Year after year there are a few who confuse the races with rocking up to a mate’s 21st. There are proper do’s and don’ts for getting ready for the spring carnival.

This year I have taken the liberty of speaking to a few discerning industry leaders who know a thing or two about making anyone sparkle at the right event. These specialists are not the usual suspects who are quick to comment and recycle information for their 15 seconds of fame. “The only decent people I ever saw at the racecourse were horses,’’ the

Irish writer James Joyce once noted. When he made this remark, was Joyce at Flemington on Melbourne Cup day? Perhaps he’d arrived at the Oaks and seen one-too-many “fascinators’’ bob their way across a crowded marquee, or witnessed the laid-back style of the Tracksuit Pants Boys who meander around the betting ring at Caulfield every October?

There are many wonderful things about the spring racing carnival. Sadly, sophisticated dressing is not one. Occasionally there is a racegoer who gets it right; they arrive at the track and display a perfect balance between hair, shoes, dress or suit, colours and fabrics.

A good style guide is a book worth having, not only during race week but for general clothes purchasing and grooming advice throughout the year. Our best bets are Trinny Woodall and Susannah Constantine’s What Not To Wear books. Over the past decade these 1980s It Girls have morphed into one of Britain’s most successful fashion exports by making women feel OK about their bodies and advising them what to wear for all occasions.

Highly recommended: What You Wear Can Change Your Life, in which the authors’ tips are arranged in order of importance. The first chapter is on underwear (a decent bra can remove at least three kilograms from a woman’s appearance). They then move on to appropriate colours for skin tones, accessories, shoes and boots, hair

colour and make-up. There are photos of Trinny and Susannah dealing with their figure faults and in various stages of undress – a gutsy way to illustrate your point.

Another must-read is Ines de la Fressange’s Parisian Chic, a leather-bound soft cover that arrived in our shop a couple of months ago. We’ve noticed that those who buy it are usually elegant and well-dressed.

The book’s focus is the Parisian woman (i.e. Ines) and how she seemingly effortlessly puts a great look together. Ines lets us in on some traditions and secrets.

For the blokes, we recommend Hardy Amies’ ABC of Men’s Fashion is a small, slate-grey cloth-bound hardback that can act as the perfect guide when you next find yourself standing in a department store menswear area wondering: what do I do now?

Sir Edwin Hardy Amies, who died in 2003, was the Queen’s designer. His fashion house has gone on to become a backbone of British couture.

Amies himself was no slouch dresser, and this important book is an alphabetical rundown of what men should and should not wear. Under “B” you can read about which kind of belt to buy, the do’s and don’ts of baggy clothing, what kind of black tie to wear, and the “bewares’’ associated with buying a brown suit.

We wish Hardy Amies had written a similar guide for women. Under “F’’ for fascinator, I feel certain he’d have said: “Forget it.’’ \

If he took to fishing, trout would leap from the water to impale themselves on his naked hooks.

He is Bart Cummings and that sentence comes from a newspaper story written 20 years ago by Les Carlyon, after Bart’s mighty mare Let’s Elope monstered her rivals in the Melbourne Cup.

How privileged are we that our greatest horseman and our most revered storyteller are both still at the height of their respective games, doing what they’ve always done better than anyone else.

With their powers of observation, Bart and Les would have been uncanny fly fishermen, able to peer upstream and spot a lurking trout where others saw only reeds and snags.

Anyone concerned that Cummings or Carlyon might be about to hang out the “Gone fishing” shingle need not fret.

Bart will be tinkering obsessively with horses until his last breath and Les will go on tapping away, caressing words into phrases of beauty, as he did to craft his masterpieces Gallipoli and The Great War.

Our good fortune is that Cummings and Carlyon continue to draw immense satisfaction from their work, and their pleasure becomes ours.

This year they have collaborated to produce a superb book, The Master: a Personal Portrait of Bart Cummings, which will be launched in the week before the Melbourne Cup carnival.

Carlyon’s word pictures, as always, provide an engrossing insight into racing’s best-known but least-understood legend.

“Bart is the last of the old school, non-corporate characters,” Carlyon says.

“There’s a lovely ambiguity about him, which makes him all the more fascinating.

“Like his father before him, Bart’s creed is ‘don’t tell ’em nothin’. His humour just hides the shyness.”

Cummings got his training pedigree from his father, while Carlyon’s affection for horses goes back to a boyhood spent following around his grandfather, Ted Glasheen, who Les remembers was cranky with people, but kind to animals.

Ted made his living by “travelling” two stallions, a trotter and a Clydesdale, stopping off at farms and towns where his stallions covered local mares for a guinea a serve.

After their job was done, Ted drove off in his sulky, leading the two stallions along behind.

They travelled all the way from Bendigo to Swan Hill and back, and Les recalls Ted coming home one Christmas morning, accompanied by two tired but satisfied stallions.

Les sniffed his first hint of conspiracy at the Echuca trots. “When they went down the back, you couldn’t see horses for dust. The rumour was that all sorts of things went on down by the river.”

Grandfather Ted was a crook punter, but he was cunning. He often sneaked into the races by throwing a flash satin

rug over a quiet “breaker”, and leading it through the gate, fooling the attendants into thinking the horse was there to race.

Free entry gave Ted an extra 10 bob to bet with.When Ted died he didn’t leave much behind, except for

little bottles of Corio Scotch whisky that Les found under the pollard when he went to feed the chooks.

Les got interested in the written word through his uncle Eddie, Ted’s son, who was the Elmore “stringer” for the Bendigo Advertiser.

Eddie got paid a penny a line.He threw all his old papers into a huge bale. When he

wanted to send his bill to the newspaper, he and Les sifted through the bale, counting every line that Eddie had written.

The high point of the week for Les was going down to the Elmore bus station on Saturday nights. A throng of townsfolk would be waiting for the 9.30 arrival of The Herald and The Sporting Globe, packed with news hot off the presses.

The most significant influence on Carlyon’s literary development, besides uncle Eddie’s riveting coverage of the Heathcote Football League, was reading the stories of Henry Lawson.

“He’s underrated,” Carlyon says. “Banjo (Paterson) was the thoroughbred who voiced the romance of the bush, but Lawson was humping his bluey on the wallaby. “Lawson saw it as it really was, I think. There’s a wonderful humility about his writing.”

Another Carlyon favourite is American newspaperman and writer Damon Runyon, whose story All Horse Players Die Broke is a fitting epitaph for punters everywhere, from Saratoga to Sale.

“Even successful people don’t make a lot of money out of racing,” Les concedes.

“The odds are against you, but balanced by this is that huge factor called the romance of the turf.”

Carlyon is as enchanted by horses as he was when he was a small boy. Last Anzac Day he drifted away from a gathering at the War Memorial in Canberra to gaze at four horses being ridden by men wearing the uniform of the Australian Light Horse.

“I love looking at horses to see what I can see.“You see a great head like So You Think’s, and that’s a

reference point. Octagonal had a great head. “In the end, you’re looking for clues. A racehorse is a

puzzle, and you’re trying to work out that puzzle.“The puzzle is what makes them go, and I think the real

answer to that is they’re like humans – it’s on the inside.”Carlyon has often been captivated by the magic of the

New Zealand yearling sales, where the breeders and buyers are some of racing’s greatest dreamers and schemers.

He likens the sale ring to a car lot.“You’re looking at a shiny car. And you’re allowed to look

at everything – except you can’t open the bonnet.”He says racing is great fodder for storytellers – a source of

so many ripping yarns – because it is elemental.“After every race, there’s a bloke going home as miserable

as buggery. And there’s another bloke going home with a crayfish under his arm on the world’s biggest high. He’s just won a maiden at Donald.”

In all of Carlyon’s tales of the turf, there are two hard-bitten horsemen who stand out.

One is Bart Cummings. The other is the late George Hanlon, a trainer who once tried to explain a horse’s poor form by saying that horses are only human.

In 1947 Hanlon drove a baker’s cart, delivering bread to houses in the Adelaide suburb of Glenelg. On his delivery run was leading horse trainer Jim Cummings, Bart’s dad.

Young Bart often came home to find the baker’s horse tied up outside, sometimes for more than hour.

He’d see George in the yard, quizzing Jim about what the trainer was feeding his horses. Carlyon says the wily Hanlon was “doing a break ‘n’ enter job on Jim’s mind”.

Jim Cummings trained Comic Court to win the 1950 Melbourne Cup, and adhered to the old school philosophy – Bart says he gave George “nothin”.

Eventually, Hanlon turned in the baker’s cart and moved to Victoria, where he went on to train the winners of three Melbourne cups, was inducted into Australian racing’s hall of fame, and his eccentric behaviour regularly filled Carlyon’s columns.

It’s the enigmatic nature of characters such as Hanlon and Cummings that Carlyon says makes them so intriguing.

“I don’t think anyone knows Bart,” he says.

“Joe Agresta (Cummings’ long-time track rider) says that if anyone says they know Bart, then they don’t know Bart.

“He lives in a solitary world. He is such a strong character, he’s not influenced by other people; he never changes.”

Carlyon reasons that Bart’s mental strength is fundamental to his extraordinary success.

“There are three factors with Bart. First, he thinks about the horse’s mind, second he’s a terrific worker of horses and, third, he’s a great feeder.

“Once he gets them thinking right and eating right, he pours the work into them.

“When he gets them close to the cup, he works them really hard.

“He did it with Saintly before he won the cup, and he worked So You Think incredibly hard the day before last year’s cup.

“Bart always says: ‘If the horse can’t do the work, it can’t win the cup’.”

What Bart puts into his horse feed has over the years been the subject of more speculation and guesswork than the supposed list of magical herbs and spices in Colonel Sanders’ chooks.

George Hanlon was just one of many curious rivals who have tried to discover the mystical ingredients of a Cummings feed bin.

Carlyon says that when Bart fed Comic Court on the morning before he won the 1950 Melbourne Cup, Bart watched the horse lick his bin clean.

Bart promptly gave the horse two more dippers of feed.A few months ago, Cummings hosted Carlyon over a

weekend at the trainer’s retreat, Princes Farm, nestled at the foot of the Blue Mountains, west of Sydney.

Carlyon likens the property to a nobleman’s estate above the Somme in France.

Cummings’ Randwick complex, Leilani Lodge, is basic and busy, and the stables were once famously accused of having too many flies.

But in the natural world of his bush haven, Bart is able to re-energise for his gruelling week at the track.

The old wizard has always astounded his rivals with his astute long-term planning.

Part of his genius is having the foresight to cast his eye over a raw yearling, identify its attributes and limitations, and then project three or more years ahead to establish whether that colt or filly will have the stamina and constitution to handle the absurd expectations of Australia’s greatest race.

The master’s long-range thinking extends to his plant stock, too.This year on the farm he’s been busy planting trees – London planes, liquidambars, Chinese elms and Moreton Bay figs.

According to the lifespan of mere mortals, it is long odds that a man rising 84 years will be around to see those trees fulfil their potential. But, knowing the master’s staying power, you’d never bet against Bart going the distance.

Nor would you scoff at the suggestion, particularly coming from Les Carlyon, that if Bart took to fishing, trout would leap from the water to impale themselves on his naked hooks. \

i f there’s a wine that has a season, it has got to be sparkling. Beginning with the spring carnival and the start of warmer weather, it ends about the time we start making resolutions to never drink again on New Year’s Day.

We pop bottles of Champagne and sparkling throughout the year to celebrate milestones and birthdays, but there aren’t too many people I know that answer “bubbles!” to my favourite question, “What have you been drinking lately?”

The commitment to finishing the bottle on the day it’s opened can make it an unattractive option for having a glass while sitting at home watching a movie. In fact, it’s a great drink any time and its low alcohol (usually 11-12.5%) means that getting carried away and having an extra glass or two won’t leave you with a headache in the morning.

Sparkling wines go on quite a journey from the moment the grapes are picked to the time we pop the cork.

Karina Dambergs, maker of some of Australia’s finest fizz at Clover Hill in northern Tasmania’s Pipers River, takes us through that journey and, importantly, points out what to look for in a good sparkling wine.

“For me, what makes a good sparkling is the same with any wine: balance,” says Dambergs. “That’s where acidity, sweetness and fruit flavour come together in balance and complexity.”

The quality of grapes and the way they are initially handled are, according to Dambergs, the two keys to a good sparkling.

“For me, making sparkling wine is about good fruit,” she says.“We press the grapes softly – there’s no crushing – before fermenting

the juice in small parcels and using different fermentation techniques to add complexity to the finished wine.

“Once fermentation is finished, we transfer the wine to tank and leave

the wine on fine lees – dead and residual yeast left over from the fermentation process – for around six months to build the mid-palate and add creaminess. This step makes an amazing difference to the wine,” she says.

Champagne and sparkling wines are made by blending base wines of chardonnay, pinot noir and pinot meunier in varying proportions to create a drink with complexity and layers of aromas. These might be sourced from different vineyards, regions and, in the case of non-vintage sparkling, wines spanning several years to create a “house” style.

Sugar is added after the final blend has been created, triggering the secondary fermentation that gives it the fizz.

Dambergs says Australian wineries add more sugar than elsewhere in the wine world because “in Australia we like our sparkling fizzy”.

The wine is then left in the bottle with the lees from a few months to a decade before being disgorged and released for sale.

“The more time you leave the wine on lees, the more complexity and autolytic toasty, bready, honey characters you get in the wine,” she says.

If you find yourself at Flemington in the first week of November with a bookie’s ticket in one hand and a glass of bubbles in the other, don’t just smell the track’s famous roses – take a good sniff of the wine and think about the journey it travelled to get there. \

I tried quite a few sub-$20 bottles of sparkling and this was my pick of what was generally a rather sweet bunch of wines. No overt sweetness here, just vibrant lemon, peach, cherry, strawberries and slightly yeasty brioche flavours. It’s smooth, creamy and nicely balanced with linear acid that is chalky and grippy. There’s more lemon and brioche flavour on the finish to what is a ripping wine for the price. That it’s widely available makes it a good go-to wine this sparkling season. Food match \ Fish and chips

“twenty years ago I went to the Melbourne Cup and stood out in the public car park looking at the glamorous members in The Nursery and thought, ‘One day I’m going to be one of them’,”

says Eleanor Ravenarki.The keen foodie and passionate cook has catered for

her Derby day functions for 20-24 friends for eight years. “It has gone on a lot longer than I ever thought it would.” A qualified nutritionist and disability support worker, Eleanor, who lives in Burwood, says it is her “outlet”.

The three members’ reserve car-park sites are prime real estate during the cup carnival, and are only available to Victoria Racing committee members. Members must either cater for themselves, or use one of the VRC’s seven accredited caterers.

Standard sites in The Nursery and The Rails cost between $190 and $460, while super sites in The Nursery or The Domain are $950 to $1950, depending on which day they are purchased. Members can book more than one site and are able to purchase a limited number of pedestrian passes for their guests. Hopefuls must register for sites by the end of July to go in the draw for a random computer allocation.

“The objective of this is to ensure that all sites are allocated in the fairest possible manner so that all members are given an equal opportunity to secure a site,” says VRC spokeswoman Belinda Meyers.

So far, Eleanor has been lucky in the ballot. “Every year, I spend a number of weeks researching current food trends. I scour cookbooks and magazines to keep an eye on what’s fashionable in food. By doing the catering myself, I can keep my food and alcohol costs to about $75 per head and the whole day works out at about $400 a couple,” she says.

“The day before, a couple of my girlfriends and l have an afternoon of Champagne and sandwich making.

“On the day, we make our way to Flemington by 8am to set up our site with tent, chairs, etc. Every year we have always had an excellent site in The Nursery or on The Rails. The day usually concludes around 6pm, with an interesting ride home on public transport.

“Most of our guests have only been attending over the past four or five years, but the day is always marked well in advance on their calendars. It is an intimate day with 95,000-plus other people, but there are always memorable moments that contribute to strong friendships.”

Businessman Tim Carey is a Derby day regular too. He has been hosting car-park functions for a similar length of time. But after years of doing their own catering, his group of friends and family have hired Damn Fine Food to cater for its party of 60-70 people for the past few years.

“We prefer Derby day to cup day,” he says. “It’s the first day of the spring racing carnival and everyone is excited. Plus we have found it much easier to get a site each year.

“For the last couple of years we have managed to get a spot in The Rails and that’s fantastic as people can

actually see a horse for the day,” he says.Tim, who lives in Williamstown, has been a

VRC member for about 10 years and is an avid racegoer. Most of his friends are now VRC members, too, and their costs usually work out at about $120 per head for food, drink and a share

in the site fee. “Our friends will put the day in their diary 12 months in advance, even after last year’s

Derby day which was the wettest day on record.”

for Neale Gunning and Rashmi Baijnath, the racing carnival begins in March. The couple, who work in the finance industry, have hosted Super Saturday

functions five years, and this year’s Oaks will be their third. They ask friends to share the cost of site hire and pedestrian passes, which works out to about $100, but provide the food.

“I’m Indian, so the way I figure it is that I shouldn’t ask my friends to be paying for food,” says Rashmi. “It’s our way of returning all of the lunch and dinner invitations we receive throughout the year.”

About 15 friends visit their site at any one time. “We prepare our menu two to three weeks ahead and

then Neale and I spend the whole day cooking. We do a lot of things that can be prepared in bulk, and most things have an Indian theme. We make things like lamb mince pies with Indian spices, or chicken drumsticks, couscous salads and rice salads.”

Neale’s most important contributions are his pure-Aussie egg-and-bacon pies – “with no Indian spices”. He’s also been a VRC member for about seven years and is usually the brainstrust when it comes to placing bets. “If we have a few people interested, I will set up a trifecta club and each guest will pick a horse,” he says.

amid the excitement and anticipation surrounding the spring racing carnival, it is not without a sense of nostalgia that each year we celebrate the Melbourne Cup.

Synonymous with the race are the legendary personalities, fashions, winners and the losers that continue to make horse-racing history and the spring racing carnival more than just another sporting event.

One of these legends, Bruce Postle, has been photographing the race for more than 50 years, immortalising great moments such as Tommy Woodcock and his champion horse Reckless within a single frame.

An adventurous young photographer who started at The Courier-Mail in 1959 – following in his father’s footsteps – and moved onto The Age in 1969, Postle has worn out dozens of cameras shooting everything from archbishops and prime ministers to our greatest horse trainers.

Postle has compiled his 50 years of press photography into a book, Bruce Postle: The Image Maker. In it you will find the faces behind the race that stops the nation.

E very owner probably adds a little something to their house, but surely few make as great an impression as Sonia Skipper

did to Piper Cottage. Sonia’s parents were among the founding members

of Montsalvat, the artists’ community that lives long in Eltham memory; Sonia herself built some renown as a painter, writer and sculptor.

It is her sculpture that is most obvious at Piper Cottage. The first evidence of Sonia’s handiwork are the little faces carved into the wood under the ceiling. Closer inspection reveals that the house was constructed using the post-and-beam method, which makes for sturdy, warm surrounds.

More character is added by those classic Eltham mudbricks, in terms of the stucco effect they produce when painted and the cosiness they impart to a house. Indeed, the house is quiet and serene, a cream-and-green exterior changing to an interior that combines stark whites with all the shades of wood.

Recycled materials are in abundance. The polished floors are made of recycled bricks, while one door has an Edwardian frame. The cedar stairs were appropriated from a pub, and the Baltic pine floorboards upstairs are also in their second life.

The first floor is delightful. The corridor and one bedroom are given character by a sloping roof, but it is the other bedroom at the end of the corridor that may well be the best in the house. It’s positioned in such a way that the ceiling slopes on either side, with a central window providing light. A low bookcase runs along one wall, leading to what is actually the chimney, extending up from the open fireplace downstairs. If the fire is lit, the warmth is channelled up to this bedroom and the little study just next to it, meaning you don’t have to be downstairs to enjoy the benefits.

There’s another study downstairs, along with the main bedroom (featuring older, darker timber) and a bookcase that Sonia Skipper built. Her son was involved in the rebagging and renovation, which helps explain why it’s all sympathetic and tasteful.

The vendor delights in the fact that each window offers a different view, as variations in elevation and perspective work their magic. Her favourite, however, is the kitchen window; while she cooks, she sometimes sees up to 20 rosellas swoop in for food and some socialisation. There are kookaburras nesting nearby, a tawny frogmouth that stops by and, under the peaceful gaze of the vendor’s dog, ducks and ducklings often frequent the solar-heated pool. It’s probably a good thing they don’t know how to turn on the spa, or they would never leave.

Outside, more of Sonia Skipper’s carvings are evident in the garden, and a large landscape of hers hangs on a wall. The house also has a cottage, where Sonia used to work; it’s been converted into a private residence, with

pretty stained glass in the walls and its own kitchen, bathroom and a cellar – perfect for storing wine, which stays cool year round.

Eltham’s Main Road is just a short distance away, but a combination of elevation and foliage give this house serenity and privacy, while its storied past, tastefully updated, gives it character in abundance. \

buying a house is a significant emotional

experience – and for many buyers there’s extra emotional stress when we start dealing

with agents and negotiating. Selling agents are masters at managing

buyer emotions. They’re quite capable of bending the truth when it’s in the interests of their client – the seller. As a buyer, though, being at the other end of that manipulation can be incredibly unsettling.

When it happens – or rather, when we perceive it is happening – we feel a charge of emotion. We feel we are losing balance and then self interest and ego come into play. Emotion builds up inside us and we change chemically. Our decision-making processes change – and not necessarily to our benefit.

Having the truth bent undermines our trust in the salesperson and in the whole buying process. “I’m not dealing with that salesperson,” we think. “I’m not buying my home through an auction because it’s unfair.”

That’s what you feel. Misdirected emotion can cause extreme

stress, leading to poor decisions, which can result in missing what should have been bought, paying way too much or buying the wrong house just to get rid of that stress.

As buyer advocates, the technique we use to help buyers maintain their equilibrium while knee-deep in difficult negotiations is to ask themselves how they are responding to the process.

Only by mastering your responses can you stay balanced and have the best chance of making the right decisions.

Ask yourself: Is it the action of the agent or your reaction to it that is causing you angst? The way you react to an agent’s manipulations may well be what is creating the emotion, increasing your stress and potentially lessening your outcome.

If you are feeling outraged by what you believe are an agent’s tactics, consider whether you as a buyer, haggler or negotiator are not also capable of the same

when it suits your own interests. Is your role as a buyer really more noble than the role of a selling agent?

For instance, if a selling agent asks me whether my client has any more money to give in a deal, I don’t say yes if I feel the deal can be done there and then at that price. Is me telling the agent “no that’s the absolute limit” a mis-truth, acceptable salesman’s puffery or a straight-out lie?

From the other side, if I as a buyer agent believed I could buy a house at $2 million but instead tell the agent my client could spend $2.08 million or $2.34 million, have I committed a greater sin?

Should you even presume that your relationship with a selling agent will be based on trust? After all, the deeper the relationship, the greater the emotional effect of that lack of trust. Why would you try to form a trusting relationship with the specific people whose allegiance is completely to their client and whose role is to create conflict among buyers and to minimise buyers’ interests where that benefits their client, the seller? (That role has legitimacy, according to the Estate Agents Act and Common Law.)

Why not form trusting relationships with people whose role is to minimise your conflict and to maximise your interests?

Selling agents are not bad people. The techniques they use aim to maximise their

clients’ interests; most of their tactics are those that you might use yourself, if you were skilled enough to do so.

Feeling aggrieved about being manipulated or feeling that an agent has been less-than-truthful rarely helps you. All it does is make you emotional, upsets your chemical balance and changes your decision-making processes, generally for the worse.

You can minimise the effect and the emotional roller-coaster responses by engaging professional buyer representation, acquiring a deeper understanding of your main goals, and using good questioning technique when you hit the bumps along the way. All of this should lead to a better perspective of what it’s all about – buying the right house, not “getting the agent”. \
