It was 1am on a Sunday morning as our Queen Street West pub crawl was slowly

winding up. The final agenda was to simply quash the hunger prompted by the drinks. I was outnumbered in voting where to pick up a quick bite, so naturally we headed to the restaurant symbolically clad with golden arches and endorsed by that clown. Being a vegetarian, I knew I would have to supress my hunger until I got home. But watching my friends devour a series of cheaply processed hamburgers, I felt a sense of dignity in my stance. I was comfortable in my vegetarianism and how it encouraged me to look after my health and ethical opinions. But I also felt as if I were part of a minority.And I think society plays a big part in this: Meat products are readily available at every corner for next to nothing, 24 hours per day. Maintaining a vegetarian diet, whatever its form, is not always an easy task and we ought to admire ourselves for it. Our intentions regarding our surroundings and our health feel like they’re correct thing to do, and we allows them become a major part of our personalities. That is why we have launched this magazine to accompany and address your vegetarianism, whatever its form or motivation. We recognised that while vegetarianism may be a dietary choice on the surface, it quickly branches out into a lifestyle – affecting how we shop and consume, how we interact with our environment and how we advocate the rights of animals. Herbivore wants to provide you, the reader, with more than just an encyclopaedia of recipes. The food we eat is really only the tip of the iceberg. By picking up this first issue we hope that you absorb yourself into the advantageous, ethical, fashionable and delicious aspects a vegetarian lifestyle carries with it, all provided in an intelligently written, eco-friendly package. Benjamin Franklin was thinking along similar lines when he said, “My refusing to eat flesh occasioned an inconveniency, and I was frequently chided for my singularity, but, with this lighter repast, I made the greater progress, for greater clearness of head and quicker comprehension.”

As plans for HERBIVORE’s launch issue began to take shape, I was surprised

to discover that none of the magazine’s five founding editors had sustained a vegetarian diet at any point in their lives—except for me. Throughout high school, I followed a pescetarian diet and wouldn’t eat anything with legs. I often found myself struggling to make vegetarian meals in a household full of meat-eaters—a common problem, but my misinformed, parent-dependent self just couldn’t hack it. I filled up on all the wrong foods and felt weighed down, physically and mentally. Despite having moved away from my meat-eating home after high school, I decided to start eating chicken again. Maybe I was sick of the unidentifiable, unhealthy and unsatisfying vegetarian options available in my residence at Ryerson—Treasure Trail Stew, anyone?—or maybe it just seemed like the right time for a change. The only way to describe my transition back into the meat-eating world is to say I felt better in every possible way. Eating chicken (and bacon, on special occasions) made me feel complete again. I could stay awake through an entire day of classes. I could do an aerobics class without feeling like my muscles were deteriorating. I felt good. As a team, we (the founders of HERBIVORE) decided to quit meat cold-turkey for the month leading up to our launch — no pun intended. “No problem,” I thought, “I was a vegetarian for four years; starting again will be a piece of cake.” But cake it was not. I slipped up more than once, and I even (accidentally) bought a box of frozen chicken strips from the grocery store. Transitioning from meat-eater to vegetarian to meat-eater and back to vegetarian has been a challenge, to say the least, but this time I know I’m doing it right. I’ve found comfort in knowing that I am protecting my body and my conscience, and it helps to remember that there are others right here with me. With the support of my fellow editors, I have found success — and protein without feet. They say it takes a village to raise a child. Well, the same may be true for vegetarians. My fellow editors and I hope that HERBIVORE can be your village, your safe place. We will be here for you, with you, throughout your ongoing journey — whichever one you may choose.

Do you remember the first time you told someone you were a vegetarian? Do you

remember the look of derision your meat-eating counterparts gave you? Or maybe you’re an omnivore — do you remember the first time you were looked down upon by a herbivore? Vegetarianism doesn’t have to intimidating, exclusive or isolating. It can be a lifestyle choice we all integrate in our daily routines. We could all stand to be a little more environmentally friendly, or eat a little better, or buy a little more consciously. That’s where we come in. HERBIVORE is about more than just what you eat; it’s about how you live. Our magazine is about building bridges and not about maintaining wedges: we can all learn something from each other. In this issue, we tackle the tricky topic of travel, and how to ask for vegetarian alternatives no matter where you are. We also have our very own Colleen Kirley debating the use of vintage fur with designer Chie Imai, and Rudy Lee looks into the cushy lives of cows raised for Wagyu beef. (Beer, massages and classical music? Sounds like one of my better weekends.) A professor of mine used to say that “good magazines are like trusted friends,” and that’s what we at HERBIVORE want to be for you: a companion during whatever stage of life you’re in. Vegetarianism can be a tricky path to navigate, and there are other lifestyle changes that come with it, but remember that we’re your friends, and we’re here to help you through it. Whether you’re changing your diet, your home décor, your ethics or your shopping habits, HERIVORE can offer a fresh perspective. And just like you would with an old friend, keep in touch, tell us how everything is going, ask us for help and teach us new things while we teach you something new too. Have us over for tea or lunch, cook with us — introduce us to your other friends! (We’re single.) We at HERBIVORE hope you love what you find inside this and future issues, because we loved building it for you. I think this is the beginning of a beautiful relationship.

I never really understood vegetarianism. Perhaps its because I was raised in a

household—as so many of us were—that believed meat is still an essential part of every meal; or perhaps its because of the frivolous furs and luxurious leathers that I found in the magazines I pore over. All I know is that I would give my skin for a python bag and I could always go for a nice rare steak. A good friend of mine does not share my views. She is a vegan by choice and is as attached to an animal’s soul, as she puts it, as I am to its hide. I knew her back when we could peruse the furs at Holt Renfrew and then go for a burger. Her trajectory towards vegetarianism was not been an easy one. Such is the case for so many present or aspiring vegetarians, who decide to stop eating meat for ethical reasons and are oblivious to its implications. Where does a vegetarian get protein? How can a vegan be a courteous houseguest? Can someone who doesn’t eat meat wear a skin? Becoming a vegetarian changes almost every single, solitary aspect of how you live and the way you think. At HERBIVORE, we may not all be vegetarian, but we all acknowledge the need for guidance. And so one day, five omnivorous individuals collectively decided to give you—that’s right, you—the information you never knew you had: facts about your food, recipes to tingle your taste buds, advice on how to interact, the inside scoop on famous vegetarians. What started out as a mere thought, ironically, upon a cowhide rug has now materialized into a magazine with cow on its cover. Every issue of HERBIVORE delivers the freshest, most exciting musings from the world of vegetaria. We hope to delight and direct you season after season as you thrive in a world consumed by carnivorous complications. Go forth and prosper, and know that HERBIVORE will always be by your side. Your friends and foes alike will be green as the spinach you eat, enviably so. Vegetarianism has never been more desirable, until now.

I’ve always had a great love of animals. Unfortunately for them, I also had a great

love of eating them. Growing up in Niagara Falls, Ontario, I was always far enough from a farm that I never had to think about where anything on my plate was coming from. That came to an end this year, when the omnivorous editors of HERBIVORE – myself included – were asked to go on a month-long meat cleanse and see how we felt afterwards. I was apprehensive at the beginning, but I decided to take the challenge anyway. I started feeling the extremity of the situation the first weekend when I was out for dinner with some friends. I stared at a menu of a Toronto restaurant (that shall go unnamed) and couldn’t find a single vegetarian option. “A caeser salad, I guess,” I said – unimpressed and aggravated that I couldn’t order the meat lasagna. “And make sure there’s no chicken in it,” I added. It wasn’t until after the meal, I realized that Caesar dressing is made with anchovy paste. This vegetarian thing isn’t the easiest. In the first two weeks, I found myself eating greasy french fries and carb-filled pasta in an easy attempt to fill my stomach. But as the weeks went on, I found myself eating bigger, fresher meals and feeling really great afterwards. I started getting creative when I went out to eat. There are never a ton of vegetarian options on menus, so I often have to try something that I’ve never eaten before. It’s really opening me up to some amazing dishes that I would have otherwise glanced over. This issue of HERBIVORE is going to be great for all vegetarians, whether you’re just starting out (like me) or have been at it for a while. Check out the restaurant guide if you’re looking for a quick bite to eat, or the dining section for great tips on throwing a vegetarian dinner party that everyone will be talking about for months. Oh, and if you’re wondering, I’m still vegetarian and the challenge ended weeks ago…
