The ESL Globe Summer 2014 2

Here we are again, smiling for the group newsletter picture in front of our house. It’s a fine old house.

We are, and we do, many things here. We represent seven countries. We are ambassadors of sorts. We are kind to each other, and we work

hard together to better our English skills and better ourselves as citizens of the world. We are all part of a sturdy and colorful fabric

that covers us in a great life experience.

The front cover of this issue is the work of Mr. SAFWAN KHALIFEH. Thank you Safwan. It is a beautiful piece.

Let’s try some international recipes!

TOM KHA GAI ( ) One of the most famous Thai soups. Flavors of coconut milk, chicken, and lemongrass with mushrooms

Directions: 1. First, concentrate the stock. Put the chicken stock in a wide and

shallow saucepan, bring it to a boil, and reduce it over medium-high heat until the liquid measures half its original volume.

2. Halve (or quarter) the straw mushrooms into bite-sized pieces; set aside.

3. Cut the lemongrass stalk into 1-inch pieces and smash them with the side of a large Chinese cleaver, a pestle, or any heavy object lying around in the house; set aside.

4. Do to the chilies what you just did to the lemongrass; set aside. 5. Remove the stems and the tough veins that run through the middle

from the kaffir lime leaves, and tear them up into small pieces. You can also bruise them a little. Set aside.

6. Juice 2 limes; set aside. (You may need more; you may not. It's better to have more than you need than not enough.)

7. Put the coconut milk into a 4-quart pot, followed by concentrated chicken stock, kaffir lime leaves, lemongrass pieces, and galangal slices.

8. Bring the mixture slowly to between 160° and 180°F (slightly below a simmer), allowing the herbs to infuse the liquid for about a minute.

9. Keeping the temperature steady, add the mushrooms and the chicken to the liquid; adjust the heat to maintain the temperature. The liquid should never at any point come to a rapid boil. Don’t worry; at 160°-180°F, your chicken will be thoroughly cooked.

10. Stir gently to ensure that the chicken is evenly cooked. (If you want more liquid, add more plain water or unconcentrated broth.)

11. Once the chicken is cooked through, throw in the smashed chilies and remove the pot from heat immediately.

12. Add the juice of 2 limes and the fish sauce to the pot, stir, and taste. 13. Add more lime juice and fish sauce, if necessary. The soup should be

predominantly sour, followed by salty. The sweetness comes from natural sugar in the coconut milk.

14. Stir in the cilantro leaves and serve your tom kha gai with steamed jasmine rice as an entree.

Ingredients: • 3 cups (24 fluid ounces) sodium-free

chicken stock • 1 lb boneless, skinless chicken breasts,

cut into bite size pieces across the grain

• ½ lb (8ounces) fresh or canned straw mushrooms (drained)

• One stalk lemongrass • 5-6 fresh bird's eye chilies • (more or less depending on your heat

preference) • 2-inch piece of fresh galangal, sliced

thinly crosswise • 4-5 fresh kaffir lime leaves • 4-5 limes • ¼ cup fish sauce (but have more ready) • ½ cup fresh cilantro leaves • 1½ cups (12 fluid ounces) full-fat

coconut milk

Every four years soccer teams from different countries of the world gather to compete for the World Cup. The competition was created by Frenchman Jules Rimet in 1928 after taking charge of the most important institution in world football: FIFA (Federation International Football Association). The first edition of the World Cup was held in Uruguay in 1930. It was attended by only 13 teams that were invited by FIFA without dispute playoffs, as happens now. The Uruguayan team was crowned champion and could stay for four years with the Jules Rimet trophy. In the following two crowns (1934 and 1938), Italy won the title. However, between the years 1942 and 1946, the competition was suspended due to the outbreak of the Second World War. In 1950, Brazil was chosen to host the World Cup. The Brazilians were enthusiastic and confident about the title. With a great team, Brazil reached the final against Uruguay. The final, held in the newly built Maracana (Rio de Janeiro) was attended by approximately 200,000 spectators. A simple tie would give the title to Brazil, but the Uruguayans achieved what seemed impossible by beating Brazil 2-1 and becoming champions. The Maracanã was silent and crying took over the country of football. Brazil lifted the trophy for the first time in 1958, which was played in Sweden. This year, appearing to the world for the first time, playing for the Brazilian team, was the man who would be considered the best football player of all time: Edson Arantes do Nascimento – Pelé. Four years after the conquest in Sweden, Brazil once again the tasted the title. In 1962, in Chile, the Brazilian team won the cup for the second time. In 1970, in Mexico, with a team of great players (Pele, Penny, Rivelino, Carlos Alberto Torres and others), Brazil became the three time world champion by defeating Italy 4-1. Having become triple champions, Brazil won the right to remain in possession of the final Jules Rimet trophy. After winning in 1970, Brazil entered a period of starvation for 24 years without a title. The conquest recurred in 1994, at the World Cup in the United States. Led by striker Romario, our national team beat Italy in a thrilling penalty shootout. Four years later, Brazil reached the final again, but lost the title to the host country: France. In the 2002 World Cup in Japan / South Korea, led by top scorer Ronaldo, Brazil won their fifth championship by defeating the German team 2-0. In 2006, the World Cup was held in Germany. The competition returned to the lawns of Europe. The event was hotly contested and full of emotions, as ever. Italy was crowned champion after defeating France in the final by a score of 5-3 on penalties. In normal time, the game ended tied at 1-1. In 2010, for the first time in history, the World Cup was held on the African continent. South Africa hosted the event which took place between June 11 and July 11, 2010. Spain became, for the first time in history, world champion. This year, the World Cup was held in Brazil. The event returned to Brazil after 64 years. It was in 1950 when it last occurred there – in my home country!

The World Cup came around again his year, much to the delight of our students in particular. We all had our favorites – our hopefuls – our adversaries. The excitement is contagious, certainly. Our very own Jennifer Lopes, donning the mantle of a proud Brazilian hostess, wrote a piece on the Copa do Mondo and included some nifty trivia as well. Enjoy…

Songkran festival is celebrated in Thailand as the traditional New Year Day from 13 to 15 April every year. "Songkran" in Thai means to pass or to move into because it occurred on the day that the sun, the moon and the other planets change position in the Zodiac. Thai people believe that water can purify bad luck from the past year and bless you with fortune and happiness for the new year. The festival originated by pouring water over Buddha statues for cleansing and trickling water to family members for blessing. Songkran has developed into a big water fight that attracts foreigners to experience it. It's lucky that Songkran festival happens in Thailand's hottest month!

Things to know about Songkran festival: • You will get wet. Don't plan to be dry during daytimes. • Keep a good attitude, don't get mad and have fun! • Khao San Road is the popular place for foreigner backpackers to get a cheap hotel and buy a big water

gun or bucket to splash water. • If you are a gay man, go to Silom Road. You will find plenty of gay men to shoot you with water guns.

How many girls you find in this picture? It’s Songkran on Silom Road!

Ramadan and Eid by Osama

The ESL Globe Summer 2014

Ramadan is the most important month for Muslims. It is the ninth month of the Islamic calendar. During this time, Muslims do many things to be close with Allah. Muslims fast all month, and start fasting from sunrise to sunset. After that you can eat and drink. During Ramadan Muslims ask for forgiveness for past sins and do more prayer than usual. Muslims read al-Quran more than before because this is the month Quran started. When the Muslims start eating they start with dates because they are very helpful for the stomach. Before they eat they prepare themselves by eating and drinking the meal called sahoor. How can we know that Ramadan has started? We can know because the new moon indicates the beginning of the new month. That moon is called Alhilal. When Muslims start eating at sunset, that meal is called breakfast. In addition to fasting, Muslims are encouraged to read al-Quran. Some Muslims perform the recitation of the entire Quran by means of special prayers called tarawih which are held in the mosques every night al-qader. In this night Muslims do more prayer and read al-Quran because this night is very holy. Finally, we know that Ramadan is the best month for Muslims to be close with their god and to ask forgiveness.

Eid is a holiday which is celebrated at the end of Ramadan. Eid lasts for three days. The first day is the most important day because we wear new clothes and we go to the mosque to pray the Eid prayer. After that, we go back home to celebrate together. Then the old people give the children money to be happy and buy fireworks. After that we welcome guests, and we talk for a long time. The second day, we visit all family friends and we drink coffee or tea and we eat with them. The third day ,we hang out and we eat outside the home, and sometimes we go camping in the desert. These three days of Eid are beautiful days when all the family celebrates the Eid holiday together .

As you know, Cancun is one of the best place to take a rest for people who are tired of their life. Cancun had been a small village in Yukatan peninsula of Mexico before it was developed for a vacation spot by Mexico government. But now, in Cancun, a lot of hotels and resorts are operated for tourists from all over the world. Tourists who visit Cancun can enjoy the one of the great beaches, meet kind Mexican people, and even see amazingly dense jungle too. But I especially recommend you drop by an island, the "Isla Mujeres". "Isla Mujeres" is a place far from the main area of Cancun and about 30 minutes by ferry. "Isla Mujeres" means 'Island of Woman' in Spanish. "Isla Mujeres" was named by the Spanish who arrived on this island first. Every 20 minutes, a big yellow ferry helps your journey start and the ticket price is very reasonable. After taking off, you can easily find many golf cart rental shops at the pier. A golf cart is a very enjoyable and helpful vehicle in this small island. By driving a golf cart, you can travel all around the island. Furthermore, you don't need a license and experience for driving it. You will be fine if you can find only two kinds of pedal, 'stop' and 'go'. The starting point, a pier, is very close to downtown and one of the greatest beaches which ranked 20th in 'the most beautiful beaches in the world'. You can have an incredible time to swimming, tanning on the beach, or buying very special souvenirs of Mexico, especially the Mayan civilization. While you drive along the beach, you have a gorgeous view of the Caribbean Sea. At this time, you should stop driving and take your time in Isla Mujures. It will be a brilliant memory in your life. Keep riding again. You can also see the natural life of Mexico such as simple and beautiful Mexican traditional churches, cemeteries, and the area of cactus. However, you have to be careful on this island, because everywhere an iguana can run away in front of your golf cart! Anyway, if you have enough time to travel, I suggest you enjoy the tour in a number of spots on the island. By joining the tour you can get experiences such as swimming with dolphins, riding a zip-line, and releasing little turtles. Looking around the island takes about one to two hours. But if you try to have another tour or take your own time, the journey to Isla Mujeres will be longer. But remember this! The last ferry will depart at 5:30pm!

Yoga is an ancient, proven method to increase the health of the mind and body. It originates in India and in Sanskrit means “unity” or “harmony“. It is effective for strength training and increased flexibility in the entire body. At the same time, it brings a deep sense of relaxation and inner peace.

Yoga involves achieving and holding various postures and positions. These postures and positions are called Asanas. By performing the Asanas in order, you will receive the maximum benefit from the training All exercises in yoga are done while paying close attention to one’s breathing. The breathing exercises are referred to as Pranayama. Meditation can also be a part of yoga programs. The only requirements for yoga are comfortable clothes, a few minutes of your time, and a willingness to improve your overall well-being.

It allows you to use your valuable time very efficiently and individualistically. Once learned, the yoga program can be divided into even shorter segments. This allows you to incorporate yoga in your daily routine. Yoga is a good fit for you if you don’t have a lot of free time, but you want to improve your health state on your own. You can accomplish this wherever and whenever you want: at home, at work, on business trips, etc.

Dream Jobs

In the next 10 years I want to be a famous calligraphy

artist. For achieving my dream, there will be 3 steps. First, I will take

some classes and study English calligraphy from John Stevens. (He is

a famous calligraphy artist. He lives in North Carolina, he teaches

English calligraphy.) I can write Korean and Chinese letters, but I’m

not familiar with English letters. Second, I will enter various design

contests of calligraphy. I hope to win lots of prizes. I want to be

recognized as the best in the calligraphy artist field. I always imagine

that I can easily see my calligraphy works everywhere. For example,

wine labels, naming the book, or name of the products. Third, I will

create many works. That will be the basis of my teaching materials

and my exhibits. Finally, I will open my own shop. The shop can be

used in various ways. It can be used as a calligraphy class room, my

workroom, and to display my works. I am waiting patiently for the

day to come when I can live my dream.

My dream was to become a famous artist. I have been drawing since I was young. I spent all my time doing my favorite hobby. My hobby has evolved with continuous training. I passed several stages in the mastery of the art of painting. At first I used simple materials such as pencils, watercolors, and white paper, and I drew easy sketches. Shortly afterwards I began to experiment with new materials and new kind of colors. At this stage I began to evolve in the selection of multiple subjects in my paintings, such as landscapes, and still life. After that I began academic study when I entered the Institute of Fine Arts in Damascus. At this stage I deepened in the study of arts, and I established my own art gallery in Damascus, and people began to recognize my art. This stage was the most important when people became interested in my work. They bought my paintings, and I moved from dream to reality.

'Hanbok' is Korean traditional clothing. It is very colorful and diverse. There are many kinds of Hanbok - for weddings, for king and queen, for entertainer, for kids... etc. Women’s hanbok is composed of a skirt and jacket and men’s hanbok is composed of pants and jacket. These jackets are called jeogori. The bottom of the skirt is spread over so it’s comfortable. The material is different each season. In summer is hemp or fabric for ventilation and absorbing sweat. In winter, more a cotton-filled winter coat. Usually women’s clothes are more colorful and beautiful. Nowdays most of Koreans wear hanbok in holiday such as Thanks Giving Day and New Year but some designers design modern hanboks. Many foreigners can experience trying hanbok. On Saturday, I booked a trip to Murfreesboro for Sunday evening at 6:00. When I went to the headquarters to go to Murfreesboro, I spoke with the employee and told her that I booked a ticket through the Internet. She told me to give her the reservation number, but I did not have the reservation number. After that, I was not able to take the bus to Murfreesboro and had to head back to my dorm. On Monday, my roommate and I went to the bus station in the morning at 10:00 because I had trouble communicating with the people who work there. I had gone to the bus station the day before and was not able to ride the bus because I could not communicate so my roommate helped me by communicating with the people there because I had trouble speaking English. After that, my roommate helped me to get a ticket for the bus to Murfreesboro and so I was able to make the trip to see my friend. When I arrived in Murfreesboro I was met by my friend and I was very happy. I went to his home because I was tired and I took a nap. After that, we watched the World Cup and it was a powerful match. Then, we ate breakfast and drank Arabic coffee at sunset because we were fasting, and then we watched some TV and movies. Next day we went downtown to watch the Fourth of July fireworks and we then ate some food with our friends. Then, we went to the airport because some of our friends have a trip to Saudi Arabia. I wished to go with them because I miss my family and my friends too. Finally, we headed back home to sleep

My Summer vacation was a a good one. First, I visited Kiyeong’s house near the Hamilton Mall on Tuesday. Her house is neat, sweet, and sunny. She made me stir-fried pork with oyster sauce, kimchi stew, and japchae (stir-fried glass noodles and vegetables). I wanted to eat Korean food, so I ate them well. After we ate lunch, we had coffee, watermelon, and some cookies for dessert. And we went shopping at the Target for over two hours. I had so much fun. Next, I enjoyed the outdoor music concert, parades, and fireworks on the evening before Independence Day. I went downtown together with other international students of First Friends and American students. When I arrived there, I was very surprised and amazed because Coolidge Park was crowded with so many people. So I took pictures with Jessica and Amy while I wandered from place to place. It was a real nice sunny and breezy day. While we were going back to our place the music started. Before the concert started in earnest, the park resounded with the national anthem of the United States magnificently. At that moment, all the people who sat and walked stood still and sang the song. I looked at them and I was impressed. There were a lot of people, but everything certainly seemed to stop and so did I. I listened to music and ate a snack. Suddenly, Star Wars costume players showed up near the stage, so people flocked to them. I also took my picture with them. After the concert, the fireworks were nothing short of spectacular. It was very interesting. Finally, I went hiking to Lookout Mountain on Friday. The day before I met Amy, Emily, and John there and Amy’s American friends. The weather was really great, so I felt light on my feet. American people were so fast that I dropped little by little behind, but I didn’t give up and arrived at the destination. The scenery is very green and beautiful beyond all description. I just stood there drinking in the scenery. I was so tired but I missed it when I came down the mountain. I did many things and spent a happy time. I will never forget my Summer vacation.

The first week of July, I had a summer break in the ESL program at UTC. The Fourth of July was on Friday, so my husband and I left home on Thursday afternoon. On this trip, our final destination was New Orleans, Louisiana. But we couldn’t drive it all in one time, so we decided on Mobile, Alabama as the middle destination. After 3 hours driving, we got caught up in traffic. We wanted to change the route. We were going off the highway. We waited for the right signal because there was a ‘NO TURN ON RED’ s sign. At that time, I heard a loud clonking noise - I just zoned out for a moment. Behind me the c car hit my car! Police came and had an investigation for what was going on. The car’s driver told u us, he didn’t see the front of the car, and he bumped into it. As a result, my headrest broken off, t the rear bumper was completely out of whack. Fortunately, we didn’t have any injuries and my c car can drive. So we drove the broken car, went to Montgomery, and ate dinner at a Korean restaurant. Then we arrived in Mobile, Alabama. The first day was tough. On the Fourth of July’s morning, we arrived in Biloxi, Mississippi. We looked around and saw a casino and a beach. Then we finally arrived in New Orleans. The French Quarter was our first visiting place. The French Quarter is the oldest neighborhood in the city of New Orleans. There were a lot of good restaurants and various stores. We searched for famous restaurants, ate raw Oyster and Crawfish Etouffee. It was very fresh and delicious! We parked a car and walked around the streets to see lots of things. New Orleans was music city. Music band played all over the streets. It was a new experience. However, one thing was uncomfortable for me in there. That was the smell! The French Quarter streets were filled with no identity smell. It was not good! I think that there were many horse carriages; the smell was based on horses. I don’t want to consider that was peoples. Except for the smell, the French Quarter was an interesting area. On Saturday, the fifth of July, we went to a very famous coffee shop ‘Café De Monde’. We ate some donuts and a cup of coffee. After that, we passed by a store that was a calligraphy supplies shop. I love these things! We stayed quite a while in there. I bought a book, several nibs, and inks. I was so happy with those supplies. We spent a lot of time eating and sightseeing. At night, there were fireworks at the riverside to celebrate Independence Day. We saw the beautiful fireworks. That was certainly a sight for sore eyes. It was a very great memory in my life. Although we got into a car accident, I am grateful for we were not badly hurt. This was first trip since marrying. I will never forget that trip as long as I live.

Our vacation coincided with the occurrence of the holy month for Muslims to pray, fast and do good deeds. So I had to be prepared for this month. I went to the mall and bought some food items including vegetables, groceries and fruit. The first day of the vacation, I stayed at home and tried cooking some of the traditional, delicious Arabic food like Tabula, Kufta, and chicken soup. I invited all my friends and enjoyed having breakfast together after a long day abstaining from eating any food or drink. After breakfast, we had a cold lemonade drink. The second day I borrowed some books from the library and went to read in the shade of a tree. My friend accompanied me to read and enjoy the natural feature of the area. It was nice to be with my friend and to read in the open air. We had much fun and decided to go for a walk to spend time before time for breakfast. One of my friends invited me the following day to have a breakfast with him and his family. His wife is a good cook. She made some of the delicious Lebanese food like Kuba and Homs, and made Pizza and Barbecue. We enjoyed helping my friend and his wife in barbecuing hot dogs, lamb, steak and chicken. After the meal we went to the mosque to do the act of worshiping and praying. In one sunny day, my friend and I decided to practice some sort of physical exercise to regain strength. We trained and played games. We all enjoyed playing and felt energetic and happy. Then we decided to go for breakfast so we went to a nearby restaurant and enjoyed eating a meal followed by some of the American sweets. I spent the last three days of the vacation at home. I read some articles on arts. I painted some pictures and started preparing for school. I also organize the book shelves and cleaned the houses. It was a nice vacation. I had some rest, enjoyed the company of my friends who always made me feel at home and made the days of the vacation interesting and happy.

Homographs are words of like spelling but with more than one meaning. A homograph that is also pronounced differently is a heteronym.

1) The bandage was wound around the wound. 2) The farm was used to produce produce. 3) The dump was so full that it had to refuse more refuse. 4) We must polish the Polish furniture.. 5) He could lead if he would get the lead out. 6) The soldier decided to desert his dessert in the desert.. 7) Since there is no time like the present, he thought it was time to present the present. 8) A bass was painted on the head of the bass drum. 9) When shot at, the dove dove into the bushes. 10) I did not object to the object. 11) The insurance was invalid for the invalid. 12) There was a row among the oarsmen about how to row. 13) They were too close to the door to close it. 14) The buck does funny things when the does are present. 15) A seamstress and a sewer fell down into a sewer line. 16) To help with planting, the farmer taught his sow to sow. 17) The wind was too strong for me to wind the sail. 18) Upon seeing the tear in the painting I shed a tear.. 19) I had to subject the subject to a series of tests. 20) How can I intimate this to my most intimate friend?

Let's face it - English is a crazy language. There is no egg in eggplant, nor ham in hamburger; neither apple nor pine in pineapple. English muffins weren't invented in England or French fries in France. Sweetmeats are candies while sweetbreads, which aren't sweet, are meat. We take English for granted. But if we explore its paradoxes, we find that quicksand can work slowly, boxing rings are square and a guinea pig is neither from Guinea nor is it a pig. And why is it that writers write but fingers don't fing, grocers don't groce and hammers don't ham? If the plural of tooth is teeth, why isn't the plural of booth, beeth? One goose, 2 geese. So one moose, 2 meese? One index, 2 indices? Doesn't it seem crazy that you can make amends but not one amend? If you have a bunch of odds and ends and get rid of all but one of them, what do you call it? If teachers taught, why didn't preachers praught? If a vegetarian eats vegetables, what does a humanitarian eat? Sometimes I think all the English speakers should be committed to an asylum for the verbally insane. In what language do people recite at a play and play at a recital? Ship by truck and send cargo by ship? Have noses that run and feet that smell? How can a slim chance and a fat chance be the same, while a wise man and a wise guy are opposites? You have to marvel at the unique lunacy of a language in which your house can burn up as it burns down, in which you fill in a form by filling it out and in which, an alarm goes off by going on. English was invented by people, not computers, and it reflects the creativity of the human race, which, of course, is not a race at all. That is why, when the stars are out, they are visible, but when the lights are out, they are invisible.

Up, up, and away…

It's easy to understand UP, meaning toward the sky or at the top of the list, but when we awaken in the morning, why do we wake UP? At a meeting, why does a topic come UP? Why do we speak UP and why are the officers UP for election and why is it UP to the secretary to write UP a report? We call UP our friends. And we use it to brighten UP a room, polish UP the silver; we warm UP the leftovers and clean UP the kitchen. We lock UP the house and some guys fix UP the old car. People stir UP trouble, line UP for tickets, work UP an appetite, and think UP excuses. To be dressed is one thing, but to be dressed UP is special. A drain must be opened UP because it is stopped UP. We open UP a store in the morning but we close it UP at night. We seem to be pretty mixed UP about UP! To be knowledgeable about the proper uses of UP, look the word UP in the dictionary. In a desk-sized dictionary, it takes UP almost 1/4th of the page and can add UP to about thirty definitions. If you are UP to it, you might try building UP a list of the many ways UP is used. It will take UP a lot of your time, but if you don't give UP, you may wind UP with a hundred or more. When it threatens to rain, we say it is clouding UP. When the sun comes out we say it is clearing UP. When it rains, it wets the earth and often messes things UP. When it doesn't rain for awhile, things dry UP. One could go on and on, but I'll wrap it UP, for now my time is UP. So.......it is time to shut UP!
