HISTORY Founded in 1903, The Savoy Grill at 9th and Central was Kansas City’s oldest operating resturant until it closed in 2014. The building gained historic landmark status from the National Register of Historic Places in 1974 for its importance in Kansas City’s social and economic history. The nurals depicting the journey from Westport Landing along the Sante Fe Trail were painted by turn-of-the-century muralist Edward Holsang when the Grill opened. Many of the other historical elements have been presenved and restored to their original condition including the green wall tile, terrazzo flooring, stained glass, and hig-backed oak booths as a nod to the Grill’s long history. Instead of removing the bar during Prohibition, the Grill simply drew velvet curtains around it. Famous for its seafood and steaks, the Grill welcomed many notable figures over the years. While owning a downtown haberdashery, Harry S. Truman and his wife Bess often spend their lunch hour at their favorite table, Booth No. 4. Later known as the President’s Booth, it also hosted Warren G. Harding, Gerald Ford, and Ronald Regan. In October 2014, a major fire destroyed the kitchen of the Savoy Grill. Since then, 21c Museum Hotels has revitalized this beloved restaurant, paying homage to its storied history, while bringing forth a new legacy.

HISTORY

Founded in 1903, The Savoy Grill at 9th and Central was Kansas City’s oldest operating resturant until it closed in 2014.

-Audre Lorde

The Vogue section of our menu approaches classic formulas with a 21st century attitude. By using extraodinary flavors and modern techniques we are able to achieve what appears difficult and simply, make it great.

“Some people like what you do, some people hate what you do, but most simply don’t give a damn.”

-Charles Bukowski

Our Heritage cocktails strive to explore the nuance of classic cocktails by presenting them in a fashion that lives up to their storied names. We develop taste and technique resulting in a path that feels inevitable, and, like the depth in a Rothko painting, it only looks easy.

Heritage is a celebration of classic winemaking styles and regions. It is meant to echo the standard practices which have come before us, those that have since been inherited to showcase a purist expression of wine.

Vogue takes those heritage styles and evolves them into a newer culturistic approach to modern winemaking. Rooted in the classics, these wines are meant to provoke notions of how evolutionary changes correlate to popular opinions.

The Wine Program at The Savoy is focused on listing wines as a progressive mirror of one another. We encourage you to either stay comfortable or branch out with your selections.

“Wine is the most healthful and most hygienic of beverages.” - Louis Pasteur

CHAMPAGNE

The most iconic and celebrated sparkling wine in the world, Champagne is a mystique all its own. Grown and produced solely from Pinot Noir, Pinot Meunier and Chardonnay grapes, these expressionist wines are poignant, extravagant and stimulating. Most commonly reserved for celebration, Champagne and other sparkling wine styles have an innate affinity for food given their high acidity and bubbly texture. It’s important we offer these wines a multitude of reasons to celebrate, from the mundane to the overachieving, that way, there is never an inopportune time for something sparkly.

Champagne will illuminate our Heritage side of the list, while other classically variant styles will be offered alongside as Vogue interpretations for those wishing to broaden their sparkling experience.

“I’ll drink your champagne. I’ll drink every drop of it, I don’t care if it kills me.” - F. Scott Fitzgerald

SPARKLING

Classical regionally specific sparkling wines can be viewed as a direct response to the heralded wines of Champagne. These styles look to imitate, and in some cases transcend, their historical counterparts. The Heritage side highlights some of the more traditional forms of wine making, from Cremants in France, to Cava in Spain, to Franciacorta in Italy and beyond. These styles are viewed as the regulated basis for sparkling wines of a specific place, other than Champagne.

The original sparkling wine, however, pre-dating the methode champenois is the methode ancestral, or more modernly known as Pètillant Natural or Pèt-Nat for short. These wines have in recent years rose to wine geek stardom, but at their core they are a product of one of the oldest wine making practices in existence. What makes them Vogue is their illusivity and au courant stamp in the mainstream. If you tend towards an affinity for the revered classics but want to dip your toes in the natural wine pond, then start here with these effervescent stunners.

“We are all mortal until the first kiss and the second glass of wine.” - Eduardo Galeano

CHARDONNAY

In white wine aristocracy, Chardonnay is royalty. A wine of fervor, girth, longevity and intensity all the while remaining nuanced, refined, elegant and polished. The dichotomies of this wine continue in their enigmatic course whether hailing from the cool climates of the California coast to the brisk and almost intolerable region of Chablis in northern Burgundy. Our Heritage list celebrates some of the greatest regions and most esteemed producers making Chardonnay in its finest form. These are symphonic, inherent representations of a wine that refuses to be pigeonholed into one particular style. If you find yourself to be of the ABC (Anything But Chardonnay) mentality, then I must encourage you to begin with the Vogue expressions of this list: wines that are not all Chardonnay, but still carry the weighty minerality, piercing acidity and vibrant expressionism that is this grape we can only attempt to imitate.

“Wine is sunlight, held together by water.” - Galileo Galilei

WHITE WINES OF THE LOIRE VALLEY

There is no other region in France with wines as dynamic and varied as The Loire Valley. Nicknamed the ‘Garden of France’ for its agriculture opulence and picturesque landscape, the Loire Valley follows the Loire River over 600 miles from the edge of the Atlantic coast into the central part of France. The wines here crave structure over power and tranquility over vigor. The whites in particular can be penetrative and lean, sumptuous and round, or bold and pensive. The Heritage portion of this list evokes those characters and expressions, showcasing a gradual movement across the Loire. The Vogue side is meant to mimic those classic representations either through wine making processes or geographic location. Both iterations tend towards the vibrant and existential qualities of this endearing wine region, so having a love affair with either is completely acceptable and albeit encouraged.

“I was chased through a chateau in the Loire Valley by a bunch of American school girls.” - David Hyde Pierce aka Niles Crane

PINOT GRIGIO

If there is one language that is universally spoken on wine lists, it’s Pinot Grigio. The (un)sung hero of restaurant glass programs, Pinot Grigio can leave you with one of two tastes in your mouth: deliciousness or disgrace. It’s important to provoke your taste buds into realizing that Pinot Grigio can have power and force with a subtlety reminiscent of a sunset beach breeze. The Heritage selections on this list provide you with everything that has been missing in our mainstream world. If you’ve already traveled there and care to elevate your senses even further, then I would recommend indulging in our Vogue collection.

WHITE WINES OF AUSTRIA-GERMANY

To understand vinifera nobility, you must begin with Riesling: the King. There is no greater misunderstanding in US wine culture than that of the great Riesling grape, and what a detriment it is. If you have never had the pleasure of enjoying a world class bottle of Riesling, then I implore you to try Helmut & Cornelius Dönnhoff’s Riesling Trocken to start your journey. It will most likely change your life. The wines featured in our Heritage list are some of the most classic and revered styles of white wine in Austria-Germany (and maybe even Northern Italy, bordering Austria so it counts). These wines pack austerity and minerality as their backbone, fiercely complemented by bracing acidity and sheer balance. The complexity these wines exude is nothing short of miraculous, and they will leave you utterly speechless and perfectly content. As for the Vogue offerings, whether you’re looking to venture in a slightly different direction or curious about unusual styles and expressions, then begin here. There will always be time to go back.

“By drinking Riesling, you become a better person.” - 31 Days of German Riesling

SOUTHERN FRENCH WHITES

Not all white wine is crisp and clean or light and airy; there is something to be said for the intensely robust, viscous and waxy styles. Their bold personality is a shining beacon for “red wine only” drinkers who never knew they could be blown away by something so pure and so...not red. Combine a little bit of tannin with a ton of aromatics, brushed up with a fully integrated textural mouthfeel and voila: you’re drinking Rhône of another color. Our Heritage list honors these archetypal beauties, cleverly echoed by our Vogue offerings of a similar breed but entirely different lineage.

“My only regret in life is that I did not drink more wine.” - Ernest Hemingway

Pinot Noir is unequivocally understood among oenophiles and amateurs alike, but GREAT Pinot Noir is only comprehended after your first encounter with the pristine terroir of Burgundy. It is here you begin to understand how Pinot Noir is truly meant to be expressed and will forever intrinsically hold it as a marker for every other Pinot to hit your lips. The other red grape of Burgundy, not to be forgotten, is Gamay, a friendly and inviting wine that holds no pretense at the table and is meant to be enjoyed in a jovial, light hearted manner. Between the two you have the perfect combination of serious and fun, but both are profound for there is nothing else in the world of wine quite like these grapes from their birthplace in France. The Heritage portion of this list exemplifies those natural born styles bestrewn by their best known counterparts in this vast world of winemaking. Our Vogue iterations travel a bit further to feature more worldly selections for those willing to take a leap beyond the motherland.

The carefree and idiosyncratic nature of Italian living is ostensibly correlated to their winemaking styles. Enticingly serious but forever welcoming, the reds of Northern Italy are inexplicably the result of hard work and fervent dedication throughout generations of winemaking families. These wines speak to us about history, lineage, turmoil and triumph, all through a single glass of delicious inky juice. The Heritage features paint a picture of the bold complexities innate to these regions of Italy, with intensity and sheer will as a driving force behind their otherwise simplistic and secretive nature. There is nowhere else in the world where you will find Nebbiolo and Sangiovese of a similar experience, because after all, the Italians do it best. In Vogue, however, are the rustic and imaginative styles of late. Indulgent and dynamic, these wines offer an ambitious pursuit towards the newfound candor of perceptive consumers.

SOUTHERN FRENCH REDS

The red wines of the Rhône Valley are some of the most beloved wines in the world. They exude prominence without pretense, vigor without compromise, and refinement without force. These wines are naturally appealing and long remembered for their deep undertones and fierce vibrancy on the palate. Can’t decide between Pinot and Cab? Go Syrah. Go Grenache. Go Mourvèdre. These wines have an incredible duplicity about them that finds likeness for almost any style of wine drinker. The Heritage portion explores these notes and looks to entice a wide breadth of enthusiasts, while the Vogue list will most likely navigate you to similar but otherworldly findings.

“For everyday, we like Beaujolais, Gren-ache or Syrah, and we like a lot of it! It’s a family tradition: we would never consid-er having a meal without wine.” - Jacques Pepin

SPANISH TEMPRANILLO

Lush, full-bodied and not for the faint of heart, Tempranillo is a stoic wine set against the vast landscape of Spain’s Rioja and Duero regions. Exquisitely striking, these wines are not forgiving and project their full splendor without warning. Reminiscent of dried red fruits, cedar and dill, they are pleasantly savory and unapologetically oak aged. Our Heritage list is quintessentially expressed, while our Vogue interpretations will transport you to lesser known parts of the world with wines a bit more reserved from the spotlight.

“The simple act of opening a bottle of wine has brought more happiness to the human race than all the collective governments in the history of earth.” - Jim Harrison

ZINFANDEL

Zinfandel, outside of its pink blush hue, is altruistically lighter as a red than we have been led to believe, but definitely not pink. The wine we all loved to love and then grew to misunderstand is ready for its day in the sun once again. Zin can be pretty without being jammy and light without being overly alcoholic. There is a fine tuned balancing act that has been lauded as the new style of Zin, which I so hope you will enjoy through our Vogue selections. But if it’s still that classically understood and rambunctious Zinfandel you’re into, then Heritage it will be.

“The discovery of a good wine is increasingly better for mankind than the discovery of a new star.” - Leonardo di Vinci

BORDEAUX

“I can certainly see you know your wine. Most of the guests who stay here wouldn’t know the difference between Bordeaux and Claret.” - John Cleese aka Basil Fawlty

The base for everyone’s love of Cabernet Sauvignon is rooted in the French region of Bordeaux, where they focus on five main varietals: Malbec, Merlot, Petit Verdot, Cabernet Franc and Cabernet Sauvignon. The wines are traditionally blended, with the blend dependent upon the georgraphic location within the region. The wines are big, hearty bombs that are made to stand the test of time. While these blends are incredibly important to both ancient and modern winemaking, this section is made to focus on single varietals while being accentuated by those traditional bottlings.

Given that Bordeaux is one singular place with a specific style of wine, I found it important to showcase classic styles of those varietals from all over the world, ranging from the Loire Valley down to Cahors in France, and from Napa Valley up to Red Mountain in America. The Heritage section celebrates a vast array of these wines, while the Vogue selections are reserved for a slightly more cult following mystique.
